Thank you all for the well wishes. Kady is still not able to eat, and has been sleeping all morning, but the other symptoms are gone. If you can, will you offer a prayer for my Mom? She seems to have gotten the bug overnight. My sister is with her now, and I am going over as soon as Marisa gets home form work so that Gail can get some rest. My sister is a respiratory therapist so she is trying to keep her out of the hospital, but if her breath gets much shorter, she won't be able to do that. Thank you all.

Nancy, sorry to hear your little one is not well. I'll keep her and you in my thoughts and prayers. Mine are sick as well. Must be something going around. One child had to get a breathing treatment in the office and has been on an oral steroid and they both have been on antibx. since Friday. Still have runny noses and an awful cough. Not eating very well. I think they have multiple things going on! Missed school today and the way it's going it might be a few more days. Ugh. So --- long story short, you aren't alone! :grouphug:

I don't know what will be for dinner! Maybe pancakes. They both said they are interested in that. :)

ETA- It happened for my kids overnight too! Went to school fine on Thursday and Friday night the respiratory sx started. By Friday morning it was no question it was time to go to the Dr.'s. (The vaporizer does help some.) I called the teacher and she was shocked. He was fine all day Thursday! She could hardly believe he could get so sick so fast! It was very quick!

Well, I haven't made it to the store for groceries yet, and it's so windy, I don't really want to leave the house, so I'm thinking breakfast for dinner. French toast, scrambled eggs and sausage.

Hope you're all feeling better soon.

Great restaurant review Lindsay! I remember arriving an hour early for dinner reservations one time because I forgot to change my watch for daylight savings. At least it wasn't an hour late. :teeth:

I made a beer butt chicken, shells in white cheddar sauce and corn for dinner tonight.

Blech. I feel like I've been rode hard and hung up wet. I have a sleep hangover. Ever have those? The kind where you sleep a little too good and you feel rotten the next morning? Not to mention my elbow still really hurt. *grumble*

Thank you all for your prayers. They worked! I am here for the day and will probably be checking out the trip reports, I want to hear how Lulu and Lindsays trip went. I am not sure about dinner, but will come up with something for here, and DD will be in charge of dinner at home. Last night she gave them hotdogs. I think my DH had some of the chicken soup I made. Dh says not to worry, they will all survive Marisa's cooking :rotfl: , but I think she will give them hotdogs until I come home or they will have pizza.

For those with sick ones, my BIL is a DR in the ER and my sister is a respiratory therapist in a childrens hospital. They both said that the hospitals are being hit hard with viruses, both intestinal and respiratory. I hope that your families get well soon.

Tonight I'm making teriyaki pork kabobs, rice, baby peas, and salad.

The chicken on the can we had last night was good, but as usual the white meat was dry. How in the world do you cook a whole chicken so the dark meat is cooked through and the might meat isn't overcooked?

Tonight we are having Apricot Plum Chicken from this thread!!! I'm so excited. I'm using homemade apricot jam that has some crushed pineapple in it. I think it will still work, though. We'll also have some brown rice and green beans. For dessert? The last of the birthday cake and ice cream. If they don't finish it, it goes in the trash! I'm tired of looking at it and having it tempt me!!!

Just found out we'll be leaving for Thanksgiving at my parents house on Monday!!! I'm so excited!!!   That means I only have to cook through Sunday. Of course, once I get to mom's, I'll be doing Thanksgiving prep, and stuff, but still...I'll be with my mom!!!

My prayers are with all of you that have sick loved ones.

Anyone have a good Sangria recipe? :woohoo:

Red or White?

I usually do red...I just wing it like I did in my bartending days:

1 big bottle (jug) of cheap red or white wine wine
about 3/4 cup simple syrup (equal amounts of sugar and water simmered until smooth)
about 3/4 cup brandy
about 1/2 cup of triple sec
cut up fruit (apples, lemons, limes, oranges...etc)

mix all of the above ingredients in a pitcher (no ice), stir and adjust the ingredients if needed.

pour in a glass over ice (about 3/4 full) and top with seltzer or lemon lime soda...

Hope this helps!

FormrCastMbr, thanks for the recipe! I was interested in red so that sounds good. :thumbsup2

Sure, why not...I would substitute the juice fo some of the simple syrup or the triple sec...just add the juice first and taste and add the other things accordingly...I would them use seltzer instead of lemon lime soda...HTH! :)

Good Morning All!

I am going to do sweet and sour chicken, green beans (or salad) and rice. This chicken is like a recipe on this thread with russian or catalina dressing, apricot preserves and onion soup mix...I usually do it in the oven but want to try it in the crockpot.

