My two favorites are deviled eggs and egg salad
Egg salad....... chop the egg, mix mayo, onions celery and green pepper in.
Deviled Eggs........take the yolks out, mash them with mayo, dry powdered mustard, relish, salt and pepper.

I love them with tuna fish for great tuna sandwiches - cold or hot w/cheese. Also how about curried eggs on toast? Just make a basic white sauce, add curry powder to taste and lots of chopped hard boiled eggs and serve on toast or toasted english muffins.
Goldenrod Eggs is our favorite. Similar to the curry egg recipe. Make a basic white sauce and melt american cheese into it, add S&P to taste. Chop the whites of the egg and add to the sauce. Grate the yellows or break up with a fork until very fine. Spoon sauce over toast and top with the yellows. I estimate 2 boiled eggs/person and 2 pieces of toast. Very filling.
