Well, I just came home from shopping for a bra for the wedding...I can't find one that I like!!! :mad: :mad: :mad: I also found out that I've been stuffin the girls in bras that are way too small...:confused: . I have not idea what I am going to do...I tried Macys and Lord and Taylor...I guess I need to try Kohls...I think we have a Boscovs near and Vic's Secret. I hate this crap...no wonder I never get dressed up! :rolleyes:

Lauren, thank you for the welcome back. I am feeling your pain on the bra issue dear. I have never owned a comfortable or well-fitting bra in my life. On the bright side, on your wedding day, you will be so busy, you won't notice the wire suffocating you. :rotfl:

Now, for all you non-bakers out there, I'm going to post a couple of recipes for bar cookies that really are fool-proof. However, they taste so good people will think you spent hours slaving over them. The really nice thing is that you really don't dirty anything but one 9 X 13 baking pan! Give them a try and see if you don't change your mind about baking. Keep in mind, I'm into simple baking recipes. Here you go:

Actually I have a friend that works for the liquor distributor that handles Rosa. When I saw him out yesterday I asked him if he could find a place that carries it that would give me a case discount or would the wine VP be at the Hamster Derby on Friday that I could ask. He said screw that, I'll bring you a case Friday when we come down! You can just pay me.

So, in the end I'll have a case, delivered to my doorstep!:lmao: :lmao:

Sheryl- glad to hear that dh is doing a bit better and getting to work, I bet he will be sore and tired when he gets home this evening!! You are right though, it could be worse he could have a "cold" with it too!! ugh;)

Lauren- relax you have so much of it done with now it is just the little things and then you get to watch it all come together and have your beautiful day!!
Now the bra thing--- I hate bra shopping, when I find one that fits right I buy a lot of them!! I got measured last year, and the size they told me I was didn't fit me at all, didn't matter the style. So now I just try a bunch and whatever size it is if it fits and is comfortable I go with it!

Gretchen- Glad to see you back, sorry things have been so difficult. My grandmothers aides are like family as well. One we have had with us for over 10 years she was my grandfathers before he passed then when my grandmother needed help she came back to us!
Hope the recipe comes out good as I would love to have it as well!!

Glynis-- I have no clue where you can get a lobster, and I have never set foot in a red lobster ever. I do know that sometimes they have rock lobsters which are a totally different thing. If it is maine lobster at wal-mart I can tell you how to cook it yourself if you want though, lol! If not we will just have to do a big ZAAAAAG and get you in on the road trip,lol! Either that or maybe we will all end up there, for an authentic glynis pot roast meal!!!

Glynis, Thanks so much for the non-baker recipes!:cool1: That Tres Leche Cake I did for DD's b-day is the FIRST time I've baked something that actually came out correctly, so I could really use these! My 2 cents on Red Lobster is if you order a Whole Maine Lobster it would be better, but probably super expensive. And I'll bet that any of us not living on the Upper East Coast have any idea what Lobster should really taste like, right Wendy??!

Wendy, You have us Nola girls pegged, but don't worry, we always plan ahead for a road trip! A case for the road, a case for our Lobster Cooking Friends & another case just in CASE!!!!

Lauren, I hate bra shopping too! I bought one of those Strapless things that go down to your waist for my DD's Wedding. Every time I sat down it slid up pushing the girls way too high!!!:lmao: So I ended on my feet most of the night! But boy standing up straight, I sure looked good!:lmao:

Don't give up. My DD had to get fitted in a shop that just fitted and sold undergarments. She needed one that fit right for her wedding, and found out that she was also buying the wrong size. Call a bridal shop in your area and ask for a suggestion.

Hi everyone. I'm sorry I haven't posted in quite a while, but I had a lot going on. Work was absolutely insane and I was having some staffing problems with my daughter's therapists. Because those girls feel like family more than employees, I tend to take it hard when something goes wrong. I think we are working everything out, and my job has calmed down, so I should be back regularly.




Want to split a case of Rosa and use it as bait?????????

I am multi quote challenged but I think I am getting the hang of it. I have so much I want to say but lose most of it. That may be a good thing because I am chatty

Nancy - I think I'm going to try your Prosciutto Pork Roast next weekend. What did you serve with it? I'm stumped.:confused3

Kathy, I usually serve it with mashed potatoes and I use the drippings to make a gravy. It is good with a green veggie like green beans or sugar snap peas. Garden peas with some mint would be good as well. My bunch like corn so I add that sometimes too. I bet that a nice green and yellow squash medley would go very well because both taste so good with Italian seasonings. A mixed green salad is a must with this, I think.

I have a recipe for some Parmesan crusted potatoes that I served with it. They were so good, and Ill post the recipe if you want, but I prefer the mashed. I like the roasted potatoes with steak.

His MOS was Transportation assigned to driving a HumVee :sad1:. His job has changed and he is now driving some 70 ton contraption directly behind a commander in the field. There are four of these things always assigned as protection. Her oldest explained that nothing is safe, but this job is way safer because this commander is always protected. I was crying all of the time before, and now I can't stop crying again :confused3.

I have a feeling that my Mom has had a hand in this as well as one that may take place his brother. As soon as we know if Chris gets this assignment I'll post, but I am afraid I'll jinx it if I speak too soon. If you can spare a prayer, say one for Chris. And maybe my Mom can take care of the rest.

I kinda like this bribe stuff, keep the offers coming. But then again I have to keep my bud(Lauren) involved..... all bribes are welcomed!!:lmao:

Chocolate Chip Cheesecake Bars
Yield: 16 bars

1 pkg. (8 oz.) cream cheese, softened
1/2 C. sugar
1 egg
1/2 C. coconut, if desired
1 roll refrigerated chocolate chip cookie dough

Heat oven to 350 degrees. In small bowl, beat cream cheese, sugar and egg until smooth. Stir in coconut.

In ungreased 9- or 8-inch square pan, break up half of cookie dough. With floured fingers, press dough evenly in pan. Spread cream cheese mixture over dough. Crumble and sprinkle remaining half of dough over cream cheese mixture.

Bake 35 to 40 minutes or until golden brown and firm to the touch. Cool 30 minutes. Refrigerate at least 2 hours or until chilled. Cut into 4 rows by 4 rows. Store in refrigerator.


Glynis, thank you, thank you, thank you! I used to know someone who made these every year, but I never asked for the recipe. I've tried to replicate it with no success. I never thought to try refrigerated cookie dough. Looks like I have another entry to add to my annual Christmas cookie assortment. (Of course, I may have to test it out before then ;) )


So, the only restaurant I can find in our area is Red Lobster. Am I going to get a good lobster experience there?

Please don't make this be your first lobster experience. I know way too many people who have gotten sick after eating at Red Lobster, and believe me, once you hurl lobster, you won't be eating it again anytime soon. Plus, they usually don't even serve New England lobsters. Save yourself (and your money) for something better!

Oh, and just to weigh in on the Idol discussion...I like both Jordin and Blake, but I am rooting for Blake. He might not have the strongest voice in the competition, but he has had the most memorable performances.

I just found out this week that my husband is deploying to Iraq again late fall...missing Christmas AGAIN. This will make it three out of the last four. I guess I should be used to it by now.

Thanks to everyone for all the nice comments about Caili. She is my little princess and I am going to be crying my eyes out when I put her on the bus for Kindergarten in the fall. I might need some good chocolate recipes...and maybe some Rosa. :)

You would all be welcome here! Although, if you made the trek clear out to Utah, I would have my husband do an authentic pioneer Dutch Oven meal: chicken, potatoes, cobbler, and sour dough biscuits! Yummo!!!!! I'd even take you up into our mountains for some beautiful scenery while you ate.

