Ok, this is going back at least 10 years but there used to be a French cafe with outdoor seating that was a perfect lunch spot. They had a very simple but great salad. Mixed greens with cubes of a delicious, mild and somewhat firm textured cheese. The dressing was creamy, light yellow in color and I think it had a slightly lemony flavor. I've been trying to track down the recipe for years to figure out what kind of cheese it was and how to make that perfect salad dressing. If anyone remembers the salad and has the recipe, please share. I've yet to find it anywhere. Thanks!

Was it what my boys call "Tom & Jerry" cheese? (Did it have holes in :lmao:) Could it have been Emmenthal? (Mild and sweet).

Can you remember anything else about the salad? Was it just greens and cheese, or was there more to the salad?
The cheese might have been chevre. :confused3
Do you have any gourmet cheese shops near you? Maybe an upscale shopping area to try. You can usually find many different French cheeses, and you can sample them. Most will be able to direct you as to which ones that it might be.
The name of the cafe was Au Petit Cafe. Chefs de France took it over when the expanded 10 years ago.
