Hi Y'all,
Haven't been on here in a while. My computer was in the shop cus I gunked up the keyboard using it while cooking! (My backspace key was sticking so I took it off & couldn't get it back on, but the whole keyboard had to come out to get cleaned! No computer for 2 days!) DH had ordered an inexpesive wireless keyboard for me to use!
I haven't had time yet to read back on everything I've been missing. I did check out Becky's beautiful food though!
Becky, As usual I'm just amazed at how you can do so much food at the same time & have it all look like it just came out of a 5 star restaurant!:thumbsup2
I haven't done to much cooking lately. I did fix this sometime during the week.

Panko breaded Flounder Filets with an herb-pinenut-limoncello butter sauce, sauteed garlic spinach & parsley cajun boiled potatoes.
When I got back on the dis yesterday I saw the Food & Wine event schedule was out! :banana: :cool1: So DH & I have been trying to plan for our Oct. trip. So much food & so little time!
Don't know what's for dinner tonight, maybe burgers or pasta.

Hey Guys! Taking a break from painting to say hi! We decided to paint the stairs and the balasters...what a tedious (sp) job but it is looking nice.
We are having grilled ham steaks with Saucy Suzie :love: :love: :love: , baked sweet potatoes and green beans.
Right not we are taking a break with a VERY strong vodka and Fresca so please don't mind me if I am acting a little loopy!!!
Janice the recipes sound great!

Yes, Dh's friends were here a couple weeks ago. They were nice enough, and the dinner went well, although I didn't really like what I made. I just am a little uncomfortable around people I don't know, and they knew me much more from DH, so it was a little awkward. They thought I was quiet, but that was mostly because my FIL drank almost an entire bottle of wine and blabbed the whole time. Anyway, I survived.
Laura - Great news that DH will be home in two weeks, the kids must be so excited!! Anything planned for the homecoming?
My food budget quadruples; he and Liam are going to a Red Sox game together; I am sure I will have more IL obligations than usual, and Becky will make some awesome dinners. He will also be home for Caili's first day of Kindergarten. Other than that, nothing too exciting. When DH is home, we try to make things as normal as possible, so he feels more like part of the family than a guest. He appreciates the down time and just having time to play with the kids. Maybe I'll slip out one night and go to dinner with Becky and BIL, if that can be managed.
I too love indian food. trader joes has a good vegetrian somosas if you have one close by.
I've heard good things about Trader Joe's frozen Indian food. In fact, Becky was eating naan from them this afternoon. We have one not too far away, so maybe I'll stop in sometime when I am in that area.
I think we are going to have tomato sandwiches tonight. We have a lot of food left from last night, but DD and I went to the Garlic Farm for fresh garlic and she had her heirlooms ready. I would walk away from the best steak for these sweet things.
I love heirloom tomatoes. They aren't in here yet. Maybe this week.
Today, my 10 year old DD and I had a mother/daughter day. It was time for the "facts of life" talk with her. It went well, and then we spent the rest of the day shopping for school clothes, and going to lunch at a local buffet. It was nice, and she took "the talk" quite well. Glad I don't have to give it again for another 5 years!!!
I'm not looking forward to that. I'll have to talk to Liam next summer because the school system does "The Talk" in fourth grade. I'm not letting them tell him before I do.
I have never understood why people think a woman who stays home to care for the family doesn't work!!!!!!!
DH admits that his Army job is a lot easier than mine. The people who think that being a SAHM is easy or isn't work are the people who have never done it.
I ate with my parents today (Becky was off to her ILs) so we had grilled cornish hens with peach salsa, beans with thyme, cumin corn and skillet potatoes (very garlicky. No vampires tonight!) My mom insisted on doing everything despite walking around on a pinky toe that she discovered yesterday is broken in two places. The food was yummy.

This was one of those things I came up with when channeling Emeril! :laughing: I fixed it before without the pine nuts to top pan fried chicken breast. Instead of wine to deglaze the pan, I thought the lemony sweet taste of limoncello would go great with the fish (& it was really yum). Let's see if I figure out something that resembles a recipe.
Limoncello Pinenut Sauce for Fish
Pinenuts
Limoncello
Chopped Herbs (parsley, basil & sage)
Chicken or Seafood Broth ( I used chicken but I think seafood would be better)
Butter
Zest of half a large lemon
Juice of half of lemon
Fresh ground black pepper
Salt
Pan fry the fish in butter & olive oil, remove fish from the pan. In the same pan, toast the pinenuts, until lightly browned. Deglaze the pan with a good size splash of limoncello and seafood/chicken broth. Add whatever herbs you like and the lemon zest of half of a large lemon and lemon juice. Taste for seasoning & add salt/pepper. Add a dab of butter to get it creamy and top the fish with the sauce.
To lighten this up, you could top grilled or baked fish too. And leave out some of the butter.

Hello all---
I am watching a friends daughter for the day so her folks can get some time away, she is 2 years older then Ross, but they get along great, and are good friends. We went to the movies already, and might go play putt putt later on if the storm passes.
Ross' play went suberb yesterday...he was a riot, he had a whole part to himself on the stage and did A+!!
Ruby Tuesday's was good as well.
Laura- I am so glad to hear that DH will be home soon!! Thanks for sharing him with our country!!
Nancy- Please know that Timmy, and your whole family will be in my prayers! Thanks to all of you as well for sharing him with us!

Though he did give me one time a few weeks ago...."I know that part of it, I watch the health channel".....this was after a neighbor girl was dressed in "not much" with her boyfriend around, and I said she will be preg. by 16 and used this as a opening for part of the talk and peer pressure etc..................there are a few topics though that I will let Kris handle over the next year or so......

Wendie, Don't I wish!!;) :laughing: We did go to the cabinet shop on Friday, to get going on picking out the vanity for the bathroom. It's going to have to be semi-custom or totally custom to make it handicap accessible for DH, so we want to give them plenty of time to get it done. Still waiting on everything to get approved with the state. Mario is going to have to purchase more insurance before they will give him final approval, so we are probably still quite a way from getting started on the remodel.
I love Ross's comment on the watching the health channel!:laughing: So I don't guess I can just put that on instead of dealing with all the questions Alexis is starting to have, Can I?? ;)
Your a better woman than I am, I'd have hit the ceiling over the comment that "it must be nice not to have anything to do all day"!!! The nerve of some people & yeah it's usually other women! I did the SAHM thing as much as I could when I my DD was young & I'm happy to be here for Alexis & DSIL. Since she's unable to be the SAHM, Alexis at least gets a SAH Nana.
Lauren, don't let your sis get under your skin! You & A certainly deserve this opportunity after all you've been through & done!

Poor Alex had "the talk" too. His father talked to him after his class went to this center were they take all the kids to for a mass talking. I tired to talk to him too but he said he was all talked out.
I had a change in plans I making the potatoes and grilled chicken breasts with a salad. I got to involved in cleaning my kitchen cabinets. A word of wisdom for all of you don'tt get white cabinets.

I had off-white cabinets before Katrina, they were SO hard to keep up. Now I have Golden Oak - much better.

Well, dinner was...edible. It was haddock all right, but that was all it was. Plain, broiled haddock. No sauce, no spices, nothing! But, I ate it with a smile and said it was delicious. Maybe the food was not so good, but the company was priceless. I really do love my in laws. (I just wish they would let me cook for them! :rotfl: )
So, the bread. That bread is my "cheaters garlic bread" and it is really simple. We have a special name for it but it's a little goofy so I can't put it on here. All I do is slice bread, then microwave half a stick of butter, stir in a teaspoon of garlic powder, salt and pepper, then distribute that equally. Top the bread with thinly sliced mozzarella, and for extra salty yumminness, thinly sliced haloumi, then bake at 400 degrees for about 15 minutes, until the cheese is browning and the bread is toasty.

Our dinner was yummy tonight!
We grilled burgers but I tried stuffing mine with gorgonzola - OMG. I could have eaten them for days. DH refused to stuff his with anything so his loss. I adore gorgonzola and beef together. YUMMMMMMMMM!
With it I fried thinly sliced sweet potatos. Now, neither of us like sweet potatos usually but I know they are healthier for you (is the healthy part canceled out when you fry them in oil?) so I gave them a shot. I have to say they were pretty darn good! I sprinkled them liberally with salt so they had that sweet/salty/greasy thing going on that was delicious.
They are healthier than fried salted russet potatos, right?
Anyways, I was a happy camper with my burger.

