I am going for 8 days and paying for the dining plan. since i am paying could i give extra snack and counter service credits away at the end of my trip. i know i can't give my card away, but if i see a family buying lunch out of pocket and i know my credits are going to waste, could i swipe my card for them and make their day. just want to know cause i think i will have some extras and i want to stay away form this is disney frowns apon this.

Technically, no, you can't. The brochure states credits can't be shared with people not on the dining plan with you.

Like all POP programs, the pricing is based on an assumption that a certain amount of the offering will be unused.

For snack credits, there are lots of items you can take home with you from the gift shop. There is a link sticky at the top of this thread on that topic.
For CS credits, these are good for breakfast as well as lunch. they are yours, use them up for your family!
