I have a funny story to share...we were on our way to the Pastor's house...about half way there...and I look down and notice...I had my slippers on. What a dumass! DF scolded me the whole way home...saying if he did that, I'd be screaming at him (we were running late to begin with). I couldn't stop laughing!
That is soooo funny!!:lmao:
Today should be an interesting weather day :eek: It is already very windy
Nancy Lauren Just in case you see someone with big hair flying by with an almost 7th grader it's me and Alex grab us. :rotfl2: as we fly-by.
Alex has finally said he would give shrimp another try. He did ask if he had to eat the tails :lmao: That kid cracks me up.
We will most likely eat something mexican (that's Alex's comfort food) he will be nervious today because of the storms.
:hug: for Alex. I know all too well how it feels to be "weather nervous".
I'm going to do something with shrimp. I've been craving Kathy's grilled one's but haven't been able to get any big enough for grilling. So I'll use what I have in the freezer & maybe make a pasta.
Sheryl
Have you tried the Velvet Shrimp or Emeril's Shrimp & Potato Stew recipes that I have posted here?
Thanks for all the nice words about Kyle & Abi. She will be going with us to WDW and I'm so excited - she's never been there. I get to see it all through her eyes!:cloud9:
WFD tonight is an EASY Tarragon Chicken dish, rice pilaf and lima beans.
Have a great day all!

the time we went it was a disaster for my poor DH. Once again he came in second to cooked food :lmao::lmao::lmao::lmao: Poor Buddy:sad2: No wonder he stays slim-he's too busy chasing the food to eat it!
Whatever your Mom wears will be fine because she is your Mom and the people who are celebrating your wedding will love and respect her if she showed up in shorts. I couldn't have said it better! I told Shannon I was wearing flip flops to hers next summer and the only comment I got was "Well, at least you'll be here!" :lmao: Where's the drama I was trying to instigate?!?:laughing:
I guess I ruined her perfect little toaster waffle?!
Sheryl Darn Freakin' toaster waffle!:headache: Did you try telling Alexis you worked and slaved over that and it would make you extra special happy if she would eat it? That leftover whipped cream would ony make it sweeter- kinda like candy!:rolleyes1 :rotfl2:

They really are a cute couple Kathy. I can't wait for your WDW trip with her- it'll be a blast. Kinda like another kid without the labor, diapers, and college tuition!
How's Kyle feel about oldre women? If he got rid of Abi and I got rid of Rick I could go to Disney with ya! :eek: Just kidding Kyle!;)

Lauren -- Bubbles are really nice. Like Sheryl said, they don't allow birdseed or rice most places anymore. It's a mess to
Thanks Laura! I asked the Pastor what he prefers us to do and he said to do whatever we want. He said the stories about the rice being bad is a myth...I said still it would be a pain to clean it up if the birds didn't eat it. he said the custodian would use the blower...he is the most easy going guy...
I am going to go to the party store and see what is the cheapest!!! If I get rice or birdseed, maybe I will just put it in a nice bowl with a scoop and get cheap little containers. This way I do not have to package it...bubbles would definitely be easier!!! ;)
The kids pic is adorable!!!

Recipe please...:)
Here ya go -
Tarragon Chicken
1 broiler-fryer, cut in pieces
2 med. onions, coarsely chopped
1 1/2 tsp. dried tarragon
1 tsp. salt
1/4 tsp. each poultry seasoning and pepper
1 can cream of chicken soup
1/4 c. milk
1/4 c. sliced or slivered almonds, toasted
I remove the skin from the chicken, but if you don't place chicken skin side up in a 9 by 13 inch baking dish.
Sprinkle onions, tarragon, salt, poultry seasoning and pepper over chicken. Combine soup and milk, spoon over chicken.
Bake, uncovered, at 375 for 40 minutes. Sprinkle with toasted almonds and bake 10 minutes longer.

Kathy, that chicken sounds great...do you think it would be good boneless? My big picky eater does not like chicken on the bone unless its a wing with hotsauce and butter all over it...:)
I am sure Glynis is having a blast! I am kinda bummed, I am going to miss all of you in Disney!!! :sad1:

he'll do great Kathy! Relax- that worrying won't help the migraine either! He has lovely eyelashes! I wondered what was soooo striking about him- that's it!:rolleyes:
I'll bring the book down and post some once I get to try them. I bought a scale while I was up north and realized that 50 I wanted to lose was more like 80 I NEED to lose. So yah, I'm the fat girl in the corner for now...but that'll change!:thumbsup2 Now if I could just quit thinking about those chocolate donuts!:rotfl2:

Kathy- he is going to be fine! I saw the "boys with long lashes" thing and now I am :rotfl:! Hope you feel better soon!
I forgot about dinner. Last night I ended up with sandwiches. Everyone was at the greenhouse pulling plants and was going to get in late. Tonight I made stuffed pepper with ground turkey. I had leftover Israeli couscous so I used that instead of rice. It is so poofed up right now :laughing:. Oh well, its food when they get in. They are setting so I expect them after dark.

Lauren I just thought of this. You might definitely want to go with the bubbles,since they don't hurt. I've seen more "nuts" throw the entire bags of rice or birdseed at the poor recently wedded couple than you can believe. :confused3 They don't get the concept of opening the bag.
I have Glynis's mexican casserole in the oven.
Kathy I have been fighting a migrane today too. I hope Kyle does well.

Liam has gorgeous lashes too...not that you can tell from most of his pictures since he is almost always wearing a baseball cap.
I hope Kyle did well at his game!
I can definitely sympathize with the stressing. Liam has his first tryout on Saturday. Since it's for summer baseball, they only accept the kids they need, so it's possible he won't make the team. I'm worried that he will be really disappointed and discouraged if he doesn't make it. Baseball is his best and favorite sport. I'm trying not to think about it, but I'm not going near any blood pressure machines in the next couple of days.
BTW, DSis returns from her trip tonight. :cool1:

Kyle did well considering he hasn't pitched in over two months. They lost but the coach told him he did much better than he expected with the 2 month layoff, and the fact they were playing a team with college kids!
I can sympathize with you with Liam's situation. Kyle has been playing baseball since he was 6 and many, many times he wasn't selected for the "all-star" teams and was so disappointed but I think it worried me more than him. I guarantee you if he's not selected he'll be disappointed for a little while, but at that age it doesn't last long at all. You will be feeling it while he's laughing and playing with something else.;)
Can't wait to hear from DSis and hear all about her incredible vacation. I've enjoyed getting to know you in her absence!:goodvibes. I hope you've enjoyed it as much as we have!

I am glad Kyle did well, and that the coach was supportive. That is so important. I am surprised the opposing team would be allowed to include college players though.
Yes, I am way more nervous than Liam is. I get that way -- don't all moms? -- with my kids. (Once this is over, then I have two weeks to fret about Caili's upcoming district championship skating competition.) I know he will be fine, even if he doesn't make the team, but I am hoping he will. It will be a great experience for him.
I've enjoyed getting to know everyone better too! I won't go away just because DSis is back, though. I've posted pictures of the kids...that means serious commitment ;)

This summer league allows all high schools to invite former players who have graduated within the last two years to participate. Our school elected not to do so.

Right now, though, I should say I am committed to going to bed.
However, I should comment on dinner first. My dad cooked our hamburgers. They weren't fully defrosted before he put them on the grill, and they weren't fully cooked when he took them off the grill. I took a big bite of pretty raw hamburger. YUCK! I hope tomorrow I am not :sick:

