I am trying this out tonight. Ive been a lurker on this thread for some time and always look here for new meal ideas. I put my chicken on earlier this morning and cant wait to see how it turns out tonight-- smells so good!!

Not sure about tonight's dinner. I was planning on having taquitos with spanish rice and refried beans, but DD8 came down with a GI bug last night around 10. I am kind of waiting to see if anyone else gets it today, so I am kind of scared to try anything too spicy. If everyone stays well, that is my plan. If not, I guess it will be grits and omelettes for those who can stomach the eggs.

No real cooking here tonight! We are all feeling much better, but I have a lot of food that I had planned for a leftover meal and we did not touch, so leftovers here!

Yup! That's what I was leaning for ;). Tomorrow my son has a school program so I took a day off of work. I'll cook something good tomorrow. Plus tonight I have to make Romanian pancakes with jelly for his project. I don't want the added mess.

Day 4 of My Anniversary Week Off!!!

We had a great day yesterday. We had our Jack Daniel's flat iron steak then came home and made our November WDW reservations!!! We then watched our planning video and ate our Toll House ice cream cookie. A little later we watched Cinderella and Robin Hook back to back. How's that for a fun (and Disney!) anniversary??

Tonight we are going to my grandmother's house for dinner. My parents will be there, too. She is fixing swiss chicken. I will post a recipe later if anyone wants it.

Tonight we're having "Red wine steak", it's basically boneless sirloin sliced into thin strips, marinated in a red wine/herb blend and cooked with mushrooms. Also having egg noodles and corn.

Good Morning!

I never made dinner last night because my back went out, so we had Chinese. I am going to make some sort of Chicken Primavera tonight over Spaghetti.

Tonight we are having a roast pork with mashed potatoes, I think, salad and a veggie.

This is a new recipe that is already off on the wrong foot. It has a dry rub that consists of rosemary, sage, marjoram and thyme, salt and pepper. I look all over for my big honkin jay of rosemary and it is nowhere to be found :mad:, so I have a mixture of poultry seasoning and Bells along with salt and pepper.

Anyway, it has roasted apples and sweet onions combined with brown sugar surrounding it with a sauce that has maple syrup, honey and apple juice some kind of pork or brown gravy mix. If it is good I'll post it.

I made the lemon cake last night and it was a hit!!!!! Here's the recipe if anyone is interested. I got it off the Kraft website.

Warm Winter Lemon Cake

1 pkg. yellow cake mix
2 pkg. (4 serving size) instant lemon pudding mix
1/3 C. sugar
1 1/4 C. water
2 C. cold milk
2 Tbs. powdered sugar

Preheat oven to 350 degrees. Prepare cake mix as directed on package. Pour batter into greased 9 X 13 bking dish. Pour milk and water into large bowl. Add dry pudding mixes and sugar. Whisk 2 minutes or until well blended. Pour over cake batter. Place pan on cookie sheet to catch drippings. Bake 55 minutes to 1 hour or until toothpick comes out clean. Cool in pan 20 minutes. Sprinkle with powdered sugar. Spoon into serving dishes. Serve warm.

It was so good. Not overly sweet, but very comforting. I can see doing this with chocolate cake and chocolate pudding. White cake and butterscotch pudding. Chocolate cake and cheesecake pudding. The list is endless. I can't wait to try them all! We had a lot leftover, so we'll see how it is warmed up again tonight.

Dinner tonight is turkey and veggie calzones with a large green salad. Leftover lemon cake will finish us up.

Lindsay - sounds like you had a great anniversary! I, too, would like the recipe for the swiss chicken!

Kathy, glad you enjoyed them. I'd love the recipe for your red wine steak. I love cooking with red wine, especially because it usually leaves an open bottle that we can't let go to waste. ;)

Nancy, thanks for the good wishes. It appears that no one else is going to get the bug. Maybe it was just something she ate at school because she didn't have another episode.

Last night we did take-out, so tonight I'm making the taquitos, mexican rice, and refried pintos that I had planned for last night.

I finally figured out what I'm making for dinner. Portuguese grilled chicken thighs, garlic-rosemary roasted potatoes, baby peas and possibly a salad. I love the chicken recipe because it tastes a lot like those firemen's chicken bbq's and it's so easy. I'm always surprised at how flavorful the chicken turns out when it's only marinated for 30 minutes.

We were planning on going out anyway, and then it was definite when her flight got cancelled, b/c I don't have anything to fix!

Won't have much to post this weekend, as I won't be cooking until at least Monday. I'm running my first marathon:scared1: on Sunday--so send some PD my way from around 8-12 on Sunday morning!

Okay, dinner was so good tonight, and it really was an easy way to roast a pork loin and make it look like you were in the kitchen all day.

From Allrecipes.com

INGREDIENTS


1 teaspoon dried sage
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried marjoram
salt and pepper to taste
6 pounds pork loin roast
4 tart apples - peeled, cored, cut into 1 inch chunks
1 red onion, chopped
3 tablespoons brown sugar
1 cup apple juice
2/3 cup real maple syrup DIRECTIONS


In a small bowl, combine the sage, thyme, rosemary, marjoram, salt and pepper. Rub over roast. Cover, and refrigerate roast for 6 to 8 hours, or overnight.
Preheat oven to 325 degrees F (165 degrees C).
Place roast in a shallow roasting pan, and bake in the preheated oven for 1 to 1 1/2 hours. Drain fat.
In a medium bowl, mix apples and onion with brown sugar. Spoon around roast, and continue to cook for 1 hour more, or until the internal temperature of the roast is 160 degrees F (70 degrees C). Transfer the roast, apples and onion to a serving platter, and keep warm.
To make the gravy, skim excess fat from meat juices. Pour drippings into a medium heavy skillet. Stir in apple juice and syrup. Cook and stir over medium-high heat until liquid has been reduced by half, about 1 cup. Slice the roast, and serve with gravy.I followed reviewers suggestions and added pork gravy mix and chicken stock to the sauce. I needed to use poultry seasoning mixed with Bells because I left my container of Rosemary at my Moms, but the flavor was still awesome. Plenty of leftovers to have for Saturday night supper, unless DH eats them all on sandwiches. He is a self proclaimed sandwich king!

Today we are actually running a few errands. We are heading down to McKay's to sell some books (buy/sell used bookstore). I am desperately needing some shelf space. We are going to a get-together with our Sunday School class later tonight. I think they are having pizza. I made cupcakes to take as a "finger food dessert."

