Does anyone know if you can order 2 appetizers instead of one entree on the dining plan? My daughter usually prefers appetizers and since they are no longer included in the DDP we were wondering if anyone has done some trading?

Officially no but perhaps, at the discretion of your server. I would expect it to be a 1:1 exchange however if the server allowed it.

Yes, according to published (on the DIS) reports and at least a couple of experiences, DDP Guests can order AN appetizer AS their entree.

The TS restaurants are often very accommodating, though indeed, it would be one for one, rather than two for one.

I've been scanning all the menus for the places we have ADRs and it seems that in most cases the even 2 appetizers are much less money than an entree, especially at the signatures. I just know there are rules and don't want to get anyone in trouble so was just wondering if anyone out there actually did this.

I can confirm the one to one exchange. I've never heard of a two to one exchange.
One additional thought...if you plan on mostly ordering an appetizer, or even two, for most nights of your stay - you may want to revisit paying for the DDP. You'd average about $30 worth of food per day (TS and CS included) if you did this.
Average Appetizer - $8.00
Average Drink - $2.00
Average Dessert - $6.00
Average Salad at CS - $7.00
Average Drink at CS - $2.39
Average Dessert at CS - $3.00

Remember it's not just sticker price, but it's also prep/cook time that needs to be considered when you look at exchanges.

And you also need to look at the policy. In 2008, Disney Dining Plan Guests may substitute AN appetizer for their entree. Period. This is the only substitution permitted - and yes, DISers have done it (so I'd think other Guests have, too).
The restaurant MAY (or may not) increase the size of the single appetizer, but you will NOT be permitted to use your DDP credit to get two appetizers in place of one entree.

If your daughter is over 10 you could pay OOP for her dinner (if she just wants an app) then have her credits to use for more meals
