I average about 3 Disney recipes per week (at least) but don't generally take pictures of my food because I'm rushed enough just getting it served up and my camera doesn't do well on dark indoor shots. Anyway, I did get 2 pics at a birthday dinner a couple weeks ago and can post those.

If anyone wants to make the ohana potatos, i recommend adding more cheese than directed to get the "full effect".

I make a homemade cheesecake and use the strawberry topping recipe from my Disney cookbook. Its really great! It has fresh strawberries, strawberry jello, and a couple of other things. Its really easy, and it is so much better than just pouring out a can of strawberry pie filling, which works in a pinch.

(I tried the Disney Cheesecake recipe once, and didn't care for it - so I cook the cheesecake from another cookbook, and the strawberry topping from Disney.)

Those cinnamon rolls look AMAZING - I am the one who requested that reciepe, but have not had the chance to make it yet. Are they as good as they look? I am thinking (we are moving into a new house soon) about having a family brunch, if they are good I may make them.

1. are they hard
2. are they as good as main street without out being on Main Street of course

Wow you guys are talented... I mean, your presentation is awsome! I've made the chicken curry boma soup and norway rice cream MANY times (both extremely easy) but if I were to have photo'd it you'd see a big messy pot of soup and some tupperware bowls and a big bowl of rice cream..

Nothing near as beautiful as these!

The recipe for the ESPN Nachos was not difficult at all.

I must admit that my DH and I took some liberties with the recipe, but we did base it off the photos we have from our last visit where we visited ESPN.

Just stack together tortilla chips, refried beans, browned ground beef (optional), and melted cheese sauce. If you want a large plate, use more than one layer of each. Put it in the microwave long enough that it is warm through.

Top with shredded cheese, guacamole, sour cream and fresh cilantro leaves.

The guacamole is made from fresh avocados, salsa (as hot as you like it), cilantro, and lime juice.

Enjoy.

I made the Irish Brown Bread and the Guiness Dipping Sauce today. The bread recipe is printed in the Food and Wine 2007 Cookbook and very a similar, if not the same, recipe from Raglan Road. The dipping sauce recipe was given to me by the waiter at RR...but its also listed on the recipe thread. I altered the dipping recipe though and used Moosehead beer (I had it on hand from when I made the LeCellier Cheddar Cheese Soup.

Here is the loaf cooling:

Traditional artisan breads are not made in loaf pans, so if you make this bread again, you can just form the dough into a ball then place it on a sheet pan or pie pan. Forming a log with the dough and placing it on a sheet pan will also give you a nice artisan look to the finished bread. Scoring the dough before baking will give it a nice finished look too.......originally scoring the bread was used to identify loaves because all breads were brought to a community oven for baking since most families could not afford an oven of their own. Just some thoughts about bread.......by the way, that bread looks really good; nice crumb and crust. Was it moist?? Next time we go to Raglan Road we will have to try this.

Thank you for the ideas...we had this discussion on the "Whats for Dinner" thread yesterday and another poster free formed hers since she did not have a loaf pan.

Its a very dense bread...dry but not too dry...sort of like traditional soda bread.

When we went to RR the first time, they did not serve the bread automatically. We had to ask for it.

Yummy Tonga Toast! We made it again this weekend too (see 1st post for pic)

We get the unsliced sourdough bread from Albertson's bakery - we just ask the clerk for an unsliced loaf it comes frozen and then you just bake it at home in the oven for 10 minutes, they will also bake it there if you want to wait. So anyway just check with your grocery store's bakery to see if you can buy it unsliced.

Disneyland New Orleans Square Choux Fritter Recipe

Yield: 3 dozen

Heat oil to 375 degrees

Ingredients

1/2 cup butter or margarine
1 cup water, boiling
1/4 tsp. salt
1 3/4 cup all-purpose flour
4 eggs
4 cups vegetable oil
Granulated sugar

Directions

Melt butter in boiling water, add salt and flour and beat vigorously. Remove from fire as soon as mixture leaves side of pan. Transfer to mixer bowl, cool slightly. Add eggs, one at a time, beating after each addition.

Heat oil to 375 degrees. Dip a tablespoon first in hot oil, then in batter. Carefully drop tablespoonfuls of batter into hot oil and cook until brown on all sides. Remove from oil with a slotted spoon and drain on paper towels. Roll in powdered sugar and serve hot. Yield: 3 dozen.

I love this soup and make it a couple times a year. I also, do not have a smoker. However, I got creative the first time I made it as I was not aware of a modified recipe. Turn your gas grill on medium heat. I put the mushrooms on a piece of foil and on another piece of foil, I put wood chips that had soaked in water for about 10 minutes. I put them both on the grill at the same time and left them out there until there was smoke billowing out of the grill. Voila! Smoked mushrooms!

Mickey's Favorite Chicken Parmesan from Delicious Disney. This recipe is an odd one for Chicken Parmesan because there is no Parmesan cheese in the ingredients and the chicken is not breaded before frying. It's a good basic recipe for chicken and pasta however.

http://i307.photobucket.com/albums/nn316/AngelaSchneider_photo/MeatBobotie_Boma.jpg

Meat Bobotie from Boma. This was taken after dinner when the loaf had cooled so the pic is not as good as it could be. It's very good though - like an exotic Moroccan Meatloaf and it makes more like 5 - 6 servings - not 10 as the recipe says.

