View Full Version : Left over muffins?

MIL keeps buying pack of muffins from the supermarket for the bosy to have for breakfast - 2 packs of 4 at a time. 8 muffins. We have only 2 boys, one of whom sometimes prefers cereal. DH and I are trying to lose weight, so no way are we troughing 6points-worth of muffin.

I've got 6 a couple of days over their use-by (they weren't too bad in the microwave) and 7 more on their way. Is there anything I can do with them other than bin them? Our council does collect food waste for composting, but I still hate to just throw them away.

Next time take one or two out & pop the rest in the freezer. They can be microwaved to thaw/reheat.

What kind do you have? Corn muffins make great stuffing/dressing for chicken or pork. If you have sweet ones you can use them to make a bread pudding or maybe a trifle with fruit & whipped cream or pudding.

Then again, you can always ask your MIL to not buy anymore as the boys' tastes are changing and they are no longer on the muffin kick. :confused3
My MIL does the same kind of stuff...she is just showing her love for us. Can't tell you how many times we've had multiple boxes of cereal in the pantry because one kid said she liked it.

I've got choc chip, bluebnerry, more choc chip and double choc - 2 of each, 4 bluewberry (as the boys don't like them). Good idea for trifle - only DH eats it though, so not so good for the diet!

I've already told her not to buy them ALL the time (she always does this - we don't DARE say we like anything or we get that item every week - in more multiples than we can use!) but she still does it - and you can bet if she hasn't, one of the boys will say (just as she's coming through the door) "Why haven't we got any muffins?".

She's also a great one for cooking up a big pot of something and bringing it round for the boys dinner - when something is alrady in the crockpot or defrosting. I've asked her to ring first to check, but.......

Save it for the next day. I guess it's better than being ignored or talked about behind your back. :lmao:

I do save it if I'm home, but she tends to do it on DH's day off, or when I'm working and she's picking DS(9) from school.:rolleyes:

Oh well. I found a recipe for Queen of Puddings using cake crumbs so I'm going to make that - seems to be the least fattening option so far:rotfl:
