All resorts!! Take the monorail around and get off at each resort, i think there is only 3 the Poly, Grand Floridian and Contemporary. But Thats fun to do. Each resort has a different theme.

Are you gonna be on the dining plan? if so like grumpy d said you need to get those ADR's now. things get booked fast. and if things are already book make sure that if you really really want to go to it, then you can always call several times while on your trip to get your reservation!

Congratulations.......your trip sounds like an awesome idea.
Since you are about to devote serious time and money to your trip, I suggest you devise a touring plan.
Either buy a book or subscribe to one of the web sites. 10-20 bucks is a small price to pay in order to see the most, and do the most at the parks.
Identify if your family belongs in the early riser or night owl category and make your plans accordingly.
I encourage you to get a park hopper and water park pass.
Have Fun!!!

If you're going to be at Epcot any of the days, and you feel like taking a break from the park at any point, it's worth walking over to Boardwalk. (It's a very manageable walk, but there's a boat as well.) It's fun to walk up and down the boardwalk and go into a couple of the stores.
If you are interested in exploring any of the resorts you may visit, a number of them lend themselves to bike touring. You can rent bikes and just explore at your own pace. I especially had fun with this at Port Orleands Riverside and French Quarter.
