The storm has already passed. Dumped quite a bit of rain but we must have missed the extreme wind, yeah:cool1: .

OKWMom I've never had boiled peanuts. Do they taste much different?

Oh my yes. They are soft which can take some getting used to if you like them roasted, but they are addictive. You buy green peanuts from the produce section and boil them in salty water. After they are done, you let them brine in the salt water until they have the desired taste. They are best when they are hot, but I will eat them out of the fridge until they are gone. I craved them while preg. but due to my water retention, I couldn't have any. My wonderful father paid an arm and a leg to get me some out of season when my daughter was born.

I would love to meet you too! Since we mentioned it a couple of days ago, I've been thinking of good ways/times. I love the Boardwalk area, so maybe we could meet over a drink somewhere. I think we would have a great time.

I've been thinking about it too! Should it just be you and I or do you want to include the families? Mine would probably enjoy me being gone for a while.:rolleyes1 Boardwalk area has so many great places too!!!!!!

ETA: Forgot you're staying pretty far from me, so family meet would work!! Maybe we should PM about this and not take up space on this thread.

I am going to a baby shower this afternoon (my trainer). Afterward we are going out to eat, not sure where yet.

ETA: I was just sitting here trying to get an idea of what to make for dinner next week. I happened upon the pic of the Glynis Pizza Meatloaf Muffins. My husband happened to look up at the computer and saw it, then asked what restaurant that was at :) I told him it was a Glynis recipe and he said, "Ooooooooooooooooooh make that next week!" :lmao:

Thanks to all about the Kindergarten support. It is difficult. Caili and I are very close (not that Liam and I aren't, but it is different) and she has always been so Mommy-attached.
Anyway, with all that, I figured dessert was in order.


Kindergarten is a big step...:hug: I still cry...communion, school plays, etc.

That's baby Harley - a Shih Tzu - as a puppy. Here he is all grown up, his coat changed SO much - it still continues to lighten. He doesn't like the flash :lmao:

Ok all the truth with the lobster screams, BUT first let me say this: I grew up on the lobster boats....My uncle (a marine zoologist) and father (a lobsterman, barber and then in later years worked for the DMV----he can cut your hair, fail you for your license, and tie a bib around your neck in 10 min,lol) used to tie me with a rope when I was just starting to walk until I was around 5 so I could get around the boat but not go over board (thoughtfull huh?!!?) I was hauling pots by age 6 and by 7 I was putting stakes in their claws.....and yes one did get my finger and break it....SOOO onto what I know of the lobster and their cooking "sounds"
------Yes they do make a sound that seems like screaming, but it is only really the sound of vented steam from the layer of seawater between the lobster’s flesh and its carapace.


When we get our "road trip" together and get here to Maine .....I will cook them for you all.......all you will have to do is crack 'em up, and start dipping!!

That is how Ross and I are.....he is my baby boy....we are super close and he still at the age of 10 loves to cuddle up with me......

Last night DS and DD took us out to Friendly's to celebrate my oldest closing on his condo. I really don't know what to have for dinner tonight. I want tuna sandwiches but I am peevish with Buddy so I think we may have Quesadillas.

Did you have a Reeses Pieces Sundae??? We cannot go to Friendlys w/o having one!!!

What page is the recipe on? I can't find it.

I see Hersey found it for you...I actually crave these now! I could kiss Glynis for posting all her great recipes...:) .

I added a couple things like grated cheese to the meat.

First day of hurricane season and there's a storm out there already, not a good sign. Looks like I'll have to drink my way through hurricane season, starting now!!:laughing:

DD8 and DS are both out tonight, DH is working late and said to eat without him, so it is just DD9 and me. I fixed her some chicken nuggets and I have settled into a wonderful dinner of my one of my favorites......boiled peanuts and cold beer. My Daddy called me today to say he had just made a batch and had a ziplock bag in his fridge with my name on it. :cloud9:

He asked me if my DH liked them and I said "who cares?" He may never know I had them. ;)

I made the Glynis Ranch Potato Salad yesterday and it is another hit. Between the pot roast, the meatloaf muffins, and now the potato salad, she is a goddess in our house...:)

Not sure about dinner tonight. Dsis got me a movie theater gift card for my bday which includes free babysitting from her. So DH and I are going to see POTC tonight--that's after a long day of shopping--got some bday money to spend, baby shower gift to buy, paint to look at, etc. I think DH will be in need of a strong drink after all that! All I can say, is a day of shopping and some Capt. Jack eye candy tonight, what a glorious day!:love:

Tonight I plan on making Glynis's pizza meatloaf muffins. I can hardly wait.
I might even make a dessert of some sort. I work today for a few hours I'll have to see how much energy I have after 5 hours on my feet.;)

We are going today to see DH's dad who is back in the hospital. His cancer treatments were going well, but they have discovered it in a new place so we are now back to wait and see. Anyway, we will probably have a late lunch after the hospital. We will probably go to a restaurant located on the water in Mt. Pleasant (technically Shem Creek) - Vickery's. They have some of the best burgers in Mt. Pleasant or one of my favorites, Cajun popcorn which are fried crawfish tails. They also have a lime marinated grilled grouper sandwich that is out of this world. I guess I'll have to decide when I get there.

Lauren - :scared1: Yes, Kyle is getting his drivers license Monday, I'm petrified. That video had me :rotfl2: , that will be us one day, honey! Also, Glynis' potato salad is incredible if you heat it up. Kyle discovered this by accident.:cool1:

Gretchen - I will keep DH's Dad in my prayers, I dealt with cancer (my Dad) for 15 years, it's like walking on eggshells.:hug:

I'm glad you are safe. I saw the predictions on the news last night and thought of you. I never thought of Lauren, but I knew heavy weather was coming in from down state. She got it first. Sorry Zilla!

We are going today to see DH's dad who is back in the hospital. His cancer treatments were going well, but they have discovered it in a new place so we are now back to wait and see. Anyway, we will probably have a late lunch after the hospital. We will probably go to a restaurant located on the water in Mt. Pleasant (technically Shem Creek) - Vickery's. Dinner last night was quesadillas that Marisa made. Yummy! Pookiepotpie did not get stuck with tuna and Kadysmom avoided leftovers one more time!

I offered to fix DH a hot dog or a chicken sandwich, but he tried to get his own, dropped the chicken all over the floor, glared at the chicken all over the floor, tosses the poor chicken in the sink and proceeded to clean the poor floor, lost his appetite and had a granola bar :rotfl2:.

I have to add the "Road Trip" thing has me singing the theme song fro Lampoon's Vacation in my head, and it won't go away. After Buddy lost the war with the chicken, I kept seeing Clark at the Grand Canyon but I was giving him a little push :rolleyes1. DD says it is "justifiable" I just wanted to know if it would come under "AD&D" . Today is is almost back in my good graces, but he was very close.........................

