Hey All!

I may miss something so please forgive me. We tore down paneling and sheet rock in the hall and family room yesterday for 4 hours and my body hurts...got about 2 more hours of work today.

I will take pics later...

Becky, The fondue was great! We had alot of fun...I think next time, I will add some cooked chicken or beef to make it more of a meal (which I was fine with but Tom was missing his meat and I think he got sick of the salami).

Wendie, Glad your Mom is doing better. Hope Ross is and your Grandma.

Kathy, Way to go Kyle! Auntie Laur is so happy!!!

Good morning. Boy is it cold outside. :eek: I think for the most part we are staying in. I do have to get the car moving though so we will go to the bank and maybe to lunch and back home again.

Sheryl Thank you for the coffee. I will make that this afternoon. I think I'll bake something to have with the coffee.

Tonight I'm making beef soup in the crockpot. We need something to keep us warm. It is nice and toasty in the house.

Morning, all! Not sure what's for dinner. Depends on our day, I guess. We ended up taking the kids to McD's for dinner last night, so I'm thinking we'll have soup and sammies tonight. Nothing spectacular, but it's comfort food, and no one has to spend a ton of time in the kitchen.

Tonight we were supposed to drive to ILs and go to dinner at Olive Garden for MILs birthday. DH is still going but I'm sick and miserable. I haven't been sick in almost a year and I'm not pleased. Fever, body aches, trouble breathing, the whole bit. I just got out of bed 15 minutes ago (at 1pm). I can't decide if it's bronchitis or a bad cold.

And of course my mother is flying in on Monday afternoon to be there Wed night for a special service at church for me so I cannot be sick!

DH is going alone while I stay at home and see if I can kick it.

Kathy, the drink is one ounce vodka, one ounce amaretto, two ounces orange juice, and three ounces of cranberry juice, shaken with lots of ice to get it diluted a bit and really cold. That is lemon ginger sugar around the rim.

I am still stuffed, but I decided on dinner. I'm making fajitas tonight. I have beef for my parents and chicken for DH and me. I need to find a marinade for the meat. I am also making rice, refried beans, corn, guacamole, and sauteed peppers and onions. For Liam, I am making burritos. He likes his with corn, black beans, rice, and montery jack cheese. No meat, no sauce!

DH is out running errands, and if he comes back with limes I will make margaritas too!

Aimee, we have a freezer full of filets right now! DH caught an online sale from lobels--it was buy one get one free. I think he bought 30! I told him he was still not getting red meat more than once a week, so they'll be in there for a loooooong time. (How long can you freeze meat for anyway? Does anyone know? I have them in our giant deep freezer, not the regular freezer.) I also wanted to say that I hope you feel better soon.

Evening all....sorry I have been MIA for a few days...between Ross being sick and my grandmothers eye surgery, it has been a busy few days.

Gram is doing just fine, nothing stops this women! She can already see better and can read her paper with out it seeming foggy. This is huge as she loves her paper and has missed it. (she had a film over the back of her lens....like a cateract(sp), but different...does that make sense?!!?)

My mother is doing OK...good days and bad....she is able to eat and drink through a straw now, she was having to have all things thick like honey consistency, but can have regular liqueds and soft foods, etc. Her voice is so much stronger, they took out more fluid from her lungs last night,but things seem to be going in the right direction. (fingers crossed)We are having an issue with her and pain meds, but this is a road we have traveled often with her. Her own DR will be back on Monday, so we will deal with it then.

Ross is getting better, still coughing, but not as hard and it sounds like things have loosened up quite a bit. He seems to have a bit more energy and actually ate a bit last night. School is out until Wed. so he will have time to get plenty of rest.

Kathy--Please tell Kyle that his Aunt Wendie is just so proud of him!!! He is worth skipping a vacation for!! Stand tall my friend, you have raised a wonderful boy(man)!!

Aimee--I hope that you feel better. Try to rest, and drink plenty of fluids!!

Lauren--I can't wait to see your photos...remember lift with the knees, lol.

Kris is actually finishing our main bath this week, it got started 2 yrs ago, but when you are married to someone who builds spec houses....your stuff is always finished last.....I threatened that my girlfriend and myself were going to start laying tile, while the boys were at karate, so I think he is scared,lol....the thing is Jen and I would never get much done after the first margarita, lol!

Lindsey--can't wait to hear how the ring looks and what else is new with the SK's!!

Sheryl--my coffee had a mail mishap I am afraid, in the mail today I had the booklet from the company in a plastic post office bag, with the note "sorry contents were lost etc"......I do thank you though for thinking of me and sending me some!!!:)

I am sure I missed someone....I mean well.....if I missed something major let me know!

Last night we had hash browns with onions, cube steak with fried eggs on top and fresh green beans. Sounds like an odd combo, but was soooo good!!
Tonight will be pancakes and bacon....it is very cold here, and this sounds like comfort food!

Hi! What I did was this: preheated my oven to 400 degrees. Then, I heated up a half and half mix of butter and oil in a thick-bottomed pan. Not too much...maybe 1 tsp. of each. Then, when the oil got really hot and started to smoke, I seared the steak on both sides until browned...not too long...maybe two 1/2 minutes a side.