Tonight's dinner is scallops in a basil alfredo sauce over angel hair. Maybe with snow peas on the side. And garlic bread for DH.

Velvet Shrimp

1 Tbsp. butter or margarine
1/2 c. chopped green onions
1/2 tsp. each salt, dry mustard, basil and cayenne pepper
1/4 tsp. each garlic powder and thyme
1 lb. medium shrimp, peeled and deveined
1/2 tsp. minced garlic
1 c. heavy or whipping cream
1/2 c. shredded Muenster cheese

Heat a 10 inch skillet over high heat about 1 minute. Add butter. Stir in green onions and 2 tsp. of the seasoning mix; cook 1 minute. Add shrimp and garlic; cook stirring occasionally, 2 minutes. Stir in cream and remaining seasoning mix; cook 1 minute. Remove shrimp with slotted spoon.

Boil cream in same skillet, whisking constantly, 2 minutes. Stir in cheese, then shrimp. Serve over pasta.

Now that would be amazing! I am so disorganized with my recipes that the cookbooks on my favorite recipe sites, and page 1 here are my lifesavers!

Anyway, dinner did not go as planned.....again......my neighbors dropped in for coffee and drama down the street....a lake formed on my neighbors property he was hip deep.... so we had tuna sandwiches.


I hope the salmon will be okay if I cook it tomorrow....can it keep overnight? I usually cook fish the day I purchase it and this was frozen.

Thanks Kathy. It does not take much to throw dinner off on a Friday because it is usually just Buddy and me , and he would take a sandwich over a hot meal. But between the firetrucks all over the neighborhood draining property and my awesome gossipy neighbors I was all over not cooking!

I saw Paula Deen making a Bacon Cheeseburger Meatloaf on FoodTV this afternoon and it looked really good, so I decided to give it a try, and it was really good!

Here's Paula's recipe, from foodtv.com:

Bacon Cheeseburger Meatloaf

1 pound ground chuck
10 slices bacon, cooked and crumbled
1 (8-ounce) package sharp Cheddar, grated
2 large eggs, lightly beaten
1/4 cup bread crumbs, toasted
1/4 cup mayonnaise
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup ketchup
2 tablespoons prepared mustard
1 (3-ounce) can French fried onions

Preheat oven to 350 degrees F.

In a large bowl, combine the ground chuck and next 8 ingredients, mixing well.

In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.

Press meat mixture into a 9 by 5 by 3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake another 10 to 15 minutes, or until meat is no longer pink.

Me too Lindsay...I use to have this delicious recipe that you prepare the night before by pouring eggs over some thick french bread slices...there was more to it but you would let it stay overnight in the frig and the next morning cook it...it was really good. I should try to find it...it I have time. I am working on my teaching portfolio for the state education department...it is sooooooooo much work...unbelievable!!!

Morning all! Last night we had dinner at my parents: sushi, jasmine tea, and some yummy spicy asian noodles! Tonight will be our pre-race pasta party at my running buddy's house. I'm bringing dessert--going to make the Kahlua Chocolate Cake. Yummy!:thumbsup2

Tonight we're having San Joaquin Enchiladas, basically chicken, asparagus, sour cream, green taco sauce. They are so good. Sides will be sauteed zucchini with onion and parmesan cheese. And dessert will be Glynis' warm winter lemon cake!!

What is the limit for threads? I didn't know there was one. The smilie thread on the games board has 61,000+ posts and is up to page 4083. We have LOTS of fun over there. You guys should join us! :)

No cooking tonight - dh and I are going out for a late lunch. Not sure where, maybe Chili's. Or maybe our favorite Thai restaurant (think Thai Chicken Red Curry - I could eat that everyday!).

In case you can't find your recipe. You can do that with any french toast recipe if you want to make it extra special put a little Grand Marnier in the egg mixture and make some orange butter on the side. I'm making myself hungry.

I have a recipe for baked french toast where you put cream cheese and blueberries between the pieces of bread. You then top it with blueberry syrup, jarred or homemade. It's DH's favorite of my make ahead french toast recipes.

Tonight's dinner is supposed to be steaks with baked potatoes and salad, but I'm not really excited about that, so it may change.

OK, I am back! I haven't been on the DIS all week--they actually made me work ALL DAY at work this week! What's up with that?? (kidding!!) So, here is what we have been eating this week:

Last night: Chicken Milanese. It's super yummy--here is the recipe:

2 bonless skinless chicken breasts, pounded quite thin
1/4 cup freshly grated parmesean
3/4 cup dried bread crumbs
salt and pepper to taste
1 egg
1 tbsp butter
1 tbsp olive oil
1 large tomato, chopped
a couple handfuls of arugula

dressing:
1/4 tsp dijon mustard
1 shallot, minced
1 small clove garlic, minced
2 tsp. red wine vinegar
3 tbsp olive oil

Combine the all the dressing ingredients. Toss the tomatoes in the dressing and set aside.

Combine the crumbs, cheese and salt and pepper to taste and spread on a plate. Beat the egg with a little water on another plate. Dredge the chicken in the egg, then the crumbs, coating evenly.

Meanwhile, melt the butter and olive oil in a large saute pan. When the fat is quite hot, place the chicken in the pan and cook, turing once, until just cooked through, about 2-3 minutes per side. While the chicken is cooking toss the arugula with the tomato mix. Plate the chicken and top with the arugula mixture.

Other menus this week:
Thursday: Pasta in Marcella Hazan's tomato-butter sauce (so good!), with cheesy garlic bread and salad
Wednesday: BELTS
Tuesday: Roasted garlic chicken sausage and italian pepper subs

Tonight we are having a fun meal! I am making starters of guacamole with homemade tortilla chips and coconut-crusted shrimp with mango chutney dipping sauce. Then we are having fish tacos.

I saw the discussion of french toast earlier in the thread. Epicurious has a really amazing creme brulee french toast recipe. You need to soak it overnight, but it is really, really good!

We really have to stop talking about French toast casseroles! Now all I can think about is Paula's praline french toast casserole :rolleyes1and I end up eating it all by myself!

I wondered about the thread limit myself. I thought that a thread got closed when it went way off topic and became a chat line. Now I don't know why I thought that, but I never stopped to think about where I came up with that.

Dinner tonight is the salmon I thawed yesterday along with clam strips or pork for my DD. I was going to have the lemon cake but I checked my shelves and I have every cake mix but lemon :scared1:, and don't want to substitute. Oh well, dessert will be some kind of cake....maybe the kahlua cake.