Hello friends.....sorry it has taken me so long to get back here and catch up.....:blush: Things are still the same on the family front, I have been having a hard time keeping quiet, and it just felt wrong to not say anything so I "snarkilly" made a few comments without saying things to direct. Sort of along the lines of "Well that is one pretty big undertaking just for some new floors for free" They got my feelings but can't say much to me on it. I guess in the end it will all even out won't it Karma right?!!?
I want to thank all of you for being a great supportive sounding board...hugs to all for "listening"
Ok enough about me and the familia crap, lol! On to all of you!! :)
Kathy- Glad to hear you got the bbq sauce.....when you fig out which one is your favorite let me know and I will ship you a couple of those! :banana:
Not that you aren't aware of this, but what a handsome young man your "baby" is!! Abi looks like such a sweet girl. They make a striking couple!!:love:
Ross has super long eyelashes as well, he is always having to open his eyes wide as they will get tangled up............he gets that from his dad---me there isn't enough mascara in a tube to get mine even half as long as theirs,lol!
How is the driving going with Kyle is he loving his freedom??
I love tomato's, and we have such a short growing season around here that we basically get beefsteaks and that is it, lol. I am jealous of those yummy
sounding creoles!!
I hope that your head is feeling much better tonight.....I suffer from them as well and can sympathize with you!!
Lori- I am sorry to hear that your grandmother is slipping so quick. I am glad that you did get this time with her. What did you end up bringing her for a gift?
Nancy- I just love the picture of you and buddy!!! How are things going with the meals for kady? She is such a little trouper with all these changes, bless her heart!!
Lauren- I can't get over how fast the wedding is coming---you must be operating on screech about now...try to take it easy, and just let it come as it will.....the most important things are those two men in your life...bird seed or bubbles it doesn't matter in the end!! What a handsome little man "A" is!!
I too understand the whole parent volunteer thing....I have been room mother for 5 years so far in Ross' class and end up helping in the other classrooms as well. I ended up giving up by Valentines on asking parents to bring things in and just do it all myself. Dh (Kris) bought me a magnet that says "somebody stop her before she volunteers again" lol.
Sheryl- That is so great of you to realize that she does need a hand with some meals---you are a fantastic mother!!! I am sure dd feels that same way!!
Liamandcaili-- you best bet you are committed here sister or no sister--- :flower3: though we love and miss her, lol!!!
~~~~~~~~~~I am sure I have missed some things, I apologize, you are all on my minds and thoughts!! :grouphug:
I missed saying goodbye to Glynis too-----drat :sad1: ---- I am sure she is having a grand ole time!!!
OH and on to what this thread is "really" about ;) dinner tonight was tuna casserole....semi homemade version...but sooo yummy---- I was in need of comfort food for sure!!
Have a great day all!
Well Kathy I couldn't get those grilled shrimp out of mind. So dinner took forever, cus I kept changing my mind. Our dinner tonight almost totally came from your kitchen! I just had to tweak things a bit, ya know I can't leave even great, alone. I had some decent sized shrimp so I used your marinade but used Limoncello instead of the wine, then I skewered & grilled. I fixed something I made up tonight Limoncello Cream Fettucine. Sort of a lighter Alfredo sauce with Limocello giving it a nice lemony zing. We also had your yummy summer salad. It was so good! I told DH that the recipes came from the Queen of Easy. He said all he knows is it went down real EASY!!! I forgot to take a pic of the whole meal, but here's Kathy's yummy grilled shrimp!
Sheryl, those shrimp look great. That is what I am planning for dinner tomorrow night. Tonight, who knows?
Wendie - hang in there and if you end up killing them, I understand Kathy may have room in her freezer.
Lauren - I understand the cat thing. I can't stand to see anything hungry or hurt. We have been feeding 4 strays and one of them had her kittens (3) in my laundry room. They are so cute and I catch DH sneaking in to check on them at least once per day. He called me this morning and said it looks like we have another stray mouth to feed. Our usual cats don't seem to like this one and wouldn't let him near the food, so DH waited until they were done and fed the new cat in a different place. This cat appears more of the lost (or intentionally lost) variety, so I will call the pound and animal shelter to make sure no one is looking for their baby.
Laura - Everyone is right, you are stuck with us now.
Hope everyone has a great day.
Good morning ladies!
Wendie - It's nice to hear from you girlfriend!:yay: Kyle is most definitely enjoying his freedom with MY vehicle. I have to run all my errands very early so he can have it for the rest of the day.:rolleyes: I'm glad Gretchen gave me a heads up on the freezer, just give me a couple days notice and a body count and I'll have plenty of room.:laughing: Have a margarita for me!!
Sheryl - The shrimp look great, tweak away sista!!
Steph - I hope DS's Dr. appt goes well and it's not strep.:hug:
Lauren - You're just a very sweet, loving human being to be worried about the cats.:goodvibes I'm the same way with dogs, we'd have a house full if I had anything to say about it.
WFD tonight will be my DH bringing home my Friday night special - Fried green tomatoes with shrimp remoulade.
I have a question for y'all. I'm going to attempt to make sweet potato fries this weekend for the first time. If you've done it do you bake or fry? I know it can be done both ways, but just wanted to see what you guys thought.:confused3
Lauren I think about being a foster mom to animals, but I'm pretty sure I couldn't give them up. Good for you to be so caring.
Kathy I would bake the sweet pototo first till almost done but still firm then slice and fry to finish off. I love sweet potato fries.
Gynnis' enchilida casserole was wonderful
Hello friends..... so I "snarkilly" made a few comments
Lori- I am sorry to hear that your grandmother is slipping so quick. I am glad that you did get this time with her. What did you end up bringing her for a gift?
And if I spelled things wrong---sorry----to tired to spellcheck, and I have had a couple of glasses of wine too:rolleyes1 :rotfl:heehee I love snarkilly!:lmao: Been there lately myself. And I ended up taking a leftover purse from the store stock (tropical pattern) and filling it with a couple perfume samples I had from gift with purchase stuff, 3-4 scented lotions (travel sizes) from freebies and gift baskets, a herbal hot/cold pack(that buckwheat hulls kinda thing with spices in it)for her neck, and DH donated a box of Godiva that he gives to his clients- for the nurses and aides. She seemed really pleased. I had to slather her in lotion and spray on perfume as soon as I showed it to her. I told her "boyfriend" (PM aide Joe) about all of it and he said he'd be sure to put some on her...That's right! I made my Grandma smell like a french..... well, maybe that's not an appropriate term. But she did!:rotfl2:
Please tell me I am nuts for being so concerned about this feral cat...I just get very down when I see things like this...not just with animals but people too...:sad1:You are not nuts. You are a kind hearted, gentle soul who doesn't want to see anyone or anything in pain or need. That's an admirable quality. I wish I was infected with it! However I did buy more food for the courtyard cat that lives at my building. He and Rick get along great once Rick's had a few cocktails- that's the only time I've ever heard him use babytalk....:scared1:
WFD tonight will be my DH bringing home my Friday night special - Fried green tomatoes with shrimp remoulade.
I have to drop off a sewing order and it's next to the tomato gettin' place here in the Quarter! mmmmmmm
And Kathy, since I STILL don't have a toaster oven to bake- I made mine on the grill. Wedged them, sprayed olive oil Pam, sea salt and rosemary. Ended up yummy!
Ugh, well, DS tested postive for strep at his appt. The ped. said DS didn't look like he had strep, and that strep normally didn't present itself with diarrhea. But apparently ours does. She went ahead and tested him b/c of the exposure and that tomorrow was sat. So, instead of hitting the mall like I had planned after the dr. visit, we sat in Walgreen's! So, I don't know if i'll be cooking tonight at all. We'll see!
My kids have presented with the same symptoms. In the past, even upset stomachs and vomiting was part of the strep. Who would've thought?
My kids have strep now too. They are on Augmenten. We had a long wait and I wasn't on top of my game at the time they were seen. Usually whenever they go on Augmenten it doesn't do the trick. We have to go back for something stronger. Omnicef seems to do better. I don't know why I didn't say anything. I'm crossing my fingers that Augmenten will take care of it this time.
Hope your DS is on the mend.
BTW, DSis returns from her trip tonight. :cool1:
I've enjoyed getting to know everyone better too! I won't go away just because DSis is back, though. I've posted pictures of the kids...that means serious commitment ;)
It will be good to "see" her again. I am so glad tat you stepped in for her because we got to get to know you better. Now don't think you can disappear on us.....we don't let go that easy! We knew we had you when the kids appeared ;)
I agree that it is harder to be a Mom when your kids are in competitive sports. I remember the first time my niece was in the All Stars. Up until that experience all of the kids played. Well imagine our outrage when she is selected and then is on the bench the entire game. She was fine, we were hyperventilating!
Kyle did well considering he hasn't pitched in over two months. They lost but the coach told him he did much better than he expected with the 2 month layoff, and the fact they were playing a team with college kids!
I can sympathize with you with Liam's situation. Kyle has been playing baseball since he was 6 and many, many times he wasn't selected for the "all-star" teams and was so disappointed but I think it worried me more than him. I guarantee you if he's not selected he'll be disappointed for a little while, but at that age it doesn't last long at all. You will be feeling it while he's laughing and playing with something else.;)
There is a huge difference in college level and high school level sports. I think that it says a lot that he was able to hold his own and then some :thumbsup2.
Hello friends.....sorry it has taken me so long to get back here and catch up.....:blush: Things are still the same on the family front, I have been having a hard time keeping quiet, and it just felt wrong to not say anything so I "snarkilly" made a few comments without saying things to direct. Sort of along the lines of "Well that is one pretty big undertaking just for some new floors for free" They got my feelings but can't say much to me on it. I guess in the end it will all even out won't it Karma right?!!?
Nancy- I just love the picture of you and buddy!!! How are things going with the meals for kady? She is such a little trouper with all these changes, bless her heart!!
I think that you need to get snarky once in a while. I have to hand it to you for staying quiet so long, I'm not sure that I have that level of self control. In the end you are right. You can't take what is not yours and expect to have better things come your way. If they continue down this path there will be consequences that they pay in one way or another.
Now Kady is doing very well on her restricted diet. I find if I cook everything the same she does not feel left out. She is very accepting that there are things that she needs to avoid and will not touch them. SHe is very much her Nana's girl, though and worries that there may not be enough. She likes to have extra snacks, soy milk, etc on hand you know...just in case. :rotfl2:
I forgot to take a pic of the whole meal, but here's Kathy's yummy grilled shrimp!
Whiskey Tango!!!:rotfl: :lmao:
Wendie, Hope things improve on the home front.:hug: My DD said this week will go down in history as Hell Week for her, so I'm really getting that she needs some help now!
OMG, that plate looks so good. I wish I liked shrimp because the recipes that include them sound so good! And they sure are pretty :thumbsup2
I think I am going to adopt that Whiskey Tango thing. :lmao: I love it!
I bet your DD is glad you are her Mom. It's funny how you knew just when to step in :thumbsup2
DS got sick last night, tummy stuff. We already had a dr. visit scheduled for today, his 18mnth well baby, so we'll see what she says. My neice was diagnosed with strep yesterday, and they play all the time togehter. Ugh!
I heard yesterday that Strep is making the rounds through school again. I thought it was a winter thing, but :confused3. I hope your poor baby feels better soon.
Did I tell you guys I have another hurt cat that I cannot catch? I just put the trap out in hopes of getting it today. The paw is really open...I think it may be biting it to get an infection out.
Please tell me I am nuts for being so concerned about this feral cat...I just get very down when I see things like this...not just with animals but people too...:sad1:
The poor baby. Thank goodness they have a place to go and that you are watchful. I hate to think of the sick ones that don't find their way to your door.
She seemed really pleased. I had to slather her in lotion and spray on perfume as soon as I showed it to her. I hate it when the kid are sick. They look so pale and sleepy. I hope your kids get better soon. It is too nice outside to have them sick.
Dinner tonight is going to be easy. DD and DS have wedding anniversaries within two days of each other, so the four of them are going to a comedy show at the Hukelau. It is only going to be Kady, DH and me, so Buddy is going to be a very happy guy tonight. We are going to have......wait for it...........tuna sandwiches!
I think that is what Liam took for strep last year and it didn't work for him either. We were in Disney when the meds wore off and he spiked a 103 fever.
I hope your kids feel better soon...same for your little boy Stephanie.
Wendie -- Have a margarita for me. Yum!
Kathy -- I've made sweet potato fries both baked and fried, but I think I like them baked better. When we make them for Sunday supper, we cut into wedges, shake them around in a bag with some vegetable oil (not too much though or else the sticks are REALLY soggy. I know, this was a recipe I said, oh well, more oil could only be better, right? Wrong. Use just enough to lightly coat), some paprika and salt and pepper and bake for about 45 minutes at 425 until done. Turn at least once.
After the raw hamburger last night, I am not having any meat tonight. I'm making a tomato tart, eggplant sticks and something green...either a salad or broccoli. I'll have to make some mac and cheese for the kids too because there is no way they'll eat the tart. More for me!
Thanks, Nancy and Liamandcaili too. :) You're right, Nancy it is too nice out to be sick! It started at the beach. We were there for two weeks and they were feeling kinda punky then. I thought it was only allergies with clear nasal drainage and fatigue. My youngest has strep and sinusitis. And here it is summer with fun times just waiting! Oh well, they are on the mend now. That's what counts.
Lindsay, how did you hurt your shoulder and did you get a new job? I'm behind on everything!
Hersey, the brats were good! The cashier put the beer in a dumb flimsy transparent plastic bag. I walked very quickly to the parking lot behind my oversized sunglasses (which I don't particularly like, but was thankful for at the time). Lori - Loved the story about Grandma. Reminds me of when my Mom was in a nursing home in Kilgore, TX during the evacuation. My Dad was in the hospital and Mom was alone in the room. She was in what we call the "funny" stage of Alzheimers - all she talked & thought about was sex. She flipped over the male nurse that was taking care of her, she called him her "studmuffin".One day when we got there "studmuffin" just shook his head and started laughing and said "watch this". He entered the room and she proceeded to tear her moo-moo off saying "come here my muffin". I was horrified, Johnny & Kyle were in tears they were laughing so hard.:laughing:
