If I would rather not receive the mug, am I allowed to grab a couple of bottled waters or something?

I don't think so.
Save it and give it to someone when you get home or give it to someone else checking in.

I've never heard of anyone substituting something else for the mug.
Why not just take it home as a souvenir, or sell it on eBay, give it away to someone...

OP here:
Selfish as it may sound, I'd rather get something out of it if I can.
I will already have a mug from the beginning of the split stay and I don't really want 2 of them ;)
I may just have to wait until I get there.

If you can't you can always see if someone who is going to buy the mug would be willing to buy you 2 bottles of water instead and give them your mug.

A bottle of water is 'covered' as a snack credit.
If you don't want the mug, fine - you don't have to take one and "pay" for it with your KttW/DxDP credit... but you can't exchange anything else for it.

What is the bottle water to refillable mug ratio?
A. Do you base the answer on the value of the mug?
B. Do you base it on the value of the mug plus the number of refills the average guest makes?
C. Now you have to multiply A or B by the number of people staying in the room.
Can you imagine trying to figure that out?
You know someone is going to take it to the extreme.
“Well we don’t drink water. We only drink (insert the most expensive bottled drink on site). We fill our mugs 15 times a day. There are 5 people in our party. According to my calculations, if we opt out of the mugs, you owe us 23 cases of bottled drinks!”

Exactly--it's not like they hand you the mug when you check in. You have to go to the food court, pick up a mug, and then tell the cashier to use your "credit" for it. Not using your credit would be just like leaving unused TS, CS or snack credits on your card, which people do all the time.
But I really like the idea of giving it to someone else--what a nice gesture!

Assuming your split stay is at 2 different resorts, then don't you need to get the new refillable mug at your new resort for the second part of your stay? Using the mug from another resort is not allowed. However, if you are staying at the same resort for the second part of your stay (for example, upgrading to a different room or a different view for a portion of your trip), then you would need the same mug to get refills. Otherwise, the new mug will come in handy at your new resort.

I guess I'd put it this way, just like you can't sub a dessert for an appy, you can't sub a mug for bottled water. If you don't need the mug don't get it, if the value of the DxDDP hinges on the value of the mug then maybe the DXDDp isn't the best value for you. The pacakage isn't set up for a pick and choose if it was then there really would be a Dining plan for everyone!

No you don't need a new mug for each resort. They are not resort specific and are good for your entire length of stay at WDW. The dining plan will just give her 2 mugs because she is checking in and out.

So I have heard from multiple people who have purchased the new mugs... it says on the mug that it's essentially at any resort.
Something like it's good for the length of stay at any of the resort drink islands.
It's really ok, I can find a couple of people to give them to or just not get them. I was just wondered if anyone else had experienced exchanging it. Oh well... not make or break.
