Any suggestions of things to do in the cool or in the shade for a day in Orlando??

Disney Quest...but it is very noisy.

You could always rent covered boats from several Disney Resorts and DTD. We did this from DTD and found it very relaxing.

There is of course always indoor activites like movies. Universal has a large theater at their Citywalk.