Then. I put the skillet with the steak still in it right into the hot oven, and cooked it until it reached 115 degrees (about 10-15 minutes for a 5 oz. steak). I then took the steak out of the oven and out of the pan, put it on a cutting board, covered with foil, and let rest until it reached 120 degrees minimum (around 5-10 minutes resting time). That will give you the juicy red but heated through meat you see in my photo.

When the steaks are as thick as this one, I cook with a meat thermometer as opposed to touch. But, if you don't have a meat thermometer, another way to know when it is done is this: place in oven as I said, and then keep touching it every couple of minutes. When the meat feels like the fleshy pad of your plan under your thumb (while it is relaxed), then pull it from the oven. Cover with foil and let rest for a full 10 minutes before slicing.

Aimee I hope that yo feel better soon. Stay in bed and get plenty of rest. The old going around lass for some time so you really need to rest to kick it.

Becky- Your food always looks so good! I have always been nervous about cooking filet's but you make it sound easy.

Wendie- Glad That Ross is perking up. His "bug" packed a triple punch I think. I know that your Mom is up and down but she really has a long way to go to be back to "normal". Her poor body is working so hard, it is going to take some time, I'm afraid.

Now your Gram is one tough cookie, isn't she? Good for her!
I know about the shoemaker's kids needing shoes as well. My DH works for a construction company and can have product delivered anytime. We were the last people on the street to get a paved driveway, and it took years for him to bring in another topcoat of process when our driveway was process.
Dinner tonight was DH request. We had wings and things. It was going to be just us and he has been craving them to munch in front of the TV. I went to store for odds and ends but did not pick up anything to cook for a real meal. My neighbor stops by and Buddy asks them for dinner :scared1:. No problem, I have gotten her 1/2 tipsy on brandy so she is fine with my appetizers, send Bud across the street for her soon to be husband, and we sit down with food in the oven. He does not show up. She calls. He still does not show up. She leaves but is ready to kill him. He is cleaning. Buddy is "forced" to eat all of the wings. I like him but if I was her I would run and run fast!

Kathy tonight beef soup was not one of my best. I really don't have a recipe. I just use beef with a bone ( our grocery store has beef bones, I get the meatiest) and roast them in the oven for about 20-30 min until brown. You can use oxtails too. Put all in a pot I use low sodium beef broth or stock (28oz) a couple of bay leaves, a can of stewed tomatoes and what ever veggies you like.

My soup tonight had no bones and got too salty :confused3. The bones make all the difference to great soup, in my opinion.

Aimee Rest up. The flu is going around my job everyone goes down for at least 48 hours.

I have 2 dogs that think it is summer outside, they keep wanting to go out. I just went out to start my car a get the Sunday paper and I hightailed it back inside.;) I'm no fool.

I'm not sure if I mentioned last weekend that Kyle was asked to try out for the Louisiana Knights traveling summer team which is mainly for exposure to the colleges. I was kinda happy that he was a longshot to make the team as the up-front cost is $2500. He got "the call" last night, he made it.

After church today we are going to the Macaroni Grill with my in-laws and the SKs. They are planning on telling them they are engaged.

ETA: Well, yesterday was a flop. We were meeting the SKs at 1:00 at Barnes and Noble. It's takes about 25-30 minutes to get there and we are usually 10 minutes or so early to everything. While on our way, Scott's cell rings. It's Kevin. Turns out, they are both sick (I knew Kevin had been sick this week). They hadn't even gotten to the jewelry store. They were "both sick and piled up on her couch watching movies."

Ok, and you are calling us at 12:20 and we are meeting at 1?? :mad: Sorry you guys, but this honked me off. They had apparently been together all morning and them waiting until THAT late to call us was inconsiderate. I didn't say anything, but I was really frustrated. He knew we had to be in Chattanooga at 3 to eat with my grandmother and we were going down early for them. He KNEW we would be on our way. So we turned around and went right back home.

I know this seems like a big to-do about nothing, but I just found this really thoughtless. The store the were going to is about 20-25 minutes away from HER house. Tack on another 15-20 to get to the B&N we were going to meet at. If they'd been sick together all morning they knew WAY earlier than 12:20 that they weren't going to meet us. Had they called with the same story at 11 or so I wouldn't have cared one bit. Someone please tell me I had a right to be peeved, pretty please.

I am not going to say anything at lunch today. BUT, if Kevin says anything along the lines of, "sorry about yesterday," I'm going to say, "No problem. But for future reference, a little better notice would be appreciated."

I'm sorry, but you don't do this to people. It's rude. I had thrown out the idea to Robin of us going to Atlanta soon to the Cheesecake Factory and shopping. Kevin agreed. I was going to bring it up yesterday but obviously didn't get to. I have decided to put the ball in their court (yes, again) and let them make plans with us instead of the other way around.

Robin is off Monday and Tuesday, Kevin and Scott are off Monday as well. Kevin is in for the week (not traveling for work). I had told them last week since everyone is in town I wanted to cook for them again, just name the day. I'm really curious to see if they bring it up.