I'll answer. I've done it both ways, and both ways are good. For those that think they don't like Parm, the Kraft is the best way to go. The shredded is wonderful, too, though! My suggestion, start with the Kraft, get your family used to the taste, and then move to the shredded!

We did the apricot/plum chicken last night and it was wonderful! Unfortunately, I didn't have any sage, so I substituted poultry seasoning. I think it would have been better with the fresh sage leaves. I'm going to try it again soon with sage. I'll have some left over from Thanksgiving, so I'm going to try it.

Tonight is Cheesy Tuna Dinner. My kids love it, and it's easy! I'm trying to organize myself to pack for the trip to my parents for Thanksgiving. DH told me that instead of leaving on Wednesday, we'll be leaving Monday. So, I'm kind of in a tizzy to get laundry done, etc. An easy dinner just fits the bill!

DH picked up some store bought M&M cookies last night (yuck), so that's what the kids will have for dessert.

Zandy595

WFD? Good question. The only protein I have in the house is a big can of chicken (hurricane supply), eggs, and some lunch meat. I really don' t feel like going to the store today so I'll have to figure out something. DH has to have his meat and he doesn't think a sandwich is a good enough dinner for him. Well, he might just have to suck it up tonight.

What can you do with canned chicken, besides chicken salad sandwiches?

Hi Sandy,

I've made a chicken pot pie with canned chicken (when I was in a pinch). It worked out fine! I used a can of mixed veggies or frozen mixed veggies, a can of cream of something soup, and bisquick. HTH!

Last night I actually did not eat leftovers. Instead, I had cornflake crusted haddock with lemon butter, crispy green beans, and roasted fingerling potatoes.

Tonight I made a pizza with tomato-garlic sauce, fresh mozzarella, and a huge handful of arugula (added once the pizza was out of the oven). Now my whole house smells like pizza! I think my oven insulation might be giving out...

Have a great trip TigerKat! You are staying at my favorite Disney hotel. :)

If any of you are looking for a new cookbook, my favorite cookbook author has a new book out: Ina Garten (aka the Barefoot Contessa)--it's called the Barefoot Contessa cooks at home. I picked it up yesterday and it looks to have lots of yummy recipes. Tonight I am making one: it's an oven baked omelet for two that is filled with sauteed potatoes and bacon, and topped with some cheddar. I am serving it with crusty bread and a salad of (more!) arugula, sweet onion, pomegranite seeds and pecans in a raspberry vinagrette. I have some persimmons that I might put in the salad too--I picked them up on a whim...have never tried them before.

I saw a recipe in a magazine for Cranberry Coffee Cake. It is a recipe from a bed and breakfast and sounds really good. It has canned whole berry cranberry sauce in the middle and on top - it also has sour cream and walnuts in it. When we get back from our trip to Disney (we leave on Wednesday  ) I'm gotta try it. I'll let ya'll know how it comes out.

Funny though, cause at the end of the recipe it says it can be drizzzled with almond icing - but the picture of it has no icing. I'm think I'm gonna drizzle it with a little icing.

this sounds yummy. You'll have to let us know how it turns out and then share the recipe.

Here it is:

CRANBERRY COFFEE CAKE

3 cups flour
1 ½ tsp baking powder
1 ½ tsp baking soda
½ tsp salt
1 ½ sticks butter
1 ½ cups sugar
3 large eggs
8 oz sour cream
1 ½ tsp almond extract
1 can whole berry cranberry sauce
½ cup chopped walnuts

Preheat oven to 350 degrees. Grease and flour a ten-inch tube pan (or bundt pan).

In a medium bowl combine the flour, baking powder, baking soda, and salt. Set aside.

In large mixing bowl cream the butter and sugar. Add eggs one at a time. Alternately add the sour cream and flour mixture. Mix in the almond extract. Place ½ of the batter in tube pan. Spread with ½ of the can of whole berry cranberry sauce. Cover sauce with remaining batter. Spread with the remaining cranberry sauce and sprinkle top with chopped walnuts.

Bake 60 minutes in the lower third of the oven. Remove from oven and let stand on wire rack for 10 minutes to cool. Invert onto plate to remove from pan and once again so walnuts are on top.

Yumm! This sounds so good! I think I will make it over the weekend leading up to Christmas Day. Today we are having a big lunch at The American Cafe. I'm talking spinach con queso, splitting a BBQ chicken pizza, and maybe dessert. We are then finishing our Christmas shopping. You see, we have made a conscious decision not to return to Hamilton Place (local mall) until after the holidays. It gets insane. We do a LOT of our Christmas shopping online, but there are a few odds and ends I need to pick up at the mall that I can't get online (like Yankee candles. I have no sense of smell and need to take someone with a good sniffer with me to help, LOL!!!).

