What is your favorite use of your Easter ham bone? I have 2 this year and I'm considering making split pea soup and potato/ ham soup, but open still to other ideas.

In addition to the soups you already named, I also do a lentil soup. But my all-time favorite is ham & beans...green beans. Cook the bone like you would for a soup, skim out the yucky stuff & then add cleaned & cut green beans - fresh or frozen. I also like to add some potatoes cut in large chunks - or just use canned ones even. We like it with some extra meat in it, but just the broth gives the beans a good flavor. This is an old PA Dutch dish my grandmother used to make. Total comfort food! ;)