I'm just so thankful my Dad wasn't there, I don't think his weak heart could have taken it, poor thing!
Yeah, I think that would have been too much for him!:flower3:
Kathy, I made your salad with some of those tomatoes that are called "ugly" tomatoes that I picked up from Winn Dixie. They were pretty good but not creoles. My DH just skyped from work, a buddy picked up a big box & they're splitting it. He's bringing home some creole babies for me!!!:banana:
HA!:lmao: Kathy, He just sent me this message.
DH said Well I am sure they will be just ok being "lowland" tomatoes and all.:rotfl:
Freezer's ready, how are we gonna get her down here?? Sounds like a road trip with MIL is in order!!:rotfl2:
Lori - Loved the story about Grandma. Reminds me of when my Mom was in a nursing home in Kilgore, TX during the evacuation. My Dad was in the hospital and Mom was alone in the room. She was in what we call the "funny" stage of Alzheimers - all she talked & thought about was sex. She flipped over the male nurse that was taking care of her, she called him her "studmuffin".One day when we got there "studmuffin" just shook his head and started laughing and said "watch this". He entered the room and she proceeded to tear her moo-moo off saying "come here my muffin". I was horrified, Johnny & Kyle were in tears they were laughing so hard.:laughing:
Now I know who to call if my freezer if full and I have an IL or two who needs to "cool off".
Oh Kathy, you had me laughing with your story. I think all of the "mature" ladies flirt with the men around them. My Mom was shameless in the hospital when she had her potassium issue. OMG she was so inappropriate that we stayed there almost 24/7, but the make aides thought that she was "cute".
Well, Grandpa likes Joe so I guess that makes things easier there. But Grandma just giggles whenever he talks to her or helps her to get up. It was really cute. But I thank God she doesn't have the strength to rip off the moo-moo.:scared1:
:rotfl2::rotfl2:You keep sloshing all that stuff on her and she may start eating her Wheaties.
I have a question for ya - My guys don't like wedges they like a smaller fry. So I assume the cooking time would be less? Also do you peel them and aren't they pretty hard to cut?:confused3
Hmm...I'm thinking they may not come out right with the method I said if you cut them smaller. Yes, sweet potatoes are definitely difficult to cut, unless you have a mandoline. Can you get a bag of frozen sweet potato fries, dump them in some oil and pass them off as your own?? Around here, there is a brand called Alexia, and they make sweet potato fries. DSis and I made them in the deep fat fryer one weekend, and they were pretty good.
It's amazing what people will say on the Internet. To be honest, I avoid so many threads on this board -- a recent one that comes to mind is "Would You Be Proud if Your Child Joined the Military." I read a couple pages, but I stopped. I don't come on to the Disboards to fight with people.
Dinner tonight was pretty good. Here's a picture of the tomato tart:
I have to admit, I only ate a little bit of it, though, because I started eating the eggplant sticks as soon as they came out of the oven. With the exception of what the kids ate, I think I had the whole eggplant.
Yes, definitely peel them. I don't know if parboiling would work. You don't want too much water in the potatoes.
So what I would do is peel the potatoes, using a sharp knife, cut the sweet potato (they aren't the easiest vegetable to cut, but it is possible) in half lengthwise, then cut each half lengthwise into 6-8 pieces, depending on how fat the potato is. Then cut each length in two to make the fries thinner. Then fry for 6 minutes or so with the oil at 325, drain in a paper bag or on paper towels, let cool at least 30 minutes, then increase oil heat to 375 and fry again for a couple minutes until done.
Good luck! I love sweet potato fries, but I've always thought the ones I've had in restaurants have turned out better than my own.
Good for you for showing restraint. See, that's why I usually don't get involved. If something gets my blood boiling, I find myself typing out these scalding replies. Fortunately, I usually have the presence of mind to leave the boards rather than post them. It's nice to type the replies out though. Very therapeutic.
At work he had a dishwasher and a pot scrubber, at home Gail and I were the dish washers, the pot scrubbers and his salad men.
I hope they turn out great! If you want to make them a little sweeter, you can make a blend of salt, brown sugar and pepper and then sprinkle it on the fries after they are cooked. Or you could make them spicier and add chili powder. Or just sprinkle with salt. I really like sweet potatoes. My kids don't though. I don't get it.
I do, Kathy. I love fried green tomatoes but the few times I have made them they are not stellar.
Lady & Sons Fried Green Tomatoes
3 or 4 large firm green tomatoes
salt
2 c. vegetable oil for frying
1 c. buttermilk
2 c. self-rising flour
Slice the tomatoes 1/4 inch thick. Lay them out in a shallow baking pan and sprinkle with salt. Place the tomato slices in a colander and allow time for the salt to pull the water out of the tomatoes (30 minutes should do it).
In a skillet heat the oil for deep frying over medium high heat. Dip the tomatoes into buttermilk, dredge in flour and deep-fry until golden.
There's also a dijon pepper dippin' sauce Paula makes for this:
1 c. dijon mustard
1/2 c. mayo
2 Tbsp. balsamic vinegar
1 Tbsp. white pepper
4 Tbsp. coarsely ground black pepper
1/2 c. Veg. oil
1 Tbsp. red pepper flakes
1 Tbsp. whole peppercorns
In a bowl of a food processor, combine mustard, mayo, vinegar, white pepper and 1 Tbsp. of the black pepper, and blend; set aside.
In a small saucepan combine oil, the remaining 3 Tbsp. black pepper, red pepper flakes and the whole peppercorns. Heat the oil until hot, then reduce the heat to low and simmer 20 minutes. Allow to cool, then strain. With the food processor running, drizzle the oil into the mustard mixture, process for 2 minutes.
With all this talk about lowland food not being fine dining, I'm a little peeved. How do you think the "fine" dining chefs got their idea (not from a recipe book)! Polenta is orginally peasant food. I grew up on polenta and another version, mush which is often served at five star restaurants. All this was cooked by my five star grandmothers. I haven't even read that thread, I think I'll stay away.
I'll take lowland food any day over "little" food as my ex used to call it. Big plate + little food = hungry tummy ;)
I read that thread and didn't post because everyone else had already said so well what I was thinking. I know what you mean about how some items have been appropriated by fine chefs into their menus. I remember being :scared1: the first time I was in a really nice restaurant and saw shad roe on the menu. And from the looks of the tables around me, a lot of folks ordered it. My grandfather got a good laugh from that. He told me he had eaten it growing up and back then it was considered "poor people food".
I dated a classically trained chef (from CT) while I was in college. He was a good bit older and I was in awe of him and his culinary skills. Much of what I know about food today I learned from him. Early in our dating, my father had a traditional, southern pig-picking. Because it was on a Saturday, my BF couldn't go, but he asked me to bring him some BBQ back. I was horrified, thinking he would make fun of the finished product. When he tasted the BBQ I brought back, he actually moaned. He saw I was surprised and when I told him why, he explained to me that food did not need a fancy presentation or a fancy name to be good. It just had to be made with good ingredients and prepared well. I never forgot that.
The ingredients you are referring to are the backbone to haute cuisine today. :rotfl2:Nothing got thrown away, so it was imperative to learn to take these humble foods and make them sing. The "Mainah's" here would probably get a chuckle because lobsters were not considered good enough to eat, referred to as "bugs" and thrown back whenever possible. Our forefathers only ate them when they were starving :rotfl2::rotfl2::rotfl2:
The chef you dated must have been very much like my Dad. He knew good food and had no problem enjoying the meals we had at home after leaving some of the "finest" at work. ( We actually would not eat anything he made for a holiday, it was not like my Mom's)
There is nothing you can do, Lindsay. My DH has a nephew who is 37 right now. He has a little boy and a GF who make rocks look smart. He wants to borrow money to buy a house, his GF car is dead so the baby is now in a cargo van :scared1:, and he is racing every Saturday night! DH told him that when he is ready to make his purchase he is to bring all of his paperwork for us to see in order to make sure that money is going towards the purchase of this house. Tonight I'm making soft shell crabs with a tasso hollandaise sauce, a new recipe from Paula's cookbook - Savannah Red Rice (looks almost like a jambalaya) and a spinach salad.
We are under a heat advisory here today and with the humidity it's going to be a steamy day.
Have a great day!!
I just caught up with all the "lowland" food talk. Just want to say to my New Orleans friends and any others from the "lowlands", that your food is the best around! I could eat your food any day and I'd be in heaven. I'm not a foodie and really don't want to be. I'll take my favorite southern comfort food any day!
Our day today is 8-9:30 am -- baseball tryout (already happened...Liam did okay, but there were a lot of bigger and better kids. I can't believe some of those boys were only 8!), 11:30-1:30 -- end of season soccer jamboree, 3 pm baseball game. Like Nancy, we are going to be battling vulture-sized mosquitoes and black flies. Caili has already been bit, despite being drenched in bug repellent. It's horrible, but right now I am sitting here hoping it starts pouring rain, so everything gets canceled.
Anyway, after all that, I'm not cooking. We're heading to DSis's house. I don't know what she has planned, but I am sure it will be good.
I'm back!! :)
I had a great trip and took some dinner photos too, that I'll share once I get them uploaded.
Last night I made grilled cornell chicken, macaroni and cheese, carrots flavored with cumin and orange, and green peas.
I don't know what I am making yet tonight. I have to go food shopping, my kitchen is completely empty since we were away for so long.
The ingredients you are referring to are the backbone to haute cuisine today. :rotfl2:Nothing got thrown away, so it was imperative to learn to take these humble foods and make them sing. The "Mainah's" here would probably get a chuckle because lobsters were not considered good enough to eat, referred to as "bugs" and thrown back whenever possible. Our forefathers only ate them when they were starving :rotfl2::rotfl2::rotfl2:
There seems to be a lot of irresponsible members of our families hanging around :sad2:. What can you do?
The hairdresser is my vice. My DH asked me once how much I paid for a haircut and then he choked. He gets his for $12. I said" :scared:, not happening to my hair!" Well he was waiting for me after I got a cut, color and highlights and said, "Gee, three hours, $35, that is not bad at all! That is just over $10 an hour!" I saw no reason to correct him. :rolleyes1 The poor man would be sleepless trying to calculate how much each strand of highlights cost after the tax and tip. :rotfl::rotfl:And all the while knowing that there would be no getting me to his $12 gal :snooty:.
OH we know all about the history of our "deah lobstahs" they infact used to be so plentiful that they were what was fed to the servents of the homes daily......and what wasn't eaten was used in gardens for fertilizer. Then when the wealthy figured out how "wicked" delicious they were, they became only for the rich and the servents were not allowed them at all............at this time they also become over harvested and then the laws all started etc etc blahblahblahyadayadayada...............all I know is lobster every day.....I am sure it got tiring, but I for some reason just can't imagine that happening, lol!!
We do all seem to have some "interesting" family members don't we......they say there is one in every family......well we have about 5 so if anyone doesn't have one and needs one I will be happy to ship one to you.....I will even send them with a lobster or two.....:woohoo:
dmil has now sent me an email letting me know that they are all done the flooring in the room that they are fixing up for grandmother (which is fine that is what the money is to be used for as it was just subflooring in there and we need it so we can clean it etc) BUT then she also proceeds to write how they figured while they were doing her room that they would do their whole hallway as well .......................and paint the room (which had no reason to be painted except mil mentioned about 2 months ago how she wanted to change the color but couldn't afford to do so, hmmmm) and since the room is a new color well she HAD to order new curtains. (not just some new wal mart ones, but ones from the curtain shop which is mucho mucho $$$$)
She then says that she just can't wait for us to go to breakfast on Tuesday and that we should go over to this little boutique in town cause she feels that she deserves a special treat or two for doing all this.....:scared1: :headache: :scared1: :headache: So I have figured out how to deal with this, it will, I think say more from me if I don't say anything to these things.....I came to this ephinany last night over margarita numero dos :rolleyes1 ......so I am not going to mention any of these things when I write back, and on tuesday when she talks about it all, I will just say "uh huh, right, nice, mmmhhhmmmm" and try to change the subject as much as I can..........I have also learned over time that when at their home if I don't say anything about their latest "items" that it works better and gets a bit under her skin...............plus it keeps me less riled up too..........grrrrr............................... .........................ok I apologize..............I rattled on and on.....................I just got the email :sad2: :rolleyes: ugh.........
Hope you are all having a great day.....it is 66 and damp and misting here....ds is cleaning his room before I end up doing it....(5 garbages bags and 5 min is all I need and he knows it, lol) dh is working.........I think I am going to take a nap........
What IS up with these mosquitos this year?! I got eaten alive at a camp over the weekend - even after I sprayed myself down with Skintastic! I have red bumps all over my legs and I had mosquito guts all over my hands after our 7am "nature walk" with my kindergarten boys. I have never been attacked like that before.
I think I shall stay inside the rest of the summer. =)
Sorry I've been MIA - I had that camp Sunday/Monday and then I took a roadtrip to San Antonio with my 5th graders Tuesday/Wed/Thursday. I'm still trying to catch up on sleep!! We had a great time, though - at both occasions!
Last night, DH and I went to Charley's subs. Just opened here and I had a BOGO free coupon. Pretty yummy!
Tonight we are having Tandoori chicken w/mango chutney (grill) and basmati rice. It's another GH recipe from this month's magazine. EVerything I've made so far has been delicious! I'll post it if it turns out well.
I've read through everyone's posts, and boy do you miss a lot if you can't check in more than once per day. I've been really busy today doing laundry so I can pack the kids for camp. They are leaving tomorrow and won't be home until Friday. (Well DS and DD8 anyway, I haven't found a camp that can accomodate DD9). This is their first overnight camp and they are really excited. I hope I can drop them off and not cry until they are out of sight.
Lauren - Getting the bands is so exciting. Thank you for sharing your details, it brings back so many memories for me.
