we just came home from being at the Cape all week, so needless to say, I had some of almost everything I wasn't supposed to have..........LOL..........

Well this is just day 5 out of 21 - but I think well make it fine. :)
Gotta go chop up some kind veggie now!

Edit: Here's the closest recipe I could find. You could always change the peach lemongrass salsa, although it sounds good!

Coconut-Crusted Tofu with Peach-Lemongrass SalsaFrom EatingWell Magazine June/July 2006

The crunchy-crisp tofu and our spicy-sweet salsa are inspired by that restaurant-chain classic, deep-fried coconut shrimp. Make it a meal: Stir fresh cilantro into basmati rice and serve alongside. Try sliced bananas drizzled with "lite" coconut milk for dessert.

Makes 4 servings, 2 tofu steaks & 2/3 cup salsa each

ACTIVE TIME: 35 minutes

TOTAL TIME: 35 minutes

EASE OF PREPARATION: Moderate

3 medium peaches, peeled, pitted and diced
1-2 jalapenos, preferably red, seeded and minced
1 2-inch piece fresh lemongrass, minced, or 1 teaspoon dried (see Note)
1 tablespoon chopped fresh basil
1 tablespoon brown sugar
1 tablespoon rice-wine vinegar
3/4 teaspoon salt, divided
1/3 cup unsweetened flaked coconut
2 tablespoons flour
2 tablespoons cornstarch
1 14-ounce package extra-firm water-packed tofu, drained
2 tablespoons canola oil, divided

1. Preheat oven to 400°F. Set a wire rack on a large baking sheet.
2. Combine peaches, jalapenos, lemongrass, basil, brown sugar, vinegar and 1/4 teaspoon salt in a medium bowl; toss to combine.
3. Mix coconut, flour and cornstarch in a shallow dish. Cut the block of tofu lengthwise into 8 thin steaks. Pat the tofu slices dry with a paper towel, sprinkle with the remaining 1/2 teaspoon salt, then press both sides of each tofu steak into the coconut mixture.
4. Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add 4 tofu steaks and cook until golden brown, about 2 minutes per side, adjusting heat as necessary to prevent scorching. Transfer the tofu steaks to the rack-lined baking sheet and place in the oven to keep warm. Heat the remaining 1 tablespoon oil in the skillet over medium-high heat; cook the remaining tofu steaks until golden brown, about 2 minutes per side. Serve the tofu with the peach salsa.

NUTRITION INFORMATION: Per serving: 251 calories; 16 g fat (4 g sat, 9 g mono); 0 mg cholesterol; 19 g carbohydrate; 11 g protein; 3 g fiber; 491 mg sodium; 313 mg potassium.

i think the bread fairy does make it.........i know i have seen recipes for it online.......i think the sprouted breads at the health food store , in the fridge are gluten free, not sure though.
never thought about gluten.
vegan no problem, been doing that, but the gluten thing is throwing me off. LOL

I can imagine. That would be pretty rough, especially if you're a carb lover like most people I know are. I'm a diabetic but tend to get a little carb crazy at least 3-4 times a week.

Well the Cleanse - is a balance your blood sugar plan too.
So you could do it.

And I guess we can't date - the amount of sweets I eat normally-

Usually I don't like any sort of frosting, but that one was nice. We should have saved the champagne to share with you, but we had that the first night and you weren't there. :( It was yummy with the cake!

So maybe it's a genetic requirement? To be gay or lesbian you must like chocolate? :teeth:

So what is that special diet supposed to accomplish? :) Surely not weight loss?

That cake was soooooo good!!

And yes, I think chocolate eating is required to be gay. I like dark chocolate myself (the darker the better!) although I'll eat any of it.

Chocolate Tofu Mousse

Ingredients (use vegan versions):

1 package of silken tofu (16oz)
10 oz chocolate chips (preferably barley sweetened)
3 tablespoons maple syrup
fruit (strawberries, kiwi, etc...)
optional: vegan graham cracker crust

Directions:

Blend tofu in food processor (or blender) just until smooth. Melt chips over double boiler. Add maple syrup to melted chocolate and combine. Put chocolate & syrup blend into processor and mix with tofu until creamy. Optional: put into a graham cracker crust. Chill. Top with fruit.

Serves: 6

Preparation time: 10 minutes

I hear you Wally. I LOVE chocolate, but it HATES me, I turn into a pubescent teenager getting ready for the prom. If anyone knows what I mean. And I can't stand not being able to eat any.
As far as alternative though, I would look at Whole Food, you know they have Carob chips there, those are probably in the guidelines of the de-tox thingy your on.

Chocolate Tofu Mousse


Conck - where the heck did you get that recipe?! I actually like tofu but in mousse? I don't know. I think I might have to make it just for the curiosity factor.

Actually, silken tofu can make a fabulous mousse (and many other kick-*** desserts--try pecan pie) with a little practice.

Wally -- If you're looking looking for candy...
- Find some vegan organic pure dark chocolate (I've seen it before, I'm just not sure where to get it.) It's usually better with a little bit of sweetening and organic dark chocolate is often sweetened with beet juice which ought to work.
- make a mix of nuts, dried fruits, coconut flakes, etc. (The fruits and coconut will sweeten the mix)
- melt the chocolate (either slowly on the stove, or, in the microwave)
- pour the chocolate over the nuts mix and stir
- drop spoonfuls onto wax paper (or something similarly non-stick)
- refrigerate

Yucca is a taller plant, related to dracena.

LOL they use it A LOT down here, since it's draught resistant and likes the heat. Most people don't realize what you can make out of it... :rolleyes1

I believe the one used in the "Good stuff"
is specifically Blue Agave.

Today is the last day!

Sleeping way better.
And I do feel better.
I think I'll blend some of this into my daily life
but this level is way to strict to stay on forever.
At least for me.
