Why only one resturant on the Dining Plan? How is Captain Jacks?

I assume you are looking at the 2010 plan.
Not all the locations that are part of the 2009 plan have singed on yet, but I would expect them too.

2009 locations:
Cookes of Dublin (L,D) - QS
Earl of Sandwich (B,L,D) - QS
FoodQuest (L,D) - QS
Wolfgang Puck® Express (L,D) - QS
Cap’n Jack’s Restaurant (L,D) - TS
Planet Hollywood® (L,D) - TS
Raglan RoadTM Irish Pub and Restaurant (L,D) - TS
Wolfgang Puck® Cafe (first floor only) - - TS

This is what I get when I google Disney Dining Plan 2010 This one only has Captain Jacks.

Non-Disney restaurants typically negotiate as long as they can for the best deal, and as such, the final list of participating restaurants won't be settled until late in 2009, possibly not until January 1 of 2010.

There's almost never any changes, however, so use the 2009 list as a guide, and just keep an eye out for updates.