Homemade chicken soup for us and dino chicken nuggets and fries for DGD. We are babysitting for her while DD and SIL go to see Josh Blue at the Hu Ke Lau.

Rice
Steamed veggies--broccoli, cauliflower, carrots, water chestnuts
spinich dip with toasted triangles

I am getting so tired of cooking. Anybody else ever feel that way? Seems I spend so much time cooking and cleaning up after I cook. These people just shove it in their mouths and talk about how they don't really care for it or say "It's OK". :confused3

Then again maybe I am just in a "BLAH" kind of mood as everything is bothering me lately.

Oh well, that's our lunch (hubby works the evening shift today).

Mom21, I'm sorry :( I would seriously talk to them and tell them how you feel. Heck, I don't have any kids, but if my husband didn't share his pleasure and appreciation of my food, I would be seriously bummed.

On a lighter note, could you share your spinach dip with us? :)

Mom21--I have lots of nights of thinking "Why do I continue to try to cook a nice meal for my family? :confused3 " Dh is content to eat Hamburger Helper for every meal and DD (3) says everything is "yucky" and she's not eating it. Luckily,my little man will eat whatever is in front of him. But for me, cooking is the one thing I can do, and I try to think of it like my hobby!

Now, WFD--I have no clue. Our church group is meeting here tonight and food is being brought over. So we're at the mercy of others! ;) I'm sure it will be yummy. Last night we ended up at our local sports bar and had some yummy burgers!

Why sure I'd love to if I could......LOL :rotfl: I got some of TGIFriday's at a B1G1 in my grocery store. I will be the only one that eats it anyway. They don't "do" spinach. Sorry no recipe. I'll let you know if it is any good though. My Publix makes an awesome spinach and artichoke dip, but it is expensive and i can't eat the whole thing so I don't buy it unless I am having a party.

I really like to cook, but DH and DS make me feel bad when they say they don't like something. There are times when I try a new recipe and even I don't like it, but when someone else makes a negative comment when I've worked hard on something, it makes me wonder why I even bother.

Tonight's a perfect example of what I do to try and please my family. I'm making cheese ravioli, meatballs (cuz DH won't eat a meal without meat  ) another kind of pasta (because DS probably won't like the ravioli), salad, and mozzarella rolls.

I know how you feel. DH is pretty appreciative, but my kids generally don't like anything I cook. It used to bug me a lot! However, now I cook for myself. If a recipe sounds yummy, I try it. The kids have to give it a fair shot. If they don't like it, they know where the peanut butter or cold cereal is. I'm much happier now that I'm cooking for me!

Hmmm, what's for dinner??? Good question. Actually, I think I'm making chicken piccata. It was on tap for earlier in the week, but I didn't make it. (DH took me shopping for a Disney themed Christmas tree!!!!) I usually make a nice dessert, but I don't know what I have. We'll see! Guess I'll have to get up off my duff and see what's in the cupboard. Any suggestions?

I still don't feel like cooking. Head cold, sinus or something. Just feel blah. I'm taking Nyquil & Dayquil. They give some relief. Might have to break down & go to the dr. tomorrow. Ugh.

Thank goodness for the crockpot! I've got some spaghetti sauce & Italian meatballs simmering. Later I'll fix some noodles & garlic toast. If I can find the recipe and I feel like it, I might try the pumpkin roll recipe I found recently (in last Sunday's paper). It looks great! But, I'd like to give it a dry run before I make & take it to Thanksgiving dinner. LOL. If I do make it and it does turn out really good, I'll post the recipe. :)

I can totally relate to all of you about cooking and pleasing the family...I love to cook and now I have time (I am a stay at home Mom for the first time!!!) but sometimes I do not feel it is appreciated...about a month ago I made homemade chicken soup, they loved it but DFi said not to waste so much time and open a can of Progresso!!! :furious: :stir: :furious: :stir: :furious: :furious: :furious: Anyway, he was sick this week so I took out some of my frozen soup and he loved it... :confused3

I am trying to do easy things now and be a little more organized...if they don't care why should I? But I love to cook and will always do so...I am babbling now!!!

We had a big lunch today at friendly's so we just had some hot dogs tonight and mac and cheese...

I made some Tastefully Simple Pumpkin Muffins to send to my Mom since I am not going to see here for Thanksgiving and have to share with you guys that they were sooo good and easy!!!

We do a very simple one.

