View Full Version : Any good acorn squash recipes?

I tried acorn squash for the first time last night. I just baked it in the oven-it was okay. I sure there are some good ideas out there. It is very pumpkinie to me.

I split it in half and put butter and brown sugar in the middles while it cooks. Then we put that syrupy stuff on it when we maxh it on our plate!:)

I make a mixture of stove top stuffing, onion and pork sausage. Add water to moisten. Stuff the acorn halves and bake until acorn is done.

I don't care for sweet recipes with acorn squash. I like to add a ground meat stuffing in the halves. I usually do a recipe for sloppy joes or porcupine balls mixture which I put in the squash halves, then top with cheese and cook them in the microwave. It makes a delicious dinner that can be healthy, too.

My husband usually goes the sweet route mentioned above. Sometimes he slices it thick and cooks it on the grill.

I make acorn squash stuffed with a clam, tomato, garlic, and bread crumb mixture.