Also, we are not thrilled that they are telling Scott's parents at the restaurant today. We really feel it's a bad time and place. They had NO idea that they are even that serious and I'm really worried for them. They aren't going to take the news well. Not in a "you've got to be kidding me, you barely know each other" kind of way. They will just be really concerned at how fast things are going. They barely know Robin. The stink of it is, instead of leaving the restaurant and going back to my in-laws house to be with them and talk to them, the SKs will probably go pick up them ring. *sigh*

Thanks for letting me vent, you guys. I will let you know how things go. At least I don't have to cook tonight :cheer2:

Morning All!

I think we are going to have some picky type foods for dinner and eat in front of the TV watching the Giants...

Well, we are almost done tearing down the walls. We hauled 1500#s of junk to the dump yesterday and have almost a whole trailer full again. What a workout. I took some pics and will even share the one with my Whiskey Tango outfit on...I went to the dump in my PJs and work shoes...I hadn't even combed my hair!!! :rotfl:

Aimee, I hope you are feeling better. Its so nice that your Mom is coming in for your big day. Its also neat that she sings in the CP!

Wendie, Glad to hear Ross, Mom and Grandma are doing well. I continue to pray for your Mom...I hope each day brings her strength.

Lindsay, I would be a little POed if I was on my way to see people and they cancel at the last minute. Don't let it eat you up though...I have had many people p*ss me off and let it get to me...it really is not worth it. Believe me, many sessions of counceling have made me realize this. ;) I do hope Scotts parents take the news OK. It seems like the SKs are perfect together but I also see this from the parents views and they are just looking out for their son but like you said, I would tell tehm at home and not a public place...to each his own though...just remember, it is the SKs decision so whatever happens its not on you. I hope this makes sense. Some times you need to separate yourself from the choices other people make.

In the meantime she is saving her money (she says she is going to pay for the trip) by moving money from one container to another. That way her Pa won't have to pay so much money :goodvibes He doesn't stand a chance. The last time he teased her about not knowing if he could go to Disney she dragged him into her room, took out all of her purses and told him she would share her money with him so that he could go. The next day he told me to book the Poly so that she could stay where Lilo lives. He's been watching her look for chores around the house so he knows she has something up her sleeve :rotfl:

That is so sweet! Buddy doesn't really stand a chance, does he? :rotfl:

Sorry I didn't post while you were asking about a trip just after Thanksgiving. This year was the first time our trip was timed for then. We drove down the Sunday after Thanksgiving and returned the following Sunday. With the exception of our last Saturday, the crowds were very low. We haven't done the CP, because there is no way Hailey would sit through it, but the Christmas decorations are my favorite part. The parks and resorts are decorated so beautifully.

And as an aside, if you do the DXDDP, try to have dinner one night at Narcoossee's. We've been there four times and have had really good meals there. Also, you can time the dinner to see the fireworks - the early dinner can catch Wishes, a later dinner can catch the MVMCP fireworks. They pipe the music into the restaurant and we have been lucky enough to be able to watch from the warmth of our seats on most trips. On the others, we were able to watch from the restaurant's deck. You can also see the Electric Water Parade from there. I think Kady would really enjoy it.

I hope all those who have been ill are feeling better.

Hailey has had bronchitis and has just completed her round of antibiotics. However, she is still not quite herself, not really eating much. I'm not sure if perhaps her throat is sore or if she just doesn't feel good enough to eat, but I can barely entice her to eat anything.

She was taking Zithromax and just completed her last dose last night so I thought she was supposed to be well by now. Is anyone familiar with how that medication is supposed to work? Should I take her back to the Dr? Her fever is gone, but she's just not well.

I won't be back on today. I need to get busy with the year end payroll, not that I can seem to find the self discipline to get it all done.

I think my family drama is now at a workable place. My sister is doing much better and seems to be at a good place emotionally. She still has some tough days ahead, but I think she is now able to face them. We went to see her last night and allowed her to just vent. Kenny and I both agreed that she was more like herself last night than she has been since everything happened.

Tonight's dinner is a Bavarian Stew. It's a new recipe for me, so if it is good, I'll post. Ok, now I guess I better get to work.

Gretchen, you should call the doctor. If she is not feeling better and has finished the zithromax she might need another round of antibiotics. I know that I have needed two courses before for bronchitis, and Liam also for a strep throat. We are all getting more resistant to antibiotics.

Today we are eating with the football game. GO PATRIOTS! I am making two huge sandwiches--one is a complete meatfest, and the other is a grilled vegetable pesto one. There will also be lots of different chips and dips. I'll post photos later.

Just a quick post to let you all know that my mom passed away this afternoon around 12:15.
I had called at midnight to check on her and she was having a really rough night, and they called my dad in at 8am this morning. My brother is going to fly down to take care of the cremation, and her remains are being shipped to me in Maine....we will take care of her wishes this spring or summer, when everyone can get here. She wants her ashes buried at the family cemetary, and a few ashes scattered in a special place in Acadia National Park.
I will go do a small obit. tomorrow at our local newspaper.
I am so happy we all had the week we did with her..Thursday we talked for 20 min.
I am very numb right now, as things were looking so good.
My heart breaks for my brother as it is his b-day today....I know I didn't want it on mine, but I sure as hell didn't want it on his either.