Wendie - Once again, no matter what happens from this point on you are a much better person than I. There is absolutely no way short of stapling my lips together that I could have kept my mouth shut this long.
Nancy - I think my former BF must have been very much like your father. Once I got over the initial shock of the BBQ, I began to cook some for him. He had never had some of the traditional southern delicacies and could tuck in just as well to a plate of chicken pilau or macaroni and cheese as he could to filet mignon. One of his favorites was banana pudding and fried chicken. Who would have guessed?
Laura - I don't blame you one bit. I'm not really an outdoors kind of girl and add in the bugs and I would be not only praying for rain, but I might be doing the Hopi rain dance as well.
Melanie - I hope you enjoy the shrimp and wild rice casserole. DH loved it and didn't mind at all eating the leftovers the next day.
He actually wandered a little, but all kidding aside, he finally relaxed. We had guys at the farm so Marisa kept checking to make sure that they were all set, and then resigned himself that he had done all that he could. He grew up on this river and loves it, so it was nice to see him wind down. he is not a drinker and usually won't touch anything because if he is stopped the blood alcohol level for CDL's is way lower than the legal limit. There goes his license. Well we were there all day so he enjoyed a few beers, we had some amazing roast pig, ( all I could think of while I was savoring every bite was how the snooty foodie would have reacted) and watched the boats on the river.
Now try to stay cool!
I am so sorry that there isn't a camp that is available for your dd9....we have here in Maine "Pine Tree Camp" in Rome Maine which is part of Pine Tree society..........here is the link, they might be able to help you locate a camp that is near you or other information.
Wfd tonight is chicken salad sandwiches. I spent the better part of the day switching winter clothes over to summer, and going through all of Ross' to see what would fit from last year, and making a list of what is needed for this....which is most everything......man does this kid grow a lot, lol!
So, last night I made roasted racks of lamb, my mom made the eggplant sticks, and also we had green beans with almonds and twice baked potatoes that I made. I have a photo but it's on the card I have not loaded so it will have to wait--one day you'll see about 20 food photos from me!
Today we had all had fish tacos for Sunday linner--fried haddock with guacamole, vinegar cabbage, etc. I think I posted the recipe a while back.
You guys are all the best! My sister and I are best friends, and usually talk every day. Being on island with no reliable phone service and certainly no internet seperated us, and I missed her horribly, but she told me how much she liked talking to you guys while I was gone. AND, the kids are set up with swim lessons, so they can come with us next year! Hopefully....it took us about 10 years to learn to swim properly.
Wendie, DD only stayed a couple of hours, she had studying & papers to get done. But she definitely needed even that little bit of down time. We headed over to the wine shop looking for a wine I had picked up on sale at World Market, that they were now out of. A Pierre Sparr Gewurtraminer. If you're not familiar with that, a "gewurtz" is a slightly sweet but also has a spice to it! This Sparr wine also has a very velvety feel to it. Bought 3 of those! Yummy, it goes very well with spicy foods, such as Thai & our spicy boiled seafoods. Of course that's not all we bought! Also picked up a Pinot Noir, a chardonnay & some triple sec.
I wish I would have accomplished as much as you did today. We are still waiting to start our remodeling, but I haven't even started cleaning out the closets or cabinets to get ready for it!!!:rolleyes:
The Shrimp and Wild Rice casserole was fabulous! We roasted some cauliflower and had the tomato/bell pepper/salad with it. Unfortunately, the avocados were not ripe, so they didn't go in the salad tonight. Dessert is this Jello/Cool Whip thingy my older daughter likes making.
Thanks again for the recipe....it was so delicious!
Well, I didn't get my wish about the rain. It was cold, misty and dreary, but all activities went on as scheduled. I guess I will have to try Gretchen's Hopi rain dance next time!
When I finally arrived at DSis's house, she said I looked tired and pale. Spending seven hours outside in the near rain will do that to you. The food was yummy. However, after frying all the fish today, I now smell like a cheap fish shack.
Gretchen -- I hope your children got off to camp okay. I can completely sympathize with the tears. I hardly ever go out because when I do, I miss the kids too much.
Lauren -- I am sure everything will work out with your band. My band was special ordered from Ireland. It got to the store 24 hours before the wedding. We were pretty nervous because the jewelry store was offering us a substitute band just for the ceremony, which we didn't want because the bands were being blessed, but then they called us and said it was scheduled to arrive in time.
I know I am missing some things, but my computer keeps freezing. I am ready to throw it out the window. :badpc:
Disneyland was WONDERFUL!!! I've been going there every 2 years for the last 15 years! My entire family makes this trip: father, mother, 2 brothers and their families, and my sister and her family! There were 23 of us this trip. We had such a wonderful time!
The best news is that we had a "dream" given to us. The brand new Nemo sub ride was scheduled to open 2 days after we left, so we were hoping for a soft opening. No such luck! They held a "lottery" for AP holders, and they were the only ones allowed to go on the ride. We watched those subs from Sunday all the way until Wednesday, and all the kids really wanted to go on it. Well, on Wednesday afternoon, my sister's family and my family were the only ones at the park (the others had prior commitments), and we were wondering what to do. The line was too long for Autopia, and we had settled on the Monorail, when a man in a blue shirt came over to our group and asked us how many were in our party. We told him 12 and he told us to stay put for a minute. We didn't know what was going on, but he came back and quietly handed us 12 tickets for the Nemo subs! He told us that he had seen the shirts that the kids were wearing, and knew that they HAD to go on this ride. I had made shirts for all the kids that had Crush, Dory and Nemo on them, and said "Having a righteous time at Disneyland, dude!" Guess those shirts came in handy!!!
Anyway, we went on the ride, and it was incredible!!! Definitely worth standing in line for. I'll post some pictures of our trip as soon as I get them uploaded. We had some really great meals, and I thought of you all as I photographed them!
Off to take my family on a little walk. Talk soon!
Thank you to everyone for the kind words about taking the kids to camp. I did not cry in front of either of them, but I did tear up when we pulled away. They looked a little scared as we were leaving, but I know they are going to have a great time. I felt a lot better about the whole thing after meeting some of the parents. A surprising number of the other kids were repeat campers seemed really glad to be back. One mother said her daughter was "turning cartwheels all week" she was so excited to return. The facilities looked really nice and the counselors seemed glad to be there.
Wendie - thank you for the information about the camp you have in Maine. I will research it further for DD9. The difficulty we have with her is aside from her being non-verbal, she is developmentally around age three. This means she would have to have a one-on-one person at all times. She just wouldn't understand that she couldn't wander off by herself not to mention she can't handle her daily living needs by herself. But surely, there is somewhere she could go. Thanks again.
Glynis - good to have you back. How exciting about the Nemo ride! That is amazing. Looking forward to hearing more about your trip.
Lauren - I hope everything works out with your band. I'll say a little prayer for you.
Tonight's dinner was DH and I eating at Outback after dropping off the kids.
Glynis--Can't wait to see the (food) PORN pictures!!!! How great that you were hit with pixie dust on your trip.....the kids must have felt so special!!!
Gretchen- I know that at Pine Tree Camp that they have one on one for all of the campers who would need it. My grandmothers PCA's son needs that sort of care you described and he goes for 2 weeks every summer. Also my mothers cousin has severe CP and she has been going for years and years. Just another example my girlfriends son(10) has spina bifida vocal impaired and in a wheel chair and he just started going last year.I am sure that they would be able to at least get some information for you. The camp is run by they most wonderful people. My dh goes every spring and takes our employees to put in the docks for them for free. They always insist on giving him pizza and new t-shirts, lol.
I am glad that you felt better after seeing how it was when dropping off the kids, I am sure by the time you were down the road they had new best friends and were already planning on next year, lol. When you go to pick them up you will be greeted with "can't we stay longer?!!?" LOL
Sheryl- Thanks for the wine information I have never heard of the "gewurtz" but it sounds rather yummy, ;) I will have to look for it next week when I shop.
Laura- Sorry your wish didn't come true....let us know next time and we will all do the rain dance with you!!
Wendi- Funny how we were discussing IL's and DH nephew shows up yesterday with his son, nowhere to go because he and GF split up and he is living in a chair where he works but bought a race car :scared1: :headache: :confused:! DH is sick about it.
There's really no recipe. I do it 2 different ways:
1. Preheat oven to 350 or so. Salt and pepper salmon and add Teriyaki Baste and Glaze sauce on it. Bake it for about 25-30 minutes, or until cooked to your desired done-ness.
2. Just cook it on a grill pan. Salt and pepper. Add baste and glaze sauce mid-way :)
Morning all! Sorry I was MIA htis weekend. It was my one weekend a month to work, so I was buried in prescriptions at Walgreens. Not sure wfd here today--need to go to the store--DH and the kids lived on frozen pizza and mac and cheese this weekend.
Talking about dropping kids off at camp, DD (3) starts her first day camp today. It's 4 hours a day all week. She's super excited b/c it's gonna be like school for her, and it's something DS can't do. I'm sad though, she's growing up so fast. She already wants to know when can she start kindergarten.:sad1:
Well, I should go and get DD's lunch ready for today. Have a great Monday!
J/K I feel bad for his son poor thing..................Poor Buddy must have been ready to go through the roof when he heard about the race car......I don't even think a tuna sammy would help him feel better at that point!!
Lindsey- the Salmon recipe sounds yummy and easy.....Ds (Ross) loves salmon so I will have to make this for him sometime.
Steph- your dd is going to have so much fun!! It is sad how fast they grow up......Ross will be starting his last year of elementary school in the fall.....and he has informed me he is no longer a "kid" he is now in double digits which makes him (his words) a "pre-teen" HUH?!!? I told him umm sorry, but in my eyes you are still my BABY!!!
I am running errands today (typical monday) so supper tonight will be chicken fried steak, green beans a starch of some sort and gravy.
Before I run errands I am going to run back to bed for 40 min and take a quick cat nap.....I love a quick nap when no one is home in the morning....I even make the dog stay off the bed then to...........IT IS ALL MINE!!! hehehehe
Have a great day all!!
I haven't caught up to everyone's recent posts yet, but I had to share my morning adventure.
I asked Liam this morning why he didn't eat any of his lunch or snack on Friday at school, and he said they had two birthday parties that day, so he wasn't hungry. He also mentioned that he retrieved his last cupcake from the nurse's office (he has special, egg-free cupcakes at school to have when other children bring in regular cupcakes). Mind you, this was four minutes before we had to go out the door to bring him to school. I asked him if he knew when the summer birthday party was, since I would need to replenish the cupcake supply before then. He said he wasn't sure, but he guessed it was either today or Wednesday, since Thursday is the last day of school and tomorrow is Field Day. I said I hoped it wasn't today because I didn't have any cupcakes to send in with him today.
We get to the school, and sure enough, all these kids are carrying in trays of cupcakes. Liam gives me a pitiful look, and I start feeling terrible because I know that all I put into his bag for a snack is grapes. I drop him off, race home, pound out some wacky cake, throw it in the oven and call the school so they can get a message to Liam that I will be bringing him some cupcakes before the party starts. He looked so upset at dropoff, I didn't want him sitting in class for two hours thinking he wouldn't have any treats.
I start relaying the message to the secretary when she says, "Oh, I think Liam just walked by. Let me check with the nurse." Two minutes later, she calls me back and says that not only did Liam have enough cupcakes for today, but he still has some left!!
So now I have 12 cupcakes sitting on my counter, and my head is pounding and my heart is racing and I am trying to calm down after thinking Liam would be sitting in class eating grapes while all the other children ate cake.
It's a good thing I am not seeing him again until 7 tonight.
Sorry for the long rant.
I have no idea WFD tonight. I'll think about it when I am a little more relaxed.
Stephanie -- I completely understand how you feel. Your daughter will have a great time though, and I am sure she will make lots of nice little friends. How is your son? Is he over his strep?
Okay, just for scientific purposes, I decided to eat one of the cupcakes. ;) I used the wacky cake recipe and made 12 cupcakes. I am happy to report that they are really good. The inside is moist and spongy, while the outside has a nice crumb. The texture reminded me of boxed cake mixes, but it didn't have the slightly chemical aftertaste. From now on, I am going to use this recipe instead of the dairyless cupcake recipe I posted. That recipe, to me, is really too sweet and the cupcakes are much denser. Even if you aren't dealing with allergy issues, I would recommend wacky cake. It was so easy (prep time about 10 minutes, 10 more with the frosting), and I am not a good cake baker.
Here's a pic of last night's dinner. For the Fried Green Tomatoes, I used the Paula Deen recipe Kathy posted. Well sort of used it, I can't follow anything exactly. I dipped in a mix of flour & cornmeal, and blended the egg & milk with corn starch (from an Emeril recipe.) I really don't like frying so I went easy on myself and used the few leftover grilled shrimp & another lemony bechamel type sauce to top them. It was really good!
Jenny, Since we had the fried food last night, I'll probably go simple tonight. ( My stomach will revolt if I have too much fried or rich food) So I will just season it with some cajun seasoning and pan fry in olive oil with a little bit of butter. Squeeze a little bit of lemon on top. When it's fresh, the simpler the better I think. I understand from my friends here, that our speckled trout is a very different fish than rainbow trout. What I have is a white slightly firm flesh with a very mild flavor.
Jenny- I make them once in a while, but the ones we had yesterday are from this little hole in the wall place that has been around since I was 16 or 17. He puts so much meat on the grinders that I don't think I could make them for what I buy them for. These are the grinders that I buy when I want to surprise Buddy or when I want enough for two meals, minus Buddy. He can eat a whole one.
