View Full Version : Staff luncheon tomorrow and I need ideas-quick!

Tomorrow is a staff luncheon and I am drawing a blank on what to make. (everyone makes something to bring and share) I don't have much time now to prepare -- I will have to run out to the store tonight and make it. I was thinking of a big salad -- but what kind? Nothing too complicated. Anyone have a great salad they make for parties?

Any other ideas? Maybe a dessert?

My sister in law always makes great salads. She puts all sorts of greens in and then adds a couple of interesting things like dried cranberries (craisins) and goat cheese. Make a vinigrette to go on top.

Raspberries are nice in a salad too. Perhaps paired with bits of brie cheese.

Here's another thing I was thinking of:

Tortilla roll ups. I brought them to a girl's night out once and all the girls liked them.

How about adding in a can of mandarin oranges, sliced almonds, and red seedless grapes. If you want, you could also add in sliced grill chicken and crutons.

Thanks everyone!

I ended up making a salad with romaine, strawberries, slivered almonds and a strawberry vinagrette. Hopefully they like it! Off I go with it.

Yea! It was all eaten, so I guess it was a hit. (or else everyone was just hungry!)

It was the last day of school with the kids today. It was an exhausting day!

Yes, I made it myself. In a blender I put a pint of strawberries(take leaves off and cut in half first), 1/2 a cup of olive oil, 3 tablespoons of lemon juice, 1tablespoon of honey, 1 tablespoon of sugar, and a grind of fresh pepper.
