I think I read this somewhere before, but wanted to verify.
If you are on the dining plan for 8 days...you get 8 table service meals and they don't care if you use 2 table service meals in one day, right?
In other words, can we eat at Chef Mickey's for breakfast and Mama Melrose for dinner and then just use 2 counter service meals another day?

Correct in that you can use your credits however you want on whatever days.
But the dining plans are based on how many NIGHTS you are staying in the resort, not how many days your trip is. So you get credits for every night you're there.

You're right! You can use any of the meals/snacks any time you are there! We've done DDP three times and are using it again in Feb. The flexibility is one of the reasons it works for us! Have fun!

You're not correct in that you get the dining plan for 8 days. If you are staying 8 nights, you get 8 nights worth of credits. If you are staying 8 days and 7 nights, you get 7 nights worth of credits. The plan is based on how many nights you stay at your resort, not on how many days you spend in the parks.
You receive all your dining credits as soon as you check in and you can use them in any combination you want for the duration of your trip.
Think about it - a number of restaurants cost 2 TS credits per person on the plan. If you could only use 1 TS per day, you couldn't book those restaurants at all.