Nancy, yellow cake mix is used in the recipe, do you have the lemon pudding mix? If so you're good to go. I just made it, it looks heavenly. We'll have to re-heat it tonight(baseball today).

I was freaking out about the pizza dough last night because it was a huge PITA to flatten out. I split the dough into 3 balls so I could make individual pizzas for each of us and because I knew it would work better on the grill than one big crust. They were the strangest looking, most misshapen (sp?) pizzas I've ever seen, but they were so good. I loved the grilled crust! DS11 liked it too, but DH was luke warm about it. Majority wins, especially when I'm in the majority, so I will be making them again.

Tonight we're having The Hat's Hamburg Gravy over egg noodles and either broccoli or peas for a veggie.

Well, we didn't go out last night, as our babysitter was busy, so we're going out tonight. I'll make tomato soup and grilled cheese sammies for my kids, and then DH and I will go out. Not sure where. I'm in the mood for steak. We'll see. DH hates to go to a sit down place. I think he's afraid he'll actually have to TALK to me. His idea of the perfect restaurant is something that has a drive-thru.

I caught a cold from hubby (thanks a lot, dear!) and I'm staying home from church this morning. I think I may be able to rouse myself to put on a pot of split pea soup for lunch, then thank goodness I have leftover Bacon Cheeseburger Meatloaf available, so we (and by we I mean hubby, who's now on his way up from his cold while I'm on my way down) can just heat that up with some canned veggies for dinner tonight.

Dinner tonight will be Sweet and Savory Ribs. They are cooking away in the crock pot as we speak! We love this recipe! I've tried it with both pork and beef ribs and it's good with both. Dessert will be cream cheese cookie cups. I've had the recipe hanging around for a while, and finally decided to try it. I'll let you know how it goes.

Here's the recipe for the french toast bake:

Overnight Cranberry-Orange French Toast

3/4 C. sweetened, dried cranberried
3 Tbs. finely chopped pegans
16 slices French bread
6 eggs
1 Tbs. grated orange peel
2 C. milk
1 1/2 C. orange juice
3 Tbs. melted butter
1 C. maple syrup

Grease 13 X 9 baking dish. Sprinkle cranberries and pecans evenly into dish; arrange bread slices tightly in a single layer over top. In large bowl, beat eggs. Stir in orange peel, milk, orange juice and butter until smooth. Pour egg mixture over bread. Cover tightly with foil; refrigerate at least 4 hours or overnight. When ready to bake, heat oven to 425 degrees. Uncover baking dish; bake 25 minute to 30 minutes or until bread is puffy and edges are golden brown. Serve with syrup. Serves 8.

I didn't end up making the fish tacos yesterday. DH really wanted steak as he had not had any red meat all week so I made tacos with flank steak and chicken instead. Also, instead of the coconut shrimp, I made a mexican shrimp seveche with the local Maine shrimp that are in season now. Everything was really good but I have lots of leftovers.

Thanks Glynis..it sounds delicious!!! I think I'm going to make this for next weekend...yum! When you use the French bread...to you use presliced bread or do you buy a loaf of French bread and cut it up yourself...if so, how thick should I cut the pieces???

I'm back-I think! Surgery Tuesday went OK, but I am still sore and not quite myself. Dinner tonight was supposed to be the Cheesy Crockpot Chicken, but DH forgot to put out the chicken, so that will be tomorrow, and tonight will be sloppy joes and tater tots, which luckily is something that DD will eat-usually she eats just about anything besides what I cook for dinner. My appetite is also not quite back yet but I am tired of takeout, so I'll cook easy things this week. I have been enjoying reading what others are having, as usual, and look forward to getting back to my usual dinners. I will be off work for two more weeks, so maybe by next week things will get back to normal in the kitchen.

Hi All!

Just popping in quick to say hi and tell you that we are having ravioli with whatever meat is in the sauce I am defrosting! I think there are meatballs and pork chops...I usually use spare ribs but did not have any...

One the side I am making the tomato bread that we had in Spain...it is called Pa Amb Tomquet...you basically do the following:

Ingredients:

1 round loaf of italian bread sliced (or some type of white bread)
garlic cloves, whole but peeled
plum tomatoes, cut in half
olive oil
salt to taste

lightly toast the bread in the oven. take out and immediately rub the garlic into the bread. squeeze and rub the tomato juice in the bread. drizzle with olive oil and salt. Serve right away...

you could also have everyone rub their own bread. Yummy!

The lemon cake sounds soooo yummy, but Dh hates anything lemon...maybe I will make it for a family party when the next one comes up, as a lot love lemon desserts.

sj&k- glad to hear that you are back home and on the mend.

Today was a crowded day, we visited my MIL and then had lunch with my SIL at Red Robin, and then shopping at Costco.
Then my DD ran errands while DH and I started discussing the furniture plan. This is huge for us as we are not great decision makers :blush: and the floor plan is a nightmare :scared1:. Then we had those 30 inch grinders from Big Y. We really like them and they make an easy meal after hours and hours of measuring and discussions about TV placement........

We are having Le Cellier's Cheddar Cheese soup because it's my son's 10th birthday and that's one of his FAVORITES! I don't know what else to have though, I wanted something "Disney" but I'm stumped. Ideas anyone? Keeping in mind he's allergic to shellfish and nuts.

I will be making Pepperoni-Pasta Bake 2night.

Pepperoni-Pasta Bake

1/2 to 3/4 lb. rotini pasta
1 12-oz. pkg. sliced pepperoni
spaghetti sauce
4 to 6 oz. grated mozzarella cheese

Preheat oven to 375 degrees.

Cook pasta according to package directions.

Drain pasta, and spread it evenly in the bottom of an oven-safe casserole dish.

Arrange pepperoni slices on top of pasta.

Pour spaghetti sauce on top.

Top generously with cheese.

Bake for 17 to 22 minutes or until cheese is bubbly.

Here is my receipe for pumpkin pie. I make it every Thanksgiving Day and Christmas and its always have been a favorite to everyone who eats it. This receipe has been in my family for years, and it was passed down to me a few years ago. Whenever we have kids, it will be passed down to them as well. So please do take good care of this receipe.

Pumpkin Pie
2 cups pumpkin puree
1 cup brown sugar
2 teaspoons ground cinnamon
1 teaspoon ground ginger
3 eggs
2 tablespoons molasses
1 cup evaporated milk
2 9-inch unbaked graham cracker pastry shell

Preheat oven to 375 degrees.

In a large bowl, combine pumpkin, sugar, cinnamon, ginger, and molasses.

Add eggs, mixing well.

Gradually add evaporated milk, stirring to mix well.