I haven't been posting lately because I've been quite lazy lately about cooking. Once the weather gets nice I grill almost every night and how many times can I post that I'm bbq'ing some different form of meat. ;)

However, on Sunday I made crepes and filled them with homemade caramel, sweet cream cheese, and pecans. OMG they were TDF. Just figured I'd pass the idea along.

We have taught our children to pray for our military night and morning. I don't think they get enough thanks and support.

Grilling is good. I do it as much as I can. Those crepes sound wonderful and low in calories ;) .

You definitely should test the recipe out a few times. Gotta perfect it, right?

It's looking like maybe I'll put off my lobster experience until I get to a place where there's a better offering! Keep tantalizing me with talk of lobster, so I don't chicken out!

Red Lobster is great for their cheddar bay biscuits, caesar salad and coconut shrimp, but I have to agree that it is not the best place for lobster itself. The best lobster is served in hole in the wall places that serve mainly fresh, simple seafood in Maine and Boston, IMO.

I have been babysitting - my brother is redoing his bathroom, broke his toe and when my SIL took him to the hospital, she fell in the parking lot and sprained her ankle. So, no cooking lately. Tomorrow should be something better, hopefully. I'm looking for ideas now.

Prayers said for our military. I really wish they'd be home.

I think Apollo will win, but I love Joey Fatone. I lived thru the N'Sync days with DS and he's my fave!

They were all really great tonight! I think you're right, though. I'm pretty sure Apolo will win.

He does a lot of training here in Utah. A speed skating oval was built for the Olympics, and it holds the record as the fastest ice in the world, so Apolo comes here quite a lot during the summer to train. Interestingly, his partner graduated from Alta High School here in Salt Lake City last year. Cool, huh?

I love the biscuits at Red Lobster, but based on what I'm hearing here, I think I'll push for a different restaurant for our anniversary, and then try the lobster when I can get some good Maine critters!

Tonight I am making spaghetti and meatballs with sweet Italian Sausage in the sauce, salad, and bread. Hey I have a question. I LOOOOOOOOVE sun-dried tomatoes. Not the ones packed in oil, but the actual dry ones you find in resealable pouches. How do you think my sauce would taste if I chopped up a few and added it? Good, bad, just try and see what happens?

Sundried tomatoes are really good in with pot roast by the way.

Sundried tomatoes are really good in with pot roast by the way.

It would sweeten the sauce? Hmmmm. I always thought the sun-dried tomatoes gave a dish more of a salty bite.

Preheat oven to 350* Melt butter in 9 x 13 inch pan.
Mix flour and parmesan cheese in large plastic bag.
Shake a few potato cubes in bag at a time and put into buttered pan.
When done shaking all potatoes and placing them in the pan, Bake for 1/2 hour.
With spatula turn potatoes over and bake another 1/2 hour.Kathy, this is from Recipezaar. I use freshly grated cheese. You can add garlic powder or black pepper if you want, but the roast has so much going on that I leave them the way the recipe states.

Good Morning-

Tonight is Karate night and ds is finally off of crutches and able to participate somewhat in class.
Today I have a hectic day, and then a busy evening with karate so dinner is going to be the tried and true, simple and easy, Hamb Gravy, I will serve it with rice for ds and I, and potato for dh, and corn.(this way dh can mix it like a shepards pie)

I have been babysitting - my brother is redoing his bathroom, broke his toe and when my SIL took him to the hospital, she fell in the parking lot and sprained her ankle. So, no cooking lately. Tomorrow should be something better, hopefully. I'm looking for ideas now.

Prayers said for our military. I really wish they'd be home.

Your poor DB and DSIL! It is a good thing that you can help, I don't know how they could manage with two out of commission.

I hope this whole thing gets resolved soon.

I just found out this week that my husband is deploying to Iraq again late fall...missing Christmas AGAIN. This will make it three out of the last four. I guess I should be used to it by now.

Thanks to everyone for all the nice comments about Caili. She is my little princess and I am going to be crying my eyes out when I put her on the bus for Kindergarten in the fall. I might need some good chocolate recipes...and maybe some Rosa. :)

How do you cope? I admire the strength that a Military spouse must have. To maintain home and family while half of your heart is overseas is amazing to me. You know that we will be there for you, and while I pray for our men and women serving, when I know names, I add them. Your DH will be right there with my two favorite Marines.

Kindergarten is such a fun year! They are growing and learning so much, but they are still "babies". Chocolate will help the separation, I promise you. I remember picking Chris up on my Monday and he was so small, blond curly hair and smiling at me. It was one of the last times that he was not to "manly" to hold my hand in front of the guys.

Lindsay- Sundried tomatoes are concentrated, so like a dried fruit, the sugars are intensified.

Last night I went to my nieces last home game, so dinner was left over Mexican for my DD and DDIL, hot dogs for the rest of us. Just hot dogs and buns.

I have no idea what I am cooking tonight. I'll have to see what looks good at the store.

Tonight I am making spaghetti and meatballs with sweet Italian Sausage in the sauce, salad, and bread. Hey I have a question. I LOOOOOOOOVE sun-dried tomatoes. Not the ones packed in oil, but the actual dry ones you find in resealable pouches. How do you think my sauce would taste if I chopped up a few and added it? Good, bad, just try and see what happens?

Oh, my goodness, your sauce will be so wonderful!!! I dry my own cherry tomatoes every summer, and during the winter I add them to my pasta sauce. Sometimes I will reconstitute them in water beforehand, and sometimes I just let them simmer in the sauce. They are really good either way. You will get a really concentrated flavor from them! So, yummy!

DH just planted my cherry tomatoes last weekend! I can't wait to start harvesting! He trains the tomatoes to climb a string support, and we get tons more tomatoes that way! They are so sweet, it's like eating candy!!! I'll have to remember to take a picture and post so you can all see the "salsa garden" DH plants me every year!!

hi ya'll!

All quiet here till the weekend when all heck breaks loose! I convinced Rick not to run the race this year but we're still fundraising. My BFF Joey is running so we're "managing" him. Yesterday I got to go to Payless with Joey looking for 3 inch heels in the largest size we could:lmao: I loved it! I've never seen him so embarassed- when faced with trying on said heels he made me go to the end of the aisle and block it so no one could see!:rotfl: :rotfl: :rotfl:

I figure if a man has to dress up like a woman just once (and this is for charity, mind you) they'll never ask you to dress up again!:rotfl2:

Last night was pork& veggie stir fry in oyster sauce. Veggies were tri color peppers, onion, mushrooms, diced sweet potatoes.

Tonight is leftover unseasoned pork and veggies done into quesedillas. I'm debating on using taco mix to season. Not sure yet.

Hi all,

I wound up finding a bra...of all places Walmart. :)

We are just going to have something quick tonight. Probably grilled keilbasa and sauerkraut on the side...Andrew has a game so whatever it will be, it will be quick.

Can I ask for some prayers too.

First for my Mom. Some of you know, she is not in the best of health...she has a cyst on the brain, masses in her lungs, several aortic aneurysms (they will not operate since she is high risk) and now today she went for an endoscopy and they found 5 ulcers and I am not sure what else (waiting for sis to call back). Everything she eats comes right out of her...for months now. It is very upsetting...she has basically given up too since my Dad died 2 years ago. All she does all day is smoke and read...and has 1 scotch and water a day...see where I get it from!!! :)

The second may sound silly to you all. We have alot of feral cats in the area. Before we moved here the last owners and neighbors were feeding them. Several have been fixed, some have not. We started feeding them too...they tend to keep the mice away. Well, one, you could say, uses our property as home base. His name is Seymour to us...aka Tommy Boy. He is not fixed and probably the Dad to all the others...you cannot get near him to trap, neuter, release. Well, the other day, he was limping pretty bad. We didn't think it was that bad but yesterday when he heard me, he hobbled up the hill...he needed and I think wanted help. He paw looks awful...swollen and bleeding. We were able to trap him. He stayed in the garage last night. He is now at our vet and we are hoping they can help him.