I'm the newbie, but your family will be in my thoughts and prayers. It is such a horrible disease, but there are new drugs and therapys being found every day.

We've just been through this with my sister, so any support you need--please ask!

It's going to take awhile for me to learn names! :)

Last night's dinner was SOOOOOOOOO yummy. Here's the recipe - I still have some cheese left so I make it again soon.

Dubliner stuffed chicken

8 oz. Dubliner Cheese
4 Boneless, skinless chicken breasts
4 oz. fresh bread crumbs
1 oz. pack fresh Italian herbs, finely chopped
2 medium size eggs, beaten
1/2 teaspoon salt

Preheat the oven to 400°F. Grate 3 1/2 oz. Dubliner Cheese and cut the remainder into thin slices. Cut a pocket in each chicken breast and insert the slices of cheese. In a bowl, mix together the bread crumbs, herbs, seasoning and grated Dubliner Cheese. Place the beaten eggs in a shallow dish and dip the chicken breasts into it, until evenly coated, then press firmly into the crumb mixture. Place on a buttered baking sheet and bake for
35-40 minutes or until cooked through.

Tonight we're eating out; no idea where!

DH forgot to order my grilled mahi sandwich last night and had to go back and get it. :sad2: I'm glad he did because it was sooooo good.

WFD? We have lots of leftovers in the fridge so that's what"s for dinner - pizza, wings, a hamburger, a chili dog, a rueben sandwich, sushi, baked beans, and fries. I actually wanted to cook tonight, but there wasn't any room for me to put groceries in the fridge, so I didn't go shopping, again.

My co-worker is hooked on the Velvet Shrimp. She made it again recently due to her dh's request for it! :)

WFD? Today we went for a late lunch to my favorite local Thai restaurant and I had my favorite, Spicy Red Curry Shrimp. We always stuff ourselves when we go there so we'll just have room for dessert later.

We just finished dinner- ham steak, steamed asparagus and corn on the cob. Oh yeah, some sparkling wine! We'll have some strawberries and ice cream later.
Tomorrow will be seafood because I am clearing out the freezer- it may take a month or so but it is time. I have 2 full salmon in there that I am taking to the wildlife shelter Monday for them to use. What was I thinking? I tried a hacksaw and nearly got frostbite= just buying fillets from now on.

I have successfully stuffed myself on those Meatloaf muffins from Glynnis.

Sandy I took them out of the pan and drained them a few minutes on a paper towel. I didn't think they tasted greasy at all.

Kady and I joined my former MIL, SIL and their cousin for dinner. I had macadamia nut encrusted grouper, risi bisi and a salad. Kady had spaghetti and sausage, and crackers. It was good, but my fish was a little over done. We did not get dessert so Kady is having some sort of soy fudgsicle. I'll find some ice cream later.

She has been really good about her diet restrictions and won't touch any thing she is not supposed to have, but the other night when we were at Friendly's she thought she was going to have her scoop of vanilla ice cream. She is a creature of habit and her Mom did not see this coming. Poor little thing just burst into the most heart wrenching tears :sad1::sad1::sad1:. I was not taking any chances tonight and waited until we got home.

Hey Sandy!

I am not sure if I will explain this right but the "muffins" kind of shrink and the fat winds up on the outside...when you take them out the muffins will look like mine did. I guess it also matters what % of fat the beef has when you make them. Does that make sense??? :)

Lauren- DO you think ground turkey will work? Should I add anything extra to "beef" up the flavor? Marisa won't touch beef so I try to use turkey, but I need to punch it up sometimes.

WFD? Today we went for a late lunch to my favorite local Thai restaurant and I had my favorite, Spicy Red Curry Shrimp. We always stuff ourselves when we go there so we'll just have room for dessert later.

Since I was on the South Beach diet, it did calm my craving for pizza...yum! Maybe make separate muffins for DH so that he is not reminded of pizza...how can he hate pizza? :confused3 :) It must be all that great cooking you do!!! ;)

Well, DF and I are back from our romantic dinner...hah! Now we are in bed on dueling laptops!!! :lmao:

We tried a new restaurant and it was great...very quaint. It was built in the 1800s and the outside looked it but very nice inside. :) I had a crabcake and avacado salad appetizer that came with a balsamic reduction. For entree, I had the hazelnut encrusted lamb...with some kind of mint sauce and carmelized onions...yum!!!

For dessert we both had soft chocolate cake which reminded me of that special desset at Coral Reef....paired with Rosa Regale...it was to die for!

I took a pic but have to down load it from my phone but I'm a der der which Tom would say...so he has to do it for me!!!

Hi Sandy. I don't know if I can help, but here is what I do. I upload my pictures from my camera to my computer. I use Kodak Easy Share software to edit the picture and choose the "Best for Web" option (pictures from your camera take up too much space, as they are high enough quality to be printed out. You have to edit them down to post.) Then I upload them on to Flickr (they have free accounts), click on the picture and scroll down until it says "Grab the URL." I copy that then post it into my posts here.


She has been really good about her diet restrictions and won't touch any thing she is not supposed to have, but the other night when we were at Friendly's she thought she was going to have her scoop of vanilla ice cream. She is a creature of habit and her Mom did not see this coming. Poor little thing just burst into the most heart wrenching tears :sad1::sad1::sad1:. I was not taking any chances tonight and waited until we got home.

Desserts are definitely the hardest thing with food allergies! Nancy, did you ever post Kady's restrictions after talking to the pedi? If so, I missed it.

Yes, they are the ones that can't cook, and even though it was just burgers today, nobody sat down to eat until about 20 minutes after they were off the grill. They were rather dry by then. I definitely should have had two pieces of pie!

Oh, and by the way, with all this talk about names, mine is Laura. I don't have it in my signature, and I am really used to just being called Liam's mom or Caili's mom, so feel free to keep using my user name if it's easier, but Laura is shorter.

Laura- Kady's pediatrician wants her to follow the diet restrictions he gave her. He wants to see how she feels before further restricting her. He said that he has already tested for celiac and she was negative, and she has always done well with soy, so he will not take chances with her nutrition to prove a negative.

Today we are going to the zoo. I hope I can stand to walk around, some parts of Illinois are suffering from an invasion of the 17 yr cicada's. I HATE those bugs. When I was working a parttime job in high school ,the town I worked in, had them bad that year. They were dropping out of the trees and all over the sidewalk you walked with sounds of crunch crunch and a big umbrella :eek:

Thanks to everyone for the prayers and thoughts for DH's father. I'm sure all of you who have ever had an ill family member know all about the up and down emotional roller coaster ride. One minute the doctors have bad news, the next they try to offer some hope. The Non-Hodgkins lymphoma was responding well to the chemo, but they found a new tumor in his spinal column. They have run more tests, but don't know yet what his prognosis from that will be.

