I finally got an answer that has been bugging me for over a month



Grand Cayman is on Eastern time- same as Port Canaveral
Cozumel is on Central time- 1 hour less than Eastern time

Eastern time- 6:00
Central time- 5:00

Yeah- I will have an extra hour in Cozumel to shop before my excursion begins!

Just remember that GC dosn't have daylight savings time! Also the
times listed as arrival in port are LOCAL times (Not ship or eastern time) Just like when you fly into a city in a different time zone, the "arrival time" is the local time.
