View Full Version : Cherry jello cranberry salad

Hi guys, I just had the best sample at our grocery store. They called it Cranberries Jubilee. They sell it made up at the deli counter. I asked for the recipe but they don't have one. Anyway, it definitely had cherry jello, whole berry cranberry sauce, celery and pecans. It wasn't "jelled". It was served with a spoon. Anyone have an idea or a recipe to help me duplicate it?

Here is the one I use and love. It doesn't have the celery in it though...it gels up but its not jiggly if that makes sense.

HOLIDAY CRANBERRY SALAD
12 oz bag of raw cranberries
2 oranges (I use 2 small cans of mandarin oranges...Easier!!!)
6 - 8 oz large jello (any red kind)
1 cup of sugar
1 - 2 apples, peeled, cored and cut in small pieces
1/2 walnuts, crushed (optional)

In a blender, grate the cranberries in stages. Then add the oranges. Put in a bowl and stir in the sugar.
Put jello in a med - large bowl and add 2 cups boiling water and mix well. Then add the cran orange mixture and mix well.
Add apples, stir and then add walnuts. Let set at least an hour...Can be made the day berfore.

Can I use the cans of "jellied" cranberry sauce chopped up with this type of recipe. Looks and seems like it'll taste great and a good "new" addition to the table!

I went to the Ocean Spray site and found this, not exactly the same, but it may be a jumping off point for you.

MOLDED CRANBERRY FRUIT SALAD
INGREDIENTS:

1 8-ounce can crushed pineapple, drained, reserving juice
1/2 cup Ocean SprayŽ Cranberry Juice Cocktail
2 tablespoons lemon juice
1 3-ounce package raspberry-flavored gelatin
1 16-ounce can Ocean SprayŽ Whole Berry Cranberry Sauce
1/2 cup chopped celery

DIRECTIONS:

Combine reserved pineapple juice, cranberry juice cocktail and lemon juice in a medium saucepan. Bring to a boil. Remove from heat. Add gelatin, stirring until it is completely dissolved. Break up cranberry sauce with a fork. Stir into gelatin mixture.

Refrigerate until mixture begins to set. Stir in pineapple and celery. Pour into a 4-cup mold. Chill
until firm. Makes 8 servings.

Here's my Cranberry Jello Salad recipe:

Cook 2 c. cranberries until they pop in 1 1/2 c water. Add 1 c sugar and cook for 5 minutes. Pour over one small pkg of cherry jello. Let cool and add 3/4 c chopped celery, 1/4 c chopped nuts, 1/2 c chopped apples and 1/4 t salt. Refridgerate overnight to jell.

I always change the celery, nuts, apple ratio a bit to mostly apples because that's what we prefer. Strange as it sounds, I also like a little extra salt in it.

You can "mold" this jello but it will be on the soft side. I usually just put in in a pretty glass bowl

I bet a million bucks that is it. It certainly was a soft mold. I may have been wrong that it was canned cranberries. Thanks!