We haven't told the children the lastest news. DS is on an end-of-the school year field trip to Washington, DC with his class and won't return until late Monday night. Both he and DD8 are supposed to go to 4-H camp on the 10th, and DH decided he wanted them to have a good time without worrying about their grandfather.

Today is laundry and grocery shopping day. I think dinner tonight is going to be the pork chops I have been trying to fix since Thursday night.

Garlic & Wine Grilled Shrimp

This recipe is a basic marinade/basting sauce. You can choose whether you like to grill the shrimp with shells or without, in a grill basket or on skewers. I boil the reserved marinade and use it as a dipping sauce. This recipe is enough for 2 lbs of shrimp.

1/2 c. butter or margarine, melted
1/2 c. olive oil
1/2 c. white wine
3 garlic cloves, minced
1/4 tsp. oregano
3-4 bay leaves
2 Tbsp. Worcestershire sauce
1 Tbsp. soy sauce
1 tsp. seasoned salt
1 tsp. pepper

Combine all ingredients, mix well then add shrimp and marinate 4 hours. Remove shrimp from marinade and place in grill basket or thread on skewers. While grilling, baste with marinade.

I plan to buy no meat of any kind for the month of June! Freezer clean out month (gotta defrost).
So, today I've defrosted and breaded soft shell crabs and shrimp to fry for dinner to have with salad and baked french fries. I made the cocktail sauce already also so minimal time spent actually cooking.:banana:

Yesterday was ham steak and corn from freezer, night before chili from freezer over baked potatoes, you get the drift.... I may even make it through July with all I have been squirreling away (leftovers, sales on chicken, pork loins, steaks, shrimp- jeez, found some small lobsters!). Lunch for DH has been soup from freezer, spaghetti (same), mexican casserole (same), etc. Man, I've been slack...

Tuesday night we are going to an outdoor concert of the NC Symphony that is a picnic beforehand- I'm going to roast a pork loin and have it sliced on rolls as one of our items.:)

Nancy, I finally found that recipe. All it took was a prayer to St. Anthony, and I wasn't even halfway through it when I found not only the cupcake recipe, but a whole stack of yummy egg and dairy free recipes. I'll just post the cupcake one now. (Liam's complaining about wanting dinner...the nerve! :) )

ETA: These freeze really well. I just make one batch at the beginning of the school year and pop one out of the freezer and into Liam's lunch bag any time there is a school party.

Kady's Dairy-Free Cupcakes (the school always puts the name of the child with allergies on the recipe) -- Makes 24 cupcakes

3 cups flour
3 cups sugar
2 tsp baking powder
2 tsp baking soda
1 tsp salt
10 Tbsp Fleishmann's unsalted margarine, melted
2 tsp vanilla extract
2 cups cold water

Preheat the oven to 350 and line muffin tins with paper liners.
In a large bowl, mix ingredients together and blend well. Pour into liners, slightly more than halfway up. Bake 20-25 minutes or until tester comes out clean. Frost when completely cool.

You can frost with Duncan Hines Creamy Home Style frosting in either Classic Vanilla or Classic Chocolate, both are milk-free. Or if you want to make it yourself:

Frosting

2 cups confectioners sugar
2 tsp water
4 Tbsp Fleishmann's unsalted margarine, softened

In small bowl mix ingredients together. If necessary, add more water to make frosting more spreadable. Food coloring may be added.

I have no idea how these actually work, but they come out looking just like regular cupcakes. One very picky little girl commented that she doesn't like these last year at Liam's party, but aside from that one exception, all the children seem to enjoy them as much as regular cupcakes. And they couldn't be easier.

I am not sure if I will explain this right but the "muffins" kind of shrink and the fat winds up on the outside...when you take them out the muffins will look like mine did. I guess it also matters what % of fat the beef has when you make them. Does that make sense??? :)

Kathy, Thanks for this recipe it's sounds delish! I'm gonna try it sometime this week! DH & I were craving really nice shrimp last night but I didn't have any big ones in the freezer. So I decided to boil some of those frozen king crab legs from Sam's instead. Have you tried them? They tasted so fresh, I was really pleasantly surprised! I boiled them like we usually do with all the regular seafood boil seasonings but still served them with lemon & butter! Oh, it was so good!

That was WFD last night: Salad, King Crab Legs & baked potatoes. Clueless as to WFD tonight.

I want to try to get that little piece of nori not to show up in the middle of the roll, it looks like a lowercase "e".
Oh, I have lots of tips for you. I used Alton Brown's sushi rice recipe http://http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_31390,00.html?rsrc=search. It makes quite a lot of rice. You don't have to keep rinsing the rice until the water is completely clear, 3 times is plenty, unless the water is so cloudy that you can't see through it at all. The sugar and salt will most likely not dissolve completely in the vinegar, just mix it all into the rice and it will work out fine. I've read in several books that you can leave the rice out on the counter pretty much all day if you cover it with a damp cloth.
If you want tips on how to roll it, let me know. I learned a lot by trial and error.

The zoo was nice a few cicada's not bad in the part we went to, we started to go into the older section were there hasn't been to much change and they were flying everywhere. My son started to flip out so we came home good thing because about 20 minutes later we had a downpour.

Those Garlic and wine shrimp sound really good, I have to work on dear ole son to give shrimp another try. He ate a few tail first and remarked how crunchy the shrimp were? He thinks I did it on purpose to laugh at him :rolleyes1 Kids you have to love them cause you can't throw them back :rotfl:

I've never had sushi, although I have had sashimi, and it was yummy. I would probably like sushi too. My favorite raw stuff though is oysters. It tastes like I'm eating the ocean.

I've never tried them. Last time I was at Sam's I saw them, they were pretty but pricey. I may have to give them a try!

It was pricey but actually the best king crab I've eaten! Tasted better than anything I've had at rest., so it was worth it!

Thanks for the compliment, but they really are very easy to make. I want to try to get that little piece of nori not to show up in the middle of the roll, it looks like a lowercase "e".
Oh, I have lots of tips for you. I used Alton Brown's sushi rice recipe http://http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_31390,00.html?rsrc=search. It makes quite a lot of rice. You don't have to keep rinsing the rice until the water is completely clear, 3 times is plenty, unless the water is so cloudy that you can't see through it at all. The sugar and salt will most likely not dissolve completely in the vinegar, just mix it all into the rice and it will work out fine. I've read in several books that you can leave the rice out on the counter pretty much all day if you cover it with a damp cloth.
If you want tips on how to roll it, let me know. I learned a lot by trial and error.

She is having a tough time with work & she is back in school getting her MBA. She has been really stressed out with some work & school issues and I'm a bit worried about her. She likes roast so I'm going to cook that & run it over to her for their dinner tonight. Roast with either mashed potatoes or rice & sauteed spinach will be dinner tonight.