OK, I vented. Hopefully I will hear from my sister soon. Thanks guys...I know you'll keep us in your thought...:hug: :hug: :hug:

Good news. Tom just called. Sey has a terrible wound on his paw that the vet cleaned and will prescribe heavy doses of antibiotic. She seems to think he will be OK. She is going to clean him up, he looks like a dirt bag now, and then fix him...no more hump. We can pick him up tomorrow. He needs to be on meds for a week so I better get the garage in order and a litter box. I am not going to want to release him. He is also disease free.

Lauren, have you tried the limoncello with cream (non fat half & half works too), 2/3 limocello to 1/3 cream it is totally addictive!!!

Lauren, I'll certainly remember your Mom (and you) in my prayers. I especially hate to hear that she has given up. That happens so many times when an older person loses a beloved spouse and it is so sad to watch. Hang in there.

Glad to know your kitty is going to be fine. I completely understand. We don't have a cat because DD is highly allergic, but we feed four who appear to have been dumped in our area. They live in the woods behind our house and like yours, keep the mice and snakes away. One of the four is finally getting close enough to touch.

Nancy - prayers for Chris and the rest of your family. I know a "safer" assignment would do a lot for your peace of mind. Liamandcalli - prayers for your husband and for your family. As others have said, I don't know how you handle such a sacrifice, but God Bless You.

Glynis - I tried the white chocolate raspberry bars last night. Well, actually, only DH tried them because the kids were in bed by the time they cooled and were ready. He loved them with and without the vanilla ice cream he put on top.

Last night's dinner was a mixed success. The kids loved it, DH liked it and I thought it was so-so. I'll post the recipe in the next post.

Tonight's dinner is a no-bake tamale pie with spanish rice and black beans.

This is a recipe I picked up in Publix -

Sloppy Joe Rotini
Ingredients
1 pound lean ground beef, 7% fat (or ground turkey)
2 teaspoons minced garlic
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup water
2 teaspoons beef base
1 (15.5-ounce) can Sloppy Joe sauce
1 cup whole kernel corn (drained)
2 cups tri-color rotini

Steps

1. Preheat large saucepan on medium-high 2–3 minutes. Combine ground beef, garlic, salt, and pepper in saucepan. Brown 5–7 minutes until meat is brown and no pink remains. Stir frequently and break up meat as it cooks.
2. Stir in remaining ingredients. Cover and bring to boil.
3. Reduce to medium and simmer 8–10 minutes, stirring occasionally, or until pasta is tender. Serve.

Cane rum from the New Orleans Rum Co. Don't know if they've reopened after the Big K or not. They were 2800 something on Frenchmen. We got this at a silent auction right before the storm. It's mighty powerful stuff!

Thanks to everyone for the thoughts and prayers for DH. The kids and I are very lucky in that we get lots of support from my family and my in-laws. I am sure there are many other military families who are not as fortunate. I also feel like DH has the much worse end of the bargain. I get to go to the ballet recitals, the baseball games, the skating shows, and if I'm having a bad day, I can get extra hugs from my kids. DH has missed so much -- including three trips to Disney :scared1: -- I could never make that sacrifice.

Lauren, I hope you hear some better news about your mom.

Nancy, thanks for the parmesan potatoes recipe. Those sound great!

As for WFD here tonight, I found out a couple hours ago that Liam has a baseball practice, so we're just having hotdogs and hamburgers. I am making eggplant sticks though too.

Hi all,

I wound up finding a bra...of all places Walmart. :)

We are just going to have something quick tonight. Probably grilled keilbasa and sauerkraut on the side...Andrew has a game so whatever it will be, it will be quick.

Can I ask for some prayers too.

First for my Mom. Some of you know, she is not in the best of health...she has a cyst on the brain, masses in her lungs, several aortic aneurysms (they will not operate since she is high risk) and now today she went for an endoscopy and they found 5 ulcers and I am not sure what else (waiting for sis to call back). Everything she eats comes right out of her...for months now. It is very upsetting...she has basically given up too since my Dad died 2 years ago. All she does all day is smoke and read...and has 1 scotch and water a day...see where I get it from!!! :)

The second may sound silly to you all. We have alot of feral cats in the area. Before we moved here the last owners and neighbors were feeding them. Several have been fixed, some have not. We started feeding them too...they tend to keep the mice away. Well, one, you could say, uses our property as home base. His name is Seymour to us...aka Tommy Boy. He is not fixed and probably the Dad to all the others...you cannot get near him to trap, neuter, release. Well, the other day, he was limping pretty bad. We didn't think it was that bad but yesterday when he heard me, he hobbled up the hill...he needed and I think wanted help. He paw looks awful...swollen and bleeding. We were able to trap him. He stayed in the garage last night. He is now at our vet and we are hoping they can help him.

OK, I vented. Hopefully I will hear from my sister soon. Thanks guys...I know you'll keep us in your thought...:hug: :hug: :hug:

All of us pitch in and get Glynis a ticket from Salt Lake to Lauren's or Nancy's. We'll drive up pick everyone up and break in Maine for Lobster and steamers, before heading back south.

Everyone pack local treats and we'll taste around the US! Glynis....can I request fry sauce from Mcd's? They don't have that here, but I loved it when we were out there! Making it from scratch just isn't the same.

You bet! That is one thing that Utah does well: fry sauce. There's a Utah entrepeneur who bottles his own under the name, "Some Dude's Fry Sauce." It's really good. I'll just pick you up a case of that!

Forgive me for asking, but how are your 2 indoor cats hypoallergenic? DH is allergic to cats, but we have a kitty that he's gotten used to. It seems like after he lives with a cat for a while it doesn't bother him anymore. However, when we visit other people with cats he has a hard time breathing and has to use his inhaler. I was just wondering what you meant by "hypoallergenic".
I hope Seymore heals quickly. That's so great that you're taking care of him.

Oh Lauren, I am so sorry. I did not know that your Mom was not well and will certainly say prayers for her and for your family as well. I know how difficult it is to have this kind of role reversal with a beloved parent, and I know that when you have such a wonderful relationship it seems to be even more stressful.

Prayers for your Seymour as well. Please let us know how he is.

How to explain??? It's kind of a mixture of mayonnaise and ketchup. Totally a Utah invention. It's really good on fries, because it's just not as sweet as ketchup.

You make it with polenta and not only does my small town grocery store not carry it, no one there had ever heard of it. You should have seen me trying to explain what it was. Heck, they even had me spell it at one point. Luckily for me I work in a larger area, so I picked up some at Publix today on my lunch hour.

I'm back. I stopped at the store and picked up some steak and some boneless pork chops to marinate and toss on the grill. Roasted potatoes with garlic and olive oil, and some kind of veggie.

I am totally fried today. I went with DD to the allergist and it was a disaster. Kady is generally well behaved but today she was not. The Dr had no patience nor people skills, so by the time he got through DD was frazzled....Kady was lucky to be still alive.

He did skin tests...no life threatening allergies, but after all of that he wants to eliminate milk, eggs, wheat and soy from her diet. Yep.....meals are gonna be a picnic in this house.

So we decided we detest the Dr but are going to try this, Risa just hated him, but I'm wondering if when the NOLA's head our way....maybe we can find an old freezer....it does not need to work, I'm not storing this package in my house

It does make the chicken more moist & juicy. I think liamsaunt told me how - 3 Tbsp salt rub into chicken, wrap in saran wrap and refrigerate 24 hrs.

The dish sounds good, let me know how it comes out. Polenta is really just yellow corn meal, you could use a courser ground corn meal or yellow grits (if available) if you can't get the polenta.