So I have figured out how to deal with this, it will, I think say more from me if I don't say anything to these things.....I came to this ephinany last night over margarita numero dos :rolleyes1 ......so I am not going to mention any of these things when I write back, and on tuesday when she talks about it all, I will just say "uh huh, right, nice, mmmhhhmmmm" and try to change the subject as much as I can..........I have also learned over time that when at their home if I don't say anything about their latest "items" that it works better and gets a bit under her skin...............plus it keeps me less riled up too..........grrrrr............................... .........................ok I apologize..............I rattled on and on.....................I just got the email :sad2: :rolleyes: ugh.........
Hope you are all having a great day.....it is 66 and damp and misting here....ds is cleaning his room before I end up doing it....(5 garbages bags and 5 min is all I need and he knows it, lol) dh is working.........I think I am going to take a nap........Just tell her it's awfully nice to get all this spruced up before ya'll have to move in to take care of her! or better yet- all of it will be in order for when you put her in a home and put the house on the market!:rolleyes1 I don't think you'd be hearing much else after that.:lmao:
Tom's bday is on Wed and this is his bday dinner...besides the one I will cook for him!!!! What are you fixing Tom for his B-day meal? Magic Shell?!?;) Happy Birthday Tom!
I've been really busy today doing laundry so I can pack the kids for camp. They are leaving tomorrow and won't be home until Friday. (Well DS and DD8 anyway, I haven't found a camp that can accomodate DD9). This is their first overnight camp and they are really excited. I hope I can drop them off and not cry until they are out of sight. You know, I spent most of the summer away at resident camp (Girl Scouts) for many summers in a row. My favorite thing? My Grandma would Priority mail me the Sunday comix and fruit rollups. It always was the first piece of mail handed out for the session.:goodvibes I always felt sooo special.
You guys are all the best! My sister and I are best friends, and usually talk every day. Being on island with no reliable phone service and certainly no internet seperated us, and I missed her horribly, but she told me how much she liked talking to you guys while I was gone. AND, the kids are set up with swim lessons, so they can come with us next year! Hopefully....it took us about 10 years to learn to swim properly.Welcome back....so, are you still a Blondie? and have you gotten used to it now?
However, after frying all the fish today, I now smell like a cheap fish shack.:lmao: :rotfl2: :lmao: I LOVE this!
Disneyland was WONDERFUL!!! I've been going there every 2 years for the last 15 years! Welcome Home! Any tips for a first timer? Looks like we're going before the summer is over. My "First Time".
He also mentioned that he retrieved his last cupcake from the nurse's office (he has special, egg-free cupcakes at school to have when other children bring in regular cupcakes). Mind you, this was four minutes before we had to go out the door to bring him to school. I asked him if he knew when the summer birthday party was, since I would need to replenish the cupcake supply before then.
Liam gives me a pitiful look, and I start feeling terrible because I know that all I put into his bag for a snack is grapes. I drop him off, race home, pound out some wacky cake, throw it in the oven and call the school so they can get a message to Liam that I will be bringing him some cupcakes before the party starts. He looked so upset at dropoff, I didn't want him sitting in class for two hours thinking he wouldn't have any treats.
So now I have 12 cupcakes sitting on my counter, and my head is pounding and my heart is racing and I am trying to calm down after thinking Liam would be sitting in class eating grapes while all the other children ate cake.
It's a good thing I am not seeing him again until 7 tonight. Well, in Liam's defense- it was the last cupcake- that he went and got! I'm sorry, I know this put you into a panic, but this story was soooooo cute! And after all that heart racing you get a free pass on cardio for the day!:hug:
Geesh! You miss a coupla days here and you miss alot! I flew up with DH to Michigan to see where he's been working and just got back in. Headed to the A&P for Salmon with artichoke salsa and some veggie steamed.
Ok ladies sorry to bother you all, but I am in need of a serious vent...........I am sure you all know about whom too.......UGH!!!
Yesterday dmil called me to let me know that her sister had overdosed on pills (again 2nd time in 3 years) and dmil says "I need this like I need a whole in my head" and proceeds to tell me she doesn't have time to deal with it, as she is busy getting her house all ready for grandmother. (Well house would have been ready weeks ago if they didn't feel the need to remodel.....(but since they are sneaking the money why not right?!!?) She then goes on to tell me how annoyed she is with the timing of it all, as she was just getting ready to get her New Curtains out of the dryer to hang when the phone rang with the news, and now they will be wrinkled so she will have to dampen them again and redry them........Gee I am so sorry that your mentally ill sister interfered with your laundry......ARGH!!!!!
I did say to her, "well is she going to be ok, cause you can always rewash your curtains but you can't rehave your sister!!!"
So we (dmil and myself) were to go to breakfast tomorrow morning, which I have been dreading.......she called me about an hour ago and said that she was going to have to cancel because she was just so busy trying to get the room done by Wed. for grandma, and that she had bags and bags of things they had bought to put up in all different rooms of the house becuase things had to get switched around a bit, and they went and decided to buy new ceramic tile for their bathroom, and of course dfil needed to buy a wet saw to cut them with, so he has that to get done by Wed now.
AAAAAAAAAARRRRRRRRRRRRRRRGGGGGGGGGGGGGGGHHHHHHHHHH HH!!!!!
To be honest with all of you they needed nothing at all for anything except the body alarm that the nursing home suggested, and the other door from the outside into grandma's new room, so family members who don't speak to inlaws can still visit without having to talk to them (lol I know). The daughter (dh aunt) who is in charge of the money lives in Wash. state, and is not aware of things and said to use what they needed to fix her room up for her and the door ect. She is just so grateful that she doesn't need to figure out what to do with grandma. She thinks that they are just doing this out of the bottom of their hearts......nope not at all....more like the bottom of her bank book! I know that she wouldn't mind either if it was for shelves and such for grandma to have for her things.....but a new slipcover for the living room couch and ottomans, computer monitors etc etc that isn't what she meant to do with the money. They are lying to her about what things are for and how much things are costing.
So when she said she couldn't do breakfast tomorrow all I said was (in a cheeful voice) "OK, that is fine not a problem" Dmil said oh I was worried that you might be upset or something...."Nope, not at all, not a big deal" is what I said to her. She then said well I am sure we will have time later on to go do things like we planned, cause I really wanted to go shop a bit at the boutique etc and Dad (dfil) will just take a day off from work and take his pay from grandma's money for that day for watching her. (WTH??!)
So I ended it with asking her if she thought she would still be coming to do a craft project Thursday in Ross' class, and she said that Dad (dfil) is taking the day off so she can. I weakly said "Oh Good" She asked what I was going to do tomorrow, and I said well I am going to go to the boutique like we had planned (had to be a bit snarky there cause she always thinks that her changing the plans means I have to as well).
So I am sure that breakfast on Thursday before we go to ross' class should be interesting......I am one to make comments without seeming like I am saying anything when in reality I am saying a WHOLE lot.........So on Thursday morning please pray for me to keep my mouth somewhat shut!!!
I called dh at work to tell him the latest and he is furious, he said he is not going to help them with any of it. He won't be involved unless it is taking care and sitting with his grandmother. But he is not helping with any of the remodeling etc.
Ok all thanks for "listening" I had already sat outside with my neighbor and vented it, but writing it is much more therapeutic!!! I need to keep my sanity somehow, lol!!!
Hope you all are having a good evening!!
:sad2: I am speechless. Your MIL is going to be for an eye opener when she needs a caregiver so while she is squirreling Grandma's money away sprucing up her home she may want to consider some long term care insurance. My DH's Mother did not do a very good job taking care of his Dad when he was ill with cancer an the brunt of it fell to him and his brother. They insisted he be at home as much as possible and she insisted he was elsewhere. They won, but the entire time the poor man was ill and dying she was a terror.
She has had major surgery several times since and DH won't even call to see how she is, let alone care for her or ask me to. It comes back to bite you when you are not doing the right things at the right times.
Wendie - I am so sorry things are happening this way. I can't believe the lack of concern about the drug overdose, even thought it seems to be a recurring issue, all it takes is one time and she'll be gone. The curtains can certainly be cared for later.
Wendie, I am sorry for all this stress. Some people are just selfish and don't think how they sound. Unfortunately, this woman (and Sis) has some issues and hopefully she will get them worked out so there won't be another time like this.
Tonight, I am having leftovers from the weekend. I will make something good soon, I promise!
Here's a pic of last night's dinner. For the Fried Green Tomatoes, I used the Paula Deen recipe Kathy posted. Well sort of used it, I can't follow anything exactly. I dipped in a mix of flour & cornmeal, and blended the egg & milk with corn starch (from an Emeril recipe.) I really don't like frying so I went easy on myself and used the few leftover grilled shrimp & another lemony bechamel type sauce to top them. It was really good!
Whew, finally got through all those posts. I need to check in here several times a day or I get too far behind.
We had a busy day yesterday, starting with the beach and I just didn't feel like cooking dinner so we got Chinese take-out.
Tonight we had grilled bbq pork chops, garlic butter macaroni and baby peas.
Does anyone have a good recipe for Chicken Madiera? DH had it at the Cheesecake Factory last week and loved it, now he wants me to recreate it. The copycat recipe I found online isn't right because it says nothing about dredging it in flour and our waitress said it was. :confused3
She has had major surgery several times since and DH won't even call to see how she is, let alone care for her or ask me to. It comes back to bite you when you are not doing the right things at the right times.
Some people huh?!!? Dh (Kris) already said "well they are going to be in for a hell of a shock when they are old"
Wendie - I am so sorry things are happening this way. I can't believe the lack of concern about the drug overdose, even thought it seems to be a recurring issue, all it takes is one time and she'll be gone. The curtains can certainly be cared for later.
If you want prayers for your mouth to be kept somewhat shut on Thursday, that's what you'll get from me, but I have to say you're a better woman than me, I couldn't do it.:hug:
She went up to see her sister (who is on obvious suicide watch on the psych ward) this evening and took her mother with her, and informed her sister that she is to busy getting her house "spruced" up and ready for grandmother that she won't have time to come see her for awhile. Yep, I am sure that helped martha who is already depressed, and having a hard time detoxing from her anitdepressents...:scared1:
So as Kris and I say...Karma baby it is all about Karma.....
Well I should probably have asked for the prayers starting asap on the whole hush up thing cause I just sent an email on another issue with them......
Ross has an awards cermony next Monday night from his gifted/talented math/reading classes, and he will be getting numerous awards. They had said that they wouldn't miss it no matter what, and moving her in was not going to change them being involved in his activities. Well what do you know....dfil called here about 20 min ago to say that who was going to sit with grandma couldn't now, and that he would be coming still, but that dmil wouldn't be able to. They could have had grandmothers sister sit with her just like she did a month ago when grandmother lived at home, but they don't want her alone in their home........dmil made a big deal in the background how she would still be helping with the craft on Thursday though....whoop de freakin do.....
soooo I sent off this email (I will post what I wrote) I think it is fine, and polite, but knowing dmil she will take it a whole different way (she always does)......which doesn't bother me to be honest with you.....I have not heard back from her, which is telling me she is po'd at me, tell me what you think:::
Hey,
Well I just told Ross, and he was very upset. He was happy that papa could make it, but still quite sad that mimi will miss it, as this is a big deal, and he is very proud of himself. He is worried now that you guys won't make his tournaments anymore either. SO just to be on the safe side we won't tell him either way on those, (or other things like his plays etc) and if you can make it to them SUPER, and if not he won't know the difference and have hurt feelings, as I think this is just the start of you having a tough time finding someone to watch grandma for you to be able to make his events.
I need to go get him in the shower as he is filthy from playing outside all afternoon. If things don't work out for Thursday, don't worry about it, just please let me know by tomorrow afternoon.
talk soon
Wendie, I am sorry for all this stress. Some people are just selfish and don't think how they sound. Unfortunately, this woman (and Sis) has some issues and hopefully she will get them worked out so there won't be another time like this.
Does anyone have any salad or veggie recipes? Something light and good with fresh veggies. We have lots of great things growing and I want some ideas!
(We have zucchini, green onions, cucumber, cauliflower, jalapenos, habaneros, bell peppers, eggplant, squash blossoms, tomatoes, cherry tomatoes, grape tomatoes, carrots, peas, okra, green beans and lots of herbs plus raspberries, blueberries and strawberries.)
Well I doubt that dmil will ever change, but I do hope that aunt M will get the help she needs this time. Though she doesn't have the support of her sister which is going to hurt!!!
~~~~~~~~
I would make a nice stir fry with all but the cucumbers for veggies and then put some nice cheese over it or toss with some pasta, or just a nice pasta salad with the veggies marinated in italian dressing.
The fruit well, just that over a bit of vanilla ice cream would be yummy!!!
Loved them!!! Thank you! They were great with the "Suzie"!!! I haven't had fried pork chops in ages...Andrew helped make them...he was punished today so he helped me all afternoon. He is not punished anymore...he is down with my big kid, named Tom, playing Xbox...:) He really is a good boy...he just does really stupid things sometimes...typical, right?
Another parent of a boy who does "typical stupid stuff" Par for the course I think..........they do and then they think........................
Here's a pic of last night's dinner. For the Fried Green Tomatoes, I used the Paula Deen recipe Kathy posted. Well sort of used it, I can't follow anything exactly. I dipped in a mix of flour & cornmeal, and blended the egg & milk with corn starch (from an Emeril recipe.) I really don't like frying so I went easy on myself and used the few leftover grilled shrimp & another lemony bechamel type sauce to top them. It was really good!

