OK, just so I know- I know that if the CS place we eat at does not have a kids menu they can order anything. Like my son really wants to get the fried chicken breast sandwich at Golden Oak Outpost in MK. So if we get him that, how will it know to subtract a kids credit and not an adults? Will we still have all our adult credits to use? We probably won't be eating when he does because he is used to eating very early(lunch at school is 10:30), so will it subtract his credit and still leave us 2 adult credits to use somewhere else later? We've never used the dining plan before so any help is much appreciated!

All CS credits are pooled together. When you go to CS how ever many meals you purchase are subtracted from your plan (can only get the # on your card @ a time, Adult and Child).

You will be given one large pool of credits. The CS credits are not differenciated between adult and child. Your card will say how many adults and children are in your party so the cashier will verify that the right number of meals are being paid for with the card. When you pay for his meal, the cashier will charge 1 CS credit from your card and your new total will reflect one less CS credit.
If you'd prefer to all eat together, you might find that getting him a snack in the morning works well for you. There are some huge snacks all over WDW. If you eat at a different time than he does, will he be ok with sitting around waiting while his folks eat?

Thank you so much for helping me better understand this! Luckily DS loves to read so he'll be fine waiting for us to eat if he eats earlier. He also has asthma so it will provide another break for him which is probably a good thing. Thanks!

To clarify your last point ... if you eat at a restaurant which offers kids meals and your KTTW card says "2 Adults & 1 Child" you may only select 2 adult meals and you must select a kids meal for your son when ordering your family's meal all at once. In the case of the new Golden Oak, there are no kids meals offered and the OP would be allowed to order adult meals for her entire family all at once.
So just so I understand this correctly: if my family of 4 eats at the Golden Oak Outpost, where there isn't a child's menu, everyone is charged 4CS and the system doesn't distinguish between adult and kid. Then if I go to say, CHH where there is a child's menu, the kids must eat off the child's menu, but again, the system charges our account 4 CS credits, no distinction?
I just want to make sure that I don't end up with only kid's CS credits at the end because I used up my adult CS credits at places that don't have a child's menu.

I do not know if the cash register verifies that you select kids meals for your kids or if the CM does it.

Just be sure that you keep your receipts. That is what we did, just to be sure that the credits came out correctly.
If there are issues, this way, you can be sure that things will be easily straightened out.