Simple Sprouts with Browned Butter and Bacon

Take 2 containers of fresh brussels sprouts and wash and peel off any brown leaves. Trim root end. Slice from top to root end.
Take bacon (pref. applewood) (maybe 6 strips?) and dice it and fry it until crisp. Remove crisp bacon.
Add 2 shallots and 1 T butter and saute in fat/melted butter mix until translucent. (can add diced jalapenos if you like)
Add sliced sprouts and toss. Cook until sprouts are tender. Add salt and pepper to taste.

You can top with browned bread crumbs, or shredded cheese to taste (optional).

Yum. ;)

Mom21: I can relate also. I try to cook a nice meal at least 5 times a week and have done so since my children were little. My DH will tell everybody that he will eat anything but liver and asparagus. He will. Just not quietly...... He is a meat and potato guy, hates casseroles and stews, and really prefers that I don't "mess with his food". DD does not eat red meat. The little one lives for mashed potatoes. My SIL does not say a word, just is glad he does not have to cook.

I try to please them all, because I enjoy cooking and taking care of them, but I have found that a few days of "on your own" works better than anything. My family has been sick this last week, and I have spent a lot of time with my Mom also, so tonite when I fix dinner they will all be very happy, and they will make sure that they tell me.

I really think that when there is a family member who cooks everyday the family stops appreciating the gift. We have friends who come for dinner and tell my DH how lucky he is because there is never a real meal in their home. My family sings my praises to the world, but sometimes forgets to sing to me. I suspect the same is true for all of the dedicated cooks on this thread.

Now I have to find a recipe for country ribs. I haven't cooked them in years.

I think that's so sad :(

Like I've said before, it's just me and my husband, and thankfully he really appreciates my cooking. Hee hee, he will call me from work and ask, "What's on the Chez Kitty menu tonight?" (I know, we are silly). He always makes a big deal about my food and often makes requests.

My poor dad used to get a home-cooked meal every single day, with dessert. But when he and my step-mother temporarily seperated, she went back to work. Now she brags how she never cooks and actually makes comments to me because I do. And she's the one who taught me a lot of what I know about cooking!! My dad eats like he's starving whenever I cook for him :(

It is sad. My kids always brought their friends home for dinner and they would say that it was like Thanksgiving in our home every day. I'm not sure if people just have different habits today, or if they are genuinely afraid to cook. We have friends who always eat a meal and they are like you and your DH ( I love to hear about "silly" . Most of the young mothers in her neighborhood are sahm's but when the Dad gets home they all go out to eat. I don't know, for us it is a part of our day, and if I am not cooking, my family misses it.

Found my recipe for crockpot BBQ ribs, so we are having them with rice and veggies. Any leftovers will be good for pulled pork sandwiches on Wednesday night when my kitchen is off limits for anything but a quick warm up ;).

Catching up...

Saturday we had Indian food again. We were over helping my sister paint her house so this was fast and yummy!

Yesterday we had a roast beef with gravy, roasted potatoes, sauteed brussels sprouts with balsamic, pureed carrots with cumin, and my contirbution to the meal since I don't eat red meat: portobello mushroom lasagna. The lasagna was awesome--here is the recipe:

for an 8x8 dish, greased
8 no-boil lasgna noodles
12 oz. portobello mushroom, sliced
1/2 cup parmesean cheese
4 oz shredded mozzarella
2 cups whole milk
6 tbsp. butter
4 tbsp. flour
salt, pepper, and nutmeg to taste

Saute the mushrooms in 2 tbsp butter until browned, sprinkle with salt and set aside. Heat the remaining butter in a saucepan, then stir in the flour and cooking one minute. Pour in the milk (heated) and whisk until thickened, about 5 minutes. Season with salt, pepper, and nutmeg. Layer 1/4 of the sauce into the dish and top with two noodles. Scatter over 1/3 of the mushrooms and 1/3 of the cheeses. Then top with more sauce, noodles, etc. Continue until you have four layers, ending with sauce and then the cheese. Bake in a 375 oven 45 minutes. Let stand 15 minutes before serving.

Tonight we are having roasted balsamic-mustard-rosemary chicken, mashed buttermilk potatoes, and broccoli.

Here is another recipe--it's the chicken I am serving tonight--it's really tasty! The recipe is from Fine Cooking.

Lemony Balsamic-Mustard Marinated Roast Chicken with Rosemary and Garlic

6 pieces of bone-in, skin-on chicken (use whatever pieces you like best)
5 large cloves garlic, peeled, minced, and ground to a psate with a little salt
2 tsp. finely grated lemon zest
2 tsp. finely chopped rosemary
1/3 cup dijon mustard
1/3 cup packed light brown sugar
1/3 cup balsamic vinegar
1/4 cup olive oil
6 to 8 large sprigs of rosemary
1/2 large lemon, thinly sliced.

