How about a meal in the California Grill in the Disneyland Hotel? Never done it myself (hard to be romantic with 2 small children) but it's supposed to be lovely. And expensive. Or Walt's would be good, or for lunch the Blue Lagoon, next to the Pirates of the Caribbean ride.

You could surprise her with a meal at the Blue Lagoon Restaurant, it's a very romantic setting. Lovely ambience, dimmed lighting.
The restaurant is inside the Pirates of the Carribean ride you could request a table "on the beach" and then you're able to wave to the riders of POTC, not quite so romantic but great fun.

You might even be lucky and get a visit from Captain Jack Sparrow, believe me if she's anything like the rest of us that'll really make her day. ;)

How about buying her a necklace (jewlery, locket or whatever) Wrap it in a nice box & bow and hide it in your case to take with you.
Book a table at a resturant that has character interaction, and ask the waiters if they could give the present to one of the characters to bring over to your wife
(Thats sooooooooooo ROMANTIC ;) )

Awww that would be nice if she likes jewellery or you could buy some from DLP.
A nice meal at blue lagoon is a good idea too.
Or what about asking the hotel your staying at if they could put some flowers/chocolates etc in your room- or maybe surprising her with a one night stay in a upgraded room/hotel.

apparantly there is a 'gourmet voucher' i read this in the brochure, that lets you have a meal in one of the posh restaurants, (can't remember which ones) they also offer spa treatments too, but the brochure said you have to call to book or ask at the concierge desk on arrival...
