My husband is tired of the same ole thing so I am trying to find a recipe for boneless chicken i the crockpot but please something simple I am no chef or really much of a cook Thanks for any help you can offer

OK, this isn't really a recipe... more a technique. LOL
Mix a couple of cans of Campbell's tomato soup concentrate with a can of Italian style diced (or crushed) tomatoes and enough water to make a soup-ish consistancy. Dump in a can or two of sliced olives and a can or two of Mexi-Corn. Dice your chicken breasts into bite-sized chunks and add to the soup. Let simmer all day and serve with hot fresh cornbread.
I used to make this with a couple cans of Campbell's Italian Tomato soup. But they quit making it (grr) and I found the plain tomato soup mixed with the Italian tomatoes to be a reasonable substitute.

With boneless/skinless chicken breast you can do almost anything in the crockpot, from simple to elaborate. Here are some easy ones:
Place chicken in crockpot and pour on one envelope dry onion or dry veggie soup mix
Pour chicken stock over chicken/soup mix until it just covers the chicken
Cook on low 8 hours
Serve with mashed potatoes or noodles
Place chicken in crockpot and pour in one can diced or stewed tomatoes and one can of artichoke hearts
Pour about 1-2 cups chicken stock
Cook on low 8 hours
When you have 2 hours to go add about 1 cup sliced mushrooms
Serve over rice
Place chicken in crockpot and add sliced mushrooms, sliced green or red pepper, pineapple chunks, water chestnuts, etc.
Cover with 2 jars teriyaki marinade (the thick stuff not the liquid teriyaki sauce)
Cook on low 8 hours
Serve over rice
(This recipe also works great with chicken leg quarters and just drumsticks)

Something else I have done with chicken breasts.... just remembered it now..LOL
Use an envelope of Taco Seasoning mix as a rub... rub it all over the breasts. Then put them into the crockpot along with a jar of your favorite salsa. When it is done cooking, take the chicken breasts out and shred them up, then add them back to the salsa and use this as a filling for chicken tacos or burritos. Top with lettuce, shredded cheese, sour cream, olives, etc.

Our favorite
chicken breast
1 to 2 can cream of mushroom soup
1 to 2 can water (add or take away depending on how thick you like gravy)
1 envelope onion soup mix
salt
pepper
mrs.dash (we love this if not it is good without)
over rice or mashed potatoes

here's what's in my crockpot right now ....
put 3-5 frozen chicken breasts in w/ a can of Diet Coke (or regular Coke) and cook on low all day (at least 5 hours)
Drain chicken, shred and put back in crockpot with a bottle of your favorite BBQ sauce on high. Let it heat until it's at your prefered serving temperature. Toast up some kaiser buns or hamburger buns and you've got awesome shredded chicken BBQ sandwiches!

Swiss Chicken Casserole (not very healthy but yummy!)
4-5 boneless skinless chicken breasts (frozen works best)
4 slices swiss cheese
cream of mushroom soup
1/2 can milk
stuffing mix
stick of melted butter
Spray CP with cooking spray. Place chicken in bottom of crock pot, layering as necessary. Place swiss cheese slices over top. Mix mushroom soup with milk, adding spices to taste (I use garlic powder, onion powder, salt, pepper). Pour over chicken. Empty bag of stuffing on top. Pour melted butter over entire thing. Cover and cook on high 4 hrs, low 6-8 hrs. Tastes like Thanksgiving!