The day before you want to cook, rinse the chicken and dry thoroughly. Rub the garlic paste all over the chicken pieces. Combine lemon zest through olive oil in a bowl and mix to blend. Pour over chicken, and add rosemary sprigs and lemon slices. Toss everything together to coat, cover, and refrigerate overnight.

Take the chicken out of the oven at least 20 minites before you are going to cook it. Perheat oven to 400 degrees.

Place chicken with its marinade into a pyrex baking dish in one layer, skin side up and evenly spaced (don't let them touch). Sprinkle with salt and place in oven. After 30 minutes have passed, start basting the chicken with the pan juices. The chicken is done when it turns deep brown and the pan juices have reduced and darkened. Total cooking time is about an hour.

Transfer chicken to plate and tent with foil. Remove the lemon slices and rosemary sprigs from the pan and discard. Spoon off as much fat as you can from the pan drippings, then add 2 tbsp. water to the pan and scrape up all the browned bits to form a slightly thickened, rich tasting sauce.

Serve chicken with pan sauce.

I have a few pieces of chicken marinating in a candied ginger teriyaki sauce. I'm going to grill those up and make grilled chicken sandwiches and a side salad or maybe cup of soup depending on what's in the house. If I find a can of pineapple rings, I might add that to the sandwiches, too.

Tomorrow I am responsible for:

Traditional Green Bean Casserole
Pumpkin and White Corn Bisque with Jalapeno Pesto and
Pumpkin Creme Brulee

I am soo excited to use the creme brulee torch. I will probably incinerate something, hopefully not myself, or anything important. ;)

I have to go to the grocery store - I am hoping they have a fine mesh strainer b/c I don't think mine is really fine enough.

I am here at school, got here at 7 am - to undecorate for fall and decorate for Christmas, only to find I lost my cabinet key. :( I'm hoping dbf finds it in his car.

Anyway, I'm off to class.

Oh - I need a *really* easy, not too strong, yet festive, cocktail recipe for Thanksgiving. Any suggestions? Last year we did cranberry and vodka and I want something more creative.

Hi Lulu, one of my favorite festive drinks is a kir royale. It's just sparkling wine and cassis. Fill a champagne glass most of the way with the sparkling wine and then top off with the cassis--maybe 2 tablespoons or so (you can use framboise instead if you like raspberry). Taste it and see if it is sweet enough for you. It looks so pretty, and it's not too strong.

You can find the cassis and the framboise with the cordials at your liquor store. You don't need to buy expensive sparkling wine either.

Hi everybody! There is no hot dinner here tonight, I am in the kitchen all day and need every bit of fridge space so my family must have sandwiches. They like to get of of the line of fire when I have a plan that I can't even articulate, so I'm sure they will be very happy!

So far I have baked a derby pie, a pumpkin pie, Glynis pecan pie, an "almost apple pie" and a chocolate cream pie.

I have a spiced cranberry apple jello salad in the fridge a corn pudding ready for tomorrow and sweet potatoes in teh oven for my gratin. Sausage and apple stuffing is next.

I have everything ready for the apricot filled pumpkin cake but the apricots. Do you think raisins would be okay? I can't face the grocery store for a bag of dried apricots.

I wish everyone a safe and happy Thanksgiving Day!

I haven't posted on this thread in a long time (haven't been cooking much) but last night I made Aunt Martha's Famous Chicken Spaghetti Casserole (p. 167) and it was fabulous!! DH told me at least 3 times how good dinner was. It's pretty easy to make too.

Happy Thanksgiving everyone!!

So, I have to confess. There is something about Thanksgiving that just brings out the crazy cook in me. We had this nice, sensible meal planned: Roasted brined turkey, gravy, stuffing and dressing, mashed potatoes, cranberry sauce, roasted root vegetables, and cauliflower gruyere gratin, with apple pie and pumpkin cheesecake for dessert. There are only going to be eight people eating, so that should be plenty of food, right?

Well, I don't know why, but when I got up this morning, I flew out of bed and started cooking all these extra dishes!! So now, in addition to all of the above, we also have spaghetti squash gratin, creamed spinach with fried shallot crust, glazed onions, and broccoli with lemon zest! AND, when I called my Mom, whose house we are eating at, to confess my cooking largesse, she told me she was doing the SAME THING, and had already prepped green beans with buttered almonds, carrots with orange zest and cumin, and roast asparagus!!! For EIGHT people!! There must be something wrong with us.