I looked at the schedule as well and now I wish we could stay longer! There is going to be so much to do! We will probably just tour the countries becasue none of us will leave Kady behind and she would not enjoy the events. We'll see.

I cannot believe how much good food costs lately, and anytime a special meal or extra guests are around it adds up, but what are you going to do? Your family seems to be a lot like mine, lots of people around and then you all celebrate around food.
It is so nice that your DH is going to be home for the first day of school, such a special day for everyone. I do hope you all get out for a nice dinner together.

I'm with you on the at home part as well, this summer I feel like a taxi cab! I am home so I take the boy down the street to camp as well as Kady's activities and that trip seems to put me over the edge. I cannot wait for next week so that we don't have anything else we "have" to do.

I did not realize that there was so much involved in your renovation. Your head must spin sometimes.
There is nothing better than a being a SAHN! My DD needs to work as well, she has the best benefits so they do what they need to do. There is something about Nana's and their precious grandchildren that while not the same as Mom, is pretty darn good! We are Nana and Pa to all of the kids and I think it is a wonderful gift for us, we just enjoy and don't have all of eh day to day worries that a Mom and Dad have. Mom and Dad go to work knowing that their children are in hands that love unconditionally.

I have my Dr. appt with my orthopedic to get the MRI results from my wrist this morning, and figure out what we do next, then Ross has rec this afternoon, and karate demo team practice this evening.
Dinner tonight will be Roast beef grinders......roast beef, cheese, onions, green peppers, and pizza sauce on bulky rolls hot under the broiler, and then I top them with shredded lettuce and toms.....quick, easy, and sooo yummy!

Hey all! Our weekend trip to Branson was fun. The food was nothing to write home about, but we had a great time. Found some great deals at the Disney outlet--got started on some bday shopping for DD! Tonight will be something quick and easy--pasta and meat sauce probably as we have to go pick up DH's car from the shop this afternoon.
Oh, and you mean a SAHM doesn't get to sit around and watch soaps and Oprah all day?????;) Geez! I honesty think that's what DH thought I did for a while--now he has a greater appreciation for me staying home with the kiddos when I pick up a weekend to work and he has them both by himself for two days. :thumbsup2

Those pototoes were just so-so. I did them on the grill so that may have made the difference, they did smell really good.
I plan on making those beef skewers tonight with roasted cauliflower and snap peas.

I have a run-around-town day today, so dinner tonight will be quick and easy. I'm making a hamburger/vegetable soup, and I'll pick up some whole wheat rolls while I'm out today.

Still not sure really where we are with my wrist issue, though we do know that it isn't TFCC, which is good and bad....good because that would have meant surgery for sure, bad because we are still at a loss of the problem. The MRI showed some fluid and some tendon damage. I will start up (as soon as Ross starts school cause it is easier schedule wise) ultrasound therapy 2x a week for 2 weeks, if that doesn't help it I will need to go see the hand specialist, and see what he thinks. Exploratory surgery might be needed.
This is getting frustrating as I have been dealing with it for a year now, and I am still where I started from...Oh well it could be worse:)

Sorry to hear there's no answer yet. I can relate, two years ago I fell and fractured a bone near my hip. Went through cortisone injections, ultrasound therapy and still no relief. The only time it hurts is when I sit for too long, which is not a problem. Hopefully you will get it resolved without surgery.:hug:

The bathroom renovation is going to be major! Nothing easy like my little kitchen redo. The worst part is that the cement slab will have to be broken out to move plumbing & make the shower level with the floor for a roll-in. It's going to be quite a mess! Hopefully having Mario here to do it, will help!:lmao:
This Nana stuff is cool isn't it! A heck of a lot more fun & less stress than being a SAHM, not being ON 24-7 is bonus. Although sometimes I think I could just move her in & be even happier!
I have my Dr. appt with my orthopedic to get the MRI results from my wrist this morning, and figure out what we do next, then Ross has rec this afternoon, and karate demo team practice this evening.
Dinner tonight will be Roast beef grinders......roast beef, cheese, onions, green peppers, and pizza sauce on bulky rolls hot under the broiler, and then I top them with shredded lettuce and toms.....quick, easy, and sooo yummy!
Wendie, hope the appt goes well! I've never made roast beef like that! Sounds yum, I'll have to try it!

The bathroom renovation is going to be major! Nothing easy like my little kitchen redo. The worst part is that the cement slab will have to be broken out to move plumbing & make the shower level with the floor for a roll-in. It's going to be quite a mess! Tonight's dinner is something new and it is one of those things that could go either way so I hope it is good. It's called overnight crab casserole. You mix all the ingredients together and let it sit overnight in the fridge. We'll see.

Half sours are pickles that are cured without vinegar, just salt, pepper corns garlic and dill. I have tried to get them to taste like Buddy's grandmother made them but I can't get it right. I know that she used grape leaves and the heel of a rye bread, and one time that came out okay. His cousin remembered that, but nothing else. He was little and only remembers heading down to the root cellar and snacking on her pickles.
And if the Foodnetwork stars this year were the best of the bunch, our Liams sisters have got it won already, don't they :thumbsup2

Okay, dinner is set. We are having turkey meatballs in gravy over bow tie noodles. I have leftover squash sautee so we can have that with it. I have salad, but will make a tomato, basil, and mozzarella salad with olive oil and balsamic vinegar.
I seldom make the meatballs because my family likes the ones I buy better. I just looked at the ingredients and saw whey down at the bottom of the list. I need to see if Kady can have them, if not....back to the drawing board for her.

It's wonderful that you have such a close relationship. I know my parents have added so much to my children's lives, and I think if my mom had her way, she would have the whole family at a big family compound or something. As it is, she has Becky next door and our brother in the basement, but the kids and I are about 40 minutes away.

I should report that Becky's cheesy garlic bread was just as greasy, garlicky and gooey as she promised. It was yummy. However, I am really glad I don't have a cholesterol screening scheduled for the morning. :)

I bet if your Mom had her way she would drag you closer to home as well. I know that when Donny was looking for a condo 30 minutes away I was sick, now he is only 20 minutes but it could be closer if I had my way.
Dinner was good tonight. We also had garlic bread and Kady had her bread plain....just like she likes. Blech! Now we wait to see if Kady is sick from the whey, it was almost at the end of a lot of ingredients, so Marisa decided to let her try them.

Oh wow! My dinner was so good! It was Rachael Ray's "Sloppy Joe DiMaggios." It was an odd idea, but I gave it a try. Mmmmm! And my husband loved them, too.
Here's the recipe:
Sloppy Joe DiMaggios
1 tablespoon extra-virgin olive oil
2 pounds lean ground sirloin or ground turkey
1 packages beef or pork hot dogs, sliced 1/2-inch thick
1 onion, chopped
1 tablespoon steak seasoning (recommended: Montreal Steak Seasoning by McCormick)
1 tablespoon chili powder *I omitted this and just added some cumin*
3 tablespoons dark brown sugar
3 tablespoons Worcestershire sauce
1 (14.5-ounce) can tomato sauce
9 soft burger rolls - like at the ballpark
Heat the extra-virgin olive oil, a turn of the pan, in a deep skillet over medium-high heat. Add meat and crumble as it browns. Add chopped hot dogs after 3 to 4 minutes then cook 3 to 4 minutes more. Add the onions to the pan and cook to soften, 5 to 6 minutes more. In a bowl mix the spices, sugar, Worcestershire and tomato sauce. Pour sauce over the meat and simmer a few minutes to combine flavors. Slop onto buns and serve.

It's just a casserole with pasta, meat sauce and cheese layered and baked. Some recipes call for it to be baked in a pie plate, hence the name. I prefer to bake it in a casserole dish (you can make more).

As to the kale, I think it is a nice addition to soup, but I honestly do not know how to cook it. I like it when it is cooked right, but I ruined it the few times I tried. RR uses it a lot, though Lindsay.

I just dropped Ross off for a field trip for the day, it is to an amusement park 2hrs away. He will get back from that with just enough time to have a quick snack and change to get to karate for 5:15. That will go until 8pm.

Kathy-- we love spag. pie here too!!! I got the recipe from Ross' preschool teacher years ago....When I make spag I always make extra pasta so I can make this the next day.
Dinner tonight will be up in the air...Tuesdays it is to hard to cook, as Ross has karate so late, and right through supper time....he just has a snack before he goes, and then another snack after. Kris is working late tonight as well, and will be happy to have cereal and toast. The man loves cereal, lol.