Sheryl -- From what everyone on this thread says, Glynis's pot roast will certainly make your DD feel better. Graduate school can definitely be stressful at times. I remember when my dad was earning his MBA he was struggling to learn calculus at age 40-something, but then he befriended two German students who were whizzes at math. Dad helped them with some management concepts they were unfamiliar with and they helped him with the math, and they all passed the class. I'm sure your daughter will find a way out of her difficulties too, and when she graduates, both you and she will be so proud! I wish her the best of luck (and a really good meal tonight!)

Tonight is a skating night (just three more weeks...) so I'm making corn chowder this afternoon, and I'll reheat it for myself when I get home. It's another cold and dreary day here, so soup will taste really good after an hour in the rink.

I tell you what, I'm impressed with your Dad! :thumbsup2 I'm 40 something & it is definitely not something I would attempt now! My brain has grown moldy & turned to mush!!!:lmao:
My DD is only 25, graduated in '04 from LSU. She is handling the class work well, but the program is structured in that every project or paper is done as a group. They have the same group of people that work together through out the entire grad program. They had a group of 5, one older guy already dropped & now they have another girl who is having family problems & not carrying her load. It's really causing them problems. My DD is also working full time. Her DH is also in grad school for anesthesia & not able to work right now, so she is the sole "bread-winner" in the house. She knew it was going to be tough, just wasn't prepared to have to deal with another person's family issues too. I can't even express how proud we are of her, though. So if Glynis's Roast will help, I'm happy to do it!

I love the "snuggle" names! I call Kady "My little snuggle muffin". I used to call Marisa "My little Delight" but I made the mistake in front of her teacher, and scarred her for life. Now she has picked out my "home" when I outlive my usefulness. I did not think it was that bad :confused3 But once you're in the "home" who's gonna cook EVERY night?

I offered to fix DH a hot dog or a chicken sandwich, but he tried to get his own, dropped the chicken all over the floor, glared at the chicken all over the floor, tosses the poor chicken in the sink and proceeded to clean the poor floor, lost his appetite and had a granola bar :rotfl2:.

I have to add the "Road Trip" thing has me singing the theme song fro Lampoon's Vacation in my head, and it won't go away. After Buddy lost the war with the chicken, I kept seeing Clark at the Grand Canyon but I was giving him a little push :rolleyes1. DD says it is "justifiable" I just wanted to know if it would come under "AD&D" . Today is is almost back in my good graces, but he was very close.........................Oh Nancy! Does Buddy ever admit defeat? To be bested by frozen chicken!:rotfl2: And I keep having the "Holidayyyyyyyyyyroadtrip....." thing screaming through my head too!

Hello everyone! Dinner last night was not amazing. A transformer went out on our street and we were without power for hours. By 7 PM we were starving so we ordered grinders from a shop down in the center and ate them by lantern light :laughing:.. Yup, we were original and did not even break out the candles. By 8 PM Buddy broke down and fired up the generator, and we had power back around 10 PM.

Tonight I am planning a roast pork with prunes. It should have apricots as well, but I am out and am not going back out into the rain unless I have too. I think roasted potatoes and broccoli.

I'm experimenting with dinner tonight - I grilled a Boston butt (rubbed with garlic salt) just to brown it a little and give it a smokey flavor, then I put it in the crockpot with some apple juice and chopped onion. I haven't decided what we'll have with it yet.

Hopefully I'll be able to eat...I just went to lunch with a friend and am not feeling too great...:confused3

We let Seymour out yesterday...:cool1: . He ran like a bat out of hell but he is now back and sleeping on the porch. Bad news is...we got home from church yesterday and found another cat with a hurt leg...:sad1: :sad1: :sad1: ...I just lost it and started balling my eyes out...my nerves are shot...:scared1: .

Still no word on my Mom...she is about the same. I have to go visit her this week and get her a dress for the wedding...

Nancy, I finally found that recipe. All it took was a prayer to St. Anthony, and I wasn't even halfway through it when I found not only the cupcake recipe, but a whole stack of yummy egg and dairy free recipes. I'll just post the cupcake one now. (Liam's complaining about wanting dinner...the nerve! :) )

ETA: These freeze really well. I just make one batch at the beginning of the school year and pop one out of the freezer and into Liam's lunch bag any time there is a school party.

Kady's Dairy-Free Cupcakes (the school always puts the name of the child with allergies on the recipe) -- Makes 24 cupcakes

3 cups flour
3 cups sugar
2 tsp baking powder
2 tsp baking soda
1 tsp salt
10 Tbsp Fleishmann's unsalted margarine, melted
2 tsp vanilla extract
2 cups cold water

Preheat the oven to 350 and line muffin tins with paper liners.
In a large bowl, mix ingredients together and blend well. Pour into liners, slightly more than halfway up. Bake 20-25 minutes or until tester comes out clean. Frost when completely cool.

You can frost with Duncan Hines Creamy Home Style frosting in either Classic Vanilla or Classic Chocolate, both are milk-free. Or if you want to make it yourself:

Frosting

2 cups confectioners sugar
2 tsp water
4 Tbsp Fleishmann's unsalted margarine, softened

In small bowl mix ingredients together. If necessary, add more water to make frosting more spreadable. Food coloring may be added.

I have no idea how these actually work, but they come out looking just like regular cupcakes. One very picky little girl commented that she doesn't like these last year at Liam's party, but aside from that one exception, all the children seem to enjoy them as much as regular cupcakes. And they couldn't be easier.

What other egg-free recipes do you have? I'm always looking for great tasting egg-free recipes since I developed an egg allergy a few years ago. If only you could make an egg-free pound cake. :rolleyes:

Dinner was okay this evening. I got the recipe for the roast pork off of Allrecipes and ended up running out for apricots. We liked it but not enough to add it to my rotation.

We had mashed potatoes with olive oil and chicken stock, brocolli with garlic and olive oil, corn and a sauce made with the drippings and prunes and apricots.

1 large potato, peeled and diced
2 cups chicken stock, hot (I also add a boullion cube)
1 bay leaf
1/4 tsp. dried sage
1/2 tsp. cumin seeds (I almost never have these, so I just use ground cumin)
3 tbsp. butter
1 onion, finely chopped
3 tbsp. flour
kernels from 2 ears of corn (the original recipe calls for two cups of corn...it took three ears today)
1 1/4 cups heavy cream (I used a combination of light cream and milk. Light cream into the flour mix, then milk to thin)
4 oz. sharp cheddar cheese, grated
salt and pepper to taste (didn't need salt with the boullion)
1/2 cup white wine (I only used about 1/4 cup wine)
Chopped parsley
Chives, for garnish

Boil the potato in the stock with the bay, sage, and cumin until just tender, about 15 minutes. Remove the bay leaf. In a seperate saucepan, melt the butter and then saute the chopped onion until softened. Add flour and stir for two minutes. Add the cream or milk, and whisk until the flour isn't lumpy and the mixture has thickened. Add to the stock and potatoes and stir until smooth. Add the corn and the chopped parsley. Thin with milk if necessary. Gently simmer 10 minutes. Add the wine and the cheese and stir until cheese is melted. When ready to serve, pour into bowls and top with chives.

