Do you have to have a certain number of posts before you can see your subscriptions??

Even when I click on "List Subscriptions" there is nothing there!

if you click on "User CP" it will show you all the threads that have been updated since you last looked... that I find comes in more handy than the list subscriptions thing, unless there is a certain thread you are looking for.