Just a FYI about the Joes, I noted that I omitted the chili powder. My stomach can't take chili powder anymore. It gives me the worst diarrhea. So I just added cumin instead. You are going for somewhat of a chili flavor. Mine just wasn't spicy. Make any sense?
A few shots of Tabasco would probably do the trick, too.
Also, regardless of how lean my meat is, I always drain the excess liquid.

Thanks for the tips Lindsay- I also drain my meat, I am not a fan of grease rising to the top of a dish :eek:. I use chili powder but mine is not a spicy hot one, and I also add cumin, I like to smoky flavor it gives. I won't add the Tabasco, half my table would rebel :rotfl2:

Nancy, one more thing. I put the sauce together before I began the rest of the meal. My exact words were, "Holy crap! That's TON of sauce!!!" But don't worry. Once you see all your meat, hot dogs, and onions in the pan you can relax. It is just enough. I liked this recipe because it wasn't as "juicy" as regular Sloppy Joes. :)
Next time I am going to try some smoked sausage instead of hot dogs ;)

I think it would be just fine in the soup. I don't know much about kale, but I know that Rachael Ray uses a lot of dark greens in her cooking. Maybe go to Food Network and see what you can find. I know that RR always adds a little nutmeg whenever she uses dark greens.

Don't know what's for dinner yet. I need to really start using up expensive items in the freezer, since hurricane season is really kicking in. Wish I had some crab in there, I'm jealous of Glynis' crab cakes!
Lindsay, I have cooked kale mixed with swiss chard. The same way I do spinach but it takes a bit longer to get the kale/chard tender. I saute chopped garlic in a bit of butter & olive oil, then add the cut up greens, season with salt & fresh ground black pepper. I have an italian soup recipe, that I use kale in and it is yummy, so your soup should be great!

I haven't really posted much because, first I was at Disney, then I started dieting. I've lost 5 pounds so far.
I haven't really been cooking much in the way of meals, especially mondays when Ed works 8 AM to 8 PM..Plus 2 of my kids are in Pa with their dad for the summer...IT's Just me and Jeremy todayn and he took his ADHD meds late and won't eat much.. I have a small pork loin that I will coat in dijion mustard and breadcrumbs and bake..We will have it with vermacelli and some veggies.
I' m ordering a bunch of internationa food from Amazon soon.. pestos, english foods etc..It should be fun to incorporate those into meals

I actually used a new one I hadn't tried before. It was posted here on page 172 by Txtink! The difference in it & what I did before, was the Sherry & you know I added more a bit more than called for! It did make a big difference in the taste though. (My DH loves any & all of the old time cajun crawfish dishes & he thought this was the best he'd had in a long time.)
And of course I can't follow any recipe exactly! I was smart enough to go write down the changes I made because it turned out so good! Here's the recipe the way I fixed it:
Crawfish Etouffee
1 Stick Butter
2 Tablespoons All-Purpose Flour ( used about 4 tbsp for a good size roux)
1 Cup Chopped Yellow Onion
½ Cup Chopped Celery
½ Cup Chopped Bell Pepper
¼ Cup Chopped Green Onions
1 Tablespoon Minced Garlic
2 Bay Leaves
1 teaspoon Salt
¼ teaspoon Cayenne Pepper
(I used Bob's homemade seasoning similar to Tony Chachere's)
2 Tablespoons Dry Sherry plus a splash more
1 ½ Cups Shrimp Stock or Water (used half Chicken Broth, and half homemade shrimp stock)
1 Pound frozen packaged Lousiana Crawfish Tails
1 teaspoons Fresh Lemon Juice
3 Tablespoons Chopped Fresh Parsley Leaves, plus more for garnish
Cooked Long Grain White Rice
In a large pot, melt butter over medium-high heat. Add the flour and cook, stirring, to make a light roux. Add the onions, celery, bell pepper, green onions, garlic, bay leaves, cajun seasoning and cook, stirring until the vegetables are soft, about 5 minutes.
Add the sherry and cook for 2 to 3 minutes. Add the stock and crawfish tails and bring to a boil. Reduce the heat and simmer until thickened, about 5 minutes. Add the lemon juice and the extra splash of sherry.
Stir in the parsley and remove from the heat.
Adjust the seasonings to taste. Serve over rice, garnish with additional Parsley.

Well, we were going to have a houseful of company, so I made 2 double batches of ice cream, one Reese's Peanut Butter Cup, and one Dreamsicle flavor. They are both really yummy! Then, my daughter got sick, so we had to cancel our company coming over. So, I have oodles of ice cream. Want some????

Tonight is going to be hamburgers on the grill. I said I was going to start using the expensive stuff in the freezer & these are! I'm picky about ground meat, these are the premade burgers from Whole Food. I going to either stuff or top them with roquefort cheese.

I was going to make flounder with a jalapeno cream sauce. However, when I started cooking, I discovered that I didn't have any jalapenos and my cilantro looked barely alive, so I changed the sauce. Instead, I made a tomato/herb cream sauce. It was really good. I also made eggplant sticks instead of salad.
Here's a pic of the flounder (it would definitely get an EASY rating from Kathy)

Wow does that flounder look good. Would you mind sharing the recipe. My cilantro doesn't look good either it got to hot to fast here. I think I might try growing it closer to the house.

Sheryl - I have printed the recipe and I'm going to try it this weekend. I wasn't going to ask for it because I figured it would be too labor intensive. But that looks like something I can manage within my time schedule.

Janice, here is the recipe. I just improvised on the sauce, so feel free to add or subtract to your taste.
Flounder with Tomato/Herb Cream Sauce (serves two)
For Sauce:
1-2 tbsp olive oil (or butter)
1/2 medium onion (Mine was a young red), finely chopped
8 cherry or grape tomatoes, quartered (or one regular tomato, chopped)
1/4 c chopped herbs (I used parsley and basil)
1/4 c light or heavy cream (I used heavy because that is what I had)
salt and pepper to taste
Heat olive oil or butter in pan. Add onion and saute for a couple minutes until it starts to soften. Add the tomatoes. Cook for 3 minutes, or until you can break the tomatoes apart to form a sauce. Add the herbs and then the cream. Stir until heated through. Add salt and pepper to taste.
For flounder:
1-2 tbsp butter (depending on the size of your pan...you want it to be well-oiled.)
1-2 tbsp grapeseed oil (substitute olive oil if you don't have it)
buttermilk or milk
flour (I season mine with salt and pepper)
4 flounder fillets
Heat the butter and oil in a skillet until hot. Dip the flounder in the milk, then dredge in flour. Add to skillet and cook 2-3 minutes per side depending on thickness. (Mine was fairly thin, so once I cooked it on one side, it only took enough time to brown on the other side for it to be done.)
To serve, place sauce on plates and put two flounder fillets per plate on top.

Hmmm. Never thought about it.
My parents used to host a banana split party every summer for the theater company that my dad produces. Mom would make all the hot fudge and caramel sauce. I remember our house smelling like an ice cream shop for days beforehand. I learned to make those sauces as a child!

I hate VBS. I honestly do. I can't WAIT to board that plane next Fri night and head to Florida. IF I can make it until then.

Laura, that looks great! I'm really interested in that jalapeno cream sauce, I've never made anything like that one. When you have time would you post that recipe too! Since I've been finding wild alasakan frozen flounder filets at a cheap price, I'm sort of hooked on it. So easy, we would occasionaly get a whole flounder from fishing friends & I love that too, but not so easy.

Between his show and Julia's, I learned some of the basics about making a roux and adding layers of flavor. As much as DH whines about me "Nanatizing" his meals, he is always inviting someone to have dinner here, so I guess I learned enough to get by :lmao:.

The shrimp stock is so easy to make. The next time you have shrimp put the shells in a pot with water, onion, celery, carrot, bay leaves & peppercorns and simmer for hours.

Morning all--
Today Ross and I are going over to visit my Martyr in Law....first time in over a month (we had an grandparenting issue with Ross' play, {I didn't bother you all with} that has made me peeved at them, I didn't want to have a huge blow up with them as it wouldn't do any good, so staying away until it didn't matter worked best). We will visit for a few hours, or until my tongue can't take me biting it anymore.
Gretchen--glad you liked the pork chop recipe....I think it tastes good because it is so easy to do, lol. Anxious to hear how your chicken recipe turns out....I love chicken recipes as it is our favorite and I cook it 3-4 times a week.
That being said---Boneless chicken breasts with SBR for supper tonight along with cukes and rice. Simple as Ross has grappeling class until 6:30.

