It's pretty much first come first served.

You go to the entrance and ask for a table - they will then tell you roughly how long and I think they issue you with a vibrating thing. You are then free to walk around the shop etc until they call you.

We wanted to eat early (5.30) and hotel concierge booked us a table but said that they could only do that up until 7pm. From 7pm (I think until about 10pm) it's first come, first served.
This was last week, mid week, when everywhere was quiet.

at least they are allowing some bookings then, as when we went in january they wouldnt let us book in advance no matter what time we wanted (and it was the early afternoon, before we were due to get to the airport for flight home) luckily the place was quiet so got a seat straight away