Serves 4

What other egg-free recipes do you have? I'm always looking for great tasting egg-free recipes since I developed an egg allergy a few years ago. If only you could make an egg-free pound cake. :rolleyes:

I can't give you a pound cake recipe, but here's one for apple cake:

Dairy Free Apple Cake

1/2 cup vegetable oil
2 cups sugar
1 cup applesauce
2 3/4 cups flour
1 1/2 tsps baking soda
2 1/2 tsps baking powder
2 tsps ground cinnamon
2 tsps vanilla extract
3 apples, peeled, cored and chopped

Preheat oven to 350. Butter and lightly flour a 12 cup Bundt pan. Tap out excess flour.

In large bowl with wooden spoon, stir in one at a time oil, sugar, applesauce, flour, baking soda, baking powder, cinnamon and vanilla. Fold in apples one at a time until completely mixed. Batter will be very thick.

Spoon batter evenly into pan. Bake 50-60 minutes until brown on top and tester comes out clean.

In general, I have found that eggs can be substituted in a number of recipes by a Tbsp of oil. I've had pretty good success doing this with cookies, and I also do it if a recipe calls for dipping something in egg before breading. I just dip it into a water and oil wash.

Lobster does make everything better. I can't believe we live in New England and my son is allergic to lobster. I guess I'll have to try to get out to eat sometime this summer to have it. I'll even change my clothes before hugging him.

I'm definitely a this-and-that type of cook...I don't really measure, I put together dinners with whatever I have in the refrigerator, and I am not that great with menu planning for the week. (That probably explains why I spend so much time at the grocery store!) However, this corn chowder recipe is one I keep coming back to, and I think it's pretty much as good as it can be now...with the possible exception of the lobster chaser.

Oddly enough, most of the above does not apply to my baking. I am pretty careful with measuring there, although I am quite willing to make substitutions or additions as necessary...especially when it comes to chocolate and vanilla. I always add more. ;)

BTW-- I am playing around with my signature, since it was the most boring on this thread, so be patient if it keeps changing, like Nancy's. The current pic is DS at WDW a couple years ago. It won't be there long though. If I am going to have a picture of the kids, I have to have both of them.

First, thanks ugadog, I am with Txtink on the meatloaf. I love it! It is not a favorite here though, so I tend to save it for those special occasions when Buddy is persnickety. Between the glazed meats, the meatloaf, and Mexican if I am on a roll......:rolleyes1

Laura, I added the apple cake to my folder. I am going to try that first. I have been reading about subbing eggs and saw that a ripe banana or some blended silken tofu will also work. I am going to try the banana in oatmeal cookies. Thanks for the suggestion regarding an oil wash. I was not sure how to overcome that issue.

I am not sure about dinner tonight. I need to go over the first page and find something that will babysit itself. I am determined to catch up on my ironing today!

Good morning all----I haven't been around for a few days as we have had some minor family drama going on............: dh grandmother has been in the nursing home for rehab due to a break, and will be leaving in a few days, but can't be alone anymore at night so inlaws are going to move her into their house............so we have been helping get that ready, and moving ds' room there upstairs. Yes this is very nice of them, and a huge undertaking, but it isn't 100% out of the goodness of their hearts,they can't handle money at all ( they had to borrow money from us for christmas for ds's presents, they blow all their money on pez dispensers and hotwheel cars and craft supplies) my dfil owns a small carpentry business which used to be his fathers, and he has run it into the ground which has cause one of his brothers to not even talk to him for years. (yep we acutally side with uncle on this one, in our minds not out loud lol) So to get the house ready for grandma they are using her money (not being quite truthfull to sister (dh's aunt) who is in charge of the finances, but is out of state) to get the room ready for her.....they have not been able to finish their house due to spending habits, and are now using her money to do things that just aren't quite right, and when dmil emails me, she will put somthing along the lines of .....finally going to get my tile floors hehehehe and we will have control of the social security money so that will be paying our taxes.....they took the money and bought new computer monitors because they had to rearrange their living room etc. the money was to make the room comfy for grandma....not finish their house...............there is more, but you get the idea.....so we just nod and say uh huh yep right ok.....and then get in the car and aaaarrrggghhhhhhhh, lol.
So before I end up saying somthing I shouldn't, I am taking a few days and not going over there.......I am going to run errands this morning then I am going to catch up on what I have missed here.

sorry about the long vent...but thanks for listening!

I hope all is well with everyone, I will post to what I have missed later this afternoon when I take some ME time.............dinners around here have been take out, and cereal.............I think tonight since it is rainy I will make sloppy joes with a side salad, and brownies for dessert. I do need to start using stuff in the freezer as we are getting new appliances this summer and I don't want to have to transfer to much over to it.

It is hard enough for a loved one to be dependent upon another, but to have that person taken advantage of is pretty hard to take quietly. I agree that it is better to stay away a bit rather than say things that cannot be unsaid. :hug:

I'm following through with using what's in the freezer this month. Going to clean it out and defrost it.

Tonight we're having BBQ'ed boneless beef short ribs (in the crockpot). I'm putting a few tablespoons of salsa on top for some zip. We'll have coleslaw and baked beans with it. Maybe a pudding/ Cool Whip pie for dessert. I might make some cookies. Paula Deen made some from a cake mix and they looked really good. I'm off the South Beach diet for awhile so what the heck.

DH loved Glynis' Roast! DD hasn't tried it yet, her sweet DH was trying to help out & "cooked" spaghetti (out of the jar of course!) But she was thrilled to have me freeze it for her to not have to cook later in the week. She still sounds super-stressed & I now realize I could have been helping her more by freezing some dinners for them. I feel like a rotten Mom not to have realized it sooner. :sad2:

Glynis' roast was delicious & I really wished I had made mashed potatoes instead of rice. But then I would have eaten myself sick on it for sure!

DS10's class wanted some snacks to take outside while they get their class yearbooks. I was ready to send in one thing, until I knew no one else was sending anything. So....raced to the store this morning..

Thankfully, our Field Day and Fun Day are over. School's out on Friday, but I'll still be complaining all summer, since I'm PTA co-pres next year. I'm thinking there will be something I have to do over the summer.

I didn't do much with them at all! They were frozen, I placed them in the crockpot, dumped about 1/2 a bottle of BBQ sauce over them and topped them with a few tablespoons of medium salsa. I treated them like other ribs and roasts I've done in the crockpot. I guess I didn't know enough about them to be afraid! :confused3 :rotfl2: I'll let you know how they turn out! They smell really good!