Nancy, So sorry the Dr is a Jerk! I don't know why but every allergist I've seen also had zero people skillls. That on top of that nasty scratch test sure makes for a horrible test for Kady. :hug: for her!

I really hope they were able to give y'all some advice for her diet! To take all of that out of her diet isn't going to be easy. Milk's substitute is usually soy, so what are you going to use to replace the milk? Plus take out the eggs & wheat! I really feel for y'all right now. Thank you all for the well wishes. The doctor is waiting on the results for some of mom's other tests so the ulcers are all we know for now. She is never one to complain but recently she is. Thank you all again.

No need for forgiveness Sandy...my inside cats are Russian Siberians...they are supposed to be hypo allergenic...DF takes so many allergy meds so I am not sure if its the breed or the scripts!!! My bro who has severe allergies to cats, never has a problem here and I tend to lack in the vacuuming dept...thank God for the Roomba!!!! :)

Sheryl- it's funny that you say that they are all jerks....my sister works at Children's in Hartford and she told Marisa to avoid their allergy department....she said that they were jerks.

Risa is going to talk to her own pediatrician before she starts this thing. It is a drastic change, and he may not want to go that route. The allergist basically trashed the GI Dr and the Pedi, but I honestly think that they have had Kady's best interest in mind. They were balancing her weight issue and her reflux with everything else. He may allow it, but Marisa won't start anything without his guidance. I agree with her. I'll keep you all posted :thumbsup2

You can do a dry brine...the 3 tbsp salt on outside of chicken and stick in fridge covered in saran wrap...or you can do a wet brine and stick the chicken in a pot of salted water overnight. DSis likes the dry brine because it makes the skin really crispy. I like the wet brine because I can usually still make gravy from the pan drippings. With the dry brine, the drippings are WAY too salty. Either way, make sure you thoroughly rinse the chicken once you remove it from the brine.

Is she going back in six months, or does she need to do this for the whole year?

Those scratch tests aren't always right. The most accurate way to test for food allergies is to take a blood sample and check for -- I forget what they are called, but it is sort of like an antibody, but they react to normal things that aren't harmful -- I think it is called a RADZ or RATZ test.

When I was a teenager, I had a scratch test and they said I was really allergic to chocolate. Since I never had any kind of reaction to chocolate, I kept eating Reeses for breakfast and I survived college on M&Ms and hot fudge sundaes. I'm still here...and still eating chocolate (although not quite as often) ;)

Allergists aren't always right. Although, I have to say, the one Liam saw was very nice, so they aren't all jerks either.

Okay, maybe not all allergists are jerks, but this one sounds like it. Liam's allergist was very clear about how long to stay away from foods, and when he should return for more testing.

I soaked it for about an hour, BUT I forgot to wash it off before putting it on the can!!:scared1: I didn't realize it until I saw your post & the chicken was already on the grill. I'm getting ready to go baste it with a sweet baste of lemonade,limocello & rosemary sauce. We'll see if I can counteract the salt!

Nancy, :thumbsup2 That is definitely the way to go. Specialists tend to only look at that specific issue & disregard "the whole patient". And if she really is allergic to all of those foods, she will need her pedi. help to work it all out!

Ya'll might like this recipe that is in the current issue of New Orleans Magazine:

Drunken Chicken
(aka beer-can chicken)

1 chicken, whole
Creole seasoning
3 ounces beer
1 teaspoon liquid crab boil
1 teaspoon liquid smoke

Clean chicken and pat dry. Sprinkle inside and out with Creole seasoning.
Light a charcoal grill and bring temperature to hot.

Meanwhile, pour a can of beer into a measuring cup. Measure 3 ounces and pour it back into the can. Add crab boil and liquid smoke.

When fire is ready, place chicken on top of beer can so that the chicken is sitting up with legs just touching the grill with the can inside the cavity of the chicken. Cover grill and cook for one hour and 20 minutes. Do not open grill during cooking. The result should be a very moist chicken. Several chickens can be cooked like this at one time – just line them in a row over the fire.

Note: A handful of wet hickory chips can be placed over the coals after they’re hot to import a more smoky taste.

I'm getting ready to go baste it with a sweet baste of lemonade,limocello & rosemary sauce. We'll see if I can counteract the salt!I never knew you were supposed to rinse the chicken after you brined it. I don't think my brine is that salty though because I've never had a problem with it being too salty tasting. I usually let it soak for 6 to 8 hours in a wet brine. Let us know how it turns out.

Sorry, I couldn't resist posting another one. This one is for my NOLA pals! I had these last week on my trip home. The recipe is also from the current issue of NOLA Mag:

Drago's Chargrilled Oysters
4 dozen oysters
2 sticks butter
2 cloves garlic, crushed
Juice of 1 lemon
1 tablespoon Worcestershire sauce
1/2 teaspoon Tabasco®
Black pepper to taste
Parmesan cheese, grated

Shuck oysters, cutting each loose from its shell. Place oyster in one shell and discard the other. Choose the deepest shell if it sits straight, or the one that sits the straightest. Leave some of the oyster water in the shell that you’re using.

In a saucepan, melt butter and sauté garlic briefly. Add lemon juice, Worcestershire sauce, Tabasco® and pepper and stir together.

Light a charcoal fire to its hottest temperature – a gas grill can also be used. Place a dozen oysters in their shells on the grill and immediately spoon 1 tablespoon of sauce mixture over each oyster. Sprinkle with Parmesan cheese. Close the grill and cook until oysters curl. Serve immediately with cocktail forks. Repeat. If grill is large, several dozen can be done at one time.

Note: Chargrilled oysters are great to pass as hors d’oeuvres as soon as they come off the grill.

After years of getting allergy shots my allergeries have changed periodically you need to be retested. That blood test is RAST, make sure your insurance company doesn't have a problem with it before you do it. The test is a couple hundred dollars.

The first time I brined my chicken I didn't rinse either and it was fine. Now I remember just in case. I use 1/4c salt 1/4c sugar and 8c water and put in a good zip lock bag in a bowl in case it leaks. Let sit in refrig for at least 3 hours or overnight rinse and cook however. Nancy, So sorry the Dr is a Jerk! I don't know why but every allergist I've seen also had zero people skillls. That on top of that nasty scratch test sure makes for a horrible test for Kady. :hug: for her!

I really hope they were able to give y'all some advice for her diet! To take all of that out of her diet isn't going to be easy. Milk's substitute is usually soy, so what are you going to use to replace the milk? Plus take out the eggs & wheat! I really feel for y'all right now. I have a neighbor who's kids are all allergic to dairy and soy. They have to use rice milk.

We never did find out. I asked how long before we could reintroduce one of the ingredients and he said "You have not even started the diet and you want to start adding." :scared1::scared1::scared1: No, I just have never experienced any kind of elimination diet this strict and was looking for help????????

Marisa is going to have her Dr handle this because it was clear that he thought that we were looking for an easy way out, and this was not the case.

What a sorry doctor! I have a hard time biting my tongue, especially when it comes to my children. I think I would have told him that diet was easy for him to recommend because he didn't have to live with it or cook for it. I'd love to see him go without all those items and see how long it took him to ask when he could add some back. I think it was really insensitive of him, especially when there is a child involved. I agree with Risa, I would ask her pedi before I did anything.

Ok Sheryl, this is the No-Bake Tamale Pie recipe. We all really enjoyed it.

Good Housekeeping

No-Bake Tamale Pie - 4 servings (30 minutes)
4 tsp vegetable oil
1 small onion, chopped
2 garlic cloves, crushed
1 lb. lean (90%) ground beef
2 tsp chili powder
1 tsp ground cumin
1/2 tsp sale
1 log (16 oz) precooked polenta, cut crosswise into 8 slices
1 jar (16 oz) medium-hot salsa
1 cup frozen corn kernels
1/2 cup loosely packed fresh cilantro leaves, chopped

In nonstick 12-inch skillet, heat 2 teaspoons oil over medium-high heat. Add onion and cook 3 minutes or until golden. Stir in garlic; cook 30 seconds. Stir in ground beef and cook until browned. Add chili powder, cumin, and salt; cook 1 minute.