Update on my mother.....Thank you for the prayers and thoughts.....my brother got things taken care of, and figured out last week when he went down.....she has now been moved to a rehab floor in the hospital, and should be moving to a rehab center in the next week or two for more therapy.
Long Long story short..........My mother has had some mental issues over the years, and eating disorders as well........put that together with her and my father not getting along with each other for 44 years, (they have the most awful marriage, and we were the kids that would cross our fingers that they would get divorced and not stay together, lol.) and she basically had given up and in to it all. When my brother got there she weighed 83lbs and was in a severe depression.....by the time he left she weighed 110 and he had gotten a psych evaluation on her, and they put her on some anitdeppresents. He had a looooong talk with my father to smarten up.....he is playing bad cop to him, and I am playing good cop.
It is sort of strange to all of a sudden be the ones parenting them.......full circle I guess......

Good luck with the martyr in law today, You can vent here anytime, it may keep your poor tongue from bleeding.
I hope that you are feeling a little better about your Mom's health, now. It does go full circle and it seems to creep up so that you don't even realize that your parents stopped making decisions and that you are making them in the way you think is best. It must help that you have your brother to share this with, I don't know what I would have done if Gail was not there to share the decisions for my Mom.
With that said, you cannot be responsible for their behavior. You and your brother can steer them as you are now, but that really is all that you can do, so try not to take all of it to heart. I think that you both have done wonders in improving their circumstances. :grouphug:

I do try to pop in on this thread every day, I really enjoy reading what all of you make for dinner, and I LOVE the pictures too! :) Our two DD's are older now (22 & 20), so I don't seem to cook as much these days. Our youngest DD will be a Senior at LSU this year, it's hard to get motivated to cook when it's just the two of us at home. I used to take pride in the fact that I cooked a home made meal almost every night of the week when they were growing up, so it's hard to cook for 2 when I wish I was still cooking for 4. :ssst:

The only time consuming part of the recipe is making the roux & it doesn't need a dark roux, so it didn't take much time at all. You can also buy boxed seafood stock. I haven't tried it yet, but I'm going to get some, since I'm trying to empty the freezer's a bit, because of hurricane season.

I do try to pop in on this thread every day, I really enjoy reading what all of you make for dinner, and I LOVE the pictures too! :) Our two DD's are older now (22 & 20), so I don't seem to cook as much these days. Our youngest DD will be a Senior at LSU this year, it's hard to get motivated to cook when it's just the two of us at home. I used to take pride in the fact that I cooked a home made meal almost every night of the week when they were growing up, so it's hard to cook for 2 when I wish I was still cooking for 4. :ssst:

I think that there are more of us here like you than it seems. I know that I use this thread to keep me motivated, it is easy to "let it go". Lots of recipe ideas and lots of help when you are in a slump.
Enjoy your dinner with your DD's, I know I always enjoy cooking even more when my entire family is home.
I haven't tried it yet, but I'm going to get some, since I'm trying to empty the freezer's a bit, because of hurricane season.

Well, no more lurking for you! :goodvibes You are already like one of our homegirls! My DD graduated from LSU in '04!!!! GEAUX TIGERS!
I only have my one DD, so when she went off to LSU, I took it pretty hard. Stopped cooking for a while, ate junk, I gained the freshmen 15, instead of her! After being depressed for over a year, I finally realized I had gotten fat! So, I joined WW & started cooking again. A very different kind of cooking than I used to do! So now I'm back to trying some of the old cajun recipes. I've gotten away from de-fatting every single thing & just keep our portions small. But I am doing a lot more cooking & a lot of fancier cooking. It's just so much easier cooking for two! In fact, my DD complains that I never used to cook fancy stuff for her! Don't worry, it takes time to adjust to not having them home, but it does get easier. :hug: (My DD is a married lady now!)

Kathy and Sheryl- Years ago I used to watch Justin Wilson every time he was on TV. Your meals look so much like that food that Buddy and I used to drool over every Saturday. Between his show and Julia's, I learned some of the basics about making a roux and adding layers of flavor. As much as DH whines about me "Nanatizing" his meals, he is always inviting someone to have dinner here, so I guess I learned enough to get by :lmao:.
Homemade shrimp stock? I thought I was doing well to make vegetable and chicken stocks. I never make any other kind.

The shrimp stock is easy. Just don't boil it, keep it at a simmer or it gets bitter. I don't simmer it as long as Kathy, only about an hour or so.
I have to go dig in the freezer & fridge to figure out what's for dinner tonight.

I'm afraid my kids have no choice. Shakespeare is in their blood! My father started the USF 46 years ago, and we spend all our summers immersed in Shakespeare. About 17 years ago the USF opened a second theater that does modern plays, so the kids get a bit of both each summer. This year the girls will see Twelfth Night, The Matchmaker, and Lend Me A Tenor: the Musical.
Should be fun!!! I will go see King Lear and Coriolanus alone. I wouldn't subject 2 ten year old's to either of those, as yet.
Just keep taking Kady to things and she'll grow to appreciate them. Read out loud to her as well. This will help her to understand things that are spoken to her. My parents read Shakespeare to us from birth. I think I was the only kid in kindergarten who didn't know who the 3 bears were, but could tell you the plot to Romeo and Juliet. Boy did I get teased!

I haven't found a good boxed seafood stock. The last time I used one, I had to throw out all my chowder because it was inedible. I have had better luck with the bottled clam juice or the fish bouillion cubes (or both!)

I took Caili to see Annie last summer, and she loved it. I bet Kady would too if you ever see a production come around near you. The one we saw was playing at Boston's Opera House, so part of the whole enjoyment for Caili was how fancy the theater was.
My dad was nice and bought Caili a steak today, so we're having grilled steak, the leftover eggplant sticks, sauteed summer and zucchini squash and maybe garlic bread.

Oops! I forgot to post the jalapeno cream sauce for Sheryl. I haven't made this yet, Sheryl, but I'm posting what I would have made. The original recipe suggests cooking the fish in the cream sauce and then adding the tomatoes and cilantro at the end. I like sauteing the fish and serving it on top of the sauce.
Jalapeno Cream Sauce (serves four)
2 scallions, white and light green parts, finely chopped
1 tbsp butter
1-2 tbsps jalapeno, seeds and ribs removed, finely chopped
1/2 c heavy cream
1/2 tsp salt
black pepper
1/2 c quartered grape tomatoes
1 tbsp fresh cilantro, chopped
Melt butter in a skillet and add scallions and jalapeno. Saute until soft. Add heavy cream, salt and pepper to taste. Cook, without boiling, until sauce thickens slightly. Add tomatoes and cook 2 minutes more. Stir in the cilantro, leaving a little for garnish, and serve under or alongside fish.

I envy you, my parents did not see any value in the arts so we were not exposed. Kady loves to go to plays, we take her to the children's theater in Wallingford and she has been to the Bushnell, and we are all going to NYC to Radio City Music Hall to see the Christmas show. I think we will take her to the Nutcracker again, and dragging her Pa to that again is going to be harder than dragging her :lmao:,but he agrees that she will be so much richer for the exposure.

Well, it takes time to get my kids to appreciate things, but now they think it's really cool. Of course, they get the added advantage of seeing how the theater is run from the ground up. They are very familiar with the whole process. They know the costumers, the set designers, my son has even helped with the props department. That gives them an added appreciation for it.
If you have a chance to take Kady to see Mary Poppins, DO IT!!! My father saw it in London and New York and is adamant that it's one of the finest pieces of family theater he's ever seen!!! I'm trying to figure out a way to get my kids to see it. Unfortunately, Utah is far away from NYC, and even further away from London. If the road company ever comes to Denver we might be able to swing it!

Nancy Alex was 3 when my stepmom and I took hime to his first play. He was so good didn't move once. We are lucky we have several places that have kid's teathers.
Down on the pier (Navy Pier) there is a very good Shakespearean teather. We haven't been to that one yet. I think Alex is now at a good age for Shakespear.
I have to get dinner going what ever that is going to be. My stomach has decided it's wants to do the exorcist thing on me. I don't think it's the flu just getting older I can hardly wait for the end of mentalpause.

