My family of 4 is planning to travel to WDW with my brother's family of 4. We are planning on using the DDP for our meals and we want to make reservations for 8 each night that we are there. I understand that gratuities are added with a group of 8, but we will have 2 separate dining plans. Can someone explain to me how this works out?

One person from each family will give their KTTW card (the server should be able to tell from the card how many TS meals to deduct). You will still have to pay the manditory tip.
The only way I can think to get out of paying it would be to book seperately each table and then each family go up and give their ADR #. If you have the same server and they find out you are together you might still be charged.

if you're booked as a group of 8, you will be charged the mandatory 18%. You tell the server which orders are going on which card (you will only need one card from each room.) Server will bring out two separate bills, but each bill will have the mandatory 18% tip on it. Doesn't make any difference how many different plans are being used -- it's based on the number of people at the table. Could be four parties of 2 each -- they would still count it as 8 at the table.
As PP said, only way around this is to not eat together. Book 2 separate dining reservations and don't sit together.