Pour into pie shell.

Bake for 50 minutes.

TIP: Line a cookie sheet with foil and put the pies on the cookie sheet before sticking the pies in the oven. This helps getting the pies in and out of the oven easier, since the pies are very flimsy when you first put the pies in the oven to bake.

Oh my, people!!! I just made the Cheddar Cheese Soup recipe from Le Cellier (posted at http://allearsnet.com/din/rec.htm) and it came out fantastic!!!!!

Cheddar Cheese Soup
Le Cellier
Canada - Epcot

Ingredients:

1/4 lb. smoked bacon finely chopped
1 medium red onion cut into 1/4 in. pieces
1/2 cup finely sliced celery
1/2 cup finely chopped carrots
3 TB all-purpose flour
3 cups whole milk
2 cups chicken stock
12 oz. grated white cheddar, Canadian Black Diamond
3 dashes Tabasco
1/2 tsp. Worcestershire sauce
1/2 cup Moosehead Canadian Ale, room temperature
salt and pepper to taste
1 TB thinly sliced chives

Method:

1. Cook the bacon in a large heavy-bottomed, non-reactive soup pot over medium heat until wilted but not browned.

2. Add onions, celery and carrots and cook until the onion is translucent and bacon has crisped.

3. Sprinkle in flour and stir constantly for 2 minutes. Stir in milk and stock, a little at a time, blending well to ensure there are no lumps. Bring to a boil, then cover and simmer for 15 minutes.

4. Remove from heat and whisk in cheese, Tabasco, Worcestershire and ale. Season with salt and pepper to taste.

Serve with your favorite bread and top with chopped chives.

Supper tonight was French Toast, as I was going to make it for breakfast, but have come down with a cold so I slept and dragged A** all morning, lol.

The lemon cake sounds soooo yummy, but Dh hates anything lemon...maybe I will make it for a family party when the next one comes up, as a lot love lemon desserts.

You could make the lemon cake any flavor just by changing the cake mix and pudding flavors. A friend of mine thought strawberry cake with banana pudding sounded good. I think chocolate cake with white chocolate pudding would be outstanding, too. The possibilities seem pretty endless!

Dinner tonight will be the chicken with paprika cream that I was going to do last week. I'm actually going to try it tonight! I'll let you know how it goes. I'll steam some broccoli to go on the side, and prepare either a rice or noodle dish to round it out! No dessert for us tonight, we had too much dessert last night!

Tonight I am using the leftover chicken milanese from Friday as part of a salad with romaine lettuce, chopped tomatoes, blue cheese, red onion, and the sliced chicken. I also bought a crusty baguette from the bakery near my office to have with it.

I'll post the spinach recipe when I get home Lindsay. It is really good.

We had the Cheesy Crockpot Chicken tonight, with rice, navy beans and corn on the cob. I didn't have two cans of cream of chicken soup, so I used one can of that and the other was cream of chicken and mushroom, along with the cheddar cheese soup, and it was really good. It must have been, because DH is taking some to work tomorrow for lunch and he eats very few leftovers.

I made my lemon chicken tonight. All it is is frozen chicken breasts, lemon juice, sundried tomatoes, chopped garlic, thyme and basil. I put everything in a big pan with a little water and just let it simmer.

I am still feeling blah today, coming down with the cold that ds had all last week. Tonight I did make pork loin with a bbq rub on it, herb and parm couscous, (baked potato for dh) and frozen corn, and applesauce. Dh and ds ate every bit of it. I on the other hand ate applesauce and that was it. My throat is very swollen, so that is all that tasted good to me.
Oh well, less on the lips, less on the hips......

nucpharm congrats on the marathon! That's a great achievement. Here's the gratin recipe you asked for, Lindsay, once again a riff on an Ina Garten recipe:

Spinach Gratin

2 tbsp. butter
1 large onion, chopped
2 tbsp. flour
1/8 tsp. freshly grated nutmeg
1/2 cup heavy cream
1 cup milk
About 24 ounces baby spinach, blanched in salted boiling water until just wilted, drained and then wrung out in a clean kitchen towel to get all the liquid out. Don't skip this step or the gratin will be watery! (You could also use thawed frozen spinach, well drained and wrung out).
1 1/2 tsp salt
1/2 tsp black pepper
1/2 cup parmesean cheese (use the good stuff!)
1/4 cup gruyere, grated

Oven 425 degrees

Melt the butter over medium heat and then saute the onions until tender, about 15 minutes. Add the flour and nutmeg and cook, stirring, 2 minutes. Add the cream and milk and cook until thickened.

Chop the well drained and wrung out spinach and add into the sauce, along with half of the parmesean and salt and pepper to taste.

Transfer to baking dish and top with the remaining cheeses. Bake until bubbly, about 20 minutes. Serves 4.

I am trying a new recipe today from Paula Deen...Mexican Chicken. It is very similar to Lindsay's Cheesy Chicken but with a few other ingredients. Reminds me of Mexican Lasagna. I hope DF and DS like it...they do not stray from the basics.

Since everything was such a blur, I don't remember what we ate this weekend, but my wonderful, considerate sister brought over some barbeque, so we had BBQ sandwiches with cole slaw for dinner last night.

Tonight, I think I will have time to cook, so I have planned a quick mexican chicken. We'll see how it goes.

I was going to do another whole wheat penne thing, probably like the lapegna from last week, but I was considering throwing it in the crock pot while I teach my piano lessons this afternoon. I just didn't know whether I would need to cook the noodles first or not.

I also might try it without the noodles, because we've been going a little heavy on the carbs around here lately, and a good lowcarb dinner would be nice. Just a cheesey Italian meat casserole in the crockpot kind of dish. :confused3 :rotfl2:

I bet you could do it, just don't add the noodles until later, like an hour before serving. Maybe that would work.

That would be good, but I don't think I've ever seen a raspberry pudding mix. I did see a chocolate cherry one a couple of years ago. Hmmm, might be worth investigating!

Tonight I am making the Not-sagna Pasta Toss. Recipe is on page 1. I don't make it very often because it's a little more work than I normally do at dinner, not to mention it's very rich and I want to keep it a special dish. I am making salad and bread to go with it.

I was talking to my trainer/friend Laura yesterday and telling her about this dish. You should have seen her face. She was practically drooling!!! I then invited her and her husband to come eat with us (it makes a TON!). While running through her mental schedule, I then offered to bring her some on Thursday for lunch. She brightened and told me her husband had a late meeting and she was on her own for dinner and that just made her day!!

