Does anyone have the recipe for the Chef mickey's carrot salad that they serve with breakfast? It has carrots, coconut, pineapple and raisins in it. Please post it for me if you do, or if you know how I can find it.

This is a recipe from the 1986 Disney Cookbook and is for the Carrot Salad that was served at theTop of the World, Contemporary Resort (Cooking with Mickey Around the World, ’86). It might be similar to what they serve now. It's just missing the coconut.
1/3 cup Heavy cream
3 cup shredded Carrots
1/3 cup Raisins
½ cup Pineapple chunks -- halved
3 tablespoon Sugar
3/4 teaspoon Up to 1 Tsp Cinnamon
1/3 cup Mayonnaise
Whip cream and set aside. Combine remaining ingredients in a bowl, tossing to blend. Fold in whipping cream. Let chill, covered, in refrigerator for 10 min before serving. Refrigerate any unused portion.

Coconut Carrot Raisin Salad
from Boma, Animal Kingdom Lodge
Yield: 10 servings
2 lb Carrots, shredded
1 lb Coconut
½ lb Brown Sugar
¾ lb Raisins
½ lb Ground Ginger
1 Pineapple, whole grilled, peeled & sliced
Dressing:
8 oz Yogurt
¼ qt White Vinegar
½ Tbl Crushed Red Pepper
¼ c Mint, chiffonade
Make the dressing & set aside. Cook carrots & coconut with brown sugar until carrots are ¾ done & coated with caramelized sugar. Take off the heat, add raisins & ground ginger & stir together. Let cool. Grill sliced pineapple & mix with coconut/carrot mix & yogurt dressing.
