Even though we don't have our documents yet, from what I can guess from flight times, it looks like we will have an afternoon flight. We booked the land/sea package including the DCL transfers, with the land portion coming first. Instead of going to the airport, can we hop on the DCL bus back to Disney, drop our luggage off at the Beach Club (where we previously stayed) and then arrange our own transportation to the airport?

While you COULD go back to the resort after your cruise, if you are not checking in there I don't believe they will store your luggage for you for the day. You would also need to let DCL know so that your transfers would be booked accordingly.
It sounds like you are trying to find a way to enjoy some time at a park on your last day; if so you might want to consider dropping the last part of your transfers and getting a car after you return. AVIS has a nearby Port Canaveral location and a shuttle that will pick you up at the port. You could then head straight to your park of choice, leave your bags in the trunk and then drive yourselves to the airport (and drop off your car there as well) after you have enjoyed a park. :D

What Michelle suggests is the way to go. We did that this past Feb. We rented our van from Avis after we got off the ship, went to MGM for the day and left all the luggage in the car. Then left for the airport and dropped off the car at MCO.

We have often stored our luggage at a resort, even when we were not staying there (they never asked and we never told!). But of course that was before 9/11, so they may have tightened up their policy. The last time we stopped at WDW, Happy Limo stored the luggage for us and brought it back when they picked us up at Downtown Disney.
