I need to make a cake with icing for my dsil. I have a gluten free cake mix but was looking for an icing mix for it. I found that I can make my own icing sugar, put in a food processor sugar and cornstarch. Do you have to have gluten free cornstarch? And is it possible to add melted chocolate to make it chocolate icing? I have to make the cake this Sunday.

Have you thought about using ganache instead of a regular icing recipe? Ganache is just chocolate and cream melted together and then whipped for a frosting.

Another idea is, since you wanted to make chocolate, could you use cocoa powder instead of cornstarch when making your powdered sugar? I'm not sure if cocoa powder is gluten free or not, but I think it is. Might be worth a shot.

Hope you find something that works for you.

Here is a recipe for a cake and icing. Can't vouch for it though.
