With regard to multiple reservations ...right now I plan on trying to make 10 reservations (11 credits) for my 9 day trip.

Here's what I believe to be true, looking for confirmation

1) I can always cancel on the day of or day before without penalty or losing my credit.

2) If I forget to cancel and don't appear for my ADR then I will not lose any credits (exceptions here of HDDR and CRT?)

3) So, there is no disadvantage to booking more meals then I have credits and see how my plans may change between now and September - or even when I am on my trip, right?

$) I can always pay OOP for nay of the extra's anyway...

Of course - I will try and be "other guest" friendly and cancel ADRs that I won't be using so others can get in when I know...

Am I on the right track?

There are a handful of restaurants that have penalties for cancellations within the 24 hours - California Grill, Chef Mickey, Akershus, and of course CRT and the dinner shows. I think that's it, but there might be a few more that I haven't run across yet.

Otherwise, you're on the right track. Just try to cancel as soon as you know you aren't going to use an ADR, so that someone else can get a shot at that table!

Chef Mickey's does not require a credit card hold.

CRT and the dinner shows require full payment at the time of reservation unless you are paying with the dining plan - then they require a credit card hold.

Fantasmic Dinner Package also requires a credit card hold.

Your credits are yours until you enter the restaurant, eat and then pay for your meal with them (or until they expire at midnight of your checkout day). You will not lose any credits if you don't show up for a meal. If you don't show up for a meal with a credit card hold, they will charge the credit card you gave for whatever the no-show fee happens to be for that restaurant/event.