At least we all like leftovers! :)

Have a happy holiday, everyone! :flower:

Happy Turkey Day!

We're going to my mom's later. The green bean casserole  is done, but I'm worried about the stuffing. I think my mom told me the wrong amounts of ingredients. I haven't added the bread yet so I'm hoping once everything comes together it will be ok. Right now it's super salty and swimming in butter. I think I will drain some of the butter off before I add the bread. I'm crossing my fingers that it will be edible.

Hi all!! Did everyone have a good holiday? Ours was great. I overheard the sweetest compliment about me at my ILs. I took some Paula Deen Pumpkin Gooey Butter Cakes with me and offered some to them. My FIL got himself a big serving. He raved about how much he liked it.

Well later I was chatting with my BIL. My FIL was chatting with my husband. I overheard him saying, "That pumpkin Lindsay brought was the best dessert I've ever had." He paused and said, "I'm so glad she's with us." Talk about Lindsay going  That was so sweet!!

Anyway, we are having leftover's from my family's house tonight. No cooking for me. Also, no shopping for me, except for groceries and buying a new cell phone (hubby dropped his in the toilet. Now we have an excuse to go get new ones, LOL!)

liamsaunt, I did the same thing. I started cooking about 7 am and never stopped until 8 pm. It is not Thanksgiving unless the table is completely covered!

Lindsay, what a nice thing for your FIL to say. It is always a nice thing to be accepted and loved in a family you are not born into. You have to love the ones you a born into, but as the MIL of my beloved DDIL, I know the gift of loving a special daughter of my heart.

Our daughter has some medical issues, so it's been a rough 3 months. Things are finally starting to settle down. I had to have my gallbladder removed about a month after I had her, but now I feel great! Thank you for asking.

My DD had gall bladder problems after her DD was born and finally had to have it removed also. I made homemade turkey cranberry ravioli with leftover turkey and leftover cranberry sauce. We ate it with the leftover veggies on the side. The ravioli was heavenly!! It is all gone. Well, we had a "chocolate dessert party" tonight with about ten other families (and boy, was that fun!) so I knew I wanted a light and nutritious meal to kind of balance it. We had Easy Mexican Eggplant served with mashed root vegetables (potatoes, sweet potatoes and carrots) and a mixed greens salad.

Easy Mexican Eggplant
1 medium eggplant, peeled and cut into cubes
4 tomatoes, cut into cubes
1 onion, chopped
2 cloves of garlic, minced
1/2 tsp chili powder
1/2 tsp black pepper

Put everything into a skillet, stir well, and simmer for 15 to 20 minutes or until the eggplant is tender but not mushy.

It's also very good over rice but I felt more like having the mashed veggies.

Welcome back Tigerkat, I'll read your report after I post this:

We had indian food again today. I am sick and spicy food sometimes helps with that. My sister was carrying a dish of tikka masala to the table, and she tripped, sending the entire dish all over my parents' floor! Which, by the way, is covered with tan wall to wall carpeting. What a horrible mess! There is no way the stains are coming out. My parents took it well though. My Mom just turned to my Dad and said, "Well dear, we were talking about recarpeting the floors anyway. Looks like we'll just be doing it a little sooner!"

The food was good though.

We have been pigging out since the day before Thanksgiving so we have to be a little better today...I am baking some boneless porkchops, broccoli sauteed like I am going to put it in cavatelli and broccoli and maybe a little rice on the side...

This broccoli is yummy...basically sautee it in EVOO with alot of garlic, crushed red pepper and salt and pepper...if I was making cavatelli and broccoli, I would add chicken broth and about 2 - 3 TBS of butter...great to add some chicken in there too!

I am babbling again!!!!

Thanks Lauren!! Here is the recipe - you can either grill or broil the chicken:

Lemony Garlic Chicken

8 pieces of chicken
1/2 c. olive oil
1/2 c. lemon juice (fresh)
3 tsp. salt
1/2 tsp. pepper
1 tsp. dried oregano
1/2 tsp. paprika
3 cloves garlic, minced (more or less to taste)

Place chicken in a shallow baking dish or large ziplock baggie. Combine remaining ingredients and pour over chicken, toss to coat. Marinate at least one hour (I do it overnight). Grill or broil!! I boil remaining marinade and use as extra sauce.

I'm right there with you. I'm currently under quarantine because I am sick, and the doctor says I 'might' have the flu, or it 'might' be a contagious virus of some other type, or it 'might possibly' be something else. Grr. Did I mention that DH flies to Paris next week and had invited me to join him for the weekend? I can't make plans now because I am probably still going to be sick since they won't give me any antibiotics, even though I can guarantee it is going to turn out to be a bacterial chest infection just like EVERY. OTHER. TIME I am sick. Yes, I am bitter.