As hard as I tried, I just couldn't get into the kale. It may be better sauteed up with some EVOO, garlic, salt and pepper, but I just couldn't get myself to like it in the soup.
I added just a little to start out with and ended up fishing it out and tossing it :(

Wendie - It looks like the medical staff is trying to get your mother on the right track. Thank heavens you have a sibling to help. As for your martyr-in-law, as you know, there is no help for her. I commend you for being able to keep your mouth shut. I don't think I could possibly have that much restraint.
Nancy - By all means take Kady to see Mary Poppins. I took DD (post-diagnosis) to see the Radio City Christmas special performed in Myrtle Beach when she was just two and we went to see the travelling production of Beauty and the Beast in Charleston. She loved them both, although we only made it to the intermission in B&tB before she was ready to leave. I don't really know what she is getting out of the performances, but she smiles through most of the musical numbers and will sometimes bounce in her chair. Actually, she sits there much better than Kenny. :rotfl:
Laura and Sheryl - I couldn't find a boxed seafood stock yesterday and it sounds like that was for the best. I bought a bottle of clam juice and I also found some shrimp bouillion, any idea which would be better?
Last night's dinner was so-so. There were lots of leftovers, so I am going to try to doctor them up and see where it gets me. I think the original was way too bland and also needed some additional sauce. If I completely ruin it, there is always take-out. :rolleyes1

Hello friends...
My heart goes out to all that are impacted by the bridge accident in MN. We have some clients from there that Kris is trying to contact today, and check on.
Thank you all for the much needed words in regards to my parents....and for letting me VENT on the whole in law issue....it just keeps getting better....I stayed for 5 hours yesterday....(LOOOOONG HOURS) I bit my tongue as much as I could, only getting a few comments out here and there to make my feelings slightly known. They have a new screen porch added on that they used grandma's money to build, as they say it is for her to sit out on....only thing is, they don't let her leave her chair in her room at all, except to use the bathroom.....Then they complain about how her SS$ isn't enough...the thing is grandma lived on it just fine in her home...while I was there mil had 2 phone calls from collection agencies....nice huh??? They are in their 50's time to grow up.........................then to top it off,this is the worst of it all.... Ross and I left with a promise to be back next week, said how it was a fun time, all smiles etc etc........Kris gets home last night around 11pm, and said that his father called him at 8pm to say that Ross and I had been over for 5 hrs and that we never went down to see Grandma, that he didn't want to start anything but wanted to let Kris know....WTH............................Ok first of all....Grandma has no idea at all who I am....not a clue...if I am with Ross then she knows I am Ross' mom....When I went down to the bathroom, her room is right next to it and I stopped in the doorway and said hello, and asked her about her magazine she was reading...(she was "reading" the STAR...and it was quite cute and sad too, as she would get to the end, turn it over, and start over saying, OOOO a new magazine...) She was having a blast with it, and I didn't want to disrupt her and confuse her by trying to say who I was, I just felt it would mess up her afternoon as she was having a fun with the magazine, and that made me happy to see,..so I just said hi and kept going........I had called Kris while I was there, and my mil heard me say, that when Dad came home for lunch I would have him take Ross in to visit...I knew that my fil would get a kick out of doing it, well I spaced on that as we were all catching up etc with each other, and Ross wouldn't think of it on his own, so no Ross never did get in to say hi to her.
I sent an email to them last night telling them that I was not impressed that they called, and tattled on me to Kris, that neither one of us can figure out what the issue is, and that I did talk to her, and why I didn't stop to talk to her more, and that I spaced on the whole Ross part of it. I made a point of saying that I thought we had a nice visit, and had no idea I left with them upset with me, that this could have just been mentioned to me in person next week when I stopped over......I left it with saying that I am very confused and hurt by how they handled this situation,and that Kris didn't appreciate his father calling him for that reason.....Kris hasn't talked to his dad in weeks and that is all he called him for, never asked how he was doing, etc....just to scold me???? I feel that they are very immature on this issue...maybe I am wrong? I don't know...it just seemed to be handled in a childish way.
Oh, and while I was there she also told me that she thinks it is awful that I would not have a problem putting my grandmother into a nursing home, as the only right thing to do is to take your loved ones in with you......Boy are they in for a hell of a shock when they got old.....(Kris is an only btw).....I would not like to put my grandmother into a nursing home, and I hope I never have too, but I know that her coming here wouldn't do her any good as our home is 4 levels and we are gone all the time.......ARRRRRRRRRRGH!!!!

Glynis---I hope you have a wonderful time, though I am sure you will.....Ross loves the theater, and would do every week of theater camp if we let him. We are very lucky as we have a wonderful theater that has quite a few shows a year at it the next town over. I grew up with my father doing community theater.
Becky---great pics as always....the pasta and toms look amazing...what a perfect summer meal!!
Dinner tonight will be who knows....I took out pork chops, but Ross has a Karate Demo a few towns over at their summer street fair tonight, so it might just be grab and go.
I might not get back on here until Monday, as we are leaving tomorrow morning for Bar Harbor for a long weekend. I still have to pack. I can't wait to escape...and I am making Kris leave his cell behind!!! No business calls this weekend. We will either be sitting on our balcony looking at frenchman's bay, hiking along the coast, or sitting at a outdoors cafe' having a drink!! Ross loves all of it, as long as he gets to go to the improve comedy show, and to the pirates cove mini golf....compromise!

Your IL's are afraid of you Wendie. They know that you know what they are doing and are trying to discredit you with Kris so that he will not believe that they are taking advantage of Mom. In reality, they are liable for all of the money they have taken inappropriately and they know it. If anyone chose to report them to the Elderly services department of your state they would be in serious trouble. You are the one person they worry about becasue you have let them know you are not in support of their thievery and their abuse of GM. And they are abusing her. And they know it. And they know that you know it. So they are trying to cause trouble in your home so that you will stay away. Let them know that you are watching and that Kris is watching and that if they step over the line the State will also be watching.

Thanks everyone.....I just thought I would quickly fill you in on the latest on the inlaw front.................................I sent an email to my inlaws about my thoughts on them going to Kris when they were upset with me. while on the phone with Kris at his office....he got an email response back...not me who wrote it but to him............here are a few lines from it.....
First of all I saw Wendie's emails this morning and the reason I called YOU was so that I thought that if I called Wendie about it she would get all upset and then you would get a call from her and the story would get all twisted. I thought I would do the best thing by calling you so that it would be more appropriate as to get into a scene with Wendie........
(twisted I am taking that as he is saying I would lie? I also love the fact that he thinks I would make a scene over this issue)
I didn't call you to TATTLE on Wendie, I did it so it would be handled between you and I.
(this is one of my fav lines....Handled between you and I....well I have to be told to "fix" anything.....handled ugh)

I was home all afternoon and neither one went in to see her or say good-bye. So that's all that has to be said.
(my fil could have taken Ross down or said to him to go say bye to her...)
Ahem....I am baffled by this to be quite honest.....he is upset I didn't go down and visit...I did stop in the room and say hi...I spaced on making Ross go and he isn't going to think of it on his own........heck ross ran out without saying bye to him until I called him back in. It isn't like I go often and don't go see her...It is the second time since she moved in, and we went in and talked the last time. Lindsay, first of all, this sounds like a great combination. I would be interested in hearing Glynis's thoughts, but as someone who substitutes freely in baking recipes, I am not sure you are going to get the desired result with what you suggested. Regular chocolate chips are heavier than blueberries and I think they would sink. Maybe mini chips would work though. I think the chocolate syrup would be more liquid than the pie filling, especially when heated. Maybe if you melted chocolate chips or used hot fudge sauce, that would be more similar in consistency.
Good luck experimenting! It sounds like a muffin worth the effort.
Dinner tonight was pasta. I made a fresh cherry tomato and basil sauce for mine, salad and garlic bread. My MIL called and blabbed for a while (not in a bad way) but it cut my cooking time short, so I went with an easy and quick favorite.

Well I did decide on WFD we are having homemade pizza's pepperoni for Mr sameolde and Thai chicken pizza for me the smells coming from the oven makes me want to eat it raw.
Linsday I would take part of the muffin batter and mix in a good chocolate powder then add it back in to the muffin pan like you would the pie filling. SOO want time do you want us for muffins?;)

My MIL and I don't always get along. We both have strong personalities, and I don't like her, in her own subtle and sometimes not so subtle way, of trying to tell me how to parent my kids. We had some big battles when DH and I were first married (I kicked her out of my house once...probably not one of my finer moments) but now, we generally get along. I think this is due to the fact that she has to deal with me, since DH is away most of the time, and I let her do most of the talking...even if I completely ignore whatever advice she imparts.
That said, I don't think I'll trade. What you are going through is much worse, and I don't think I would deal with it nearly as well (see above about the kicking out of the house).