Just a quick post to let you all know that my mom passed away this afternoon around 12:15.
I had called at midnight to check on her and she was having a really rough night, and they called my dad in at 8am this morning. My brother is going to fly down to take care of the cremation, and her remains are being shipped to me in Maine....we will take care of her wishes this spring or summer, when everyone can get here. She wants her ashes buried at the family cemetary, and a few ashes scattered in a special place in Acadia National Park.
I will go do a small obit. tomorrow at our local newspaper.
I am so happy we all had the week we did with her..Thursday we talked for 20 min.
I am very numb right now, as things were looking so good.
My heart breaks for my brother as it is his b-day today....I know I didn't want it on mine, but I sure as hell didn't want it on his either.

I've read back a few pages to try and get a little caught up- but I'm sure I've missed alot. Rick and I have been suffering through viral pneumonia and trying to move- the two don't really go together well. But we're out of the store- I'm no longer a business owner:sad1: . But if ya'll need anything embroidered let me know - I got product coming out my ears in the new place. Next on the list is moving the apartment- but we're going slow to try and avoid relapse. Hopefully I'll get my internet back in a couple of weeks. :worship:

Hailey has had bronchitis and has just completed her round of antibiotics. However, she is still not quite herself, not really eating much. I'm not sure if perhaps her throat is sore or if she just doesn't feel good enough to eat, but I can barely entice her to eat anything.

She was taking Zithromax and just completed her last dose last night so I thought she was supposed to be well by now. Is anyone familiar with how that medication is supposed to work? Should I take her back to the Dr? Her fever is gone, but she's just not well.



Never apologize for not getting back to me. This thread moves fast it is easy to start responding and still miss a lot. Kady loves the Electric Parade, but i never thought of Narcoose as a family friendly restaurant. Now I need to get over to the menus to check this one out as well.

I don't know a lot about antibiotics but I believe the Zpak is supposed to keep working after you stop taking it but I would call the Dr as a precaution to see if Haily needs to be seen again. AS Becky said some of these bugs are pretty drug resistant. I hope your Baby feels better soon.

Lindsay- I am on board with Lauren and Kathy on this one. I'd be in a bit of a snit but I'd let it go. It has been my experience that lovebirds tend to forget everyone else for a while. I do feel badly for your IL's though, a restaurant is not the best place to get news that you are not expecting.

Dinner tonight was no dinner :rotfl2::rotfl2: We went to a pancake breakfast after Mass that the Knights were hosting in the Parish Hall. Then I went shopping with DD and DGD and was treated to a late lunch at Red Robin. I cannot eat another thing so I picked up a tuna sub at Subway for Buddy to munch in front of the game. I had a beautiful spoon roast so I will fix that tomorrow with Becky's Mom's directions.

Y'all, I feel like death warmed up. I honestly think it's flu. I have one of the biggest days of my life this Wed night, so big that my mother is flying in from Florida tomorrow. I don't know what I'm going to do.

I'll call the doc in the morning and try to see him. If nothing else, he can shoot me with some steroids so I can breathe again.

How long does the flu last? I start running fever Thurs night. Is it almost over?

You need to get into your Dr. When I was sick last time it was the flu combined with a sinus infection and I ended up needing two doses of antibiotics. I'll keep you in my prayers.:hug:

Aimee- you call the Dr and then rest rest rest! I know that this Bug thing last a while, Buddy felt like a train ran over him for almost a week. He slept a lot.

See if the Dr can get you meds, it is only Sunday so you have two full days to start feeling better. Now don't take this wrong, I am a Mom so I can overstep here. When your Mom gets in, let her take care of you. She will in a heartbeat, but if you try you will not get over it. Aimee, did you share what is happening on Wednesday? I'm sorry but I must have missed it, if you didn't I'm sorry to intrude.

A spoon roast is a sirloin roast. They call them spoons because "they are so tender that you can cut them with a spoon". When Becky called it a sirloin roast I had no idea what it was. We always see them as spoons here.

They are on sale $3.99 LB at Geisslers in East Windsor, Granby, Windsor and South Windsor. Stew Leonards also has them on sale for $3.99, I think they are in Newington. I am going to make the trip, about 40 minutes for me, the meat is so good, no antibiotics and hormone free. I saw sirloin steaks but I think they will cut to order for you. Where are you located, if you don't mind my asking?

Aimee, if you have the "real" flu you are in for it. It stays for at least 10-12 days. I swear, when DH and I had the flu, it was the sickest we have ever been, and I have had double-lung pneumonia. We were so sick we could not even move. We had to CRAWL to the bathroom. We were too weak to walk there. We slept on our couches in the living room with water all lined up next to us, because we were too weak to get to the refrigerator. I was too sick to cook, some days we ate nothing...to give you an idea of how bad it was, the remote for our TV was broken, and we both felt too weak to get up to change the channel! Our TV was stuck on PBS non-stop. This is how we discovered the Teletubbies. :confused3 I really hope it is something else. I am not exagerrating BTW. I can absolutely understand why so many older or weakened immune system people die of the flu.

If you have the flu you would be running a high fever, around 102 or higher and you can't keep it down with advil for more than a couple of hours. You would also be feeling a decent amount of pain in your joints, esp. places like your elbows, knees, knuckles, etc. I tell you this hoping that you will not have these symptoms!

Lori - Good to see you girl! I hope you and Rick get to feeling better soon. It must be miserable trying to move and fight pneumonia at the same time. As for your embroidery business, are you still planning on operating some from your residence? I ask because my brother and his wife are having their first baby in July and I'm sure I'll pick up a gift or two ;) for the new baby.