Anyway. Last night I made pizza because I did not really feel like cooking.

Tonight I am making chicken breasts, pounded thin and rolled up with some sun dried tomatoes, goat cheese, and basil, then breaded and seared. For sides I am making garlic spinach and crushed potatoes.

I'm right there with you. I'm currently under quarantine because I am sick, and the doctor says I 'might' have the flu,

You are amazing! When I am sick there is no cooking worth mentioning. Come to think of it, I haven't cooked anything worth mentioning since Thanksgiving. I hope that you feel better.

OceanAnnie: I hope that you are feeling better, also.

(snip) ---they won't give me any antibiotics, even though I can guarantee it is going to turn out to be a bacterial chest infection just like EVERY. OTHER. TIME I am sick. Yes, I am bitter.

I'd be upset too!! Paris can't wait! Maybe it's time to go to one of those urgent care places. They might give you some antibx.. You never know. :confused3

Anyway, hope you feel better soon, Liamsaunt. And thank you everyone for the well wishes. :)

Last night I took the pasta I was going to make, and ended up making a pretty tasty baked pasta dish. Browned up some Hot Italian sausage, added a jar of marinara sauce. Combined that with hot, slightly undercooked pasta. put it in a casserole dish. Topped with pepperoni, pizza cheese and parmesan. Baked at 350 for 15 min. Was really yummy--even picky DD ate a plateful!

Tonight I think will be pizza. Tomorrow is shopping day so our cupboards are practically bare!

tonight is a quick grilled chicken salad - I grilled too much chicken on Sunday.

needs to be quick - we are going over to help my grandfather and clean house and do some laundry since my grandmother is in the hospital.

He is 82 years old and has never done a thing for himself :confused3

- needless to say my home works a little different than theirs

Tonight is Chicken Picatta, angel hair pasta with garlic butter, and baby peas. I don't know why, but the chicken cutlets I get from my Publix are always tough. I'm gonna have to pound them to make them more tender. DH won't be happy with me 'cuz it'll probably wake him up. He works nights and doesn't get up until dinner is on the table.

Well, DS requested Pizza Meatloaf Muffins, so I've got the ground beef defrosting. We'll also have some green beans and maybe dinner rolls to round out the meal. It's nothing fancy, but I know the kids will eat well. They love the meatloaf muffins. I love that they cook quickly!

I hope all the sickies start feeling better soon! This is no time of the year to be ill. Especially when Paris is on the line. One word of caution about urgent care clinics, however. 2 weeks ago, DH got really ill; sore throat, bad cough, etc. He didn't want to wait a couple of hours to see our regular dr. so he went to urgent care. The doctor there gave him an antibiotic just as a precaution, but told DH that there was no way he had bronchitis! Skip ahead 2 weeks, and DH is still not ANY better! I call our dr. (he's also our neighbor) and he came over and took a look at DH. Yup, you guessed it, BRONCHITIS! Just like DH had tried to tell the urgent care dr. (He's had bronchitis every year since he was 11, he knows what it feels like!!!) The antibiotic the urgent care dr. gave him would work from the neck up, but nothing in the chest. Regular dr. gave him heavy duty antibiotics, since the bronchitis was still there, and so was pneumonia!

Lesson? Don't let your DH decide which dr. to see just to save a little time on his day off!

Oh, and I forgot to add my dinner for tonight.

Last night I made my Bertolli knock off of their Italian Sausage & Rigatoni: Sweet and spicy Italian Sausage, diced tomatoes, roasted red and yellow peppers in a spicy tomato sauce.

It was soooo yummy, and I made a ton of it so we (Hubby and me) get to eat it all week. Yea for yummy left overs!! :cool1:

Thanks everyone for your kind words. I am sure I will be better soon. Glynis, your husband sounds just like me! I have a history of bronchitis and/or pneumonia since childhood--almost every year! That's why I am bitter. I hate the doctor I saw Monday anyway, and am going back tomorrow to see someone else.

I'm still deciding on what to make for dinner tonight, but wanted to post the recipe for the crispy potatoes I made last night. They were really good, and they are crisp enough that you could make a bunch of them and put little toppings on them and serve them as an hors d'oeuvre at a party!

Crispy Potatoes

About 20 small (1 1/2-2 inches across) red or white round potatoes, scrubbed
About 1/4 cup olive oil
salt

Preheat the oven to 450 degrees.