Lindsay, I agree that cocoa powder would be the best way to add chocolate to a muffin with mini chips rather than the full size. As a chronic substituter with often disastrous results (just try the orange cake and orange frosting I made yesterday if you want proof) I have found you should try to maintain the same consistency.
BTW- your smoky kittens were really good last night and an easy way for everyone in my family to eat at different times, yet again!

I would not count anything I say because I have more disasters than successes lately, but in Glynis absence, Laura is an accomplished baker, and I would feel very secure with her advice. Try it and let us know, if the proportions stay the same the result should be fine, the taste will be good because well you are using chocolate. What's not to like?

We definitely have different tastes around here--I would rather gourmet it up a bit, when the rest of the family is content with hamburger helper and frozen pizza. I will convert them one of these days! Not sure about tonight--I have some stuff for a, I guess it would be a ham and cheese stromboli--something so DD can "cook" with me. We shall see

Ladies, thank you for making me remember what a truly wonderful MIL I have. She is loving and kind and has never, not once, made a single disparaging remark about me or Kenny and how we are parenting the children. She called one day when I was not having a particularly shining mother moment and all she said was "Honey, you have such a tough job. I pray for you every day." She is really amazing. :angel: Now, if she could just give some instruction to my own mother. :sad2: But that's another story altogether.

Just thought I'd share the "healthy" fried green tomatoes, Breaded with nonfat milk, egg beaters, panko, and reduced fat Kraft parmesan cheese-stuff. Fried in skillet with PAM.

Last night I did a take on filet oscar- trimmed round steak with crab meat and bernaise sauce(bottled). With bake potato topped with onion, roasted red pepper, garlic, kalamata olives, mushrooms. I halved(and halved again!) all that so that's what's for dinner tonight, again! If I remember to take the camera home I'll get a pic.

As for me being an accomplished baker, believe me, I have had my fair share of disasters. Becky, I'm sure, won't ever forget the chocolate almond torte that tasted like scrambled eggs. The reason I know the chocolate chips will sink is because I tried to make chocolate chip cupcakes once. All the chips were firmly attached to the bottom of the cupcake liner.

I did not take photos the past two nights, but I did make what I said I was going to. Today I got to work and at about 10:30 my boss told me I could take the rest of the day off since I have been working so hard. Hmm...I am not going to clue him in that it was not much effort, but he really was quite impressed with me this week, so I'll take it!
I had to wait a while for a train home, so I spent way too much time (and money) at the farmer's market. Here is the haul:

I am not sure what I am making tonight, but it is going to involve lots of vegetables! I ate a late lunch so I am not feeling too inspired right now. I also have a TON of peaches I need to use up. We don't normally eat dessert, but tonight I am going to make a dessert I saw in this month's "Fine Cooking" magazine. It's for macerated peaches, layered with honey-scented whipped cream and crushed biscotti. I'll take a picture for sure!

All this talk of in-laws...I have to say that I usually get along well with my in-laws. They are not the most organized people, or planners, but they mean well, and they genuinely love both of us, and I try to keep that in mind when I get irritated with my MIL. DH fields most "issues" related to them, which probably helps maintain my equilibrium towards them. I just get to hear about "things" later, when it seems humorous. I could give you examples, but you would not believe me...
I won't comment on Laura's MIL, who I have the pleasure of being acquainted with. ;)

Speaking of baseball camp, here's my proud mom story. Liam's team was in the championship game this afternoon, so Caili and I went to watch. It was the last inning and the score was 22-17 (not exactly a defensive game), and Liam's team was behind. They rallied and scored four runs. Liam came to the plate with two outs and two on base. I was so nervous he would make the last out and the team would lose because he hadn't had a very good day at the plate. (Two outs and hit into a fielder's choice.) First pitch, he hit a line drive to right field and the score was tied. The coaches then yelled, "That's the game! You all win!" (They can get away with that with eight year-olds.) Anyway, Liam was so excited that he got the "walk-off single." :)

I made this recipe up...it's a raspberry margarita....1 1/2 ounces silver tequila, 1/2 ounce framboise, 1/2 ounce couintreau, juice of one lime, shaken until very cold and then served over crushed ice in a glass lined with lemon sugar (from today's farmer's market haul), and garnished with raspberries, lime slice, and blue plastic mermaid (if available).
Erm, I better go figure out dinner before I drink this thing.

I almost forgot to mention. Yesterday I was touring World Market looking for rice noodles and I found the most wonderful chips. Red beans and rice flavored tortilla chips by Plocky's. They actually have red beans and rice in them.

Speaking of baseball camp, here's my proud mom story. Liam's team was in the championship game this afternoon, so Caili and I went to watch. It was the last inning and the score was 22-17 (not exactly a defensive game), and Liam's team was behind. They rallied and scored four runs. Liam came to the plate with two outs and two on base. I was so nervous he would make the last out and the team would lose because he hadn't had a very good day at the plate. (Two outs and hit into a fielder's choice.) First pitch, he hit a line drive to right field and the score was tied. The coaches then yelled, "That's the game! You all win!" (They can get away with that with eight year-olds.) Anyway, Liam was so excited that he got the "walk-off single." :)

Wish her luck, she works nights and is just getting home now so she is going to be in rough shape after a bit.

Our dinner last night at Texas de Brazil was worth the hype. I ate way way too much but couldn't help it. If you haven't been to one and have one close, sign up for their email coupons and go sometime. We will def go again (with a coupon!!).
For dinner, we are having buffalo chicken lasagna. New recipe for us but one that came highly recommended by several people so I hope it's good!!

Kathy- she and my BIL worked all night, they work 12 hour shifts but somehow she got a second wind. I called Buddy's cousin to help, Gail had not packed one thing, and she and Mike have more stuff than I have ever seen! We hope to get a lot done tomorrow and at least have most moved out so that we can clean, Then Dan and Erica can start moving their things in.

I also made DH a ribeye steak with cilantro-chili butter, and I had a piece of chicken with chipotle bbq sauce. The toasts are spread with a mixture of chopped artichokes, brie, and parmesean. Morning all. Last night ended up being a treat for me--dsis invited me out with her girlfriends and we ate at PF Changs. Had some Ahi Tuna and some steamed shrimp dumplings! Yummo. But the best part of the meal was the Asian Pear Mojito! :thumbsup2 DH is heading out this afternoon to the PGA Championship-he scored free tickets to the Monday Practice round, so we'll see what's for dinner later

Thanks for the compliments! Dinner really was yummy. Sorry you are not feeling well! That's too bad about the mahi. I can never get fresh mahi around here. I do love it though, and eat it all the time when we are in FL or St. John. That's so weird that is was all bony! I mean, it's a big fish, really easy to fillet.
Laura's here helping me organize today's linner. The main course is a repeat from a couple of weeks ago--the grilled littleneck clams with garlic butter and grilled striped bass with garlic mustard sauce. Additional items are a grilled eggplant dish layered with heirloom tomatoes, fresh mozzarella, and parmesean, roasted asparagus tossed with lemon and garlic, creamed corn (from scratch!), and...I am forgetting something. Spinach, maybe. Plus, we are going to have some of one of my favorite wines--alban estates viognier. Photos later!

We're having spaghetti with (mostly) a home made sauce. Added some medium salsa for a little kick. It's been simmering all day. Ummm.
We're also having a salad, garlic bread, and maybe a cake. I have enough dark chocolate brownies for everyone so that will probably do. :)

Hi y'all, I know I'm days behind with my quotes here. But if I don't just go day by day, it'll get all messed up!
I haven't found a good boxed seafood stock. The last time I used one, I had to throw out all my chowder because it was inedible. I have had better luck with the bottled clam juice or the fish bouillion cubes (or both!)

Last night I did a take on filet oscar- trimmed round steak with crab meat and bernaise sauce(bottled). With bake potato topped with onion, roasted red pepper, garlic, kalamata olives, mushrooms. I halved(and halved again!) all that so that's what's for dinner tonight, again! If I remember to take the camera home I'll get a pic.

I made this recipe up...it's a raspberry margarita....1 1/2 ounces silver tequila, 1/2 ounce framboise, 1/2 ounce couintreau, juice of one lime, shaken until very cold and then served over crushed ice in a glass lined with lemon sugar (from today's farmer's market haul), and garnished with raspberries, lime slice, and blue plastic mermaid (if available).
Erm, I better go figure out dinner before I drink this thing.

I marinated it & cooked it on the grill, it was so yummy. The only other cooking I've done this weekend was belgium waffles this morning. Have to find something for dinner, now.