OMG he would love a sandwich (or 5) for dinner! He be in heaven with a package of salami( I almost never buy sandwich meat, he has high cholesterol and hates everything that he should be eating ) and munching his way through a loaf of bread. Now you know I can't give in that easy, I live to torment the poor guy ;).

Wonderful advice - I wish I could do this more often. Unfortunately for me, the filter between my mouth and my brain doesn't not always function properly, especially in times of high stress.

DH loved Glynis' Roast! DD hasn't tried it yet, her sweet DH was trying to help out & "cooked" spaghetti (out of the jar of course!) But she was thrilled to have me freeze it for her to not have to cook later in the week. She still sounds super-stressed & I now realize I could have been helping her more by freezing some dinners for them. I feel like a rotten Mom not to have realized it sooner. :sad2:


Sheryl, don't let the "mother guilt" get you. It was very thoughtful of you to think of making and freezing dinners for her. Obviously you had no idea how stressed she was before now. There are lots of us who would love to have a mother as considerate as you.

Ok, I have to share- most of you have seen the photo of my "kitchen" and know what it's like (boa and all!). Rick was home Fri PM- Sun PM by himself while I was visiting up north. I sat out easy stuff and made sure the electric skillet and microwave were clean, etc. Being thoughtful of my dear spouse. I came home Sunday and guess what he ate the whole time?!? Cereal!

The excuse was "I couldn't find anything." Couldn't even find the box of healthy cereal I had! We have 2 shelves with food on them in the kitchen- there are no cabinet doors- the dishes are in the same place as the food- how can you miss it?!?:sad2:

Stay through the credits--I should have known better, but didn't. There is a bit more, and would have changed my attitude about the movie. No wonder I thought it didn't end well!

I am marinating a flank steak as I type. It's one of a few things my entire family loves. Thinking of making what DH calls Texas Caviar..a black bean/corn salsa to go with it.

No, it was terrible. I told you I have this measuring problem, well if one lemon was good, 4 must be stupendous, and if a few capers were nice, hey I got the jar at Costco :confused3. Well, I made so much extra sauce, and puput it in a serving dish. DH was late for dinner, got in as we were finishing. Before I could warn him he puts what he thought was gravy on his potatoes and chicken. I'm still hearing about how I Nanatized his dinner that night :rotfl2:. Poor guy was raised to eat whatever was on his plate, but the gazillion capers and the lemon on steroids almost killed him :rotfl:. I have not tried that one since......

Too funny! I'm pretty sure the only time my DH has a meal that doesn't involve canned foods, ramen noodles or microwaveable meals is when he gets invited to one of the married officer's houses. (He's in OK taking an Army course right now, for those who are confused).

Tonight, Liam is supposed to have baseball practice, but since the forecast is calling for severe thunderstorms with possible hail, I've decided not to bring him...even though the town hasn't canceled the practice yet. :confused3 However, we're still having the meal I planned thinking we were going. I am making pizza.

Spicy Basque-Style Chicken
1 tsp smoked paprika
1/4 tsp black pepper
1 lb. skinless, boneless, chicken breast tenders
2 tsp olive oil
2 tsp bottled minced garlic
1/4 cup sliced green olives
2 (10 ounce) cans diced tomatoes and green chiles, undrained
1/4 cup finely diced prosciutto
2 tbsp chopped parsley

Combine paprika and pepper, sprinkle evenly over chicken. Heat oil in a large skillet over med-high heat. Add chicken to pan; cook 4 minutes. Add garlic; cook 30 sec. Add olives and tomatoes to pan; bring to a boil. Reduce heat, and simmer 6 minutes

Remove chicken from pan. Increase heat ot med-high; cook 2 minutes stirring occasionally. Sprinkle with prosciutto and parsley. Serve with saffron rice (I used a preseaoned rice-found next to the wild rice)

8 ounces uncooked penne pasta
2 bacon slices
1/2 cup chopped sweet onion
2 1/2 cups (1-inch) slices asparagus (about 1 lb)
1 1/2 cups fat free, less sodium chicken broth
4 cups bagged baby spinach leaves
1/2 cup shredded parmesan cheese, divided
1/4 tsp black pepper

Cook pasta according to package directions

Cook bacon in a lg. skillet over med. heat until crisp. Remove the bacon from pan; crumble. Add onion to drippings in pan; saute 1 minute. Add asparagus and broth to the pan; bring to a boil. Reduce heat, and simmer 5 min. or until asparagus is crisp-tender. Add pasta, spinach, 1/4 cup cheese and pepper to pan. Toss well. Sprinkle with remaining 1/4 cup cheese and bacon

Pizza Meatloaf Muffins have to be the #1 EASIEST recipe I've ever done. I'm the only one who has eaten yet, DH & DS won't be home until after 9.

I used 93% lean grd beef and when they were done I took one out and there was some fat there so I took them all out and drained on paper towels as recommended by someone here. They were good, but a little bland for our taste. Next time I'm going to add minced garlic to the ground beef and some fresh basil into the cheese that's stuffed in the center.

I had leftover baked angel hair pasta with parm, garlic & basil from Sunday - if anyone wants the recipe I'll be happy to post it.

The oriental ribs Glynnis posted were wonderful. I tripled the sauce ingredients because I had over 7 pounds of country ribs, cooked then tightly covered in a slow oven for about 5 hours. I turned them once in a while. I took the cooking liquid and reduced it, added a little maple syrup to cut the saltiness, and then thickened it with corn starch, added a little Earth Balance spread to make it shiny. Back in th oven for about an hour or so. I was not really timing it, but it was yummy!

Only Kady and I ate, everyone else is at the greenhouse pulling plants. I think they will like it as well, DD was telling me it was not fair to smell dinner and then have to leave.

Morning all----I still haven't caught up on here as we ended up being called to a meeting at the nursing home for (dh's) grandma yesterday. We found out her release day,(next wed) and a few things to do with PT to help her, and also some ways to help her keep focused.....(her mind is a bit gone).
In the process of this meeting dmil proceeded to tell me that she ordered a new shower curtain for the tub (single panel as opposed to the 3 layers they had so they would have more room to get grandma in and out of the tub) and matching curtains....now I can't quite figure out how the curtains are part of using grandma's money to make her move easier?????????? argh!!!! If I bite my tongue anymore it is going to be pierced!!! I have not always kept my mouth shut in the past in other situations, but they involved me, dh, or ds in a direct way, this is a bit out of line to say to much I feel, but boy am I having a hard time, lol. Luckily I am really busy with ds's school the next few days and won't see them until Tuesday.........she (dmil) will email me 2 or 3 times a day with her new items and such..............to which I sit here and feel my blood pressure boil, then call dh and (b)witch with him on it........Oh yeah they are also going to put in a new driveway????????????? using grandma's money!!

wfd tonight.........I will probably make this super yummy easy chicken dish, with rice and corn or carrots.