We've seen kids there every time we've been and their children's menu seems to offer a little variety. The children we observed loved the view of the Magic Kingdom and seemed to be enjoying themselves. Only you know how Kady will do, but with the beautiful gingerbread house in the hotel lobby, it is worth the trip to the Grand Floridian at that time of year.

You poor, poor thing! And I know whereof I speak. Hailey, while 10, is developmentally in the 2-3 year age range and STILL watches the teletubbies. So I've had about 8 years of the joy of Teletubbies and believe me when I say I both cannot think of a torture worse than being confined to a couch and being forced to watch Tinky Winky and the rest of the gang. :scared:

Thanks for the antibiotic advice for Hailey as well. She tends to have a difficult time shaking any illness, so I think I'll call the doctor tomorrow and see what he says.

Tonight's dinner ended up being takeout Chinese. I worked until around 7:30 and just couldn't face dinner too. So I'll try cooking again tomorrow.

That sounds horrible. I am not that bad, thankfully. Tonight I got a rare burst of energy so I took a shower. First time since Thursday morning (gross.) I am sitting upright right now, too! Small steps, I suppose.

Liam had a problem with this the first time he had pneumonia. It didn't work, and they had to give him a couple antibiotic shots and then something else. If Hailey's fever returns, you definitely need to talk to the doctor again.

Thanks, to all of you for the good luck wishes and congratulations to Caili. She did place first in her individual event -- she was so excited she was jumping around and telling everyone about her medal. She is usually pretty quiet at the rink, so everyone was surprised at how vocal she was this weekend. Her team also got first place (they beat the book this time!) and deserved it. They really came together and skated well. She only got third in her other event, but it ran an hour late and I think she was just ready to leave at that point. In fact, her coach came running down the walk as we were making our way to the hotel saying that the bus was waiting for us.

Lake Placid is pretty, and it was a good experience, but I'm not sure how eager we will be to return. For the most part, we traveled six hours, and the individual skaters and the teams competed against the same kids we compete against here, with a few different competitors here and there. It was a little baffling. I would go back for a different week, but I don't think we would go back for this particular competition.

As for the food, we liked the restaurant near our hotel, Charlies, although it was overpriced. The food was good, though. We had blueberry pancakes one morning that were delicious. I also had a chicken dish with an herb infusion and a sauvignon blanc reduction that was very good. Unfortunately, my stomach wasn't 100 percent for most of the weekend, so I couldn't enjoy the food as much as I normally would. Caili basically stuck with grilled cheese.

A little update on the Seriously? Seriously?! (a la Grey's Anatomy) moment I was writing about yesterday.

Like I said, I wasn't planning on saying anything to the SKs yesterday unless they brought it up. They had already gotten a table at the Macaroni Grill and we knew our ILs were a good 20 minutes behind us. Let's just say they had "sobered up" big time and were falling over themselves apologizing to us. Talk about making me feel better. They both, the doofuses, had taken Nyquil that morning and were in a haze. They had gotten comfortable on her couch, dozed, and realized neither one of them had called us.

They knew they had screwed up and that we were a little honked off. Especially after Kevin asked us what we ended up doing instead. We turned around and went home. You talk about his face completely falling. Anyway, all is well in that area.

Our ILs reaction shocked me. They actually laughed and said they weren't surprised!!! So everything is good with them!! :cheer2:

Kevin asked if we wanted to get together on Friday and we said sure. So we will see how that goes :)

Hey all--why is that life doesn't stop while you're on vacation. I have been super busy ever since getting home last week. No major cooking from me in a couple days. We had dinner at our neighbors last night. He grilled an excellent pork tenderloing served with something called Jezebel Sauce (to die for!--gonna get the recipe for ya'll) Tonight is going to be sausage and peppers

I can just picture your Cutie bouncing around on her skates! I am also thrilled that they beat "the book". I am still confused that a book can outstate and out perform children but what do I know? Dinner tonight is going to be the roast I did not cook last night, garlic bread, some kind of potato ( I want the Greek roasted, but my family is craving mashed) veggies and a salad.

My mom is bringing me some fish chowder when she drops off Liam, so that is what is for dinner tonight. It is freezing here today, and we have a couple hours in the ice rink this afternoon, so chowder will be perfect.

Thanks, to all of you for the good luck wishes and congratulations to Caili. She did place first in her individual event -- she was so excited she was jumping around and telling everyone about her medal. She is usually pretty quiet at the rink, so everyone was surprised at how vocal she was this weekend. Her team also got first place (they beat the book this time!) and deserved it. They really came together and skated well. She only got third in her other event, but it ran an hour late and I think she was just ready to leave at that point. In fact, her coach came running down the walk as we were making our way to the hotel saying that the bus was waiting for us.

Lake Placid is pretty, and it was a good experience, but I'm not sure how eager we will be to return. For the most part, we traveled six hours, and the individual skaters and the teams competed against the same kids we compete against here, with a few different competitors here and there. It was a little baffling. I would go back for a different week, but I don't think we would go back for this particular competition.