Sheryl, the mermaid was from a restaurant DH and I like to go to...for anyone around here, the East Coast Grill in Cambridge. They always hang trinkets off the drinks, even glasses of wine. We've gotten mermaids, monkeys, donkeys (no elephants ;) ), swordfish, and a couple of other charms. I have a bunch of them in a kitchen drawer, and break them out when the drink seems worthy.

It's a brioche muffin, griddled in butter, filled with the leftover peaches from the other night topped with vanilla ice cream and hot butterscotch sauce, surrounded by fresh raspberries. I did not eat any of it but DH said it was awesome:

Now that would definitely kill my stomach for a week. I haven't been able to eat fast food since college...well, a couple times when I was pregnant with Liam, but that was out of desperation. I couldn't make the 20 minutes home without food ;)

I'm sorry you had to throw out the fish. In general, I try to avoid frozen fish. Becky has had some good luck with frozen sushi grade tuna, but other than that, we usually can get fresh stuff around here, so I go with that. At least the salsa was good!

Believe me, I wasn't happy. Not only did I have to throw the chowder out, but it stunk up my house for a week.
We did end up having hamburgers and hotdogs yesterday, and I survived. Today was linner with Becky, BIL and my parents. It was good (see the pics above) but the fish was slightly overdone...my fault. I was in charge of the grill today. It still tasted good. Becky and I didn't like the eggplant dish, but our parents seemed to enjoy it.
The only problem is that we didn't make a starch. I am already starting to feel hungry.

Hey Glynis!! I have an interesting muffin question for you.
I made your blueberry muffins yesterday for my husband to take to work. I was thinking of other ways to make them and an idea occured to me. How would it be if you add 1 cup of a chocolate chip of some kind in place of the frozen/fresh blueberries, and a half cup of Hershey's chocolate syrup for the pie filling? Toss in a tablespoon of espresso powder and voila!!!
Chocolate espresso muffins!
Do you think it's a good idea? Would you mess with any measurements; use something besides chocolate syrup? What are your thoughts?
Sorry I'm late on this, Lindsay! It sounds incredible to me! I don't really know about the measurements. I would try a batch and see how they turn out. That's pretty much what I have to do when I want to mess around. Lots of times they end up in the garbage, but that's how you learn, right?
Oooooo, I just had a thought. Cherry pie filling with chocolate chunks or chips for a chocolate cherry muffin. Hmmmmm, looks like I may have to try it out!

Lindsay, first of all, this sounds like a great combination. I would be interested in hearing Glynis's thoughts, but as someone who substitutes freely in baking recipes, I am not sure you are going to get the desired result with what you suggested. Regular chocolate chips are heavier than blueberries and I think they would sink. Maybe mini chips would work though. I think the chocolate syrup would be more liquid than the pie filling, especially when heated. Maybe if you melted chocolate chips or used hot fudge sauce, that would be more similar in consistency.
Good luck experimenting! It sounds like a muffin worth the effort.
Dinner tonight was pasta. I made a fresh cherry tomato and basil sauce for mine, salad and garlic bread. My MIL called and blabbed for a while (not in a bad way) but it cut my cooking time short, so I went with an easy and quick favorite.
Good suggestions! I think you're right about the consistency. Perhaps a thicker chocolate syrup, or use less and add some cocoa powder. Trial and error!

As for me being an accomplished baker, believe me, I have had my fair share of disasters. Becky, I'm sure, won't ever forget the chocolate almond torte that tasted like scrambled eggs. The reason I know the chocolate chips will sink is because I tried to make chocolate chip cupcakes once. All the chips were firmly attached to the bottom of the cupcake liner.
Here's a little trick I've learned: place your chocolate chips (or blueberries, or whatever) in a baggie with a little bit of flour and shake to coat. This helps the heavier items stay afloat in the batter and not sink to the bottom.

Hello friends! Have I mentioned on this thread how much I hate VBS? It starts tomorrow morning and I have worked my poor feet off today. Still have more to do but I'm taking a breather before I have a meltdown and email a resignation letter to the pastor. =)
Tonight we had the buffalo chicken lasagna I was going to make last time. It seems that when I finally got home last night at 6pm, I fell asleep until 730 and it takes forever to bake so we ran errands for VBS and ate bbq out. Yummy brisket sandwich and fries for me.
This was a new recipe; good, spicy, nice change from traditional lasagna. Next time I'll cut the chicken pretty small. I also used the entire tub of ricotta cheese because it doesn't spread so I had to lump it on each layer, thus using it much faster!
You can never have too much ricotta, imo.
Buffalo chicken lasagna
12 Whole Wheat Lasagna Noodles, uncooked
1 lb. Skinless Chicken Breast, cubed
3 Cups Hunt’s Four Cheese Spaghetti Sauce
1 Cup Very Mild Buffalo Wing Sauce
1 1/2 Cups Water
15 oz. Nonfat Ricotta Cheese
1/2 Cup Egg Substitute
9 Slices 2% Pepperjack Cheese
Preheat the oven to 350 degrees. Spray skillet with nonstick cooking spray. Cook chicken over medium high heat for 4 minutes or until almost done. Stir in sauces and water. In a small bowl, combine ricotta cheese and egg substitute. Spray a 9X13 pan with nonstick cooking spray. Spread 1 Cup of sauce in the bottom of pan. Arrange 4 noodles over the sauce. Spread more sauce, then a layer of ricotta mixture. Add another layer of sauce, and repeat the whole process until you end with a layer of sauce. Cover and bake 70 minutes. Uncover and place cheese slices on top, then bake for another 15 minutes uncovered. Let stand 10-15 minutes before serving.

Sorry I didn't post this weekend. Wayyyyy too much drama with my parents not making it back from their vacation. Emergency landing in a different city, etc., trying to find where their dog was (supposed to be with my brother). Anyway, Kenny and I are exhausted.
The etouffee was good, but I think next time I'll make it with fresh shrimp. We liked the crawfish, but I'm sure like other seafood, they would have been better if they were fresher. We are so spoiled living on the coast.
Tonight I am making Lindsay's Sloppy Joe Demaggios and steak fries for the kids.

It's Monday, so we have skating. That means the kids will eat in the car (I REALLY need to SuperVac the backseat...my brother describes my car as Eau De M+Ms) and I will eat when we get back. I bought way too many tomatoes at the Farmer's Market last week, so I need to use them up. Maybe I will make a pizza.

Tonight's dinner will be a baked Hunter's Stew. New recipe, and it sounds good, but a little bland. I'm planning on playing around with it. If I can get the laundry caught up, I may reward myself with the chocolate cherry muffins. We'll see.

The brand I buy is Paul Gaspard (cleaned & peeled wild caught Breaux Bridge, LA). I had tried another brand (also a cajun name ) & then realized it was Chinese crawfish!:eek: That freaks me out for several reasons but also just doesn't taste the same at all!
Tonght's dinner is either going to be red beans & rice or Irish Lamb Stew if I can find that recipe I had for that. I looked for it on the computer & couldn't find it maybe it's in my old envelope "file"? I sure hope I find it, I had tried to duplicate the stew from the Irish Booth at F&W fest last year & the one did last year was very close. Wonder if I posted it here? I'll go look.

Lori Thanks for asking, I'm fine. The tornando's are in what's called "tornando alley" I'm 20-25 miles north and little west of their. Though I do know a bunch of Diser's in that area.

I'm on my own for dinner tonight. It is wicked humid around here feels like a steam bath. There are storms predicted for every day but friday. I think I may be cooking inside this week.I'll break out the old crock pot, I was so not organized this morning.
Glynis the choc cherry muffings sound good. That reminds me somewhere I have a recipe for chocolat cherry bread I should find that.

Ugh, it's just too dang hot here to cook! I just got back from the grocery store with a bunch of quick meals that require little cooking. I don't want to turn the oven on this week--crockpot or microwave for a while--at least until the temps get under 100!
Lori-AAAAHHH, after reading your post I realized I completely forgot to call Disney Dining today! Nothing quite as exciting as your F&W stuff--but ADRs nonetheless!

I don't know what I was thinking with stew today & this heat!! I couldn't keep the house cool even before I had it on the stove today & now it's just ridiculous! Got it on the stove earlier, then Alexis & I went to cool off in the pool. The water is NINETY TWO FREAKIN DEGREES!!!! Not very refreshing, but still better than hangin over the hot stove like I'm doing now.
Buffalo Chicken Lasagna! I missed that, will have to go look at that recipe it sounds great!

I pulled some frozen pot pies out of the freezer, and that's what the kids will have. I'll make myself a chicken Caesar salad. Hopefully, I can put the kids to bed early, and then I'll slip in Catch and Release. DH won't watch it with me, so tonight's a good night.