Now that is some good eats right there, mmmmmmm!!! I might have to make some of these once the farmers markets have tomatoes in....my grandmother would love them....it would go good with fried zucchini.

Wendie - I don't really have anything to say to you, but I can give you a lot of cyber hugs!
I think that the email you sent was beautifully worded. You handled it very well, but I'm sure you're right, and the MIL will take it another way. If she's anything like my MIL, you'll be on the crap list for a while. That's where we are right now, and I have to tell you, the peace I feel is worth it.

L, don't forget that you have a huge tray of Liam's cupcakes in my freezer too!
Um, yeah, I probably don't need those anymore...
I hate to say this, but I am already tired of summer. DD keeps telling me she's bored! It's only the second week of summer vacation! I told her if I heard that come out of her mouth again, I'll pull out the mop and bucket and let her clean the floors. Ugh!!!
I can't stand it when Liam says he is bored. I always tell him if he can't find something to do, I'll find something for him. It's amazing how quickly he isn't bored anymore.
Well, in Liam's defense- it was the last cupcake- that he went and got! I'm sorry, I know this put you into a panic, but this story was soooooo cute! And after all that heart racing you get a free pass on cardio for the day!:hug:
When I told Liam the story about how I made the cupcakes and how I was going to bring them into school, he gave me a huge "Wow, Mom, you really do love me" hug. So it was worth it.