As for the food, we liked the restaurant near our hotel, Charlies, although it was overpriced. The food was good, though. We had blueberry pancakes one morning that were delicious. I also had a chicken dish with an herb infusion and a sauvignon blanc reduction that was very good. Unfortunately, my stomach wasn't 100 percent for most of the weekend, so I couldn't enjoy the food as much as I normally would. Caili basically stuck with grilled cheese.

Glad to hear you all had a good trip & Caili did so well!:goodvibes

Lindsay, And us Southerners are miserable with weather in the 30's overnight & just climbing into the low 50's today! 15 sounds really cold!

I just wanted to stop in and thank you all for your kind words, thoughts and prayers...they mean so much to me.
We are all still in shock here, and it just hasn't hit home yet. I am just so sad.
I find comfort in the fact that we all had a chance to talk to her once more, and now she is finally at peace.....but my goodness, do I miss her something terrible, just takes my breath away.

I hope everyone is doing well. Again, thank you all so much for just being you!

Just popping in - saw the doc this morning, he thinks it's pneumonia. Chest xray results will be in tomorrow morning but he's treating it as such. My breathing is getting worse and worse =( I am leaving in about 20 minutes to go get my mom from the airport.

I had big plans to cook some nice meals for mom but I am not planning on cooking anything anytime soon. I do have an appetite, just not much strength to eat, so maybe we'll get something out.

Just a quick post to let you all know that my mom passed away this afternoon around 12:15.
I had called at midnight to check on her and she was having a really rough night, and they called my dad in at 8am this morning. My brother is going to fly down to take care of the cremation, and her remains are being shipped to me in Maine....we will take care of her wishes this spring or summer, when everyone can get here. She wants her ashes buried at the family cemetary, and a few ashes scattered in a special place in Acadia National Park.
I will go do a small obit. tomorrow at our local newspaper.
I am so happy we all had the week we did with her..Thursday we talked for 20 min.
I am very numb right now, as things were looking so good.
My heart breaks for my brother as it is his b-day today....I know I didn't want it on mine, but I sure as hell didn't want it on his either.

Wendie - I'm so very sorry for your loss. I didn't even get on the computer yesterday afternoon, so I didn't see this until now. Please know that you are all in my prayers. :grouphug:

Anyone hungry I had a Birthday Party for Tom and I had about 20 ppl here, but I think I made lasagna for about 50! LOL We have meaty lasagne, cheesy lasagna, and chicken and broccoli lasagna! mmmmmm Come on in I have a fridge full of lasagna left overs!

Send some my way! Think it would make it all the way to Utah? I love to eat lasagna, but am way too lazy to make it for myself! The chicken and broccoli sounds amazing!

I have to say I'm looking forward to mom being here. DH is NOT compassionate at all, though he did bring me food so I didn't have to get up. Maybe I was pathetic enough?

You are not intruding - I have not shared, mainly because I am always afraid someone will make a remark about it. :sad1: My church is ordaining me on Wednesday night. I am very nervous about it, but excited too. I really need to be 110% by then. We are still firming up the service so I'll have to just call the pastor tomorrow and discuss some of it from home.

Aimee - this is HUGE!!! Congratulations!!! What a wonderful thing for you! I'm so very proud of you. We know how hard you have worked for this! You should be so excited and proud of yourself. I'll keep you in my prayers for a complete recovery by Wednesday night! Oh, I wish I could be there with you to celebrate in person, but you can be sure that I'm cheering for you here in Utah!

Well, I was planning on heading to the store today to do the week's shopping, but we woke up to a blizzard this morning. I'll post some pictures later and you can see what we're dealing with. I detest the snow!!! It's worse now, since we live right at the base of a mountain, so we get all the mountain weather. Ick!!! The kids are stuck in the house, too, since it's a holiday, and they are going stir crazy!!! Oh well.

Since I'm not going anywhere, I decided to defrost some ground turkey and make Poor Man's Stroganoff for dinner. The kids will like it, and it will be warm and comforting.

We had Thai Peanut Chicken for dinner last night, and it was seriously yummy! I'm including the recipe for anyone who wants it:

Thai Peanut Chicken

8 boneless skinless chicken thighs (2 pounds)
1 bottle Thai peanut sauce (in the Oriental section of the grocery)
2 medium carrots, sliced (3/4 cup)
4 medium green onions, sliced (1/2 cup)
1 cup uncooked converted white rice (I used brown)
2 1/4 C. water
1/4 C. chopped peanuts
2 Tbsp chopped cilantro
1/2 C. chopped red bell pepper, if desired

Spray slow cooker with cooking spray. Place chicken in cooker. In medium bowl, mix peanut sauce, carrots and onions; pour over chicken.

Cover; cook on Low heat setting 5 to 6 hours.

Cook rice in water as directed on package; spoon onto serving platter. With slotted spoon, remove chicken from cooker; place over rice. Pour sauce from cooker over chicken. Sprinkle with peanuts, cilantro and red pepper.

I left off the cilantro and red pepper, since my kids don't like them. This was really good. I was afraid it would be too spicy for my kids, but they ate it up and asked for more! Picky eater Jacob even asked me to put the recipe in my permanent file!

Hello everyone. The frigid temps have eased somewhat. The air temp are above zero but the wind chill is still near zero, we are currently getting some snow. I can hardly wait for summer or at least spring. I'm tired of dressing in layers I feel like the little boy in Christmas story.

