If I was to take advantage of the buy 4 nights get 3 free can I limit my meals to just 4-5 days? I ask because we may not end up staying all seven nights due to my husband's vacation schedule.

No, you can't. The dining plan must be purchased for all persons on the reservation over the age of 2, for all nights of the reservation.
The only way to do it differently is to make two separate reservations, which wouldn't help you. Your only recourse is to limit the length of your stay to the number of nights you actually will be at WDW.
You could purchase the dining plan for all 7 nights and use up all the credits before you leave if you book some 2 credit restaurants, or eat more than one table service meal on some days, or get pizza delivery; use the CS for breakfasts and lunches, and take snacks with you when you leave.

You can book the promo for 5, 6, or 7 nights. You will pay for 4 nights and get the others free. No need to book it as 7 nights for this promotion, though getting 3 nights free is the best deal. Then you can add the DDP for the exact number of nights of your stay.

Thanks! That helps. Do you guys usually book directly with Disney? I take it you have to pay the full amount when you book, no?

Thank you again! I thought I had read the $200 booking fee somewhere but then I got confused with the 4/3 offer and the $200 bonus in that and figured I had it confused in my head!
