Do people in the custodial role work at resorts as well as DTD and parks? And can you ask for a specific place/job, or do you just get assigned somewhere?

Yes for DTD, as for resorts I'm not sure. You can request a specific location during your interview, but the final decision is made by Disney.

You can request a location. But there are no guarantees.