I just have to stop by and thank Becky and Laura's Mom for her beef cooking guide. It has been years since I cooked a beef roast like this, I generally stick with prime rib and only on special occasions so I was a little rusty. I think the flour coating was the secret because it was tender and juicy, perfectly seasoned and the crust resembled the crust on a nice rib eye roast.

I use a convection roast so I reduced the cooking time about ten minutes to compensate and it was perfect. Ladies, give your Mom a big hug from Buddy. He said dinner was too good for a weeknight :lmao::lmao::lmao:Then he said that he was so full but he wanted to keep eating :thumbsup2. I don't hear this often so your Mom is his hero!

Just drop me a line when ya'll are ready, I've got lots of infant stuff- pink and blue. Even some teal and yellow for the "not sure"s. And Lauren, not sure how old the siblings are but I just did a "go-go" bag for my cousin's kids and they liked them. Not as racey as it sounds:rotfl2: Like an older kids travel bag- snack baggies, hand sanitizer, notepad/pen, some toys- Actually my travel bag has about the same things in it!:lmao: But it had "Tucker's Go-GO Bag" and a plane (that's his thing) on it and his sister's had a puppy.

But there's loads of stuff here so let me know what cha might want.

Aimee- Congrats to you! That's alot of work you've put in and I'm very proud of you too.

Tonight I made Shepard's Pie plus another one to freeze and two meatloaves for the freezer. Found out last night Rick doesn't care for Chinese Five Spice. How disappointing.:rotfl:

Hi! What I did was this: preheated my oven to 400 degrees. Then, I heated up a half and half mix of butter and oil in a thick-bottomed pan. Not too much...maybe 1 tsp. of each. Then, when the oil got really hot and started to smoke, I seared the steak on both sides until browned...not too long...maybe two 1/2 minutes a side.

Then. I put the skillet with the steak still in it right into the hot oven, and cooked it until it reached 115 degrees (about 10-15 minutes for a 5 oz. steak). I then took the steak out of the oven and out of the pan, put it on a cutting board, covered with foil, and let rest until it reached 120 degrees minimum (around 5-10 minutes resting time). That will give you the juicy red but heated through meat you see in my photo.

When the steaks are as thick as this one, I cook with a meat thermometer as opposed to touch. But, if you don't have a meat thermometer, another way to know when it is done is this: place in oven as I said, and then keep touching it every couple of minutes. When the meat feels like the fleshy pad of your plan under your thumb (while it is relaxed), then pull it from the oven. Cover with foil and let rest for a full 10 minutes before slicing.

Since Becky posted that Asian soup I've been craving it. So last night I made a soup with buckwheat noodles, mushrooms, bean sprouts, chili paste etc. Tasted really good but definitely not as pretty as Becky's, so I didn't take any pics! We also had seared tuna with it. I think I'll make my Benihana salad dressing tonight & serve the salad with the leftover tuna on top. Still have soup left too, so not too much cooking today.

Morning everyone! Well, the storm has moved out, and it is COLD COLD COLD here! For dinner we'll either have pepper jack chicken pasta, or pizza. It depends on whether or not I want to go out in the cold to the store, or just pick up the phone and order pizza. Guess what I'm leaning toward?

Lauren - if you want, you could send Andrew here to play in the snow. We've got PLENTY!!! We also live about 40 minutes away from 3 ski resorts. Come on, ya know ya want to come play!

Mom is here and I'm already feeling a little better. I called in again today. I feel badly that we are stuck inside but it's cold and rainy and I don't need to be running around anyways. Maybe we'll go out later.

Then I ate Marisa'a empanada because she was not quick enough with her bean burrito and crunchy thing. Next time she won't mess around :rotfl:

Tonight I would like stuffed peppers and have the ground turkey thawing. I have not heard if my neighbors are joining us for dinner so I am up in the air because I have a smoked shoulder that I could cook. We have no idea if they are going to come because she was furious with him on Saturday, Buddy was up at 2 AM and said every light in the house was still on.

Morning, everyone! I am just getting the kids off to school and then I absolutely HAVE to get to the store. I just want to stay in my jammies, but that won't happen today.

DH ordered pizza last night since he said I shouldn't have to cook on my birthday, so that's what we ended up with last night. Tonight I'm making the pepper jack chicken pasta. Yummy! It's spicy, so I know my kids won't eat it. I'll throw together some mac and cheese with tuna fish for them. More pepper jack for me!!!

DH is taking me to Cheesecake Factory for my birthday dinner on Friday. Any suggestions? It's brand new here, and I've never been to one before. I'm so excited!!!

Aimee - I'll be thinking about you today and praying for a wonderful night for you! I'm so glad that your mom is there to share it with you! That quiet sound you'll hear in your heart will be me in Utah cheering for you!!!

Glynis, I did not know that yesterday was your birthday! Happy Birthday! Now, as for the Cheesecake Factory, I have two things to tell you.

1. Be prepared to wait. For whatever reason, this place is always packed. Around here, the waits are usually at least two hours. Sometimes three!

2. The portions are gargantuan. I mean, huge. If you order a pasta dish, it is going to have about a pound of pasta in it. If you order a chicken dish, you'll get three boneless breasts. Stuff like that. It is expected that you'll take food home for lots of leftovers. Or to feed to the army you have camped out in your backyard. Or something.

