Ideas for a day with out children

We celebrated our 10 yr anniversary in june but had a 2 week old baby so we didn't get to celebrate much. So when we are in Disney World May, we wanted to do something special together as our early 11 year/late 10 yr celebration. My 20 YO niece will be with the kids, so we can go out. I was thinking Epcot, since kids are young for it but any great ideas? TIA

May I suggest a nice meal at Bistro De Paris (very romantic and adult atmosphere), wandering the world showcase and seeing everything there, staying for illuminations afterwards. Would make a great day.