Sorry, I get excited over little things like that. It's a compliment :)

Just noticed this recipe hasn't been listed. Here you go:

Not-sagna Pasta Toss
1 pound curly short cut pasta (recommended: campanelle by Barilla, fusilli or cavatappi *I use penne or mini-penne*
Coarse salt
2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 pound ground sirloin
4 cloves garlic, chopped
1 medium onion, finely chopped
1/2 teaspoon crushed red pepper flakes, eyeball it in your palm *I omit this*
Black pepper
1/2 teaspoon allspice, eyeball it in your palm
1 teaspoon, several drops, Worcestershire sauce
1/2 cup dry red wine, a couple of glugs
1/2 cup beef stock
1 (28-ounce) can crushed tomatoes *I use tomato sauce*
1 1/2 cups part-skim ricotta cheese
1 cup fresh basil, about 20 leaves
1/2 cup grated Parmigiano-Reggiano, a couple of handfuls, plus some to pass at table

Heat a large pot of water to boil for pasta. Salt water and cook pasta to al dente. Heads up: you will need a ladle of the starchy cooking water to help form sauce before draining.

Heat a deep nonstick skillet over medium-high heat. Add extra-virgin olive oil, 2 turns of the pan. Add the meat and break it up into small bits as it caramelizes. Once meat has good color to it, 4 to 5 minutes, add garlic, onions and red pepper flakes and season with salt, pepper, allspice and Worcestershire sauce. Cook another 5 minutes, deglaze the meat and onions with red wine, cook off a minute, then combine about 1/2 cup of stock into the meat. Stir in the tomatoes and bring to a bubble. Reduce heat to medium low and simmer 5 minutes.

Place ricotta cheese in the bottom of a shallow bowl. Add a ladleful of boiling, starchy pasta water to the ricotta and stir to combine. Add a couple of handfuls of grated Parmesan to the ricotta and mix it in.

Drain pasta. Toss hot pasta with cheeses. Add half the thick meat sauce to the pasta bowl and combine. Tear or shred the basil and add to the meat and pasta, toss again. Taste to adjust salt and pepper. Serve bowlfuls of Not-sagna with extra sauce on top and more grated Parmesan to pass at the table.

Last night DD had soccer practice and I went along just to get out of the house for the first time in a week, so we picked up takeout (Taco Bell-not my choice!) Tonight will be baked pork chops. I use the McCormick Bag and Seasoning-not very homemade, but tasty-my mother always used it and still does and DH likes it, too. I will also make rice and some kind of vegetable. Hope everyone gets better soon-I am beginning to feel almost normal again, as long as I don't do too much. Have a great day, everyone!

I am trying another new recipe today. It is called Harvest Beef Stew. It is cooked for several hours in the oven and calls for tapioca as a thickening agent...it sounds yummy...It has potatoes too but I think I will make egg noodles too!

Thank you to everyone for their thoughts and prayers for my family. I really appreciate the support from all of my new friends. FIL is in good spirits, and is set to begin a 5 day round of chemo tomorrow. After that treatment, the doctors will test again and they should be able to give us a prognosis. So we are still kind of wait and see, but we are all very hopeful that the treatment will be successful.

DH and I will probably try to go to the hospital to see FIL tonight, so our dinner will be a casserole I took out of the freezer.

Lindsay, I printed a copy of your not-sagna recipe for future use. It looks wonderful.

Last night I tried a new recipe. It was SO GOOD!

Chicken Alfredo Pesto Pasta
2 tsp. oil
1 lb. boneless skinless chicken breasts, cut into bite-size pieces
2 cups milk
1/2 cup (1/2 of 8-oz. tub) PHILADELPHIA Cream Cheese Spread
2 cups red pepper strips (about 1 large pepper) *I used about 1 cup of roasted instead. DH doesn't care for peppers.
1/4 cup KRAFT 100% Grated Parmesan Cheese
2 Tbsp. pesto *From a jar.
8 oz. (1/2 of 16-oz. pkg.) angel hair pasta, cooked, drained

*I also added about 1-2 cups of mozzerella, I used more pasta(about 14oz), about 1/4 cup more milk and a whole pack of cream cheese.

*I also added about a T of butter to the chicken when it was just about done.
HEAT oil in large nonstick skillet on medium heat. Add chicken; cook and stir 7 min. or until cooked through.
STIR in milk and cream cheese spread; cook 3 min. or until cream cheese spread is completely melted and mixture is well blended. Add peppers, Parmesan cheese and pesto; stir. Cook 3 min. or until heated through, stirring occasionally.
ADD pasta; toss to coat.

I had to make more than the recipe since I'm cooking for 6. It was super good.

We're having "best ever" pot roast with potatoes and carrots, buttered noodles, homemade bread (bread machine), peas and applesauce. I just the days when the dinners started as soon as I drop the kids off from school.

"Best ever" Pot roast

bottom round roast
1 packet Liptons onions soup mix
1 1/2 cups ketchup
1/2 cup worchestire sauce
3 tablespoons brown sugar
3 tablespoons apple cider vinegar
pepper to taste
slice potatoes
baby carrots

Layer sliced potatoes and carrots on bottom of crockpot. Place roast on top and pepper liberally. Pour packet of dry onion soup mix over roast. Mix ketchup, worchestire sauce, brown sugar and apple cider vinegar together. Pour over roast and vegetables. Put on low on crockpot for 8-10 hours. Delicious!

The Greek Pork Pockets were a hit with my family. The nice thing is that they are easy and you can mix it up to suit your family. Here's the recipe:

1 pound pork tenderloin (I cut mine in cubes for small mouths to eat easier)
1/2 C. Caesar salad dressing
1 tsp. canola oil
1 cucumber diced
1 red onion, diced (I omitted this and added tomatoes)
Cucumber Ranch salad dressing
Pita pockets (I found them pre-opened at Walmart and they were a lifesaver!)

Marinate the pork in the Caesar dressing for at least 15 minutes (I marinated for about an hour). Heat oil in skillet and cook pork until juices run clear. Fill pita pockets with pork, cucumber and onion and drizzle with cucumber ranch dressing. Enjoy!

That's it! I also added some Feta cheese to it, and my kids loved it all! I liked that it was so easy on a night when DH came home from work, and had to rush back out for Church meetings an hour later. This was quick, easy and tasty!


Dinner for us tonight will be a One dish salsa and beef skillet. I don't care for it, but my kids do, so it will not be a fight to get them to eat.