You are so organized. I never make a list for the grocery store...today I forgot the buttermilk for the pork chops, I made my own with vinegar, and I also bought everything for Tom's bday dinner...but forgot...you will never believe this..................................

I have to chuckle about you DH disclaimer. I would want it on my tee shirt " They are not REALLY related, I did not choose them, and they won't go away!!!!!"
I think your email was mild, really. Every story you share is worse than the previous and I am amazed that you have managed the Grace under Fire thing this long. That they are now ignoring their Grandsons accomplishments in order to add some "babysitting" money to their coffers is incredibly shortsighted, as well as incredibly selfish. My children did all that they could for my Mom when she needed them, but their other GM is another story. She loves them but she and GF never put the kids before their wants an now it has come home to roost. They are not rude, they visit once in a while, but they just don't drop everything for her.
I am another parent of boys, and I have to tell you all that they grow up, they stop doing a lot of the things that make you nuts, but they will always be "boys". :confused3

Your sausage sounds like a Lithuanian fresh sausage that I always bought during Holidays. The man who used to make it was like 110 years old, and had to close his little store so now I am trying to find a recipe. It was like his GM made as well, and so yummy!
I am not sure about dinner this evening. DH worked until after 8 PM last night so he never got to work on his, well I don't know what it is, he wants to try again tonight. DD has to shop for teacher gifts, we bailed on it yesterday because there was severe weather all around us.

