We will be staying at this hotel and renting a car to go back and forth to disney.
It has been years since I have had to deal with parking at disney (always
stayed on Disney property and used their transportation) can anyone
give me some advice on where to park (MK or Epcot?) getting in and out
at closing, etc?

Forget the parking at Disney, bring a suitcase of cash for the valet at the Marriott.

As you are staying at the closest off-site hotel to WDW are you sure you need a car? Can you not just use the hotel transport to the parks?? If you are set on using a car, though, it is pretty easy to drive in and use the main parking lots - you are only 10 minutes' drive from MK, MGM and 5 from Epcot, and about 15 from DAK. Getting out again is pretty simple considering how close you are, and the hotel makes a great landmark to navigate by!