We are having mexican meatloaf. It is ground beef with chili powder, cumin, onions, garlic, corn and a little rice al mixed in. I think we will have refried beans and a salad with it and maybe some leftover augratin potatoes.

DH worked the past two days but I am still traumatized from the past couple weeks :scared:! After 35 years in construction he is not supposed to get a day off.....I should have insisted that it be in my contract!

I have a yummy vegetable barley soup going with the stock from last night's boiled dinner. I have a fresh French loaf to go with it. DH is going to hate it so he can have leftover whatever is in the fridge.

Welcome to all the new people and get well to all the under the weather people.

I haven't posted in a while because I've been so busy doing stuff for DB's wedding this Saturday. I hate to say this, but I can't wait until it's over. Too much stuff to do and too much money being spent that we don't have. DH, DS and I are in the wedding so it's been really nuts.


Dinners so far this week:

Monday - Shrimp in garlic butter over rice and peas.
Tuesday - Soft tacos and Spanish rice.

Tonight we're having beef stir-fry and rice. I just realized we've been having rice every night. I'd better make a point to have a different kind of starch tomorrow.

Here ya go:

Bahama-Mama Pork Chops


1 8 oz can pineapple chunks, reserve juice
1 Tbsp. cornstarch
2/3 c. chile sauce
1/3 c. raisins
1 Tbsp. brown sugar
1/8 tsp. cinnamon
4 pork chops
1 Tbsp. oil

In medium bowl, blend reserved pineapple juice with cornstarch; stir in pineapple, chile sauce, raisins, sugar and cinnamon and set aside. In a large skillet brown chops in oil and drain. Pour pineapple mixture over chops. Cover & simmer 15 minutes.


The rice is a boxed mix from Zatarain's!!

Thanks Kathy, that sounds yummy. I'm gonna try that! It will be a nice change to one I call Polynesian Pork Chops. The only difference is I use barbecue Sauce, allspice, ginger, sliced onions, pineapple rings and bake it in the oven. I usually serve it with a homemade fried rice.

I've been sitting here for more than an hour, looking through all of the recipes & copying! Y'all sure have some great ideas! I didn't cook last night, had leftover red beans & rice from Monday.

I took out some chicken breast for tonight. I had planned on grilled Mediterranean chicken & portabello mushrooms, with a yogurt sauce inside pita bread. But now I can't make up my mind between that or the Rosemary Chicken & Lemon Spaghetti! I'll let y'all know tomorrow what I decided on.

Another easy dinner for us tonight--turkey burgers (I made them a while back so just have to pull the from the freezer and saute) with red onions, arugula, tomatoes, melted sharp cheddar, and mustard. Maybe an arugula salad with it. But, probably not. I'm feeling kind of junk foody tonight so I might make some tater tots as a side instead. Dude! Gimme some of your tots! :laughing:

I love the Monday beans and rice crowd! When I was a kid my Mom had her own meal schedule ans she was a master at stretching her food budget, one paycheck and 4 kids, So anyway we would come home from school and ask what was for dinner and she would simply say "It's Friday." or It's Saturday." It took me years to realize that my Mom loved a routine and that extended right to her meal plan.

Maybe that was why she was so organized and I cannot find a thing :confused3.

This was a hit and it's a little different than the normal stew I make so I figured I would post it...it is made in the oven but I am sure it would be good on the stove or in the crockpot as well.

Serves 8

2 lb beef stew meat, cut into 1 inch pcs
4 medium carrots, cut into 1 inch pcs, I used the precut baby carrots
2 medium onions, cut into eigths
4 cloves garlic, chopped
2 16 oz cans of whole tomatoes, undrained
1/3 cup quick cooking tapioca
1 tbs chopped fresh or 1 tsp dried basil
1 tbs cumin seed, I used powder
1 tbs salt
2 ears of corn, cut into fourths, or frozen cut into 8 pcs
8 small new potatoes, cut in half (1 pound)
2 small zucchini, thinly sliced
**I added about 1/2 cup of water

1. Heat oven to 325

2. Combine all ingredients except corn, potatoes and zucchini in a dutch oven breaking up the tomatoes(I used one of those sterno pans). Cover and bake 2 1/2 hours, stirring 2 - 3 times in thr first hour and a half.

3. Stir in corn and potatoes. Cover and bake for an hour and half.

4. Stir in zucchini. Cover and bake for about 15 minutes.

5. Let stand about 10 minutes and serve.

ETA: I served this with those corn holder thing ama jigs...otherwise eating the corn on the cob would be messy.

Fresh asparagus. How do you cook it? I got it on sale for .99 cents a pound. I saved $15 on 3.5 pounds of it! I am scared to ask how much it normally runs!

Baked or crock pot enchiladas. They sound sooo good, but I have no clue how to make them. :/

I do ribs in my crock pot all the time. I'll post a couple of my favorite recipes.

Sweet and Savory Ribs

1 lg. onion, sliced and separated into rings
2 1/2 to 3 pounds boneless country style pork ribs
1 bottle honey barbecue sauce
1/3 C. maple syrup
1/4 C. spicy brown mustard
1/2 tsp. salt
1/4 tsp. pepper

Place onion in a 5 quart slow cooker. Top with the ribs. Combine the barbecue sauce, syrup, mustard, salt and pepper; pour over ribs. Cover and cook on low for 8 to 9 hours or until the meat is tender.


Chinese Pork Ribs

1/3 C. soy sauce
13 C. orange marmalade
3 Tbs. ketchup
2 garlic cloves, minced
3 to 4 pounds bone in country style pork ribs

In a bowl, combine the soy sauce, marmalade, ketchup and garlic. Pour half into a slow cooker. Top with ribs; drizzle with remaining sauce. Cover and cook on low for 6 hours or until tender. Thicken cooking juices if desired.

Lachesis- Here's an easy & yummy way to do fresh asparagus. All I do is break off the woody tips, and place them on a jelly roll pan / cookie sheet with sides. I drizzle them with olive oil and season with salt & fresh ground black pepper. I roast them in a 400F oven for only 3-4 minutes 'til they're tender crisp. You can also do this on a pre-heated stove top grill or on the BBQ pit. Just watch them as the really thin tender ones don't take long at all.

WFD tonight? Toss up between shrimp fettucine or BBQ shrimp. Want to have leftovers for tomorrow if possible.

Lauren, I know you are sad about your son’s birthday. Special days without our kids are always hardest on the moms I think. Keep your chin up and just think how happy he will be to stretch his birthday out over a week and a half (extra stuff maybe).