Blueberry-Cheese Rolls
1 pkg refrigerated crescent rolls
4 oz cream cheese, softened
2 tbsp sugar
1/2 cup blueberries, divided
Preheat oven to 375. Unroll dough into 4 rectangles; firmly press preforations together to seal.
Combine cream cheese and suggar; spread onto dough rectangles to within 1/2 inch of edges. Top evenly with blueberries. Bring opposite corners of rectangles together; press together to seal. Place on ungreased baking sheet.
Bake 11-13 minutes or until golden brown.
Sprinkle with powdered sugar just before serving.
Makes 4 servings.

Honestly it's really easy... You just roll out pizza dough long ways,put the fillings down the center and then fold over the sides, then the top, coat with olive oil and bake.. I will also season the outside of it with garlic basil oregano etc.. I sometime put the sauce inside, sometimes put it on the side for dipping.

Hi ya'll! I posted the grilled salmon with artichoke salsa recipe a week or so back- well, this was last night's dinner.
http://i132.photobucket.com/albums/q37/rnleichmann/salmon2.jpg
I did switch out the parsley for scallions though- wayyy better. I haven't gotten my South Beach Book yet, so I started with some of the recipes in the cookbook to work on my portion control- which is WAY out of control! I figure, by the time the "how to" book gets here I'll be alittle ahead of the game. This was "serves 4" made into "serves 3" cause I only had 3 fillets in the package. But as a bonus-A&P has 2-5oz salmon fillets for $6.98. This pack was mixed in with the rest with 3-5oz fillets marked $3.99! So last night, tonight, and tomorrow night are all the same for dinner. I'm learning to cook, divide into pre-pack portions for the next days, and THEN eat.

Spiced Chicken Thighs with Yogurt Sauce
http://i77.photobucket.com/albums/j57/nucpharm29/P6120001_edited.jpg
1 cup uncooked couscous
1 tsp ground cumin
1 tsp ground coriander
1 tsp ground turmeric
1/4 tsp ground ginger
1/4 tsp ground red pepper
1/2 tsp salt, divided
1 1/2 lbs boneless, skinless chicken thighs
1/4 cup chopped fresh cilantro
1 tsp bottled minced garlic
6-ounce plain ff yogurt
Cilantro springs for garnish
Cook couscous according to package directions
Combine cumin and next 4 ingredients in a bowl; stir in 1/4 tsp salt. Sprinkle spice mix over chicken. Heat a lg. nonstick skillet over med heat. Coat pan with cooking spray. Add chicken to pan; cook 6 minutes per side or until done
Combine remaining ingredients with 1/4 tsp salt in a small bowl, stirring well. Serve with chicken and couscous. Garnish with cilantro sprigs if desired.

Ok, I now know I'll never post a pic of my dinners here.....I don't make them as pretty as you all do!:rotfl: I know, presentation and all! The best I do is make their hotdogs look like octopus-es. (what's the plural of octopus, anyway? :goodvibes )
:rotfl2: I'm with ya on this one. I don't do presentation at all.:laughing:

Honestly it's really easy... You just roll out pizza dough long ways,put the fillings down the center and then fold over the sides, then the top, coat with olive oil and bake.. I will also season the outside of it with garlic basil oregano etc.. I sometime put the sauce inside, sometimes put it on the side for dipping.
I may try it! You make it sound so simple! Maybe on Thursday. I was planning on homemade pizza, but maybe I'll turn it into a stromboli, instead! Don't be surprised if I come to you with questions.

Good for you, Lori!!! Portion control is the hardest thing! I finally got rid of all the dinner plates in my house, and we all eat off salad plates. It really keeps portion sizes manageable. I also ask for a takeout container as I place my order at restaurants. That way I can put away a bunch of the food, and only eat a small portion. It works for me!

Here's a pic and the recipe from dinner last night. Next time I would add a little more cayenne and a little less cilantro
Spiced Chicken Thighs with Yogurt Sauce
http://i77.photobucket.com/albums/j57/nucpharm29/P6120001_edited.jpg
1 cup uncooked couscous
1 tsp ground cumin
1 tsp ground coriander
1 tsp ground turmeric
1/4 tsp ground ginger
1/4 tsp ground red pepper
1/2 tsp salt, divided
1 1/2 lbs boneless, skinless chicken thighs
1/4 cup chopped fresh cilantro
1 tsp bottled minced garlic
6-ounce plain ff yogurt
Cilantro springs for garnish
Cook couscous according to package directions
Combine cumin and next 4 ingredients in a bowl; stir in 1/4 tsp salt. Sprinkle spice mix over chicken. Heat a lg. nonstick skillet over med heat. Coat pan with cooking spray. Add chicken to pan; cook 6 minutes per side or until done
Combine remaining ingredients with 1/4 tsp salt in a small bowl, stirring well. Serve with chicken and couscous. Garnish with cilantro sprigs if desired.
Stephanie, that really looks yummy. I think I'll fix it sometime this week!:thumbsup2

Tonight's pork chops are gonna be a conglomeration of everybodies asian, polynesian, bahama style pork chops!:confused3 :laughing: Using the condiments I had in the house. At least that's what they are marinating in right now. Don't know if I'm gonna grill or bake it yet. With an asian slaw, (saw a recipe here I think) & white or chinese type rice.

[QUOTE=liamsaunt;19159144]I have to tell you all though that this was the last post that Laura was able to make from her computer before it finally gave up the ghost and plonked out for good. I bought a new one a few months ago, so she was going over to get my old one, but she may be offline for a few days until it's hooked up.

DSis underestimates my technical abilities. I had this baby up and running between dinner clean-up and kiddies bedtime. I guess you are still stuck with me :)
Dinner tonight was grilled chicken (very scorched in parts...I was trying to grill and keep track of neighborhood children at the same time), mashed sweet potatoes, sauteed spinach and mac and cheese for the kids, since they don't eat the sweet potatoes. They complained that the mac and cheese wasn't like it usually is (you would think that I wouldn't be able to screw it up at this point) but I guess the combination of cheeses I used didn't smooth right, and there were (gasp!) cheesy lumps.
Even though I just ate, the pictures posted here today are making me hungry again. I'm glad I didn't take a picture of tonight's meal. It paled in comparison.
Sorry if I missed some things. My computer was driving me crazy.
I did want to say Sheryl, I hope your daughter is having a better week.

I love the food porn! I need to take pictures of our meals so I can contribute some =)
This week, however, there is nothing worth contributing at my house! Tonight my dinner for 1 was good ol' tuna casserole. DH hates the stuff so I make a big dish of it anytime he's out of town. It's something my mom made frequently growing up so it's pure comfort food. It was yummy - to me - but most people gag at it. ;)

I am falling behind here.
Jenny- I make a dip similar to your bruschetta. I am going to try your method, it looks so much prettier.
Stephanie- Your DD must be thrilled!
Sheryl- How is your DD doing? Is there a light showing at the end of her tunnel yet?
Dinner has been - well there really has been NO dinner lately. I washed and ironed all morning yesterday and then headed out into the yard. I am behind on all of my yard work so I stayed out there until 8 PM. DD ran errands to buy teacher gifts so I think they ate out :confused3. I had a leftover chicken salad sandwich and DH had bologna sandwiches. I am not allowed to touch his creations, he builds them himself, says I make him nervous cutting tomatoes to fit the roll, spreading mayo to reach all corners, use a plate.
Anyway I am going to try to cook something tonight, but they are all going to be at the farm and DH wants me to show up with Kady :eek:! I better make sure she has her work boots on..............

Last night we had Glynis's pot roast. Oh my, that was really good. I did alter the recipe a bit. I had some red wine that I needed to use, so I poured some of it in the crock pot as well. The girls just loved the roast. It was so tender and had a great taste. We added crowder peas and mashed potatoes. Tonight we will have the leftovers. Dessert was a really cold, freshly sliced watermelon. Have a wonderful day!

Dinner last night was really yummy. The glaze on the salmon was really nice and I really liked the pineapple with fresh mint. the blueberry pie, OTOH, was not quite so nice. Cookies and cakes I can do, pies are always a disaster. It's edible, but somehow my measurements with the sugar/flour/berries were way off--maybe it had something to do with making it with a 3 year old. Or at least that's my story and I'm sticking to it!:rotfl2:

I remember the first time I made pie, I was on the WDWCP and I was making a bunch of friends Easter dinner...I attempted an apple pie. I even used a recipe that was given to me by the baker at The Gourmet Pantry, where I worked, and it came out like soup!!! :confused3 We sat around the table and ate it from the pie plate with spoons. It tasted really good.

If I start blaming my oven I am in big trouble. When we were planning the kitchen I just had to have the GE Trivection/Convection double wall ovens. I have used the speed cook maybe twice, and ha was on appetizers. If I try using that bad boy as an excuse, I am going to be freezer fodder.
