what's the best way to print some of the wonderful designs - like the autograph books, journals and passports?
As I see it, the options are pretty much print them on my own printer, thereby using a ton of ink, OR taking a disk to an office store and having them printed there. Any other ideas? What have you done?

It really doesn't use as much ink as you would think. Two years ago I did three sets of 6x6 autograph cards and about 40 shirts. I started with practically new ink cartridges, and I didn't have to replace any of them when I was done.

I am having the journal done at Kinko's as I can send it to them in email and they will do it on card stock, front and back print and then bind it also- cost is around $30.00ish
I am printing the mousekeeping/tip envelopes, letters, transfers myself- I am still unsure on if I will have the MNSSHP auto cards printed at kinkos or not- I am thinking yes as the time seems to be getting away from me and we leave in 7 days!~