Kathy, glad you are feeling better, but hate that you had to go back to work. I am longing for the day DH can make enough money so that I can retire. :rotfl: :rotfl: Seriously though, your pork chop recipe looks really good, but I have a question. What kind of chile sauce do you use?

Dinner tonight is by request of DH. It is ground beef and wild rice casserole with an as yet undecided vegetable on the side.

Do you mind me asking how you cooked your pork roast? Sometimes I find I have to add a little more liquid than a recipe calls for. Also, check your crockpot and see if it's cooking faster than the recipe says. I know that in my case, if a recipe calls for cooking something on low for say 6 hours, that my meal will most likely be ready in 4 and a half hours. Crock pots are tricky that way. I still love mine, and use it often, but it's taken some time to find out all it's little quirks!

Could you all spare some good thoughts for my daughter today? She is participating in a school wide storytelling competition. She's worked really hard, and if she wins she gets to perform her story at the Mount Timpanogos Story Telling Festival this summer. She would be able to work with professional story tellers. She's really nervous, so any pixie dust you could spare would be great!!

Oh, by the way, my dinner last night was a hit! So easy, too!!!

One Pot Saucy Skillet

1 pound hamburger
1 C. salsa
2 C. water
1 pkg. macaroni and cheese dinner
1 C. frozen corn

Brown hamburger in a large skillet. Drain. Add the water, salsa and macaroni. Cook for 10 minutes or until macaroni is tender. Add corn and cheese sauce mix. Cook for 2 minutes or until heated through.

You can top this with more shredded cheese or sour cream. It was yummy, warm, and easy!!!!!

Morning Y'all,

Well I didn't try the new recipes. I decided to go with my usual because it's lowfat. I had been pretty sick over the past month, but the good thing was I lost 12 lbs! So I'm going to try & keep it off. We'll see, it's going to be tough with all these great ideas! We'll see....;)

So last night we had :
grilled chicken breast marinated with mediterreanean seasoning & curry, olive oil, lemon, minced garlic
grilled portabello mushrooms marinated with balsamic vinegar, worchestshire, garlic & cajun seasoning
tabouli mix (Fantastic brand is good) with parsley, celery, tomatoes
whole wheat pita bread
yogurt sauce

Don't know what's for supper yet! I need to get off of the computer & get to the grocery. Anyone have a "lite" ideas?

Hopefully I haven't already posted this one like I did with my pot roast recipes yesterday! I guess we have it too often.

Tonight we're having sloppy joe "pizza"

2 lbs ground beef
large can of manwich sloppy joe sauce
2 packages crescent rolls
shredded cheddar cheese

Brown ground beef, add sloppy joe sauce and simmer for 10 minutes. Meanwhile unroll crescent rolls but do not separate. Press preforations together to seal (1 crust per can). Bake crescent roll crust for 8-10 minutes. Poor sloppy joe mixture over crust and top with shredded cheese bake an addition 3-5 minutes.

We're also having salad, corn and jello with whipped cream for dessert.

Glenda- I used to have that problem with pot roast so now I try to use a boneless chuck roast. It is not at all lean so it tends to stay moist. I don't cook them often because of that, but they do taste good. You also do not need to check the cooking time as closely.

Tonite I am planning a maple glazed chicken that I saw in a magazine. I hope that it is good. I'm serving roasted potatoes and onions, I think and a vegetable and salad.

My Mom used to make it too, usually on Monday. She had some funky name for it. My Mom was French Canadian and we grew up using some of her slang. My MIL calls it hamburg gravy, but I did not realize it was the same thing until I had dinner at her house.

DD's had some crawdads and then made mac n cheese(a staple:laughing: )-with corn and potatoes of course. I was NOT looking forward to whipping something up in less than an hour or so. -tomorrow is another day...:rotfl:

In the crock pot I had the roast, 1.5 potatoes, a few baby carrots, one cup water, one cup sweet and sour sauce. It cooked for 8 or 9hrs. Do you think the veggies soaked up the liquid? When I openned the lid when it was done, there seemed to be enuf liquid in there. :confused3

We're having tacos here. My son is still sick (strep) and they have him on heavy duty antibiotics- tacos was his request but I'm not sure how it will agree with him. If that's what he'll eat though- I'll make it.

Friday = Pizza! We always have pizza on Friday and since we're Catholic we don't eat meat on Fridays in lent. Kids have a day off from school today so grilled cheese for lunch and pizza for dinner.

Last night's casserole was okay, but nothing really worth posting.

Anyway, you guys will appreciate this story. I agreed weeks ago to make dinner for our church small group tonight. We meet every other Friday night and a couple of the ladies divide up cooking the dinner. So I signed up for the main course and a side. So, I decided that I would make liamsaunt's recipe for the Lemony Balsalmic Roast Chicken. I had done all the prep yesterday afternoon--chicken marinating, everything. And then I have potatoes to make some garlic mashers as a side--Had enough food for the 12 people we had 2 weeks ago. To find out at 8PM that there will be 24 people there tonight! WTH!!! I freaked out--ahd to run to the store, buy more chicken, potatoes, recipe ingredients. Then had to stay up late getting that prep work done. :scared1: So we'll see how the cooking goes later today! Cross your fingers for me!

Tonight's dinner is the leftovers from last night's casserole. However, dessert is going to be chocolate covered strawberries. My favorite, but our youngest daughter doesn't like chocolate, but loves berries, so I have left some plain for her to have with cool whip.

Mermaid- I hope that your son feels better soon.

I'm not sure about this evening, we don't eat meat on Friday either, and I forgot to take the fish out of the freezer. DH has had about 5 tuna sandwiches for lunch already, so I'm thinking he will be a happy man if he can have that for supper, too!

Yesterday I attempted to bake bread, and it was not pretty! It was a batter bread but really came out looking like two solid funny shaped bricks. Well today I tried oatmeal bread, and it is much better. I've been able to make dinner rolls and Babka, so I did not expect the bread to be different, but I can see that I need a lot of practice. Are there any bread bakers in the house?

Stephanie, I'm thinking of you and wishing you all the best...I give you alot of credit for taking on the task of cooking for 24 people. I tend to freak out when I cook for anyone other than my boys. :scared1: I am already stessing for my son's party next week. Stay calm...:)

Nancy, hubby had 5 sandwiches already???!!! I thought we were big eaters...;) I'll come over for babka anytime...I haven't had that in years.

We try to be meatless here on Fridays too...I say try since DF just ate a piece of leftover pepperoni sausage pizza!!! I am making pasta with marinara, bread and salad...it makes it a little hard that DF doesn't like fish.