My dinner plans changed tonight too. I was going to make pizza, but the weather changed here, and by the time I got home from skating it was hot and humid, so I wasn't going to turn the oven on to 450. I just made pasta with a cherry tomato sauce and roasted garlic chiabatta sticks with dipping oil. It made up for the lack of carbs yesterday.

I just saw the news about the cave in. I will be sure to add my prayers for them.
I just read through the past few pages and will chat tomorrow, right now I cannot move! I spent the weekend helping my sister move and today I cleaned with her so that Dan and Erica can start moving in when they are ready. We have the bathrooms all done as well as the kitchen and one living area room. We'll go back on Wednesday to move some more stuff and finish cleaning so Erica can just move her things in.
Last night my BIL cooked steak and veggies and tomato salad with some kind of brown rice. I brought home dinner for DH who wanted to know what all that stuff was and what was in the tomatoes. I had to laugh becasue he is used to my cooking and most everything else isn't seasoned enough. He had no idea what the Success rice was :lmao:
Tonight this old girl picked up grinders from a small shop that makes the best giants around.
See you all tomorrow :wave:

Hello friends.....just a quick pop in to say hi, and that we are back....I will read back and see what I missed..........hope you all had a great weekend.....we had a wonderful time....perfect weather!!
It was great to get away!!! Our hotel room was 50ft off the ocean, and Kris and I enjoyed the balcony after Ross was asleep with some wine and homemade cheese spreads I brought with us, and just listend to the waves.
We ate wonderful fresh Maine seafood all weekend!!
I started the weekend with having Lobster quiche for lunch friday at the Jordon pond house, along with their famous popvers...(we always go here our first day on the island)
We ate the rest of our meals at different Rest. on the waters edge......lobster rolls, diver scallops, and of course ended it with Lobsters and steamers, mmmmm.
We hiked all over the island and even got caught at high tide in knee deep water coming back from Bar Island. I took a ton of pics and if I can just fig out how to post them I will be happy to share with you all!
We are heading back in 3 weeks for another long weekend.
I will catch up with my reading and posting tomorrow, need to unpack, and get Ross to bed, and get his stuff ready, as he is going on a field trip tomorrow to a local state park.

Tonight I tried another new recipe, beef and rice enchiladas. They were yummy - I really liked them but I love rice - but DH said he prefers chicken enchiladas. Very quick and easy, which was a must since I had the first day of VBS today and am so tired I'm running on caffeine alone!
Beef and Rice Enchiladas
Ingredients
8 flour tortillas (medium sized)
1 pound ground beef
2.5 cups seasoned rice (I just made a package of spanish rice)
1-2 cups Mexican blend cheese (I used 2)
1 can (10oz) enchilada sauce
2-3 Tbls sour cream (optional - though I mixed in a ton of leftover sour cream I had in the fridge with the enchilada sauce to tone down the spice of the sauce and make it stretch)
Directions
1) Cook and season ground beef and prepare rice.
2) Warm the tortillas
3) If desired, mix the can of enchilada sauce with the sour cream.
4) Spray the pan with PAM. Preheat the broiler.
5) Assemble the enchiladas; lay out the tortilla and put down a bit of cheese, then some rice, then some ground beef, then a bit more cheese and some of the sauce. Roll up tight and place into the dish seam side down. Repeat this for the rest of the tortillas.
6) When they are all in the dish cover them with the leftover sauce and top with cheese. Broil for ~10 minutes or until the cheese is melted and bubbly.

Good morning all! It is so nice to be a part of this group.
Ii was listening to the news this morning and still cannot imagine how families cope with this kind of tragedy. All of the little things we worry about seem so trivial in comparison.
Well I am not doing much today, just enough to be able to stand my own home. I am feeling parts of me that I did not even know existed :confused3 and they are not saying "Welcome back!"
Gail is almost set in her living areas, her basement is a disaster...I have never seen so much stuff and I am a pack rat married to a pack rat. She can't stand any disorder so I don't see her sleeping much.
Dan is painting today, I am not going. I love my son but painting is not his major talent so thank goodness Erica is working.
We are going tomorrow to move the rest of the furniture that we needed to find homes for and finish my BIL's work area. Did you notice that it is the women doing all of this??????? The ladies in my family are who I would want in a crisis :thumbsup2,
I am planning something EASY tonight, I just don;t know what.

Tonight I am making some pasta with more of the tomatoes I brought home from the farmer's market Friday. There were two no-coook tomato sauce pasta recipes in the Sunday Boston Globe magazine that sounded good--one for tomatoes with brie and chives, and one for tomatoes with goat cheese, lemon, and mint. They both sounded equally good and I have the ingredients for both so it will be one or the other.
I am hoping to pick up a baguette and some salad greens at the farmers market this afternoon to go with the pasta. Hopefully I will get there before everything is sold out!

Becky - This is my DH & DS favorite chicken dish. I either broil it or grill it.
LEMONY GARLIC BROILED CHICKEN
8 bone-in chicken pieces(I've also done it w/boneless breasts)
1/2 c. olive oil
1/2 c. fresh squeezed lemon juice
3 tsp. kosher salt
1/2 tsp. black pepper
1 tsp. dried oregano
1/2 tsp. paprika
As much crushed garlic as you like!
Mix all ingredients together and pour over chicken, marinate overnight. Remove chicken from marinade and place meaty side down on broiler pan. Broil 5-7 inches from heat for 10 minutes. Turn & baste with marinade and broil 10 minutes longer or until done. Boil remaining marinade and pour over chicken. Garnish with lemon slices.

Last night was a good dinner, I grilled chicken breasts marinated in Greek Salad dressing, served wtih Ranch Roasted Potatoes, sauted mushrooms ( with garlic and red pepper flake for zip!). The chicken was served over a greek salad of feta, kalamata olives, cukes and red onion..it was YUMMY~
Not sure about tonight, i have some hot italian sausage sitting in the fridge begging to be grilled with some peppers, so we shall see!
Gotta go play catch up and get MORE hungry with this thread :)

More heavy equipment has been brought in, and they are hopeful that within 3 days they'll be able to get to where they "think" the miners are. The mine owner assures everyone, that they have enough air to last "weeks" and fresh water as well. After listening to his press conference this morning, though, I don't know how much credence I'll give him. I know he's worried about the PR for his company, but he seemed really callous towards the miners. I was only able to talk to Alan for a couple of minutes by satellite phone last night. He says the families are all being kept in a nearby town, and updated hourly. The worst of it is, that none of the families speak any English. They are all apparently illegal aliens working here. They had several translators there, but it has to be so frightening for them. The community has rallied around them, though, and hopefully they'll be taken care of no matter what the outcome. Please continue to keep them in your prayers.

You know what? I often make this EXACT recipe, except I use thyme instead of oregano! I agree that it is really, really good. I usually use boneless chicken, and sometimes I cut it into skewers and grill it. I think I got the recipe from an Ina Garten cookbook, the original Barefoot Contessa one, I am pretty sure.

I've been having this recipe forever, not sure where I got it from. We love garlic, so I put a ton of it in there and DH & DS just go crazy for it. And it's "EASY".:laughing:

Kathy That chicken sounds so good I'll have to make it as soon as it cools down into the upper 80's here. It's to hot to stand over the grill.
Glynis I saw on the internet at lunch how they were hoping to get to the miners in a couple of days. I thought :eek: couple of days. I hope somehow they make it.
Ok I'm off to find something that won't heat up my house for dinner.

I think the last time I did not make my own sauce I was working full time and going to school full time, so this is a major cheat for me, and I have no problem taking help from the store. I don't think I am even going to try to doctor it up.
After all the moving and cleaning, you deserve an easy night!
Dinner tonight for me was a pesto, lettuce, tomato, fresh mozzarella and bacon sandwich and a piece of corn on the cob. The kids had apple cinnamon eggless pancakes, bacon, a LITTLE lettuce or corn, and watermelon.

I hear ya girlfriend, I broiled it and I'm sweating my butt off. Thankfully it only took twenty minutes. Our heat index was 110 today. I hope you guys enjoy it as much as we do!:flower3:

Kathy heat index here is only 101. I have to wash my hair tonight tomorrow maybe a sick day because my hair will be to big to get out the door :rotfl2:
Tonight I sauted some chicken breasts topped with white worchester sauce, snap peas and green onion on the side. Oh piece of garlic bread. I really wanted ice cream but to hot to go back outside to the store.
