I'm getting to make our ADRs shortly for our trip 11/7 - 11/14. When should the November park hours be out?

90 days prior, so mid August should show the dates you are looking for.

I noticed they were currently posted through October 30th. I was surprised that October 31st wasn't shown. Do they add on days, day by day to the calendar?

Well I just checked and the calendar is still only through October 30th, so even a new month doesn't cause a change in the calendar.