In nonstick 10-inch skillet, heat remaining 2 teaspoons oil over medium-high heat. Add polenta and cook 10 minutes or until golden on both sides and heated through.

While polenta cooks, add salsa and frozen corn to meat mixture; cook 3 to 5 minutes to blend flavors. Stir in cilantro.

Spoon meat mixture into deep-dish pie plate or shallow 1 1/2 quart casserole. Arrange polenta on top.

(Before I put the polenta on top, I put some mexican blend shredded cheese on top of the meat mixture).

I live in Alpine, which is about 30 miles south of downtown Salt Lake City. I'm up in the city at least once a week! Park City is so much fun!!! How neat that you've been in my neck of the woods. The mountains are really something, aren't they? We are a camping family, so we spend a lot of time each summer in the mountains, cooking in our Dutch ovens. DH has 12 of them, and loves to experiment. We've cooked everything in them from bread to lasagna to pizza!

The ribs last night were yummy. I do think that next time I would add a little liquid smoke to the bbq sauce mixture to give it a little smoky flavor

Melt in Your Mouth BBQ Ribs

2 Sides pork spareribs (about 6 lbs--I used half that) separated
1 (28 ounce) can chunky tomato sauce
1/3 cup brown sugar
2 tbsp red wine vinegar
1 tbsp Worcestershire sauce
1 tbsp reduced sodium soy sauce
1 tbsp chili powder
2 tsp cumin
1 tsp paprika
1 tsp garlic powder
1/2 tsp salt
1/4 tsp cayenne pepper

Place the sparerbs in the bottom of a slow cooker. In a med. bowl, whisk together the remaining ingredients. Pour mix over the spareribs. Cover and cook on low for 6-8hrs or High for 3-4hrs.


Tonight will be Curried Peanut chicken with couscous and black beans. Once again a new recipe--will post if yummy!

Glad to know your kitty is going to be fine. I completely understand. We don't have a cat because DD is highly allergic, but we feed four who appear to have been dumped in our area. They live in the woods behind our house and like yours, keep the mice and snakes away. One of the four is finally getting close enough to touch.




Thank you! At times we could have about 17 outside :crazy: ...some are fixed. After the wedding I am going to start trapping them to neuter release. Most we cannot get near but there are a couple that are friendly. Midnight is a lover girl...we will be sitting on the patio and she will jump into our lap. Then look at us in the window when we go in. :upsidedow



Still no more test results back from Mom. They gave her some new meds for the ulcers. Thank you all for thinking of her.

No word from the vet yet re: Sey. He should be coming home today.

liamandcaili, Thanks for the tips on brining chicken. Of course, I went off & looked it up myself, but tried to do a quickie version of a wet brine. So I've probably ruined a perfectly good chicken! I soaked it for about an hour, BUT I forgot to wash it off before putting it on the can!!:scared1: I didn't realize it until I saw your post & the chicken was already on the grill. I'm getting ready to go baste it with a sweet baste of lemonade,limocello & rosemary sauce. We'll see if I can counteract the salt!

I hope it was good!

Tonight is a skating and soccer practice night (I will be SO happy when soccer is over!!) so I am probably having leftover pizza or whatever else I can scrounge out of the fridge when we finally get home.

For dinner tonight, we are having lime tortilla encrusted tilapia, scalloped potatos, and squash/zucchini. I will be getting in late from church/work and LOST season finale is on at 8pm - the tilapia is a Costco frozen item, potatos are boxed (EEK!), and zucchini/squash is easy to just boil up and drown in butter.

I am not proud of this meal choice but it'll be yummy and easy!

Morning Y'all,

I sure miss a lot here in the evenings! But there was no pulling me away from the TV last night! :cool1: Apollo won Dancing! And on Idol, Blake & Jordin gave some wonderful performances!

My semi-brined, beer can chicken came out fine! It wasn't too salty at all. The baste was good, but it didn't pick up the lemon flavor as much as I hoped it would. DH thought it was the best beer can chicken I've done!

I do ribs in the crockpot all the time! I've used both bone-in and boneless, and they turn out great no matter what. I would watch the cooking time with the boneless, otherwise you may end up with shredded pork, instead of ribs. Still good, though.

I do.. I like to make asian ribs

I rub them with a mix of cinnamon, soy and brown sugar and bake ..I then put them on the grill with a red asian sauce that you can find in just about any stores international aisle.
It works with BBQ sauce, I just like the asian ones more

I basically opened it earlier and ran inside so he wouldn't scratch my eyes out!!! He is using the litter box I put in there...:woohoo: . I am glad that he calmed down...BTW, love the new nickname you have christened me with!!!

I went to the doctor today and my pressure was high...:scared: I hope its from all the pre wedding stress. Gotta go back next week for a check up...:eek: .

I am not sure WFD...I think pork chops on the grill. I watched a grilled pork chop recipe that was made on Youtube and we really liked the marinade. It was italian dressing (which I always use) with worchestershire sauce.

The grill has been my best friend this week. :)

Kids and cats.. I think that the only thing that saves them is that they look so angelic when they are sleeping :angel:. MY vet always referred to my Trouble as "The Grumpy One" just because he tried to hang off his arm and gnaw away a finger at eh same time :confused3.

Morning all. Dinner last night was really good. Here's the recipe

Curried Peanut Chicken
Recipe courtesy of Taste of Home

1-1/2 cups orange juice
3/4 cup peanut butter
2 tablespoons curry powder
4 boneless skinless chicken breast halves
2 medium sweet red peppers, cut in half
1/4 cup flaked coconut, toasted
1/4 cup dried currants
Hot cooked rice

In a bowl, combine the orange juice, peanut butter and curry powder. Pour a
third of the marinade into a large resealable plastic bag; add chicken. Seal
bag and turn to coat; refrigerate for 8 hours or overnight. Cover and
refrigerate remaining marinade. Drain and discard marinade from chicken.

Grill chicken and peppers over medium heat for 8-10 minutes on each side or
until chicken juices run clear and peppers are tender. Warm the reserved
marinade. Cut chicken and peppers into 1/2-in. strips; sprinkle with coconut
and currants. Serve with rice and reserved marinade.

Yield: 4 servings.

Instead of rice I served couscous and some black beans!

Tonight will be chicken lettuce wraps--something quick and easy!

Today is my FILs birthday so we are going to their house for dinner. *sigh* MIL is not a very good cook so I am going to eat a big lunch. I made a pumpkin gooey butter cake (a la Paula Deen) as a surprise for my FIL. It's his favorite :)

ETA: Truly, this has been a sucks-to-be-me week. I fell getting into my car at the doctor yesterday. I am stiff and sore this morning. Sheesh, what's going to go wrong next?! :sad2:

Sounds like you need a good long vacation! Maybe some "mental health" days!

DH did the cooking last night as I had a "cooking" accident during lunch. DS was home sick from school, and I was making him soup for lunch. He loves the Cup O' Soup, so I was boiling water in the microwave, and when I pulled it out of the microwave, I spilled it all over my dominant hand. Talk about burned and blistered!!! I spent the rest of the afternoon with my hand wrapped in wet towels. Yikes! It's much better today, so I get to cook!

I went to the doctor today and my pressure was high...:scared: I hope its from all the pre wedding stress. Gotta go back next week for a check up...:eek: .

Lindsay, I really hope you heal up quickly.:hug: I am still shocked that DH's face & neck were the only places he was really hurting! I don't know how he could have gone flying out of the chair onto cement & not be super sore all over. The Dr. recommended he start on Motrin/Advil immediately, so maybe that helped. If you haven't already, you might want to try that. Your cake sounds delish!

