Here are the ressies I've made for my upcoming trip - obviously I don't have enough TS credits to use for them all - does anyone have recommendations based on experience as to what I should pay OOP? Is it just a matter of looking at all the menus and adding up the $$?
Kona - breakfast
Kona - dinner
Sci Fi - lunch
Brown Derby - dinner
Flying Fish - dinner (still not sure this is good for my DS12)
Cape May - dinner
Biergarten - dinner
Coral Reef - lunch
Chef Mickey's - breakfast

You did not mention how many TS credits you have, so I just put opinion. Also, like you said, just add up what you would get and see which ends up being less :)

I would definitely pay OOP for Brown Derby as it is 2 TS credits yet I don't think the prices are really any higher than some single TS restaurants. I also agree with the SCI FI lunch and KONA breakfast. I wouldn't waste a TS credit on those. I always figure a TS credit to be worth about $30.

Adding up what you think you'll order from each restaurant is the best way to decide. I'm sure Kona breakfast would be the cheapest. At Sci-fi, it will depend on what you want to order.
As someone suggested, you may want to pay for HBD OOP. We think the food compares favorably with the other signatures, but the menu prices are lower than other signatures making it less of a value for those using DDP. We pay OOP for all meals, so that's irrevelant to us. Quality is our only concern, & HBD is wonderful. We like to order a cobb salad for an appetizer & split it between 4 of us. It's plenty to share. The salmon dish there is the best I've had. If you don't like green olives, ask them to hold the tapenade.
Your DS will be fine at FF. It's a loud restaurant. Plus, the atmosphere is more casual than most of the other signatures (HBD excluded).

We just returned from our trip today and had the dining plan. The TS meals we did were:
Liberty Tree Tavern-dinner
50's Prime Time Cafe-lunch
1900 Park Fare-dinner
Crystal Palace-dinner
Boma-breakfast
Le Cellier-lunch
Planet Hollywood-dinner
We enjoyed every meal we had and were not disappointed in any of them. I would recommend the Boma which was excellent instead of going to Kona twice. There are some great places that you can do counter service and not pay OOP for another TS. I would recommend that you do that instead. We found that there is soooo much food on the dining plan that we couldn't have possibly eaten another meal. The Pepper Market is a great counter service. We also liked Flame Tree BBQ, Cosmic Ray's, Cantina San Angel to mention a few. Just look at the menus and see if the selections are something your family would enjoy. I know I felt a little overwhelmed when trying to decide where to make ADR's but we ended up liking everywhere we chose.

We always pay OOP for breakfasts.
