I'm sure someone will have an ethical issue with what I'm asking, but...well...I'm asking anyway. ;)
My parents will be traveling with us in December and we've all got the free dining plan offer for the Visa cardholders. We'll be staying longer than them. If they do not use all of their credits, can we use them if they give us their card?
I know they'll use all of their ts and probably all cs. I'm thinking if anything is left it would be snacks.
TIA to anyone who may know!

I'm going to assume that you are on separate reservations, in different rooms. If so, no you won't be able to. Their dining plan will expire at midnight the day they check out. If you think they will only have snacks left over, they can use their credits before they leave to buy things for you and your DH that you can have later in the week.

Thank you! Good idea! I'm wondering if they had any CS leftover, for example, if we used them that day would we get by.

Walt Disney World's rules on the dining plan are clear: the credits are not transferable. Guests on the dining plan are not supposed to use their credits to purchase meals for anyone not included on their reservation.
Since you're on two separate reservations, the rule is that you can't use your parents' credits.
