Hi all, I signed up for dessert for tomorrow's potluck. As I won't have time to get creative, I'm looking for something quick and easy, hopefully utilizing what I have at home. I'm known for bringing in desserts, and don't want to disappoint, but really, who has time??
I'll most likely do some kind of bundt...those are so easy. I was thinking cream sherry cake, because that is always a hit and I don't think I've brought it in to work yet. I don't know who else is bringing dessert. I also thought that brownies would be ok, and cookies, but who has time for cookies?? lol

Gooey Butter Cakes are good and easy, maybe you can use this next time.
Cake: 1 yellow cake mix, 1 egg, 1/2 cup melted butter (mix and pat into 9X13 greased pan.
Filling: 1 8oz cream cheese, 2eggs, 1 tsp vanilla extract, 1 16oz box of powdered sugar, 1/2 cup melted butter. Mix first 3 ingredients, add sugar then slowly add butter. Pour evenly over cake.
Top with morsels.
Bake 350 degrees, 40-50 minutes. Center should be a little gooey, so don't bake past that point. Rich and a little goes a long way.
There are variations of this, but this is the one DH likes.

Are the morsels you are refering to chocolate chips? How much? Inquiring minds want to know.

I ended up making the wine cake:
1 box yellow cake mix
1 small box vanilla instant pudding
4 eggs
1 c. cream sherry
1/2 c. oil
beat for 4 min
pour into greased bundt pan
bake @ 350° for 40-50 min.
so super easy, throw everything in the kitchen aid and turn it on. boozy bundts are really the easiest, you just can't make them ALL the time b/c you'll get tired of bundts! LOL

Next time try the Chocolate Kahlua cake posted down a few posts! It starts with a cake mix and is a bundt cake too. It is really excellent. I made it again yesterday for a party last night!

I saw a great one on BBC Good Food - I might do mit as a dessert for MIL 70th birthday BBQ next month. You can find the precise details on the good food site (something like www.bbcgoodfood.co.uk ) but basically you roll out ready-made shortcrust pastry (or make your own!) over a mixture of cinnamon and caster sugar, cut it into a circle using a dinner plate and crimp the edges, then bake. Top with low fat soft cheese beaten with (i think orange juice), spread over the cooled pastry, leaving a small gap at the edges, then cover with fresh blueberries.

Regarding the morsels for the gooey bars, I just use what looks right. You can use different flavors of cake mixes and morsels also.
