how would you embellish the countries?

What about a crown for the Queen in the uk.

Canada A Maple leaf or a flag in their national colors

For Canada you could use bears, moose, and pine trees. After talking to a cast member there, we learned that Canada is home to the first telephone call. Maybe you could do something with that.

If you'd like to take a peek at my layouts, go back to page 90 (post 1350) and the rest are on the next page. I bought some "country" cardstock and added a Jolee's sticker to each and that was it. I thought they came out pretty okay.