It's a really popular place and I'm sure you will have a great time. Their cheesecakes are justifiably famous for their decadence.

I'm not sure wfd tonight, but am leaning in the same direction as Laura....soup.

Hailey seems to be doing better. She still hasn't been eating very much, but otherwise, she seems like her old self. I called her dr who wants to wait and see if her appetite improves.

The Bavarian Stew on Monday was pretty good. It had a sweet taste that I wasn't crazy about and I thought it could use more spice, but the kids liked it and Kenny rated it a "4". If I make it again, I'll use less sugar and maybe season the pork some prior to browning.

Last night we had Chicken Parm. I modified it to make it lighter, but it was still good. Tonight will be leftovers.

Just got back from grocery shopping. Guess what I found at Costco? Croc's for 21.99. It almost makes staying home today worth while. I think I've finally caught the cold/flu bug oh yeh!

Thanks, everyone, for all the birthday wishes. I had a really nice day, yesterday, but I really don't like a lot of fuss for my birthday. My kids put together a treasure hunt. At the end of the hunt was a shoe box that they had filled with notes to me telling me what they liked about me. That was a much better present than the chocolate fountain they bought me!

Kathy, That is one sweet boy you have there! I think if he can even bring himself to say that already, he is going to be fine! You've done a good job Mom, but now Kyle is going to have to do some of the hard parts of "growing up" on his own. Geez, I thought I had posted yesterday, but guess not. We had chili and corn muffins last night. Tonight was Glynis' Creamy Tomato Chicken. It was really yummy and easy! My thoughts exactly. And as cute as Kyle is, it won't take him long for someone to make sure they are in his line of sight. Not to mention what an incredibly nice guy he is. He was so sweet with my kids at the Boardwalk pool - not the typical teenage boy at all. Some lucky girl will grab him now that he's single.

:lmao: :lmao: It must. My great grandmother cooked bacon every morning and used the grease to cook almost everything else. I can remember the container of bacon grease in her fridge. And she lived to 85.

We are having one of Tom's favs...mexican chicken. All I do is put it in the crockpot with diced onion, a jar of salsa and a can of cheddar cheese soup...maybe some spices if I want extra zing. I'll serve it with rice and broccoli.

Hailey seems to be doing better. She still hasn't been eating very much, but otherwise, she seems like her old self. I called her dr who wants to wait and see if her appetite improves.

Janice- I hope that your cold/flu does not last too long. Kady has been fighting it as well and this morning I kept her home. It is cold and raw out so we are going to watch some original Mickey Mouse Club episodes later on. Please rest as well.

Dinner last night was good. We had New England Boiled Dinner. A smoked shoulder, potatoes, carrots, rutabaga, cabbage, steamed green beans and rye bread. Chocolate fudge cake for dessert with coffee.
Tonight we are going to have those darned stuffed peppers with mashed potatoes. I want to make a vegetable soup with the stock I kept from the ham if I have time today, if not I'll make it tomorrow.

Morning ladies!

Thanks so much for all the words of encouragement for Kyle. I felt so bad for him because he is such a sensitive kid. His problem was that he was TOO good to Abi, if you know what I mean. After spending the week with them at Disney I realized that what Abi wants Abi gets and Kyle would do anything for her, which can be a good thing if it's mutual. Anyway, he has a great group of friends that are rallying around him, we had a houseful of boys last night, so we got pizza for all! We found a car for him and we're going to pick it up later this morning. I'm sure he'll be happy. He told me last night after all the boys left that there's already four girls, according to his friends, that are interested in him. He said he wants to focus on baseball right now!!!:thumbsup2

WFD - The Hamburger steaks I was going to make last night.

Lindsay - you can go two ways with the gravy. You can just use the packaged gravy mix or you can saute your onions & peppers, sprinkle with some flour, add beef broth and simmer away. Whichever way you choose, adding one teaspoon of prepared horseradish gives it a very unique "zing". No one will know it's there. As Rachael would say "What is that in there".;)

The kids have been asking for chicken wings, so I am going to make two kinds: sesame and another type for Liam since he doesn't like the sesame wings. With it, I am serving rice...again, two kinds...plain for Caili and fried rice for me and Liam. I'm not sure about a vegetable yet.

I was attempting to help someone find a recipe from this old "monster" thread, but was having some difficulty with the page numbers.

Has anyone attempted to recoup your recipes for you? Do you have a new index with correct page numbers?

I just found that in Part I the recipes for pages 1 to 200 seemed to be correct, but the recipes that should appear on pages 204 to 208 were missing. The "next" recipe (after Easy Yummy Cobbler on page 200) was found on page 208 & it was Ranch Mashed Potatoes which theoretically should have been in Part 3 on page 208.

Anyway, if you still need those recipes I would be willing to work on figuring out where things are wrong & create a new index for you. It would take some time, though.

Wow, that is such a nice offer, and it would be great if a new index could be put together! :) There are tons of recipes in the monster thread, and of course now the index is only accurate for the first block (I think!). Any help would be greatly appreciated. There might even be some folks on the current thread who could help pull the recipes for a new index. I'd offer myself but after tomorrow I am offline for the next three weeks.
