My husband and I are thinking of taking a trip to Toronto for his birthday (we live in upstate NY). What things should we do when we get up there? What places should we eat at? How long do you think that we should stay?

Toronto isn't a great venue for Arts & Culture in the general sense, but is a great city for multicultural diversity. Visit the Chinatowns (yes, there are quite a number in the GTA), Little Italy, Little India. Catch a Blue Jays game. Check out The Path (Toronto's huge underground network in the downtown core). The CN Tower is neat, but only for 5 minutes.

I think the Toronto Citypass is a great deal for a TO Tourist and would keep you busy for at least a 3-4 days if you took your time...
