Start by looking at many Disney animated movies. Or start going to DisneyLand in California or Walt Disney World in Florida. Visit the parks. See what attractions and/or characters interest you.
Then decide what type of collection do you want, toys, books, artwork, pins, etc.
Then the search begins as you start looking for what you will like. And it goes from there.
On my first visit to WDW (in 1987) with my wife we saw a couple of decorative plates that were based on Walt's Christmas Cards from 50 years earlier. We decided to buy them and found they were the second and third in the series, so we had to hunt for the first in the series. The value of the collection now is somewhere in the vicinity of a half million dollars.

Check out Vinylmation.net for Disney's 3" or 9" vinyl collectibles

Collect what you like whether it be pins, antenna toppers, artwork, etc. And don't expect it to appreciate immediately, if ever. The mass majority of the pins released in the early 2000s aren't even worth what we paid for them but I like them and they hold a lot of memories so I don't care.
Good luck!