Kathy-Your recipes are so yummy, I just knew you were not a skinny size zero. I am still wonder how Giada De Laurentis can taste her food and look like that. I know her stuff is good, I have used the recipes, but I feel better when my recipe comes from Ina or Paula. I wonder why?????????

Basically, I lightly coat the grouper with flour and pan sautee in EVOO over medium-high heat. When the grouper is almost done, I move the fish to the side of the pan and add a little butter and some sliced mushrooms. Cook until the mushrooms are just turning soft and add a little roasted garlic, a shot or two of white wine, and lemon juice to taste. Cook until the mushrooms are soft, cover fish with sauce and simmer until the sauce thickens. The whole thing takes less than 30 minutes if you buy the already sliced mushrooms.

Thanks Gretchen, that sounds yummy. :thumbsup2 I'll try that next time I cook fish! I wish I could get a hold of some nice fresh grouper though! That only comes around every now & then, when friends go out into the Gulf.

Anyway, the fitting went well. Just need a hem. I am going with a tea length.

I think I am changing my diet. I am really freaked out with my blood pressure and it may have to do with the South Beach...processed foods, salt, etc. I think I am going to stick with low sat fat, low sodium diet. My diastolic (sp) was 104!!! :scared: :scared: :scared:

So tonight will be grilled pork chops (I have them marinating in a low sodium mix of white wine, lemon juice, evoo, sage, garlic and parsley) and I will make some type of veggie and brown rice and black beans...

ETA: With Saucy Susan of course!!!

If anyone heart healthy ideas/tips please let me know. TIA!!!

I was also slim for most of my life, but something changed. It started when I stopped my cleaning business and went onto the phones. I never knew that there were so many occasions to have a pot luck dinner or to eat. Then I volunteered for third shift and did not now when it was time to eat, so I ate all the time :confused3. The I decided to stay home, and it has been all downhill from there. I have more time to cook and bake and can't seem to find time for that gym I belong to.

Glynis hope your hand is feeling better. I did that once. I squeezed one of those microwave soup thing(by the way don't do that) and it went all over my hand. I had a nasty blister. Now I'm very careful.

Lauren Make sure you are getting enough exercise that helps keep you blood pressure low. It pains me to type that. I had to stop taking birth control pills the estrogen was making my BP sky rocket. I switched to a non estrogen pill.

Well I must survey my frig and freezer for dinner I was too busy at work to think about it. We are in for a doozy of a storm the wind is around 30-40mph
so I'll say my goodnights now. Plus I need to rewatch Lost I'm confused as usual.

The funny thing was that the priest was joking about how he was happy they weren't showing up for the groom. (He can do that because he has known our family forever. He grew up with my father's mother, married my parents, married DSis and BIL and married me and DH.) It was definitely memorable. So see? Even if something does go wrong, it could end up being the thing people will talk about for years to come. DSis was even in the local papers...and she is the last person on earth to seek any sort of publicity.

Anyway, this garlic/parmesan vinaigrette was really good. I grilled some asparagus, vidalia onion and sweet red pepper then chopped it up and tossed it with some of the vinaigrette. Then I put the vegetables into rice that I cooked in vegetable stock. I topped the whole thing with toasted, sliced almonds. It was really yummy. I could also see marinating chicken in this or tossing with salad. It might even be good in a pasta salad.

Roasted Garlic/Parmesan Vinaigrette (from How to Cook Meat)

1 head garlic, 1/4 inch cut off the head
3 Tbsp olive oil
1 Tbsp grainy mustard
2 Tbsp freshly grated Parmesan cheese
3 Tbsp fresh lemon juice
2 Tbsp red wine vinegar
1/2 c extra virgin olive oil
Salt and pepper

Preheat oven or toaster oven to 400. Put garlic head on one foot of aluminum foil. Put three Tbsp olive oil on garlic, wrap tightly in aluminum foil and cook for one hour, or until cloves are soft. (This can be done in advance. Remove roasted garlic cloves and cover with olive oil and store in the refrigerator for several days.)

Mix garlic, mustard and cheese in small bowl.

In a separate bowl, combine lemon juice and vinegar. Whisk in olive oil in a steady stream. Add garlic mixture. Season with salt and pepper. Cover and save until ready to use.

Thank you! I have no idea what I am doing wrong...I am exercising more now than I have in years and eating better...but maybe not as good as I thought with being on South Beach. I will continue and even step up my work out, try to eat better and see what happens next week when I get the pressure taken again. I bet its just the stress of the wedding and also the stress of going to the doctor...(it was a new OBGYN by the way :) ).

Lauren try not to worry. Some times the nurse doing to blood pressure has it to tight that will get a false reading. If you have a CVS by you try their machines, just realize that their machines might be recently calibrated. Right down the numbers for your MD.

We had bacon,lettuce tomato sandwiches with fruit. I guess it just going to be very windy for a while. ok really going now to watch Lost again.

I was going to post something similar. I got a false high reading for the very same reason. The dr just about flipped when he saw the numbers. When I came back the next week, my BP was MUCH lower. When I discussed it with a friend of mine who is a nurse, she said that was the most likely cause. :confused3

Evening!

Tonight we had tortilla/lime encrusted tilapia (frozen entree from Costco), boxed skillet potatos, and ginger-soy brussells sprouts.

We were going to have the same thing last night but I had leftover pizza from church so that became dinner instead =)

Anyway - back to the brussells sprouts. I don't think I've ever had them and the latest GH mag peaked my interest in them so I tried a recipe they had for them. YUM!!!!!!!!!!! Why haven't I tried them bfore? They are like little cabbages - and I love cabbage. DH didn't like them that much but oh well.

I do have a feeling that I'll be paying for the huge portion I ate, though (I have Crohn's disease and some foods don't settle well later).

Hello all-- it has been a crazy past couple of days....I know I say that often, but it is our busy time of year for our personal business and we are right out straight!! I know I have missed a bunch of stuff, and I will try to catch up, if I miss something important feel free to blast me, lol!!

Glynis- Please keep an eye on that burn, it can become infected very easily, especially on a hand. The best thing for a burn is bacitracin, if you can put some on your hand and wrap it lightly in gauze at night it will help it heal quickly. Also if you can take it ibuprofen will help as well.

Lindsey- You poor thing, what a rough couple of weeks you have had, I should hope things are on the uphill for you now!!

Lauren- I am sure that the stress of your wedding is not a helping factor of your elevated bp. Keep and eye on it and try to cut back on as much sodium as you can. I also wanted to commend you on taking care of the feral cats in your neighborhood, they are lucky to have you for sure!! I am anxious to hear how your mother makes out as well!!

Lori- I have room for a 30 foot RV, we also have a bonfire pit as well, good times to be had ladies good times!! though I am bummed I am on the last leg of it and I miss the whole road trip part, lol.

Nancy- how are things going with the new way of cooking for kady? I am anxious to hear what her own ped. has to say about this whole thing.

I hope I haven't missed anything else, though I am sure I have as I have missed 2 days and, I really only caught up on 1.

Lauren here's my thing that I do when I want my pressure to get lower. Lay low on the caffeine it's a stimulant. Try decaf items no chocolate for awhile. Be aware decaf is mostely low caffene not necessarily no caffeine. My really high reading was at an obgyn. Surprised, I'm not why won't they realized no normal person is relaxed when they have to go see them.:rotfl:


Ok now I has a question for all of you do you have any appetizer recipes that I can serve with crisps I can make from egg roll wrappers. I had one and I don't know where I put it. I need to organize my recipes I know :rolleyes1

My house is a mess cause I was looking all over for it. I thought I learned my lesson with my eggnog cake receipe incident.