EASY BAKED CHICKEN BREASTS

1/4 c. butter
3 or 4 boneless chicken breasts, split
1 can cream of chicken soup
1 can cream of celery soup
1/3 c. white wine---------------------------PLUS AN EXTRA GLASS FOR THE COOK--------------------
8 oz. grated sharp cheddar cheese

Melt butter in oblong baking dish. Place chicken breasts in butter. In a bowl, combine soups and the wine. Stir until thoroughly mixed.

Pour over the chicken. Sprinkle the cheese over the top. Bake at 275 degrees for 2 1/2 hours.

It is not easier to watch, I just keep telling myself that I am glad that I will not be the recipient of the consequence.

I am not sure what I am cooking this evening. I have ground turkey and may make the pizza muffins or maybe stuffed peppers.

There really is no recipe, when they are in season I just chop (large chunks) up some creoles, green peppers, onions and avocado. Season with salt & pepper, olive oil and vinegar. I could eat this all day, every day!!!

This is really quick. Start to finish in 20 minutes.

Scallops Newburg
1 lb of scallops, rinsed and drained well (you can use bay or sea, I’ve done both)
1 tbl butter
garlic powder
Old Bay seasoning
1 can cream of shrimp soup
3 oz cream cheese (easier to use if softened, but ok if not)
¼ cup cooking sherry

Heat butter in skillet over medium-high heat. Add scallops and sprinkle with garlic powder and Old Bay to taste. Cook for about 2-3 minutes, stirring occasionally. Add soup, cream cheese and cooking sherry. Stir until mixed well and reduce heat to low. Simmer for about 5 minutes or until hot throughout.

I served this over angel hair last night instead of making the rice pilaf. I’m glad I did because the sauce was really good.

Morning everyone! :)

Still using what I have on hand. We're having Kraft Italian Pasta Salad. I'm adding chicken breast strips, pepperoni, tomatoes, and cucumbers. In the mood for something light tonight.

I might make some Oreo milkshakes for dessert. I'm just going to use up the ice cream we have, add some milk and crushed Oreos. Blend them all together! (I'll have to pick up some Oreos though sometime today.)

Last night was some conglomeration of ground beef, garbanzos, frozen corn, onion, and a can of diced tomatoes with balsamic vinegar and olive oil- over grits. Trying to use up odds and ends- can you tell?:rotfl: Tonight will be leftovers- either that or the baked chicken from Monday night.

We'll be there! I cancelled the waitlist though. I needed to bank points or lose them so I banked. We'll either be at the campground in the RV (If we get it) or at the Grovsner. Oct 24-28

There really is no recipe, when they are in season I just chop (large chunks) up some creoles, green peppers, onions and avocado. Season with salt & pepper, olive oil and vinegar. I could eat this all day, every day!!!

Kathy, Did you run down to Belle Chasse for those? or found them at your grocery? I'm dying for some real creoles! They didn't have any at either of my stores yet. Your salad sounds yummy! Grab some vidalia onions for it & it would really be fantastic!

Wendie, Sorry about all of the drama in the family! If your DH hasn't said anything, you are being smart to keep quiet on it! Just try to stay away as much as possible!:hug:

I got off really easy last night. DH was not too hungry, so we had the leftover King Crab legs that were again so good. Followed that up with a fruit, cheese & bread tray & a bottle of wine! EASY & YUMMY!

I had gruyere & that strange looking but yummy Norwegian cheese (gift from Norwegian business assoc. of DH's). We had it in Akershus & loved it. If any of you go to Akershus for breakfast give it a try! It's very brown & doesn't look very appetizing but it is so good with fruit, it has a very sweet caramel like flavor.

Don't know WFD tonight.

Lori--sorry, the ToT race, is the Tower of Terror 13K/6.5K to celebrate the 13th anniversary of the Tower of Terror. It's held at night at MGM, starts at 9:30pm with a private party for race part. and family until 1am! We have a sitter for the kids (thanks DSIL); we are gonna party down! And seriously, if there is a race going on, we're there--already got plans for marathon weekend in Jan! We're missing Race for the Taste this year, gotta sacrifice somewhere I guess!;)

Tonight DH is out of town, the boys all have kung fu from 6-8 and dinner has to be fast. So..probably make a pizza or some pasta. Mine, I'll probably roast some veggies w/evoo and parm. (whether it's pizza or pasta!) Some herbs from the garden...I love spring! I have a watermelon for dessert.

so....nothing exciting, but they'll be happy.

I did make Popcorn Smores last night. I think I got the recipe from Family Fun. They were easy and gooey....yum!

Nancy, it's the tomato which cherish down here! It's only grown in a very small area along the mouth of the Mississippi. It has something to do with the soil from the river. Kyle's girlfriend actually lives there. It's only about 5 minutes from Kathy about 20 minutes from my home. We only get the tomatoes during the summer & when they get plentilful, we can get them in the local groceries & at other roadside stands. I have never tasted a better tomato than a creole including all the fancy heirlooms I've paid big bucks for!

They have an heirloom called Mr Stripey, and it is the ugliest tomato I have ever seen. When those bad boys are ripe it is not pretty here. Any manner and common courtesy are out the window :rotfl:.

Ok lucas, here is the recipe you requested. I made it for the first time tonight and Wow, it was good.

Shrimp and Wild Rice Casserole - Paula Deen

1 (8 oz) pkg wild rice (I only could a 6.7 oz pkg so I used it)
1 lb medium shrimp, peeled and deveined
2 tbl butter
1/2 green bell pepper, seeded and chopped
1/2 onion, chopped
1 (10 3/4 oz) can cream of mushroom soup
2 cups grated sharp Cheddar
salt and pepper

Preheat oven to 325 degrees

Cook the rice according to pkg directions minus 1/4 cup water. (The recipe here says to drain and cool, but I didn't understand the "drain" part, but I did let it cool a little.

Bring 2 cups water and 1/2 tbl salt to a boil in a medium saucepan and cook the shrimp for 1 minute. Drain immediately and set aside.

Heat the butter in saucepan and saute the pepper and onion until soft, about 5 minutes.

In a large bowl, combine rice, soup, 1 1/2 cups of cheese, shrimp and vegetables. Add salt and pepper to taste (I didn't add any salt and I'm glad). Mix well. Spray an 11 x 7 inch glass casserole dish with vegetable spray. Place the mixture in the pan and top with remaining 1/2 cup of cheese. Bake for 30 minutes, until bubbly.

I made some really yummy white beans tonight!!! (not that I am bragging:rotfl: )They just really came out great. But if you cook'em with a ham bone it makes so much of a difference. I had a leftover hambone with lots of ham on it leftover from Christmas(honeybaked) that I had deep frozen. I took it out last night, crockpotted the dry white beans this morning with salt/pepper/Tony's on low for 5 hours. Came home, put in the defrosted hambone(after cutting ham off of it and using half of it for my beans), added the already cut up for you seasoning(about 1/3 of the container)-put it on high for 2.5 hours.