Place the potatoes, unpeeled, into a pan in one layer and cover with an inch of water. Add 1 tsp. salt to the pan and cook at a low boil until just tender. Keep checking them with a skewer for doneness, because depending on the size of your potatoes it could take anywhere from 15-30 minutes.

When cooked, set the potatoes on a clean dishtowel and allow to cool for a few minutes. Then, using a second dishtowel, lightly crush each potato until it is flattened into a disk about 1/2 inch thick. Using a spatula, transfer potatoes to a baking sheet lined with non-stick aluminum foil.

Pour on the olive oil, using just enough to coat each potato, and then lift each potato with the spatula so that some oil gets underneath. Sprinkle with salt and then roast in the oven approx. 15 minutes per side, until crispy brown on both sides. Drain on paper towels, sprinkle with salt to taste, and serve hot.

Can someone help me with how to freeze green bell peppers? TIA!!!When I freeze green bell peppers, I dice them (that's how I usually use them) then throw them in a freezer bag and press out as much air as possible. They work fine for cooking, but I probably wouldn't use them raw after they've been frozen.

I just found this at WholeFoods.com
Bell peppers freeze very well, with no blanching required. Simply wash well, cut off the top and remove the ribs, core and seeds. Slice or chop to desired size, freeze in a single layer on a cookie sheet and transfer to an appropriate freezer container, eliminating as much air as possible from the container to minimize freezer burn. Frozen vegetables should be used within eight months.

I don't know much about freezing them whole, but I usually grind them up in my food processor and then use them for making salsa later. I would think you could freeze them just fine. Just washing them, and then packing them in freezer bags. Hopefully someone will have more information than I do.

OK, I decided on dinner. I am really bored stuck at home and so am trying something new. I'm dragging my never-used tagine out of storage and making Morrocan food. I'm making hbeezet bel carwiya (translation: whole wheat rolls with caraway), tagine b'beid (translation: egg tagine with olives, onions, and cilantro), and hezzu m'chermel (caramelized carrots with sweet paprika). This is uncharted territory for me, so I'll be sure to post back tomorrow and let you all know how it went!

How did you make them?? :)

I made a huge batch and froze some

1# lean ground beef
1# ground pork (I used sausage)
1# ground veal

6 pieces of white bread torn into small pieces
2/3 cup milk
3 eggs (beaten)

Basil
Oregano
dried parsley
garlic powder
onion powder
salt and pepper

I mixed it all together with my big kitchenaid mixer.

As with most everything I make I just put spices in without measuring
I baked these on my broiler pan in the oven until cooked through.

Don't know tonight--still have to go to the grocery store today. Probably some comfort food--it's supposed to rain cats and dogs here today and then get COLD!!! Luckily we're missing the freezing rain, sleet, snow stuff! I think we've angered the weather gods here--70s yesterday and then by tonight it will be in the 20s! All that said, maybe some baked mac and cheese, but meatloaf and mashed taters sounds good as well!

Well I back to cooking real meals today. DH was home from work early and was looking forward to dinner, and was a little disappointed to see leftovers complete with mozzerella sticks and jarred sauce. I felt kind of bad because he was surprising me with tickets to the Hartford Symphony Christmas show and Andy Williams Christmas show. (I know we're odd but we are nostalgic for the shows when we were kids. He had called DD and asked her to get the tickets and told her to get enough so that anyone who wanted to join us could come. She bought two.......)

So.....tonite will be Paulas pork chops for SIL birthday dinner, a veggie, mashed potatoes and gravy. DD is picking up a cake to make sure he gets his plain white no goop inside nothin on top plain vanilla frosted boring cake.

Another freezing day here! We'll be lucky if it gets up to the 20's! On top of that, it's a run around day for me, so I'm doing Italian Chicken in the crock pot. The twins have preschool, DD has a violin recital this afternoon, and a Reflections program this evening. I need something that will cook itself without me watching over it! It will be nice to come in from the cold to a dinner all ready to eat. I'll throw together a green salad this afternoon, and it will be waiting for us, too.

I'm not totally decided on what I am makig tonight, but I wanted to pop in and let everyone know that the Morroccan food was a big hit! The tagine was the best dish--I found some harissa in my condiment cabinet and that made it nice and spicy. The bread was a little tough--I am not a good baker, at all--but we ate it anyway, and the carrots were a nice light side to the tagine.

Glynis, I see on the news the weather that you are experiencing and I hope that it warms up soon!

Dinner was so good tonight, I guess I better get back to cooking again!
I also made a turkey vegatable soup for us and to send to my Mom and my Aunt as well as a beef stew in the crock pot, my Mother's request. I used the famous pot roast recipe. I ran out of Italien dressing mix so I used a copycat recipe, it was good.