I have an update on my mysterious prayer request for Chris.

:rockband::dancer:party:He got the job!!!!! He is assigned to Marine 1 and 2 as an inspector! The USMC had issued him a set of blues so it was a really good sign, but the background check was thorough so it took a while. He will be home soon and then to Quantico I think, and is Stateside for 4 years. It is an amazing opportunity, but he is a pretty amazing young man and completely devoted to the Corps and to the job they do.

Thank you for all of your prayers. My sister is more teary than I am and she is overwhelmed by your support for a young man that you have never met, and I am humbled.

Now that thing Timmy is assigned to is a big HumVee, but I am going to continue to picture it as some gigantic contraption with a shield around it.

Nancy- The power of prayer!! A deep breath I am sure was taken by all when the news came in!!! Hugs to all, and again a Thank you for being a service family. People tend to forget that it affects the whole family, not just the immediate. How appropriate with it being Memorial Day Weekend! Prayers for Timmy as well, all the prayers for him will be an even stronger shield around him as well.

TGIF and Happy Memorial Day Weekend to all! We are going out to a local pizza joint for dinner tonight--and we are flying to Houston tomorrow morning to spend the weekend with BIL, his wife and my IL's. So no cooking until at least Monday night!

Last night's dinner was really good. Love the lettuce wraps--and kept the kitchen cool b/c there was NO actual cooking involved

Chicken Lettuce Wraps with Sweet and Spicy Sauce

3 tbsp unsalted, dry roasted peanuts (left this out)
3 tbsp hoisin sauce
2 tbsp cider vinegar
2 tsp soy sauce
1 tsp bottle ground fresh ginger
1 tsp dark sesame oil
1/2 tsp crushed red pepper
1/2 tsp bottle minced garlic
2 cup packaged cabbage and carrot coleslaw
1 cup canned sliced water chestnuts, drained
8 ounces grilled chicken breast strips ( such as Louis Rich/Tyson)
12 Bibb lettuce leaves

People tend to forget that it affects the whole family, not just the immediate. How appropriate with it being Memorial Day Weekend! Evening!

Tonight we had tortilla/lime encrusted tilapia (frozen entree from Costco), boxed skillet potatos, and ginger-soy brussells sprouts.

We were going to have the same thing last night but I had leftover pizza from church so that became dinner instead =)

Anyway - back to the brussells sprouts. I don't think I've ever had them and the latest GH mag peaked my interest in them so I tried a recipe they had for them. YUM!!!!!!!!!!! Why haven't I tried them bfore? They are like little cabbages - and I love cabbage. DH didn't like them that much but oh well.

I do have a feeling that I'll be paying for the huge portion I ate, though (I have Crohn's disease and some foods don't settle well later).

Could I get the recipe for the brussels sprouts? My kids love them, and I'd like to find new ways to cook them.

I have an update on my mysterious prayer request for Chris.

:rockband::dancer:party:He got the job!!!!! He is assigned to Marine 1 and 2 as an inspector! The USMC had issued him a set of blues so it was a really good sign, but the background check was thorough so it took a while. He will be home soon and then to Quantico I think, and is Stateside for 4 years. It is an amazing opportunity, but he is a pretty amazing young man and completely devoted to the Corps and to the job they do.

Thank you for all of your prayers. My sister is more teary than I am and she is overwhelmed by your support for a young man that you have never met, and I am humbled.

Now that thing Timmy is assigned to is a big HumVee, but I am going to continue to picture it as some gigantic contraption with a shield around it.

Nancy, so glad to hear about his posting. I'm sure you are all so relieved.

Stephanie, thank you for the lettuce wrap recipe, it looks wonderful.

Lauren, if you have never had a BP problem before, it is probably due to stress. I have found drinking plenty of water helps. Maybe it is flushing out the sodium, who knows? But I agree about South Beach - lots of sodium. I tried that diet for two weeks and my BP was higher. I ended up going back to the low fat, low calorie plan - not that I can stick to that for long either, but at least it didn't elevate my BP.

Kathy, I didn't see the Oprah show, but if you feel you have the symptoms of depression, please go to your doctor. When I was going through the rounds of specialists trying to diagnose DD, I had a horrible bout of depression. Luckily for me, my OB during my annual visit saw the signs and prescribed something for me. It took about two months to be effective, but I felt much better. I was on medication for about three years before I felt ready to try without it. I don't need the pills now, but boy, were they a life saver when I did. Find the courage honey, you will be so glad you did. :hug:

Dinner tonight is going to be pad thai. DH has never eaten it, so I'm curious what he will think.

Well, I'm off. I need to search for a replacement indoor swing for DD. She uses it during daily therapy and in the evenings because it helps her calm. The one we had broke last night WITH HER IN IT! I saw her come tumbling to the floor and was too far away to help. Luckily she was ok, just shaken up. DH went to Walmart last night and got some rope and chain and secured it for temporary use, but I need a permanent solution. It makes me cringe to think of the expense, but we may need to invest in a real therapy swing system. I just have to keep telling myself it is only money, right?!?

If I don't get a chance to check back in, I hope everyone has a wonderful weekend.

Hey, everyone, thanks for the concern about my hand. It is so much better. The blistering is down some, and I'm keeping it wrapped with bandages. DH did the cooking last night, and he even followed my recipe. The chicken was ok, but not something that I'd repeat. There are too many better recipes out there. KWIM?

Tonight will be clam chowder with Cheddar biscuits. They are a knock off of the Red Lobster biscuits, and my kids love them. They taste so good with a bowl of clam chowder. Our weather is really cold right now, so soup will be good!

No cooking for me tomorrow! DH and I are celebrating 17 years of wedded bliss by eating out, and then DH is treating me to my favorite eye candy: Johnny Depp!!! What a guy!

Hi guys... I havent been cooking much, for some reason i havent been in the mood. Lots of eating out. Anyone see the view this am.

This Hawaiian coleslaw recipe was on there and I am going to make it for monday! Looks YUMMY!!! IN fact if you get on the View website there are LOTS of yummy looking recipes.

8 servings
Prep Time: 5 minutes

Ingredients:
1/2 cup Mayonnaise
1/4 cup Hawaiian Marinade with Tropical Fruit Juices
1 can (8 oz.) crushed pineapple in natural juice, undrained
1/2 tsp. Seasoned Salt
1 package (1 lb.) shredded cole slaw mix
1 can (11 oz.) mandarin oranges, drained
1/2 cup dried cranberries or raisins
Chopped pecans, toasted if desired

Directions:
In large bowl, combine Mayonnaise, Hawaiian Marinade With Tropical Fruit Juices, pineapple and Seasoned Salt.

Add cole slaw mix; toss well. Stir in remaining ingredients. Chill, if desired. Sprinkle with pecans before serving.

Told his mom and dad-Just something I gotta do.:eek: Where the heck did that come from?!? He's always been the smarta(butt) of the family! But I'm so very proud of him- I'll be crying like a baby at graduation next week!

After Paul died I was in denial that I had a problem-until I had a complete meltdown in the parking lot of my local TGI Fridays. I sat on the curb and cried into my cell phone till someone took me home. The next day my family came and got me and I started on meds and therapy. (Knew there was something not quite right about me, huh!:lmao: )
It took alot (time, effort, talking, you name it!) to get to where I can deal with everything without the meds. And here lately, I've thought about going back on them. Sometimes you gotta do that.

I don't know if you listen to the podcasts from the DIS but GO! (& I MEAN IT SISTER) Go and listen to the History of the DIS part2 one. You can listen on the PC. Pete Werner (Our Illustrious founder of the DIS) talks about his battle with depression and I found it very comforting to listen to.

