hope this isn't a repeat question, but.....
are US dollars accepted in Grand Caymen and Cozumel???

From all that I've read, the answer is 'Yes'. The only thing that might be a problem is that if you get off the beatin' path, some of the prices might be listed in Cayman Dollars (Grand Cayman) or in pesos (Cozumel) and you might have to figure out the exchange rate.

Keep in mind that the Cayman Island Dollar (KYD) is worth $1.22 of U.S. Dollars (USD). So if something is marked as $50, it's probably in Cayman Island currency and it would cost you at least USD$61. (Or CAD$91.50.)