My 1st try making Tonga Toast. I couldnt find any sourdough bread that wasnt sliced. So I had to buy the sliced bread instead. I never had tonga toast before. I thought it was OK. I guess Im not a hot banana person :rotfl: DH liked it alot though.

My brother has one of the really cool Disney Resort cookbooks, but we'd yet to use it. After seeing these pictures though, I was completely inspired to try making the Tonga Toast. Oh.my.gosh. It was so good. I've never been to WDW (born and raised a Disneyland girl), but if the real thing is as good as that recipe. I'd love to try it there someday. It was delicious with the bananas, but I'm wondering how it would be with apple that have been cooked up with a little cinnamon/sugar in a crockpot, especially since there's cinnamon and sugar used anyway.

Last night we had Nut-Crusted Mahi Mahi made from the recipe I got from Boma in 2001. (Yeah, finally got around to making it. ;) )

DH had picked up the nuts for me, but forgot to get the pumpkin seeds so I made it without those. As I remember what it tasted like at Boma, I should have sent him back out. :rotfl: It was excellent, but I missed that little difference. It was hotter than I remembered...of course that could be because I ran out of cayenne so I ground up some red pepper flakes...maybe about half of what it called for in cayenne. It ended up making my lips burn like they do when I eat Pad Thai from Chinese take-out...so it wasn't bad - just a surprise.

Super easy to make & delicious. We'll be having this again!

I do not have a picture but I just made the tomato salad from the biergarten from the Germany pavillion in epcot and holy moly was it tart!!! I had only used 1/4 of what the recipe originnaly called for and next time I think I am only going to use 1/8 of what the recipe calls for. Believe me I love my vinegar but this was too tart for me. Just thought I'd let any curious people know before they made it themselves!!!

I made this recipe as well but I really liked it. It's very much like the German tomato salads my Mom makes and I guess I'm used to the vinegary taste,

I think I've mentioned how old my digital camera is so I rarely bother taking pictures of food because I can't get clear pics indoors. Anyhoo, I tried again this week and have tried to edit them to be clearer... not too much sucess.

New England Pot Roast.. Liberty Tree Tavern (Delicious Disney)

http://i307.photobucket.com/albums/nn316/AngelaSchneider_photo/PotRoast_LTT.jpg

A fairly basic recipe that I thought had too much liquid (7 cups for 3 pounds of meat).. but then I don't know how liquid a pot roast should be. DS (20) and his buddies liked this as did my parents.

Thai Noodle Bowl with Coconut-Crusted Tofu from THE Hollywood Brown Derby (Delicious Disney)

http://i307.photobucket.com/albums/nn316/AngelaSchneider_photo/THaiNoodleBowl.jpg

This tasted very good despite the fact that I had to improvise on the broth part of the recipe as I was missing the miso and used Clamato juice for Tomato juice. I couldn't find Thai noodles either and my Chinese egg noodles are thicker than what they picture. I also chopped up my bok choy instead of leaving it whole.

Wow, I wish I had known about this thread this weekend. I made 'Ohana's Coriander Chicken Wings, the marinated, grilled shrimp and salad dressing. It was soooo good. I also grilled some steak but didn't have a recipe for the way 'Ohana does it but marinated it in Teriyaki Ginger marinade. Yummy!

From a recent dinner party - the Caramel Apple Shooter from the California Grill, Disney’s Contemporary Resort. This is a very complicated recipe and I made it over 3 days as the dessert has 5 different layers. I have a lot of Cooks Notes on the recipe in case anyone else is going to attempt it.

The Sauerbraten and Red Cabbage are Biergarten recipes but the dumplings are from a mix as I didn't have time to do the Biergarten recipe for dumplings. The Sangria is the Spoodles recipe and everything was fantastic.

This is exactly the thread I was looking for! Dizneydogs- I love your pics and your garden too- how cute!

Back in April I made the Sausage Biscuit Skillet meal from Boma (on the recipe exchange thread under Breakfast). It was just as yummy as when we had it in WDW, but we forgot how rich it was! Wowee, it is so rich it took us a long time to finish it and it ended up going bad, so we will only make it is we have visitors...more mouths to help us enjoy it. But it was goooood. We had a hard time getting the biscuits to cook on the bottom, I think next time we might just make the biscuits and place them on top after so we don't have soggy biscuits (we were scraping the bottoms of our biscuits off with our forks).

Here it is-

I came across the Disney Food Index and all these great recipes and finally decided to try one over the weekend. One of our favorites is San Angel Inn, Pollo a las Rajas. I served it with Rice and Beans and I did make the addition of an orange pepper. My family hands down said this was the best meal they have ever had :thumbsup2 Or I should say the closest to Disney they could get :smickey:

Let me know what you think! Thank you to all who have updated and indexed all these great recipes....

That dessert looks so yummy. My husband is working late again tonight, and I think I'm going to run over to B&N to see if they have that Disney cookbook. I have time to get the ingredients and have this dessert ready for him when he comes home. I just love to cook and I already got tons of ideas from this thread. Thanks!

I've made the lobster soup from Coral Reef about 20 times. (Sorry no pixs until next time). The first time I made it I had to make it from taste memory. After a couple of years they actually published the recipe in one of the later editions of one of the cook books. Turned out that I had pretty much nailed the recipe. Of course my version has infinitely more lobster.