Yes, but i am trying to bake by hand. The pie crust thing was not a success so I am hoping that this is better.

He sure can eat! I fixed 4 cans of tuna, I had one sandwich and there is only a little left :confused3.

OT but before we got married, Buddy and I went to my sisters just as they were finishing dinner. It was their leftover night. She asked if he was hungry and of course he was, I was not cooking for him every night. She started cleaning out her fridge, and he ate everything she put in front of him. He finally figured she was having fun with him when she put a dish of olives and a can of cranberry sauce on his plate.

Now I am going to make Babka for Easter, so come on by!

I'm making a bunch of caribbean food tonight: spicy cuban black bean cakes, sweet plantains with hot banana ketchup, pineapple-coconut rice, and coconut shrimp with mango chutney. I'm trying to decide on whether to make some kind of foo-foo frozen fruity drink too. I even have the miniature paper umbrellas!

I am just waiting for my macaroni to be finished cooking but had to share that I think m marinara is the best I ever made...I think its the tomatoes that I am using but had to ask my fellow cooking buddies...do you think food tastes better when you just throw all the ingredients together and not be so precise? It seems to be this way with me...DF thinks so too.

Tonight we had Flank steak with Tastefully simple Moroccan spice, rice and salad. Maybe next week I'll be able to grill. It's finally getting warmer.

Happy Friday everyone....I don't think I'm cooking dinner tonight but just wanted to say hi. If I do cook, it will be grilled cheese sandwiches since we're also meatless on Fridays during Lent. Reading everyone's recipes/meal plans has made me really hungry for meat though!!!!

Lauren - my boys are at their dad's for Spring Break so it's really quiet in the house. I feel for you, the first birthday without your DS will be the hardest though so just know that it does get easier. Hugs to you :grouphug: .

Glynis - we'll be waiting to hear how your daughter did at the competition!

Stay warm to all those up north in the cold part of the country. It was almost 80 here today. I went to get a pedicure last night so I could start wearing sandals/flip flops again.

It sure sounds like you had enough liquid. Did the veggies seem TOO done? It might just be that your crock pot cooked the meal in less time than the recipe called for. They also could have soaked up the liquid, but if there was still liquid in the crock that's very confusing. Hmmmmm. If you try the same recipe (or another one), you might want to test for doneness a little earlier.

Welll, I was planning on making calzones for dinner tonight. I spent the day with my niece making journals for my oldest daughter and son, and 3 of my niece's and nephews who are all going with us to Disneyland in June (they turned out so cute!). Then I had to pick up DD and DS from school and run them to my sister's house for violin lessons. When I stopped at the house to pick up the violin and music books, there was a message on the machine. The organizers of the competition had called to let me know that Katie had been chosen to be the representative from the upper grades from our school! You guys sure sent along a ton of pixie dust. I thank you from the very bottom of my heart (and Katie's too!)! Now, she goes on the district wide competition. Then, hopefully, on to the storytelling festival!!!!!

In light of that, I decided to let Katie choose dinner tonight. No surprise, she chose pizza. What she doesn't know is that it will be served to her on our special Blue Plate. We save it for special occasions, get it? The Blue Plate Special. Usually, the kids only get it on their birthdays, but this is too important for Katie to let it pass by!

we're going to my niece's birthday party today, so dinner will be there ~ pasta I think.

Last night I made a really good turkey chili with a recipe I got at Trader Joe's....

1 package ground turkey
2 jars Trader Joe's chunky salsa
1 can Trader Joe's marianted bean salad

brown turkey
add whole can of beans(do not drain)
add salsa
simmer for 10 minutes

it was really good! If you don't have a Trader Joe's nearby, I'm sure you could use any salsa and marinated beans

Good morning everyone!

I'm still reeling from a long afternoon/evening at the ballgame. DS is on a winning streak, 3-0 pitching. Yesterdays game was like a marathon - between the two teams there were 30 hits. He won't be playing today, so I may just go to one game and be a relaxed spectator, when he pitches I am a nervous wreck!!!

Now that I've babbled enough about baseball, on to what's important! I'm planning on making seared scallops with a meuniere sauce, pasta salad and for dessert -- frosted chocolate coconut squares.

Nancy - I loved that story about Buddy!:rotfl:

Glynis - Congrats to Katie and love the blue plate idea.:goodvibes

I couldn't get on the DIS last night, it kept knocking me off & giving me an error message. DH (computer geek) fulled with it & couldn't figure it out! So glad it's okay today. I would be freaking out without the DIS!

Kathy, congratulations to your DS on the game! Now you can relax, watching the next game! I've never fixed scallops before, any tips?

Last night I fixed Wasabi Pea crusted tuna, salad with Japanese Ginger dressing, & jasmine rice. It was good!

Well, dinner turned out really good last night. So good, in fact, that most of the people at our small group thought that I has just bought rotisserie chickens and reheated them. They were shocked to find out I actually did it all myself. But of course, there wasn't nearly the size group that had been expected. So we've got tons of leftovers. WE'll be eating roast chicken and mashed taters all weekend!

shovan - this is my first time doing the scallops, the only thing I've been reading about as far as success in cooking them is to make sure they are completely dry, use high heat and caramelize on both sides. We'll see....... could you share your wasabi tuna recipe?Also, what kind of jasmine rice do you use, I've never bought it or cooked it before.

Glynis - this recipe is very old and I haven't made them in a long time. I don't really like how they turned out but the family does. I find the graham cracker taste a bit overpowering:

Frosted Chocolate Coconut Squares

3/4 c. margarine
2 oz. semisweet chocolate
1 3/4 c. graham cracker crumbs
3/4 c. shredded coconut (I would add more)
3/4 c. chopped nuts
2 tsp. vanilla
1 3/4 c. confectioners sugar
2 Tbsp. milk

Melt 1/2 c. of the margarine and 1 oz. of the chocolate. Remove from heat and stir in the graham cracker crumbs, coconut, nuts and 1 tsp. of the vanilla. Press into a 9 inch square baking pan; chill. Meanwhile beat remaining margarine, sugar, milk and 1 tsp vanilla until smooth and creamy. Spread over chilled crumb mixture. Melt remaining chocolate and drizzle over top.Chill until frosting is firm. Cut into squares.

Hello, everyone. Haven't been posting the last few days, nothing exciting going on in the kitchen. Last night we went out to eat at Red Lobster, and tonight will be leftovers from that dinner. DD's soccer season started today, so it looks like all of our Saturdays we'll be eating out for a couple of months. I'll try to do better tommorrow!
