My friend has Celiacs disease and we've already been in contact with the staff at WDW - they've been great so far!
We'll spend two days at Universal/Islands of Adventure, but we'll head back to Disney for our evening meal.
So what type of gluten free options does Universal/IoA offer in their counter service restaurants?
How accomadating are they?

My mom went last summer. It was a disaster from her description. Finding the gluten free food was difficult, and there was essentially one option (roast chicken with potatoes). None of the snacks other than whole fruit were gluten free, and there seemed to be a lot less understanding of cross-contact issues than there usually is at WDW.

They went out of the parks every day for meals instead. Many of the citywalk restaurants apparently handled gluten free well.
