I know it doesn't help that much in the planning phase, but if you book meals at buffets like Crystal Palace or 1900 Park Faire, or at any of the TS restaurants, note the allergy on your ADR and remind them about it when you check in. In most cases the chef will come to your table and answer questions or offer special-made alternatives to keep you safe. :thumbsup2

We have several varied dietary issues/allergies/preferences like vegan in our extended family, and have had this treatment many times in the past.

If you go to the disABILITIES! board there's a sticky FAQ thread with an email address for special dietary requests at Disney. My experience dealing with my kids' nut allergies has been extremely positive. Before our last trip, I emailed them. They sent me a list of their foods with the allergens. We also had a chef come to our table before every TS meal and discuss safe options. You might want to post on the disABILITIES! board to get feedback from others who have dealt with a coconut allergy at Disney.