You have been through a lot.:hug: For some reason, society has placed a stigma on people needing treatment for depression. Thanks to all of you for the supportive words. I always thought depression meant inability to function and staying in bed all day, until I saw the show yesterday. I am able to ACT happy but I can't seem to feel TRUE joy in anything.

My downward spiral started with Katrina, then losing my Dad in Texas because of Katrina, then the final blow was losing my Mom. I guess dealing with this without any family has been a bit too much.

I'm going to make an appt. with my GP for next week and see how that goes. Again :hug: to my DIS duddies for being here for me.

We all seem to have to much in common. I had a round of that back a couple years ago. My grandfather died then my dad followed suddenly 4 months later all while I was dealing with a pending split with my then husband and a toddler to boot. Depression takes many different forms. :hug:

It was terrible and at that time there was no place to go for help that I knew of. I thought that there was something "wrong" with me.

We really aren't sure how this happened. He was in training for the special forces and then this! I pray for the day when there is some semblance of peace over there.

You should be proud of your cousin. He's accomplished already and is on such a great path Jets! I would be sobbing at his graduation with you! Heck, tell us about it and I'll cry from home. I love getting to know all of you through your stories.

I love chipotle too, but I learned after tonight, that I should use a little less. The sweet potatoes were HOT!

Oh, and I meant to respond to your request for recipes for appetizers to serve with your fried wontons. I posted a recipe for shrimp seviche a while back that would be great...unfortunately, I can't make it anymore as DS is severely allergic to shellfish. I miss it though.

Here's the recipe for the sweet potatoes:

Mashed Chipotle Sweet Potatoes

3 lbs sweet potatoes
1 cup light cream
4 tbsp butter
2 tbsp chipotle peppers in adobe sauce
salt and pepper to taste

Peel and cut sweet potatoes into cubes (I just sliced them and cooked a little longer). Put in pot and cover with water. Bring to a boil, then reduce heat to medium, cover and cook 15-20 minutes until soft.

In separate saucepan, bring butter, cream and chipotle to a boil, then reduce heat and cook for an additional 10 minutes until cream thickens.

Drain potatoes, and mash with chipotle mixture (I would remove chipotles before doing this, unless you like fire in your mouth :scared1: ) Season with salt and pepper.

The other night I made up a Spicy Chicken Alfredo with fresh veggies dish and thought of this thread. But I need to try to get a recipe together to post it for you. I took Tyler Florence's Alfredo recipe from the Food Network website and used some spice rub my boyfriend came up with on the chicken. The veggies were frozen peas, fresh broccoli and fresh asparagus. They were picked from the garden the morning before. The dish was amazing.

Kathy- It is a great first step in figuring out that you are suffering from depression......that is the only way to get better is to realize you are in it.....I know, I speak from experience..... If you don't mind a little background, I had a pretty rough life growing up,(other then my grandparents who were the most amazing people, well my grandmother still is but GF passed 7 years ago) and then I dated a guy for 4 years that beat the crap out of me physically and emotionally (the emotion part is so much worse then the physical), I then got the strength to get out of that, and started dating dh (we had dated before in high school years ago and met up at a friends house and started out as friends for a year before we dated). Thought I was ok until I had ds and then I got hit HARD with ppd....I was lucky that my dr saw the signs right off and got me on zoloft and it did wonders for me, took me about a year, but the fog did clear. (Looking back I realized that I was suffering the whole time, it just took the pregnancy hormones to make it so I was unable to hide the unhappiness) I suffer from a bit of anxiety depression at times still and carry ativan for when that hits. Not often, but once in awhile.
There is no shame in depression, it is an illness just like any other, society I think is finally (I HOPE) starting to realize that.
Go and talk to your Dr, it will be the best thing you do for yourself and your family....life is to short!! I send you big hugs from Maine!

It's Cap'n Jack for me tonight! And Morton's wedges and cocktails. We won a $100 gift certificate for Morton's last night at the Hamster Derby and it's right by the fancy-schmancy theater that shows foreign films and documentaries that is infestered with Pirates... So a couple apps and wedge salads with yummy blue cheese and a couple martinis then the movie with sodas and popcorn! I know that sounds like alot of food, but dang! the movie alone is almost 3 hours long! I already told Rick- don't get po'ed at me for having to miss part of it to potty...I always have to do that-even for a regular length movie!

Thurs. Evening my sis-in-law ( Alexis' Mom ) brought us dinner from Whole Food. :banana:

Yesterday, DH took off & we went see Pirates! It was good Jack & Will are hotter than ever!

Then we went to a Honduran/Mexican rest. we loved Post-K & it just reopened this week, almost 2 years later. It was packed, but the food was delish!!

Can't decide if we are going to go check new homes at the Home Show or go to the NOLA Wine & Food Grand Tasting. We're both fighting sinus issues, so lots of wine drinking might not be the best idea.

I've used them for several years now and have always been satisfied with my purchases. I think Dan Murphy was the one who told me about the site, I know for certain it was here on the CB I learned about it years ago. You can sign up to get their daily email of deals.

Tell me about it!! I remember going to see Lord of the Rings when I was 7 months pregnant with the twins. I didn't want to miss any of the movie, but I was needing to go so badly!!!! I almost made it, but not quite. I had to leave during the final battle!

Okay, so I don't really have a good plan for dinner tonight yet. I do know it involves the grill (hot again today), a piece of tuna, a filet of arctic char and an avocado. Beyond that, I'm not sure. I have an hour of baseball practice to figure it out though. If it is photo-inspiring, I'll take another pic since everyone seems to be missing DSis. (Me too!)

I wasn't all that inspired at baseball practice, so it took me a while to compile the menu once we were home. Dinner was late, but it ended up being pretty good. I had grilled tuna with a creamy avocado sauce, a salad with pineapple/black bean salsa, and fried tortilla chips. The kids had the arctic char, the tortilla chips and a plain salad.

Tomorrow, Liam has baseball, and since all my family is on vacation, except my brother who doesn't eat vegetables, I am having him over for portabella mushroom burgers, broccoli, and grilled asparagus. Just kidding. We are having steak, and either macaroni and cheese or Nancy's parmesan potatoes. We'll see how hot it is. The kids and I will have something green, but I'm not sure what yet. I know we won't be having carrots (not that they're green). We have been seeing a rabbit in our yard this week. Caili is competely enamoured and wants to bring it inside. I told her she can't, but she has been leaving carrots for it. She took the last two out this afternoon.

We went and saw POTC today then to a cookout with friends. It would have been a nicer day if it didn't rain pretty much all afternoon. Good thing my friends husband doesn't melt :rotfl: We thought the movie was pretty good.

I have that same thing going on with the garlic. I forget that sometimes friends are not used to 10 cloves or so, and oh well, it's good for them :confused3

Now if that is a picture of an uninspired meal, you can sell tickets to your meals that are thought out. I am impressed.

I was out all day and then DH and I visited friends, I had a hot dog and chocolate ice cream and Buddy had a lot of hot dogs and I don't know what else.

Today we had a fajita bar - some family came over. I grilled beef and chicken - the beef marinated in some worseshire, orange zest and juice, garlic, chopped cilantro, chili powder, lime juice, cracked pepper, cumin, white vinegar, brown sugar... can't remember what else I threw in. For the chicken, I just used lime zest and juice and some chopped cilantro.

Anyways, they were very yummy! And a big hit with the family. Also had queso and chips to munch on.

We have lots leftover so we ate that for dinner tonight and will have it for lunch tomorrow after church too!

Kathy- Super!! Next week we are going into one of the 2 "big" cities we have and we are going to look at them then----there is nowhere to get one in the area I live in. Glad you like it, I will keep my eye out for it in Bangor when we go....:cool1:

Wfd: It will be this new haddock recipe I found in the newspaper, it has tom sauce and pasta and other stuff, lol sounds great huh? (I don't have the recipe in front of me)