We went blueberry pickin' today, so we had a dessert(not usual for us!!)-vanilla ice cream with a warm blueberry sauce the owner of the blueberry farm gave me. I used sucanat(to make me feel a little better about it!), but it still was high in sugar! YUM!!

Lauren, Good Luck with dress shopping for your Mom tomorrow! On the rice/birdseed, most of our Catholic churches here won't allow it any more, it's a falling hazard!!!! :sad2: But because of that, people have started have started blowing bubbles instead. It's pretty nice.

Lauren-Congrats on your wedding! Don't stres too much, I am sure you are doing fine, and it goes by so quickly. Enjoy it.

Lorraine Dawson's Blueberry sauce(Waldhiem, La.):

1.5 cups blueberries
1/3 to 1/2 cups sugar(I used 1/3 sucanat)
1TB cornstarch
1/4 cup water
1/4 tsp almond extract

put it all in a saucepan over medium, to med-low heat, stir frequently for about 20-35 minutes
remove from heat and add almond extract, mix well(should be sticky and getting thick.)

Ok lucas, here is the recipe you requested. I made it for the first time tonight and Wow, it was good.

Shrimp and Wild Rice Casserole - Paula Deen

1 (8 oz) pkg wild rice (I only could a 6.7 oz pkg so I used it)
1 lb medium shrimp, peeled and deveined
2 tbl butter
1/2 green bell pepper, seeded and chopped
1/2 onion, chopped
1 (10 3/4 oz) can cream of mushroom soup
2 cups grated sharp Cheddar
salt and pepper

Preheat oven to 325 degrees

Cook the rice according to pkg directions minus 1/4 cup water. (The recipe here says to drain and cool, but I didn't understand the "drain" part, but I did let it cool a little.

Bring 2 cups water and 1/2 tbl salt to a boil in a medium saucepan and cook the shrimp for 1 minute. Drain immediately and set aside.

Heat the butter in saucepan and saute the pepper and onion until soft, about 5 minutes.

In a large bowl, combine rice, soup, 1 1/2 cups of cheese, shrimp and vegetables. Add salt and pepper to taste (I didn't add any salt and I'm glad). Mix well. Spray an 11 x 7 inch glass casserole dish with vegetable spray. Place the mixture in the pan and top with remaining 1/2 cup of cheese. Bake for 30 minutes, until bubbly.

Lorraine Dawson's Blueberry sauce(Waldhiem, La.):

1.5 cups blueberries
1/3 to 1/2 cups sugar(I used 1/3 sucanat)
1TB cornstarch
1/4 cup water
1/4 tsp almond extract

put it all in a saucepan over medium, to med-low heat, stir frequently for about 20-35 minutes
remove from heat and add almond extract, mix well(should be sticky and getting thick.)

Lauren, when my niece got married I took my Mom shopping and found her a beautiful champagne pant suit. Then my DD got married and she wanted to wear it again. Okay, it still fit and she looked lovely in it. Then my nephew got married. This is at least 5 years after she wore it the first time, and she wants to wear it again. My Brother is horrified. A little chat with my Sis IL and Mom is once again shining in her pantsuit. My youngest was the last to marry and he asked her to wear the "Wedding Suit". The only ruckus was when she refused to let me take it to the cleaners, :confused3.

My point is that Moms are eccentric and that is what makes them unique. Whatever your Mom wears will be fine because she is your Mom and the people who are celebrating your wedding will love and respect her if she showed up in shorts.

We went blueberry pickin' today, so we had a dessert(not usual for us!!)-vanilla ice cream with a warm blueberry sauce the owner of the blueberry farm gave me. I used sucanat(to make me feel a little better about it!), but it still was high in sugar! YUM!!

I'll be on the lookout. I can sympathize with your Alex. We had some nasty storms Tuesday and Kady was a little scared. Marisa felt badly because she was at work when her baby was "hiding". I was like she is not hiding, she is just hanging onto my leg!

The poor guy across the street has not caught a break during this bout of storms, his finished basement has flooded twice, an he had to get rid of almost everything because of mold, and Tuesday a huge tree came down in his yard and just missed his house. It has been weird here.

The Italian pasta salad we had last night was great! I'm glad I made a lot. I'll be having it for lunch. Instead of the Oreo milkshake, I made an apple cobbler with oatmeal. It was really good.

Tonights menu is crockpot bratwurst with peppers, probably fries, coleslaw, and that Oreo milkshake.

She was stressing about the last minute details and I was thinking you are probably doing the same thing.

Still using what I have on hand. We're having Kraft Italian Pasta Salad. I'm adding chicken breast strips, pepperoni, tomatoes, and cucumbers. In the mood for something light tonight.

I might make some Oreo milkshakes for dessert. I'm just going to use up the ice cream we have, add some milk and crushed Oreos. Blend them all together! (I'll have to pick up some Oreos though sometime today.)

Hey, here's what I did. Nothing real fancy. Just used the box and added a few things, but it did the trick! Easy, quick, and tasty. :)

Morning Y'all,

I am in shock this morning. Alexis asked for strawberries on her waffle. So of course that made me think of whipped cream on top. Had some in the fridge whipped it up & topped our waffles. She doesn't like it!!:eek: :confused3 I have now scraped off the topping & she still won't eat the waffle. I guess I ruined her perfect little toaster waffle?!

Didn't cook last night. The pool was finally warm & clean enough to go for a swim. Once Alexis got in, there was no getting her out. So dinner was order in spinach & artichoke pizza for me, & spaghetti for DH.

I'm going to do something with shrimp. I've been craving Kathy's grilled one's but haven't been able to get any big enough for grilling. So I'll use what I have in the freezer & maybe make a pasta.

Lauren -- Bubbles are really nice. Like Sheryl said, they don't allow birdseed or rice most places anymore. It's a mess to clean up, and I guess the rice isn't good for the birds. DH and I have some great pictures from our wedding of us coming out of the church with the bubbles shimmering and floating down on us. (Sorry, they aren't electronic, so I can't post.) Most party stores sell special packages of mini-bubbles especially for weddings. We dressed our little bottles up a bit by tying ribbon around them, then we placed them in large baskets at the church exit so guests could grab them on their way out. Whatever you decide to do, I am sure your day will be wonderful!

Kathy -- So is your Kyle. What a cute couple.

Okay, so today, my dad is coming here to work with Liam on his baseball swing. Liam is trying out for a summer baseball league on Saturday, so my dad is going to get him a new bat (his old one is from T-ball and way too light) and give him some hitting tips. Liam is a good hitter, but he's been playing a lot of wiffleball and it has messed with his swing.

Anyway, after Dad's baseball clinic, we're grilling hamburgers. Then Liam has a baseball practice for his regular team this evening. Didn't I say yesterday things were slowing down a bit?? :rolleyes:
