Forgot to answer all your questions. If you book through Disney everyone leaves around 9:00 am. The whole group listens to the speach and divided into groups of 30+. Then groups of ~10 are taken into the water with the Dolphin.
Lunch was not to our taste, alot of beans and rice, over cooked fish, chicken in jerk sauce and nothing to drink unless you pay for it. You stay there until 2 or 4, you choose which ferry.
